French, Indian, Cajun cuisine. Used to stay at the Marriott there when my boys were in college.

It was a dark and stormy night. Seriously, it was. A convoy of about a dozen destroyers was making a high speed run from San Francisco. They were traveling in a tight "follow the leader" formation. The convoy leader thought they were 20 miles further south than they actually were, and they were about to go past the entrance to the Santa Barbara channel, their destination.
The convoy leader signalled for a hard turn to port, which should have sent everybody into the channel. Instead, almost all of them crashed into the shore. Posted by: Idaho Spudboy at January 19, 2024 11:10 PM (FpTvD) Posted by: Notorious BFD at January 19, 2024 11:12 PM (V8he0) 152

My understanding is, if if you are from the south, you called them crawdads. if you’re from the mid Atlantic or other border regions, you called them crawfish. Crayfish is definitely a northern term or on the coasts.
I like them too, but unless it’s a crawfish boil, they’re not many chances of having them on a regular basis. I think it’s a stretch to compare them to a real lobster, but they are a great way to drink beer and say you’re having a regional culinary experience. No motors, just knobs to adjust the angle of incline. It is a wonder. I love it, I'm sitting in it now. Cost of repair was less than 5 dollars in parts but 2 hours in labor. There is a modern product called a tilt table, but this thing is better. It will decompress your spine. Which you need to do as you age, otherwise you become shorter in stature.

I was at Lowe's tonight walking my dog-- too cold to walk outside. (Lowe's encourages dog walking inside their stores.)
Damned if the store PA system didn't come alive with, "Hi! Travis Kelce here, tight end and member of your Lowe's home improvement team!..." Obviously this man needs more money! How about introducing a new line of Travis Kelce feminine hygiene products? Or a Travis Kelce Mars rover? Be nice to hear Mahomes, Kelce & coach Reid promoting a charity every now and then. I'm sure they give money and time to charity, but I've never heard them do it on air. Posted by: mnw at January 19, 2024 11:56 PM (NLIak) 222
215, depends if the cook is skilled at cooking shrimp or grits. I chuckle when people say they “Hate” grits, It is like saying, you hate starches. Chances are somewhere in your culinary life you ran into a bad cook.
Some will look down on shrimp and grits yet pay $40 for shrimp and polenta. The only difference being a couple of letters. Look we all like alike. I’m not going to go after someone over that. I prefer shrimp and garlic oil or as the Spanish say gambas al alíeoli. 213, I started losing weight when I started adding fat to my meals. Fat is satiating, it balances the meal and keeps you from getting Hungry again. Same with carbs, there is a place for them in every meal in my opinion. It is better to eat something you like and then move on with your business then it ever is to listen to a nutritionist. It was just writing the same clap trap over and over with no new ideas and no one ever challenges them on that BS.
Again, I lost a ton of weight like 80 pounds just by adding fat to my diet. And I did cut out our carbs because there wasn’t any good reason to do that thing. Posted by: Quint at January 20, 2024 12:02 AM (+muyx) 228

As I progress along my path of culinary education the thing that impresses me the most is how to scale up food preparation. I cook for 3 or 4 persons daily. But then I read recipes on how to cook for 20 or so and I am very impressed. Phil from Duck Dynasty once published his gumbo recipe to feed 50 and I can't even wrap my mind around it. Any recipe that requires 6 pounds of okra is amazing.

That's funny. I grew up partly In Sacramento area and always knew them as crawdads. When I worked a job seining tiny fish in the river later in life, we'd occasionally catch them as well. Weeding them out was comical as they tended to take the tiny fish hostage.
Saw this and had to look up the name of the creek I first encountered crawdads in. Found that at least according to google earth, it doesn't have one. Street names are correct, and it's right where I remember it, but no name attached to that particular watercourse. Took me a while to find, Sacramento's a bit bigger than it was in 1973. First thing that struck me about the French Quarter? The restaurants had barkers outside, calling out menu items to passersby. I still remember the guy outside the Fatted Calf, "Y'all wanna come eat here. Food's good and the price is right"
We took him up on it, and I ordered the gumbo. He came in to check on us, asking how the gumbo was. Told him it was great, and he replied, "yeah, and a lot of it, too!" How can you not love a place like that? Posted by: Joe Kidd at January 20, 2024 12:08 AM (NAi0z) 243

