Food Thread: Don't Ham It Up, This Is A Serious Place

That's the sort of thing I think about when I think about ham. But there is a vast world of holiday ham about which I know almost nothing! I am not suggesting that I don't eat a slice of traditional baked ham when offered, but it isn't in the rotation. I remember when the spiral-sliced hams came into vogue...that was fun to eat at Christmas parties, but again; it simply never entered the, "What should we make this week" discussion.

Why do I have ham on the brain? Well, my local supermarket has about 25 feet of refrigerator case filled with hams at a respectably reasonable price. The last time I had a whole ham in my refrigerator was about 30 years ago, and it was from a wild pig, and it was stupendous. I know I won't be getting something that good, but it is tempting...

Why Americans are going hungry despite a strong economy

By traditional measures of the economy, where unemployment has been at historic lows and wages have been rising, more Americans should be prospering and the need for help with basic necessities like food should be easing after surging during the pandemic.

But those on the front lines of feeding the hungry say they are seeing the opposite. Instead, they say a growing number of Americans have been seeking out help from food banks and government food programs over the past year amid a perfect storm of persistently rising costs and shrinking programs to help households cope with these growing expenses


As is their wont, they lead with a sob story...a woman whose $2,400/month budget is insufficient to feed a family of seven. What? That's $80/day, and unless she is serving them high-end stuff, that should be plenty!

But the real issue is of course the careful, willful ignorance of what inflation is. Two years of high inflation trumps the lagging rise in wages. And read a few paragraphs in and you will discover that social programs are being cut. On what planet? They don't specify, but the multi-billion dollar boondoggle of government spending on every social program in America apparently is just a figment of our fevered right-wing-Nazi-white-supremacist imaginations.

This is just pure, unadulterated propaganda, and it isn't even done well.

I guess this is interesting, but really, if red wine gives you a headache...don't drink it. Or am I missing something? My new internist thinks I am an alcoholic*, so it is entirely possible that my thought processes when it comes to alcohol are warped.

My new hobby is becoming a bit of a pain in the ass. Now I have to seek out better rice, better seaweed, and definitely better pickled ginger, since the stuff I bought on Amazon was horrid. There is a huge Japanese supermarket about 30 minutes from here, and I got a bunch of really good stuff from there a few weeks ago. But still, my technique is mediocre. Those sushi chefs really are skilled!

80% white flour and 20% rye flour. 24 hour cold rise, then handle it as usual once it warms up. Damn...it is delicious, and I think some of that flavor is the new starter I got from a fine restaurant's chef, who took pity on me when I begged for his starter. The fun part of this was I didn't knead it much at all. I just stretched it a bit after the cold fermentation.

I think I may have been overthinking this whole Sourdough Baking Is HARD! thing.

The oyster imperative remains in effect, and send pork rib roasts with the pork belly attached, carrots that don't taste like stalky chalk (and speaking of vegetables; were all of our snap peas stolen by space aliens?), garlic...lots of garlic! (and basil! My basil did not do well this year!), well-marbled hanger steaks and elk chops to: cbd dot aoshq at gmail dot com.

And don't think that the rest of you are off the hook with maple syrup and French Toast: so why don't you put maple syrup on your steaks and chops and chicken?

And yes, I used to demand fancy bourbon, but let's face it, $1,200 for a bottle of bourbon is just stupid, insulting, and a ghastly affront to most people's palates and wallets. I think the sweet spot is $40-$60 for excellent and interesting bottles, and bumping that to $100 gets you an incremental improvement in quality, but nothing mind-blowing. More than that and I think you are paying for hype and rarity, which may look good in your liquor cabinet, but doesn't translate to more quality in the bottle.

11 My Week In Food

Made chili yesterday- doubled up on the red beans. Yes, I put beans in my chili*. It was good. I made some Jiffy cornbread and added an 8oz can of sweet corn to the mix. Came out good.

Found some nice tenderloin steaks on sale, about $5/lb, so looking forward to that.

Also the grocer had 8ct boxes of cinnamon streusel biscotti on clearance for $1.25 each, normally $4.99, so I hit them hard on that.

16 I'll start: Quality control has gone down the shitter. Help has been almost impossible to get so quality has plummeted, including such basic things as making sure a package marked as having say 12 ounces in it, actually has something like 12 ounces in it.
Today I felt a difference in an individually bagged product and weighed them. 9oz nominal, they were anywhere from 8.5 to 11oz. A win for the consumer in this case, but I've found ranges of up to 4oz in a nominal 14 oz package.
That is a very serious QC issue.

