Food Thread: A Butter-Smeared Chicken In Every Pot!

I guess there is a recipe for what I made last night, but it's just a standard roast chicken with a compound butter under the skin and smeared on the top as much as I could. I didn't do a great job of that, and you can tell by the pale spots, but it sure did taste good, so this one is a keeper.

The compound butter was four ounces of butter, four teaspoons of lemon juice, about a tablespoon of chopped chipotle peppers, and of course S&P. The butter has to be room temperature or you will make a mess and still fail, and microwaving the butter might get you a messy microwave and some melted butter, so better to just leave it on the counter for a couple of hours.

Then just use a small whisk and gently mix in the ingredients until you get a lovely smooth compound butter that would be great on anything! Put most of it under the skin of the breasts and the legs, and the rest on the skin on top.

If someone can think of a better way to do it than smearing it around with your hands, I am all ears!

Oh...400 degrees for about 45 minutes...until the probe reads 155 degrees. And I put the spatchcocked chicken on a bed of sliced onions so they could soak up all of the excess butter.

Yes...it goes wonderfully on the chicken. Or plain. It's chicken-chipotle-lemon-flavored butter...of course it's going to taste great!

I like making chili, although I have lots of different ways of making it. When I just want something tasty in the refrigerator I will buy ground beef and make a quick and easy pot (yes...with beans). But occasionally I will make it from chuck I cut myself into small bite-sized pieces. When I spend the time to do that I also toast good chilies, use fresh herbs where appropriate, and otherwise take it seriously as a dish.

That doesn't mean that my quick and easy version is substandard...I think it's great, and I love having a bowl of it for pretty much every meal, including breakfast. Yeah...put a fried egg on top and you have yourself a feast!

But coarse ground beef is a very rare thing, and I don't know why. Personally, I think burgers made from a coarse grind are great, and when I grind my own I never do a double grind. But quick and easy doesn't include grinding the meat, so I am stuck with what my market has to offer.

I like wings sometimes. I prefer them on the dry and crispy side, mostly because I usually wear my food, and sloppy wings are a mess for normal people, so they are a catastrophe for me! But that doesn't mean I won't eat them. A good spicy Buffalo Chicken Wing is loads of fun.

Anyone making them for the big game tonight?

But the real culprits are those poor deluded souls who shake their Manhattans. These are are the same people who drink fine bourbon with coke, and probably shake red wine with ice too.

However, I will give dispensation to those who use maple syrup on Brussels Sprouts! I tried that last week and it worked nicely. I still prefer Agave, but still...

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

I live in the middle of a crop and cattle state. To the east of us, the ground is too rocky to farm, but it still has good soil and good rain. Consequently, it is one of the premier grass-fed beef grazing areas in the world.

To the west of us, there is not enough rain for crops, unless you have good irrigation wells for your water. However, hardy grasses still survive in those tough conditions. Cattle at lower densities utilize the productivity of that land.

Neither of those prudent land uses takes one damn acre from growing crops. Ivy League educated city-slickers are morons (with a small "m").

I let the son pick the Super Bowl b/c it was his 1st year really watching football and he's a Raven fan...and of course, they lost right before the Super Bowl.

Usually, I do chili or nachos or ribs...but this works well this year (and isn't a lot of work, which is great b/c I had to shop with the hordes today)...

My shops were HMart and Safeway this weekend (the meatballs I got last weekend), so I could have enough produce and allergy stuff for Valentine's (on Mardi Gras) and the Church potluck this week...

One of the reasons why they are so laughably ignorant of the incredible complexity of modern agriculture and food production and transportation is that farmers and the other people in the logistics chain are very good at what they do and make it look effortless.

Somewhere I have a recipe that involves taking a slice or two of bacon, some Dijon, garlic, herbs and white wine, pureeing it, then smearing it under the breast and leg skin of a spatchcocked Cornish hen. That's a winner on the grill, but works well in the oven, too.

Huh, bacon instead of olive oil. I admit, I do the CBD compound "fat" with olive oil on my birds, and it works really well even if you stray away from butter. It is uber-wet to work with, but your hands probably thank you later.

48 This time of year, I either make gumbo or jambalaya. Jambalaya this year. I usually make it in a skillet but I used a crockpot this year. I'm a Yankee, protestant, city boy, so food snobs get bent. I put in 2 cans of diced tomatoes, can of mushrooms, 3 chopped bell peppers, celery (chopped), 2 onions (chopped), Andouille sausage. Let that cook low for 6-7 hours. In the last hour, add frozen shrimp and frozen okra. Used Cajun seasoning and pepper. Made red beans and rice separately, seasoned with creole seasoning. Then, just mix it all up into the crockpot into one big yummy meal.

Chili is usually cooked low and slow, precisely what cheaper cuts like chuck are best for, while sirloin is a very lean meat, and does not fare well under those conditions. It's one of those things where you wonder WTH took you so long to come to the right conclusion.

I now have lots of sirloin but will use it for stir fry.

Also, ranchers don't just put cattle on pastures and leave them to eat and make calves. A lot of work goes into raising them. One of my cousins had a cow-calf operation for many years. The first heifer he bought to start his herd lived for 25 years. That is very much on the long side.

