He loves to send me irritating recipes that are guaranteed to piss me off, and he has done it again. A Restaurant Trick for Tender, Flaky Salmon Every Time is just stupid! I doubt very much that using a salt brine is qualitatively different than simply salting the fish beforehand, which is what I do with every fish, and for that matter, every protein I cook. It's nothing more than the pomposity of the typical commercial food site that is desperate to publish a non-stop train of crap. They tweak recipes with minor changes then trumpet them to the world; they take typical, obvious, standard technique and pretend that it is revelatory. They are journalists first, cooks second, and that should tell you everything you need to know about them and their output. From commenter "Kathy" comes what she claims is the Platonic ideal of pie crusts. No pressure at all! PERFECT PIE CRUSTS (by cousin Joy)Can anyone explain what the vinegar does? So...I was going to make this a section on great leftovers recipes, but the intertubes are bereft of anything remotely resembling actual good advice. My go-to is tossing whatever there may be into an omelet or scrambled eggs. That rarely disappoints. And of course chili is rarely diminished by a pound or two of chopped brisket or roast beef. What I have been doing recently because I often have a bit of extra sushi rice in the refrigerator is to use that as a base. It reminds me of when I was young and poor and made big pots of rice or noodles mixed with whatever I happened to have in the refrigerator. A bit of ground pork, some hot chili paste, some vegetables, and away I went! Am I the only one who remembers cheap meals from my youth with some nostalgia and pleasure? From commenter "someone who prefers not to be named" comes a recipe that...um...might be a troll. Or it might not! Christmas Lima Beans with Roasted Spinach, Mushrooms & Shallots I'm not a big fan of Lima beans, but then again, RedMindBlueState's mom's recipe for Gigante beans is absolutely incredible, and they look damned close to Lima beans. They aren't, but still... ![]() The oyster imperative remains in effect, and send pork rib roasts with the pork belly attached, carrots that don't taste like stalky chalk (and speaking of vegetables; were all of our snap peas stolen by space aliens?), garlic...lots of garlic! (and basil! My basil did not do well this year!), well-marbled hanger steaks and elk chops to: cbd dot aoshq at gmail dot com. And don't think that the rest of you are off the hook with maple syrup and French Toast: so why don't you put maple syrup on your steaks and chops and chicken? But the real culprits are those poor deluded souls who shake their Manhattans And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle. Comments(Jump to bottom of comments)1

Since some of my girls are married now, and there are multiple families in the area, we had our Christmas dinner last night, and opened some of the presents. It actually worked out well, because it really cuts down on the stress. I spent two days cooking beforehand, because retired and I can.

The Pan Bordelaise was gobsmackingly good. I can't recommend it enough, especially since you'll have lots of scraps left over after trimming the beef. It is cold and rainy on the Gulf Coast so Mrs928 decided that Christmas Eve dinner would be three different soup/stews and lots of garlic bread. Our boy drove down from Tennessee and we have invited an old friend, in both senses of the word, who doesn't have family to join us in an hour, and then candlelight service at church at 7.