19 A wonderful selection of topics today, CBD.
The ham is similar to the classic Smithfield ham, cured and dry. Slice very thin for ham biscuits.
The beef is rare as intended.
The question of the rice for sushi is one I think I have a bead on. Slightly undercook enriched white rice it will come out sticky, not loose. Or overcook it, I forget which. Maybe some luck is involved... I've seen previously cook sticky rice where all you do is heat it up in the microwave.
The new "science" says no amount of alcohol is safe to consume. OK "scientists". Your concern is duly noted.
Reminds me, I need to pick out a nice pinot for tonight...

Last night I mixed up a Dirty Russian. Normally this is done with chocolate milk, but I used reg milk and Hershey's Special Dark chocolate syrup. The resultant cocktail was delicious, after which I fell asleep for 3 hours.

Take it to the produce department and put it in those scales. It's becoming a SERIOUS problem. A 20-25% variance is a SERIOUS issue. I tried to explain this a year ago to Grammie Winger, and AOP butted in with his know-it-all-ism about 'I'm vigilant in my shopping Blah Blah Blah' and he pissed me off then and I haven't forgiven him for that. But yes, check the weights of bagged things, QC has utterly gone down the shitter and when we 'grocers' stock, unless you handle things physically and can call it within a few ounces you will not be able to tell.

30 Speaking of filet, I seriously wonder if some asshoe at the processing facility where I got last year's steer switched the filets with a shoulder roast or something. The rest of the beef tastes fine and the other steaks are about as they should be but the 'filets' are so tough they're more like shoulder roast or something.
Any suggestions on marinade, tenderizing or maybe.... sous vide???

Had to do Amazon returns at Whole Foods last night - brought my daughter b/c she loves their fresh ground honey roasted peanut butter. Container to make it was empty. Couldn't find anyone to ask about refills for 15 minutes, and then found out they wouldn't refill it. Came home and found out we could make our own with Aldi's peanuts, a little oil, and honey in 3 minutes in a food processor. Whole Foods loss - kid never wants to buy it there again. Ended up walking out buying nothing.

My Italian gf came up with a ham from wild boar, from one specific province in Spain, that only ate wild chestnuts, that was extraordinary.

37 I made wagyu steak (NY strip) for me and my mom last night. It’s obscenely expensive, but it was on sale for half (!) price. So I said what the fuck. Still, I was skeptical it would be worth the money.

Spoiler alert: it was up there with the best steak we ever had. Sous vide at 119. Then pan-sear each side in butter for some crunch and to raise the internal to maybe 125. I nailed it.

Note, this wasn’t the wagyu that’s so fatty it looks white. This is an American wagyu that looks like a very nicely marbled prime cut.

42 There used to be a time when I needed help from the food banks. I gave a chunk of change to them this month and also took in dog and cat food for the pet food bank. Will try and do the same next month as donations dry up after the holidays.

Saw my neighbor at the store and happened to mention I give my dog steak fingers. I think he was shocked. It's 8 of them for $7, so doesn't seem like an expensive treat to me. But I do realize how badly folks are being squeezed right now.

60 My food story of the week. I was going thru pantry and found a box of wild rice from the Indian rez. in Minnesota. Long grain, black in appearance. It took considerably longer than white or brown rice to cook. When cooked, not much flavor, so I added butter and salt. We were already having collard greens and ham that night so the wild rice was added to the menu. Surprisingly, no one complained. I even liked it.

It’s a total game-changer. I was skeptical but my brother raved about his. So I eventually bought one. I’ll never make steak without it again. I’ll still throw some steaks on an outdoor grill for a BBQ or outdoor party, but that’s for the aesthetics of an old school grillmaster. I know the steaks won’t be as good.

62 So, I have some sick folks here, so it's chicken day.

I had a butter chicken spice pack from my favorite Indian brand. Rather than make it the way I usually do, I'm baking chicken thighs with just salt and pepper. Then I did a big veg saute (eggplant, bell pepper, onion, green onion, celery, spinach, cilantro, garlic, ginger) and made the sauce over that (with coconut milk and olive oil as my dairy subs). And we'll have white rice and raspberries.

And the nice thing about the coconut milk is it also soothes out spice levels for Indian food (higher fat level than most dairy adds), so it's comforting for the sickies, if they do want it.

67 Last night was our game group’s Christmas night (adventure: The Lich Who Stole Christmas) and I was hosting, so I made a nearly bog-standard Crock-Pot Spanish Rice. It called for two pounds ground beef, but I had a pound of sausage in the fridge so I did half-and-half, which did not seem to hurt it.

Mexican Corn Bread from one of Renny Darling’s cookbooks. Red Pepper Relish from an Ideal Christmas Cookbook for the corn bread (as well as some of the very hot jalapeño sauce I made from the 1916 cookbook last week).

And because nobody brought dessert and I always have some on hand, a Coffee Cloud Pie from the same Christmas cookbook, made with marshmallows, coffee, and brandy!