64 It had been a long time since I last tried a martini, but I decided to give it a go because I'd bought some quality dry vermouth (Carpano), and had found a gin I like (Gray Whale).

I certainly liked the result better than my last martini foray with Bombay Sapphire and Noilly-Prat, but it just doesn't do it for me. I'll take a Manhattan, Sazerac, Vieux Carre, or other whiskey-based drink any day. They are much deeper and more complex.

66 I will admit to a Sandra Lee Semi Homemade meal win this week.

I tried the new Satay sauce at Trader Joe's. Knowing I needed a dinner that could "hold" for an hour (one kid eats early, one late), I tossed some chicken thighs with s&p, garlic, ginger, and onion in a crockpot for 4 hours on high and shredded it back in its juices, then kept it warm.

While it was cooking, I took some radishes, sliced uber thin and pickled them with rice wine vinegar, sugar, and salt (1/2 as much salt as sugar - not a lot of either) and tossed them in the fridge.

For dinner, I hard toasted some buns (this is wet, so you want a hard toast), put some chicken, pickled radish and a TB of the satay sauce on top. Lord almighty, was it amazing. My oldest said it might have been better if the chicken had been baked or grilled vs shredded b/c it was wet...but for a dinner anyone can eat at any time all night - a simple (and CHEAP) winner...

67 52 I used to make chili with sirloin steak, and then one day it dawned on me. Chili is usually cooked low and slow, precisely what cheaper cuts like chuck are best for, while sirloin is a very lean meat, and does not fare well under those conditions. It's one of those things where you wonder WTH took you so long to come to the right conclusion.

68 Before the Costco ready-baked, in my physical fitness days, used to buy the two-pack of the frozen Foster Farms chickens and bake from scratch. Slather w butter mixed w garlic salt and rosemary, pour a bunch inside and slow bake for a few hours (? been so long....). Save the cooked juice and boil into a few cups of Basmati rice, add a bunch of cooked edamame w sea salt....Id eat the entire bird, breasts, thighs, wings in one sitting. Was running 8 miles every other day and lifting weights back then and had hyper metabolism, couldn't get away with that today.

If it's close, I'll watch the last couple of minutes. Food plans are salsa, refried beans, lots of melted cheese. Well, 'cheese'. Velveeta. Then a couple of burritos (frozen variety) and corn chips. Yuengling lager to drink.

I was visiting relatives last month and as usual had to cook. We picked up a huge pack of chicken thighs from Costco and grilled them. I was really surprised at the quality of the chicken, and the price was absolutely unbeatable.

Chili meat was on sale, so I bought that. Red pepper, green pepper, onion, leek, a couple cans of stewed toms, black beans, chili powder ( a LOT), unsweetened, dark cocoa powder and several shakes of fish sauce.

Prolly a couple other things. Brought to a simmer on the stove, then put in a 300 degree oven for an hour and a half and went for a walk on the beach.

SAM's here has both boneless and bone-in chicken thighs for a very reasonable price. The boneless are pretty good for various chicken sandwich recipes... like Nashville Hot, which also calls for brining in a big tub of pickle juice that you can find there as well.

Speaking of gamey, I once had wild-caught Scottish Hare at a very expensive restaurant in Manhattan. It was a substantial add-on price to their already obscene pre fixe price. But I’d never seen it on a menu before (or since), and sometimes you gotta say “what the fuck,” so I made my move.

Holy shit it was the gameyist shit that exists on this planet. I could barely finish it. My date (a pinay used to exotic and somewhat disgusting food) took one small bite and almost spit it out.

We eat a lot of venison, mostly whitetails, sometimes mule deer or elk and occasionally moose. I've found it only to be gamey if it was not treated as food right after the trigger was pulled. Getting it out of the field and carefully processed and I think it's preferable to any other red meat.

142 One option I discovered is to get cheap chuck roast and chunk it up to run through the meat grinder on the coarse blade. I have a couple Ideal choppers that are so old they have the original patent dates.
I also do this with pork and chicken, though I tend to can those chopped meats.
It turns a tough cut into . . . Well, easier to chew I suppose. One day I will make chicken fried steak.

I paid maybe 12-16 bucks for four pounds of sirloin at Aldi's last week. Sous vide'd it then broke it down into four one pound containers then into freezer. Mixed up some brown gravy tonight and added a one pound container of beef and let it simmer for a couple of hours. Garlic, but of course.

Two plates spotless. No leftovers.

We had leftovers tonight and will probably get One or two more meals from it. The roast cost $20.00 so I think we're doing pretty well. If we went out the meal would have cost $20, 00. The local highly popular bar and restaurant is closed and the only time that happens is Christmas and Thanksgiving. I'm glad the workers got off the day. When we go there they are very pleasant and deserve a day off.

171 I guess I tuned into the same roasted chicken frequency, CBD. Working the seasonings under the skin is in fact the way God intended. I've been preparing my Thanksgiving turkeys this way for a couple decades now (started at age 9, being a precocious child, don't cha know).