I once invited a family to join us for a Christmas feast. The table was set with a nice tablecloth, coordinating placemats and napkins, and a spiffy centerpiece with The Fatman front and center. Somebody said "Hey, where's that cat of yours?" Said cat's nicknames were Fat Bastard, Psychofunkapuss, and Destroyer of Worlds, among others. Kitty was hidden in the silk floral arrangement atop the china cabinet. He jumped down in the middle of all the finery and china, glasses, and decorations went flying. For Christmas, I'm getting a 24 quart stockpot and a 12" carbon steel skillet.
The big stockpot (http://tinyurl.com/4zcwd7e6) is because I've decided to make demi glace (http://tinyurl.com/2p99cmmn), and it takes a long time, so making a little is dumb. I want the skillet for frying protein, and it's nonstick once properly seasoned. (http://tinyurl.com/2cw754sw) The next acquisition will be a 12" AllClad or MadeIn stainless steel skillet. I'm sorry to have missed the Book Thread, but Miss Linda and I went to eat at our favorite coffee shop/grill -- they were open today from 8 to 2 -- and then we cruised around the nearby mall. This mall goes back aways; it was the first I ever knew. And it's good that it's still chugging along. But it was not crowded. The area's Big Mall on the other side of the river? We went to the Cheesecake Factory there on 12/24 a few years ago. I could hardly find a parking place. Insane (as were the CF prices). Anyway, we'e planning on having some shrimp this evening before I drive us out to her church for the 11 pm Mass. Still drizzling here, but not cold, only about 65. Scotch eggs made. Had never made them before. My sister usually made them but she retired and moved back to Pennsyltucky to be near the parental units. So, I made four of them. I'm going to Christmas Eve service here in a bit so I'll eat a couple of them when I get back. Basically, Scotch Eggs are hard boiled eggs and ground sausage. Wrap the ground sausage around the egg, bake at 350 for 45 or 50 minutes. That's the simple method. The internet has others, more fancy and time consuming. I'm lazy. Like my method better.

I just ate the last bit of winter squash. That was fairly simple to prepare. I just cut it in half, took the seeds out, baked it, and then put on butter, pepper/salt, cinnamon. In retrospect, I didn't need the cinnamon. The squash was sweet enough. I think it was butternut squash. I didn't know winter squash came in a variety. (shrugs)

I'm in Rome. Yes, Rome, Italy. It is currently 10:30 pm here and it's been a long day but wanted to chime in with my best leftover recipe. It is Stroganoff. I used left over pork cutlet or steak which I have made in a cast iron pan and sliced so pink inside, eaten half and put half in the fridge. Sautéed a large yellow onion, shallots, mushrooms in butter, tablespoon of flour, add broth. Add meat. Handful of peas. Simmer til just warm. Take off the burner, Dollop of sour cream. Mix in.

You could also use hard white flour as well since it has less gluten. Cut the ribs off, cut the fatty tail off the narrow end, then sliced it a bout an inch think. Got a bunch of very beefy ribs (which the wife likes) and about 40 rib eyes in the deep freeze. If you go to Aldi's, the Momos were part of their Journey to Nepal section. All straight forward ingredients, and reduced to $1.99/bag from $6.99/bag, so it was time to buy.

I forgot the oil in the beef rub (did dry vs wet)...and it turned out better, especially the later red wine sauce. So, here's to an oops now probably being the norm... SAUERKRAUT (recipe courtesy of Cousin Grace)
In a moderate saucepan with lid, fry 8 slices thick bacon until crisp. Leave grease in pan; drain bacon, crumble and set aside. Saute 1 medium onion (chopped) in bacon grease just until tender. Add 1 bag raw (or 1 large can) sauerkraut; mix thoroughly. Add 1/2 jar (large) unsweetened applesauce; mix. Add crumbled bacon. Bring to simmer; then cover and simmer all day -- at least 4 hours -- the longer, the creamier. Can also be baked in oven or slow-cooked in a crock pot. Serve warm or cold. the cherry pie didn't come from the deli, it was gifted by a woman who makes pies. I'll have to ask her about the vinegar in crust thing.
When I was at the store, i saw a sales slip bearing a distinctive Italian man's name, we know only one goomba with that name. The other word on the slip: BACCALA the guy's phone number was on the slip too. So I checked my contacts and sure enough it was the old Guido who was dad's buddy that ordered the salted cod. The use of leftovers as an economic necessity, typically with scrambled eggs or 'what's in the fridge' soup, normally worked out pretty well. It still does. What was a need back then tastes as good now for frugality. The approach sparked other items that also work like old bananas turned into banana bread or apples that have lost their crunch becoming apple topping.

I prepared a beef tenderloin for yesterday's early Xmas dinner. 133 degrees for about 3 hours in the sous vide pot, and it was perfect. Side dishes were stuffed mushrooms, roasted potatoes, Brussels sprouts, and carrots. Mom baked both pecan and pumpkin pies, and yes I had two servings of each.