Someone else brought an amazing banana nut bread with chocolate in it. And the DM brought her grandma’s gallino tortillas.

It was a very good Christmas meal. And we earned a bit over a thousand XP each.

76 I have turned into a regular baker of bread. I did this long ago, way back when, but now I am focused on bread I bake in a dutch oven, and which requires a pretty fast first proof (2 hours).

Results have been good, and consistent. I am using a small 2.5 qt pot, and parchment paper lining.

Small amount of active dry yeast, small amounts of salt, sugar, apple cider vinegar, and bread flour. I flash the oven on for just a minute or less and proof the dough in the oven at a little over 80 degrees.

I've made chicken tacos (and turkey, the week after Thanksgiving) starting from both raw and pre-cooked chicken. Turns out fine either way. Once the meat is sufficiently cooked and diced the process is exactly the same as hamburger.

Then again I'm not exactly known for a discerning palate, so take that into account.

If it's precut in strips, I'd just cook it in pan with some olive oil, brown on both sides, and then when it's almost done, add the spice mix and a touch of water (if needed) to finish it - usually the chicken gives off enough fluid, you may not even need water...

I got the idea for it from the book 'Isolate' by Lee Modesitt . The man is a very experienced sci-fi writer but the book series is basically political conferences and Filipino food.

Still, the main character loves quince on croissants in the morning and I can attest to the tastiness of that.

156 Made bread again yesterday - simple, fast rise and then in a dutch oven inside a 500F oven for 40 minutes. Chewy crust, decent crumb.

My wife was taken out to the new Italian place in town by friends - it had a great reputation. She brought back the bread served. It was garbage. I swear they bought the week old stuff thrown out by Wonderbread.

They didn't even know to serve some good, herbed olive oil on a small plate for dipping.

That's so true...

As for making due, one of the reasons I've included a ton of veg in meals this year is that fresh veg has somehow been the cheapest thing in my area this year (so many produce loss leaders every week IF you'll cook them, so few meat/fish ones), so if you can't increase the meat portion, extending it with veg is the healthiest way to go, especially for teens...

Fennel is wonderful in soups. I made a roasted tomato fennel soup a week or two ago (with seared scallops) that was quite nice. And it is good with potatoes. I made a potato gratin several years ago with fresh fennel that I should revisit.

Yes! The other key is not buying prepared and junk food and NOT eating out (or fast food). I'd be curious how many expensive shortcuts she takes, and given she has teens, how many bags of doritos, freezer meals, etc. she stocks -- those have always been expensive, more so recently. Not only is it healthier to cook from scratch, it is generally cheaper (provided you're sticking to standard ingredients/limited ingredients per recipe).

189 PERFECT PIE CRUSTS (by cousin Joy)
4 c. flour
1 tbsp. sugar
2 tsp. salt
1.75 cup Crisco
1 large egg
1 tbsp. vinegar
1/2 cup water

In a large bowl, mix flour, sugar, and salt with a fork. Then add Crisco and mix well with fork until crumbly. In a small bowl, beat egg, vinegar and water. Combine the two mixtures, stirring with a fork until all ingredients are moistened.

Divide dough into 6 portions and, with your hands, shape each into a flat round patty ready for rolling. Wrap each patty in waxed paper and chill for at least 30 minutes.

Roll on slightly floured board. Makes 6 single shells.

For baked shells: Line pie pan with pastry. Prick bottom and sides with a fork. Use pie weights to prevent ballooning of crust. Bake at 450 degrees for 10-15 minutes.

Miserable overcast day with rain here in SE PA so 'comfort food' dinner. Spaghetti and meat balls and a salad. Gotta have croutons in the salad so had to mince some garlic, add some butter, nuke it in the microwave for a short bit, then brush the combo over plain old toasted sliced bread. Then into the oven at 350 degrees for exactly one minute then 'Keep Warm' mode (175 degrees) for an exactly indeterminate long time.

Then pull the toast out, cut into quarter inch pieces and add to salad. Every bite of salad gone, spaghetti and meatballs demolished. The hardest part, and most enjoyable was the croutons. Store bought will crack a tooth or three, while my method is so delectable and soft and easy to bite into.

My personal conspiracy theory is that garlic consumption prevents cancer as I've never met someone in my relatively long life with serious garlic breath so inflicted. Not a one. N=? Math.

I found a brand Dorot which sells packages of frozen diced garlic in little push-out pods. They also have ginger in the same packaging. I've used both and they're tasty.

During a family gathering at their farm a few years back, I cooked two pork shoulders low and slow. 1.5 shoulders disappeared half-way through the meal. The other 1/2 shoulder was saved for those still working. It was a daunting task to protect that pork. Of course, my secret sauce recipe had nothing to do with the excellent results.