Friday night I mixed oregano with rosemary, chopped garlic, juice of half a lemon, and s&p. Olive oil is my usual go-to fat, and I'd think you'd have less of a mess on your hands, quite literally.

Obviously, you want to slowly work your fingers under the skin to separate it from the flesh . Then, spoon your seasoning under the skin. If it's a large bird (>5lb) , I use the back of the tablespoon over the skin to work the mixture over the breast meat. Make sure you spoon over the drums and thighs, too.

I did Friday's bird at 375, for just under an hour (it was over 6 lbs and I didn't want the skin to cook too fast) on a bed of baby carrots. Almost polished half of it off that night. Went back to it yesterday and will turn the rest into gumbo for the week. Anyway, all this to say that in re roasted chicken, olive oil > butter..

Thanks for asking! She's anemic right now, so no energy. (She's had anemia off and on for probably 10 years, so this isn't new.) She's cheerful and rarely complains, but often doesn't want to eat much except fruit and breads and sweets. (and she has diabeetus) She is also chronically dehydrated and I have little success encouraging or even bribing her to drink more water.

So, I saw a recipe for Game-Day Chili yesterday and i thought I would make it, but then

I noticed that it contained sweet potatoes, but then-

I noticed that chipotles en adobo did most of the heavy lifting for the spice and the recipe also called for a couple of shots of tequila just for joie de vivre of it all. So, I decided to give it a whirl. As the tasting in my brain told me all would be well.

Actually, worked out nicely. The sweet potatoes blended well with the chipotles and the adobo. A nice variation. The tequila was more in the aroma than the taste.

If I make it again though, I'll cut down on the sweet potato by half cuz two is too much and add another pound of ground beef. Probably, switch the sweet potatoes to Japanese sweet potatoes.

Eh, that's all.

Also saw a beautiful cut of picana this week that was rubbed with a chocolate/chipotle rub telling me I needed to buy it and cook it on the grill.

So, I did.

I set the WP grill to 500* for a quick 3-4 minute sear on both sides then knocked the temp down to 400* and roasted the pecan for roughly 40 minutes when the bluetooth meat thermometer read 135* out it came for a short rest and it was a perfect,a puurrrrphekt! medium rare.

Juicy and tender as could be. Just larrupin'. We served it with trollies, guac and pickled red onions.
Yum!

If you haven't tried picana before you must do so. Itmay be the best cut on the cow!

It's overpriced but once in a while is fine and your wallet won't complain too much.

For Lent, you can go full vegetarian and drop the beef for a mix of sweet potato and butternut squash - and this is the chili where cinnamon works with a ton of the chili in adobo, cumin, and chili powder...I don't tend to like chili in adobo or cinnamon as much in beef chili, but when you put the 2 with a "sweet" veg-based chili, they really work...

Picanha is delicious. I first had it at the home of my daughter's mother-in-law, who is Brazilian. She cooks it the Brazilian way, rubbed with a rock salt spice blend and cooked over an outdoor wood fire. It was unbelievable.

I can buy the meat at Costco for $6.99/pound, which for boneless beef isn't bad at all.

Sweet potatoes, butternut squash, onions, bell peppers, canned tomatoes, and black beans...it's actually one of the better ways to make a veg chili that isn't just someone's veg soup that they call "chili" - I've had a LOT of those at Church Lenten soup dinners, so I've now got 2 chili-tasting veg chilis (one with pumpkin/sweet potato and one with butternut squash/sweet potato) that folks love.

I think veg chili without fake meat is an art...

337 soooo...after every holiday, I cruise the markdown meat coolers for those "Once a Year" roasts/products that they stock up on, but some have not sold. If you like turkey or Ham, post holiday they can be bought for under a Dollar a lb, if you time it right. Hams in particular can be Roasted, served once, some set aside for the obligatory sammaches, the rest frozen and kept for numerous other meals, soups..
I don't care for Domestic turkey(or chicken), to used to and spoiled by gamebirds.

Christmas and New Years is the season for great Beef Roasts, rib roasts are often "Prime" rather than the choice ribeyes they have in the steak section, and after the holiday itself are often marked down to hamburger prices. I will generally get several, roast a small one, but cut the rest into steaks, some bone in, some not. Freeze them for summer grilling..
Easter is perhaps my fave...LAMB. CHEAP. They charge ridiculous prices before the Holy Day, then practically give it away after. This year the local Kroger had set out tooo much lamb for their client base...I got a 8.5lb leg, original priced at $79.99 for $23.00, about $2.70lb. Thawed and Cooked it this week,

338 finding the fresh herbs to make the garliky crust was a three store safari, but worth the effort over dried.
The house smells great while it roasts low and slow...
I expected to have more to save in the freezer for future stews, but...first carving I must have eaten 3lbs or so, then kept coming back at it for sammich after sammich over the next couple of days, some of the rarest bits from close to the bone I quickseared as my fried eggs were finishing up for a breakfast. I now find I was only able to send about 2lbs of the roughest, brownest gristliest bits, as well as the bone to freezer bags for later.
Oh, well Easter will be here soon, I'll get another.