I'm generally more concerned about the food on the table than the arrangement. There are exceptions, at least there have been in the past. I doubt there will be any particular nod to Christmas, with the exception of my beautiful placemats (holly decor).

Well, I made kuku sabzi today for tomorrow. I was assured by the author of the book it's a Persian omelet. But it sure turned out a LOT more like I made a pancake out of spinach, held together with some egg. And that's after upping the eggs from 8 to 10. We'll see how it goes over tomorrow - if anyone comes over. The wife got sick today.
But the cornbread is all done, the rice & 'peas' (a Jamaican rice and beans) is done, and the cucumber and tomato salad is in the fridge. Tomorrow is haggis-stuffed turkey, pancit, and a ham (my son always loves the ham, and I have potato soup to make for New Years with the bone). Oh, and a whisky sauce for the turkey. It was absolutely beautiful here yesterday, sunny, clear and warm. Boy. F. and I hiked 5 miles to Chinatown and had a traditional Jewish lunch of har gow, xiao long bao, shrimp rice noodle, and Mongolian beef. Chinatown was teeming with people shopping for Christmas, it was good to see.

The pork rib roasts are brining for the Crown Rib Roast tomorrow.
The prime rib roast is defrosting. The Yorkshire Pudding is but a gleam in my eye but will soon manifest itself tomorrow as golden deliciousness. Tonight, tamales anguac and queso!!!! I *LOVE* everyone making their own kinda thing for Christmas! I try to do something "non-traditional" for each holiday.
The pancit is in honor of my new DILIT (her family is Filipino and Italian). The Persian 'omelet' is because it was ~100 pages later in the cookbook and I wanted a different vegetable dish. The Jamaican rice and beans is also ~100 pages later. And the rum raisin carrots are from an Italian book I've had for a long time. So, it's just good food all around. I can't, not well. But Samin Nosrat, the author of "Salt, Fat, Acid, Heat", can and does. It's the acid. Something something flavor enhancement...? I wish my memory wasn't as awful as it is, or I'd remember better. The book is really great for amateurs like me, and maybe even more seasoned (heh) chefs will enjoy it. Anyway, since reading that book, I've made a point of adding a few drops of some kind of acid into lots of things, not for its own flavor, but for how it enhances everything else. When I 'taught' in inner-city schools I was forced to explain to The Stupidest White Women Imaginable that many of their charges had never in their entire lives had a sit-down meal with plates and utensils.
Doing utility disconnects it was not unusual to see a 'babysitter' feed a pack of children on paper plates, or even a garbage bag, set on the floor where the children would crawl on all fours, like dogs, and eat with their hands and fight with each other over scraps. Then, try to explain to these idiotic 'teachers' how one needed to respect this competitive culture if one was going to get them out of it and not do some hand-wringing horseshit about how 'sad' it was/is. WHY ADD VINEGAR TO PIE CRUST?

It's coarse ground yellow cornmeal, stirred while boiling in lightly salted water until it is stiff enough to turn out on a plate. It stands like a wheel of cheese and is served sliced with a beef roast and gravy, or roasted rabbit and gravy. Leftovers are awesome sliced and pan fried and served with chili . Like I said above, it comes out of the pot in a disc shape. For a family meal with leftovers it covers a normal sized dinner plate and stands about 4-5" tall. When I got out of the Navy I traveled across the country on my Harley to stay with a friend in South Carolina. I dragged a trailer for my dog so had a bit of extra space for a camp stove and pot. Each evening I'd make a pot of rice, add a can of vegetable soup and a bunch of curry powder. I'd eat about half the pot, then pack and eat the rest for lunch the next day. Rinse, repeat. Cost me about $2 a day. I made it for guests once but fancied it up by offering raisins, peanuts, crushed pineapple, as optional toppings. They seemed to like it and I didn't tell them that it was my hobo dinner food.