I did leave some info out of my original statement there I guess so. I will get more into it to be honest and fair. But I stand by what I said. I lost weight because I paid attention to serving sizes and didn’t snack in between or drink cold beers in between. I am very liberal with butter and other fats not to a crazy extent, but I certainly don’t hold back. In my experience, which is just mine, they help with losing weight in the end. 245 SF Goth, sorry for your loss, my man. You didn’t give any details and I’m not asking for any. I lost a friend that I lost touch with, and then found out later he died of cirrhosis of the liver from his heavy drinking. This probably two decades ago, and I was very shocked when I heard about it because he was barely older than I am. my only response was hell I drink as much as he did, though I didn’t know anything about his life over his last five years.
Again, I don’t know your situation and I’m sorry about that for you and that person’s family. But regarding people who die from actual long-term alcohol use it is so hit or miss. You just don’t know how your body will react. Churchill live to a ripe old age, and he drank like a fish, his son died young because of alcohol consumption. I hope I’m not out of line here because I’m only trying to offer you condolences and also mention yeah we should think about that.. I’ve tried to give it up more than a few times. You can always compare outcomes to other people, and I don’t have the traditional issues that people think of such as DWI familial problems, etc. but I’ve known for many years that I wish I didn’t use it at Posted by: Quint at January 20, 2024 12:16 AM (+muyx) 255

They always turn on every conservative in the sports world yet never say the reason they don’t like them. we know why they don’t like them and why they always go after them. It’s not exactly an enigma.
There’s a reason why so many hated that quarterback who played for the Broncos, they went after him, simply for being a Christian. Now this CJ Stroud seems to be a polarizing figure. Cirrhosis is a *stage* of liver disease, and is not always due to alcohol consumption. Most often, though, people seem to equate it with long-term drunkenness.
My husband was never a heavy drinker, but now has cirrhosis. We think his over-use of acetaminophen is more to blame than anything else. Of course, since he admitted to the Drs that he *ever* drank alcohol-- they call it "alcoholic" liver failure. He hasn't had a single drop of it in years. Bullsh!t. I don't understand the medical industry's need to pronounce 'alcohol-related' vs 'non'-- as the condition remains the same, treatment is the same, prognoses are the same. Blame the patient! Yeah, that's the ticket! ----------- SFGoth-- I'm so very sorry you've lost your friend! Prayers up for all in your friend's circle. Posted by: JQ at January 20, 2024 12:29 AM (njWTi) 273

One weird thing of my life is when I was a child, I would rescue mice and frogs and toads, and "nurse" them, along with my brother and sister, feeding them and keeping them warm (or cold, as the case may be,) and safe, until their ultimate demise or escape. Now, as an adult, these creatures cause panic and fear.

277, they give them too much credit, and we trust them too much but I guess we don’t have much of a choice. I told the doctor once that I dipped and she put me in on there records as a smoker. This is Kaiser Permanente, and I don’t mind calling them out because they can be a bit cultish. I made them retract all of that because I knew if they put me as a smoker I would be in a banished few. Also screw them.
By the way, most health insurance companies and HMO‘s do not charge more for tobacco users/smokers. Particularly with Obamacare companies like Blue Cross do not charge smokers more. the cult of Kaiser Permanente does charge almost a 50% premium to self-declared smokers. my understanding is the records are clear that only a tiny percent reveal this information. I am glad I’m no longer with Kaiser because they are woke cult. But also because they are trying to grift on people and they have no good reason because the people that compete with them do not do so. If you eat, five Big Macs a day , or drink five Maccallan’s a day no worries. But Kaiser is a woke cult, you’d be better off just finding a local doctor. 297, I . I’m only giving mine. But I went on the health insurance marketplace. Only one company gave a premium for tobacco users. That was Kaiser Permanente. Probably Blue Cross is the most famous insurer in the country and I know for a fact they don’t add a premium at least on the health insurance marketplace.
Many people on the left have argued how stupid it is to charge more for smokers because the entire point is to get them to stop and get them insurance and the care of the they need. But to look at it another way. What about people that eat 10 big Mac a day what about people that smoke pot all day? What about the people that drink booze all day and drive on the highway? How can it only be right to give a premium to price out people simply because the used tobacco? My argument is at least half of the insurers. Do not do this. I think it’s higher than half, but I will be gladly open to sing info that says otherwise. Posted by: Quint at January 20, 2024 12:55 AM (+muyx) 301
Current generation of Docs/PAs/NPs love them some ICD10 codes. If a visit is complex, Medicare pays more. Problem is that if they get caught, can be serious jailtime. But the made-up codes never go away.