Yup. For example, taught my teen son how to cook a burger, bought hamburger when it was on sale (like in a 2-3 lb pkg), then formed 1/4 lb patties and froze them. Of course, a quick omelet with some cheddar and deli ham or a grilled cheese are easy to stock ingredients for (except during that weird egg shortage) and cheaper/healthier than prepared freezer meals or fast food. Food is still a lot more expensive than it was 5 years ago, but poor decisions/poor planning can really cost you.

This is totally unscientific but... my wife and I shop together at Aldi's. I shop the outside perimeter of the store, where the protein is. I have a good idea what is needed and what good prices are. Wife shops the 'inner aisles'. She was taking forever last trip so I 'cashed out' on my own. Now this is like three week supply of protein, maybe even more... $102.00 was my total.

She pulls up, I help unload. Her total was more then $150.00 shopping the inner aisles. I suspect she bought some junk food. Not my thing, hers. But she's like size 0-2 so what can I say?

Take the individual cloves and smoosh the contents (which now resembles butter) out and serve with either crackers or baguette slices. To economize, bake about a half dozen or so this way.

I had a nasty mole on my shoulder a couple years back and I read an 'old wives tale' about adhering a garlic clove to it before going to bed. The other thing that works, though it's may not be popular here: having a set menu per week (or other increments). If you have predictable patterns (e.g. Wednesday dinner is pasta, Saturday is homemade pizza) it's easier to shop and in general, much faster as you spend time hunting down new ingredients or last-minute runs to the grocery. This is something that we do with my aging parents who are past the point of needing to be wowed or surprised by meals.

The Director of food purchasing at the facility, which was charging the residents in the neighborhood of eight thousand dollars a month told her he had a food budget of less then five dollars a day per resident. With Bidenomics that number might be seven dollars a day now.

HaHa ... Oh, I couldn't ever say that, as I make a conscious effort to never lie ... And earlier this month I had a major OOPS preparing cookies ... The cookies were for a family swap, and they were the "snowball" type covered in powdered sugar which I've made for decades ... Well, I measured out all the ingredients to make a batch-and-a-half EXCEPT for the flour which I measured out as only a single batch quantity ... The dough rolled fine but, once the heat from the oven hit the balls, they immediately flattened and merged together with all the dough on the baking sheet ... I had a good laugh at myself -- and took a photo to share as a reminder that we're all human.

Last night I mixed up a Dirty Russian. Normally this is done with chocolate milk, but I used reg milk and Hershey's Special Dark chocolate syrup. The resultant cocktail was delicious, after which I fell asleep for 3 hours.

Depends on the product. I refer to prepackaged product shipped to us that we stock onto the shelves. We cannot check every single fucking bag for fractions of an ounce but I'm now seeing wild variations, up to 1-2 ounces in 9-14 ounce bags. I did not see that before. Your complaint is noted but you do not describe what sort of weighing issue there was or is. Checkout lane scales? that is a State issue and nothing like what I am discussing here. Otherwise your complaint is nonspecific and there is no way to tell if you're just a crank.

My buddy does that with bourbon. I buy bourbon cuz I like to drink it. He buys super expensive stuff and takes selfies with it.

We get the whole spectrum thanks to the Gulf Stream. In late August through September we get schools of yellowfin just offshore. They are a blast to catch.

333 I have to pick up a ham tomorrow for the Christmas feast. You all are giving me some insights. I already knew to avoid Smithfield; too much added water since CCP bought it.

I've kept the weekly grocery bill under $35 by hitting the last-chance items. Got a bag of pre-shredded bag of carrots and cabbage for $1.25 and used it in a soup. Also got four bruised apples for 99 cents and baked them for desserts this week.

I have to agree with Elric Blade about paying for other people's food. In Michigan ALL students have free school meals. Somehow, that hasn't made a difference in budgeting for necessities.

He also encountered armadillos and bobcats when we stayed in a mountain cabin for a couple of weeks- he and the bobcat scared each other, but the armadillos had absolutely no fear of this 140 pound dog!

338 There used to be a couple Honey Baked Ham outlets near me but they all closed. I figure Costco was too much competition for them. Costco sells a pretty good spiral sliced ham.

We used to get HBH 20-30 years ago when they had a monopoly on spiral sliced hams. It was relatively expensive but a nice treat. Now they're charging $20 a pound, and it isn't really any better than any number of much less costly spiral hams.

Hot sauce, In Particular GREEN hot sauce.
I had some Green McIllhenny Tabasco when it 1st came out in Lousiana, before National release...LOVED it. But since then they have changed the formula, it's not as good. I always have some green Cholula around, but the bottle is getting low and today at the Kroger I noticed there is now about a dozen different/new green sauces.
Recommendations for another brand?
