Last night, final pax from Hobby Airport to Island Hotel... As usual, I asked "what do you do?" He said, he's an agent for DOJ "Three Letter Agency". Didn't say which one, didn't press him on the matter. But he said that many people react badly, emotionally, argumentally, when he'd tell them which one. Conversationally, I told him nothing about my background, interests, activities, associations. (you are all safe, I didn't drop a dime). Further progress on the Ford. Took out instrument cluster last night. Had planned on replacing the 4 gauges surrounding the speedometer, but refurbished them instead, when I learned from Internet searching that they should be compatible with the sending units on the later Ford engine. Took the "boinger" (gauge voltage regulator) off the '74 Ford van cluster, and mounted it on this one. Tidied up the wiring, repainted the needles on the four gauges, and took the purple glass filters off the dash lamp bulbs. Ford used a "black light" instrument cluster, which was way cool, back in the day, but the fluorescent paint did not age at all well, and the glow has gone. Lights up like a Christmas tree with four bulbs in it.

Welp, just put away 7 quarts of beef in wine sauce with mushrooms, already have 12 pints of chicken pot pie filling, four jars of pickled salad, and there are 10 pints of french onion soup in the pressure cooker, due to be done in about 15 minutes. Tomorrow I'll put up about 6 lbs of chili with beans and that should be it for another month or so.

Beef with mushrooms in wine sauce always sounds like a good place to start, tcn in AK.
To me, the best smell to come out of the kitchen, the most comforting, the most soul-warming, is the smell of beef bones being browned then turned into a long, slow-simmered broth. Best damn potpourri around. And the anticipation of the dish to come from that. Now I've been known to do a beef-mushroom-barley soup from that beef bone broth. 1/4 lb. bacon - chop it up and cook it down. Add 4 cups diced onions (3 nice big ones), and then brown 4 lbs. round steak or round roast cut into chunks. Add 6 cups chopped carrots, 2 lbs sliced mushrooms 14 cloves of garlic, 2 tablespoons parsley, 1 tablespoon thyme, 1 quart of beef broth or stock, 2 cups dry red wine (test it first to see if it's good, naturally), 6 oz tomato paste (the little can), 1/4 cup Worcestershire sauce, and 1 tablespoon of salt (less if your stock is salty). Boil it 5 minutes, put in quart jars with 1" headspace, process 90 minutes at 10 lbs. You can thicken the sauce when you open the jar, or just dump it all over rice or mashed potatoes. I've never had leftovers.

7 cups sliced cucumbers, 1 cup sliced onions, 1 cup sliced bell peppers. I use a mandoline for that. Mix in a big bowl with 1 T. salt, and put ice cubes over it for about an hour. Meanwhile, boil one cup of white vinegar with 1 cup of white sugar (seems awfully white, doesn't it?), 1 teaspoon celery seed and 1 teaspoon mustard seed. If you want it spicy, slice up a jalepeno or two and add it to the peppers. Drain off the water from the veggies, and put them into four pint jars. Pour the hot liquid over them leaving one inch headspace. Waterbath process 10 minutes. Chill it before serving, and put it over lettuce or just as is.

French onion soup: Slice up 4 lbs of onions. Caramelize them in a little butter and a bit of white wine. Put 3 quarts of beef stock in a pot with 1 T. salt, 1 t. black pepper, 2 cups white wine, and 1 t. thyme. Once the onions are ready, toss them into the pot and bring to a boil. Put in 10 pint jars with 1" headspace, process 60 minutes at 10 lbs, or in quart jars 75 minutes at 10 lbs. Serve with a slice of baguette with melted gruyere or swiss cheese.