Same with life insurance policies. I was told fewer than 10% of smokers proclaimed themselves as smokers on life insurance policies. They could have an argument like I’ve said about eating 20 big Macs, smoking, reefer and boozing all day. I hope you’ve figured out where I come from. At this point it has been many years. I tell the truth, even when it hurts me and in a day where many don’t tell the truth I guess it does.
But I had an insurance company that actually charged me a premium for tobacco use. I would look for other insurance companies, because I promise you without any doubt whatsoever there are many who do not in this day and age. Even they realize how stupid it is, considering there are so many other risk factors out there even they realize it’s for some reason illegal form of abuse. 307, 309, that is when I really started to understand how weird politics is. The left are the most boring people on earth. They never will bring you something new. It is always the old tired refrain. Why would they be against tobacco but for pot? I’m embarrassed to say it, but they think of tobacco as the old south hence Republicans. I wish there was more to it but there isn’t.
Why is the left anti-Israel and prop Palestine? The left America and they think of us as conservatives so that sums it all up right there. Somehow tobacco became bad, and Mary Jane became good. Somehow people with traditional values who still love you are bad yet people that would tear your head off on a moments notice like the Palestinians are good. I wish there was more to it, but there isn’t. Look at how the left puts their Ukraine flags up all the time. I think most of us want Ukraine to win. We certainly don’t support Putin’s Russia. But there is something weird about the fetish. The left has with Ukraine and Russia. When someone wears Ukraine pins would wear a USA flag pin to me that’s a tell. in the warped world they think somehow this is being anti-Trump. It has nothing to do with Posted by: Quint at January 20, 2024 01:25 AM (+muyx) 324

I know this is in the side, but since there hasn’t been much conversation going on tonight, I’m going to go with it. If you look at the 1980s, there was a time when people would tell you, tobacco or dipping tobacco was worse than cigarettes. This wasn’t even a left right issue. Everyone believed it to be true and for sure pretty much anyone would tell you dipping tobacco is more likely to cause cancer than cigarettes.
No, I’m gonna be clear here so no one called me out on this I think dipping or chewing is dumb. It’s bad for you and you should not do it. Again, it does not improve your health, it hurts it. But the reality is all of that was done off a political thing that happened in the 80s, and then unfortunate person who passed away as a youth. Legitimate test has shown that chewing, tobacco and dipping tobacco is not even remotely as dangerous as smoking. You cannot find any legitimate scientific paper that says otherwise, not a one. Yet you will still find people today on the right and left that will tell you chewing tobacco causes mouth cancer way more than smoking. The reality is nothing could be further from the truth smoking causes moth cancer way more and Posted by: Quint at January 20, 2024 01:48 AM (+muyx) 332

And all the other cancers. I mentioned this only because it is a perfect example of how the media can convince people even on the both the left and right to believe something that is completely untrue. it is an example of the big lie because everyone fell for it and when they started asking for receipts, they weren’t any.
Again and we’re adults here so I shouldn’t have to say this but again I think chewing tobacco is dumb. It’s bad for you and don’t do it. Scientific that it is not even close to cigarette smoking when it comes to danger for your health, and that includes issues with your mouth. Those are facts I know that will be supported and no one’s going to call me out on this because I already know the papers about it. Don’t do it, but one more example to not trust the media and even the facts we “all” know. Posted by: Quint at January 20, 2024 01:51 AM (+muyx) 335

333, for the most part people argue from their own book. I have used smokeless tobacco for many years over the years, but many of my life years have been sans tobacco. I totally agree with you that cigarette smoke is the worst because it’s all over your clothes and you smell like crap and kissing a girl who smokes is like licking an ashtray, it is a major turn off.
But for some reason, a large percentage of people are more offended by dipping tobacco. They think spitting is the most disgusting thing ever. I could tell them what about how the clothes smell or how the smoke lingers into other apartments or whatever, but they have this incredible prejudice against dipping tobacco. But when they say it’s more dangerous, that’s where they’re actually lying even though they’re not trying to do so. I hear you about edibles my man. I have only had one or two times in my life and I smoked it. I thought the smoking thing was part of the experience but what do I know? I think edibles makes sense because let’s be honest that smell can be ran and if you live near other people that’s not right. if you were on your own property, live and let live. If you’re bothering no one else, then Posted by: Quint at January 20, 2024 01:58 AM (+muyx) 343

When I farmed, from 1980-2012, there were plenty and they could eat a lot of corn before it was harvested. Also no turkeys here until they were reintroduced. Re. The golf professional this is just how this is going. I don’t wanna be a jerk and sometimes you can’t tell how not to be a jerk in this day and age but let’s be honest that’s not a chick.
I think a lot of people just don’t understand you hear so many people say well. The women are better at putting in the short game. It’s all about hitting it far. No offense to those people cause why should they even know about these things, but they could not be further from the truth. The a 200th ranked man could win an LPGA tournament and the number one LPGA player could never finish in the top 10 in a men’s tournament is not based on how hard they hit it and how far the ball goes. If anyone has ever interested in discussing this in depth, I’ll do it, but this is not the time. People realize the top 100 darts players are mostly men as in 90%? Do people know the top scrabble players are men? I will say this it has got nothing to do with intelligence or at least that’s not the main issue., the real issue is the number of men that compete in the sports in that filters down to the point where only the tiniest reach the pro level and get paid. Why does a transgender need to compete in Posted by: Quint at January 20, 2024 02:45 AM (+muyx) 373
Kurt Cobain wasn't a tranny or a cross dresser. He was just a 'Shock the Rubes' type. A more punk Alice Cooper.

I'm so old, I remember when men would wear women's clothing *for the laughs*
People used to (and should continue to do so) POINT AND LAUGH at men in women's clothing! Ah, Flip Wilson's "Geraldine" character.... Posted by: JQ at January 20, 2024 02:46 AM (njWTi) 375
A woman’s golf event, if he was born a man? It would be one thing if he declared himself a woman, and then one on the men’s tour. This is just screwing over women. Again, if you are that good compete with the men. The men won’t bother you too much if you say you are a woman, but at least back up by beating them.
Somebody will say wards golf, blah, blah blah. I won’t say men’s golf versus women’s golf is more separated than say, football or baseball if women even do those things. But I will say women can’t compete on the PGA tour and they have proven that over decades. Now you have fake women trying to mess up the women’s tour? 374, transvestites aren’t even a term anymore because they are not extreme enough. Just like vegetarians are barely a term anymore, as they are themselves are not extreme enough

I just use 70% alcohol spray. I don't like the smell of vinegar (unless it's with fish and chips). Posted by: SFGoth at January 20, 2024 02:53 AM (KAi1n) 380
Now you have fake women trying to mess up the women’s tour?
--------- Yes. Because they're sore losers who can't compete (and win) against men. So, they need to stroke their egos by "winning" against women. Or maybe they just h8 wimmens, and gotta beat 'em any way they can get away with? Posted by: JQ at January 20, 2024 02:53 AM (njWTi) 381
I once fessed up to being an occasional smoker in the doctor's office. They have me down as a moderate smoker. I told them I smoked a couple cigarettes a day. Told them I quit. Still there. Something wrong with the healthcare industry. They're compiling evidence, planting it almost.
Posted by: Eponymous Cracker at January 20, 2024 12:35 Yep, EC. My new GP read my listed history from my main hospital;s site. I was told I have coronary heart disease, WTF? Turns out it comes from one time some pre-op tests showed a small artery blocked. After several yrs and various meds another pre-op test showed no such thing, but that was not noted. I guess it's to their advantage to keep you on record as sicker than you are, it's all BS. You need to be responsible for your own health and watch closely today's "medical practitioners" and how they treat you. Good luck to us all! 384 I'll put a bit of bleach in for more serious jobs. Peroxide, lemon juice, tea tree oil, etc. Essential oils are awesome all by themselves - you can make anything from a potion to keep the cat from clawing the couch to a mosquito and bug repellent that doubles as an air freshener.
