Hrothgar's Easy Baked Pork Chops - "The Deplorable Gourmet Page 284"

I'll be honest, there are some disadvantages with living in The Frozen Tundra. One of those is that the nearest 'Butcher Shop' is a 45 minute drive. Oh the local grocery store does an adequate job in the Pork department. However, most of the time the Pork Chops offered there are mass produced, boneless without fat.

Recently they have been featuring bone-in pork chops. And I went overboard and purchased several packages.

Now that I have tasty Pork Chops, what is a Moron to do? Well, if you have The Deplorable Gourmet Cook Book check out the recipe above.

What pairs well with those tasty Pork Chops? Well roasted brussels sprouts with bacon, white pepper and molasses.

Throw in a real baked potato, butter and sour cream and you have a damn fine dinner. Prep time is pretty minimal.

This humble ingredient reshaped the way we bake. So what is cream of tartar, anyway? And what does it do in cakes, muffins, and meringues?

I’ll admit that I once wondered whether cream of tartar was related to milk of magnesia—both have mysterious, unappetizing names that mix the mineral with the edible. Yet everyone seems to have a tin of cream of tartar, gathering dust in the back corner of a cabinet, forgotten until it’s called for in some unlikely baking project.

“Cream of tartar is one of the most unappreciated ingredients in baking,” says Dikla Levy Frances, blogger at One Sarcastic Baker and author of the new book Baking Science.

It also happens to be a history-making ingredient, one that reshaped the entire landscape of sweets. Do you like cake? Banana bread? Pancakes, blueberry muffins, biscuits? Without cream of tartar—and other associated chemical leaveners that made their way into bakers’ cupboards in the 1800s—these would be unimaginable.

As a kid growing up, my Father called upon several "Mom & Pop" cheese factories as part of his job. For the most part, they are gone and have been replaced by large to huge facilities. Still there is more to cheese than just milk. The Science Behind Your Cheese - The food is not just a tasty snack—it’s an ecosystem

Some cheeses are mild and soft like mozzarella, others are salty-hard like Parmesan. And some smell pungent like Époisses, a funky orange cheese from the Burgundy region in France.
There are cheeses with fuzzy rinds such as Camembert, and ones marbled with blue veins such as Cabrales, which ripens for months in mountain caves in northern Spain.

Yet almost all of the world’s thousand-odd kinds of cheese start the same, as a white, rubbery lump of curd.

How do we get from that uniform blandness to this cornucopia? The answer revolves around microbes. Cheese teems with bacteria, yeasts and molds. “More than 100 different microbial species can easily be found in a single cheese type,” says Baltasar Mayo, a senior researcher at the Dairy Research Institute of Asturias in Spain. In other words: Cheese isn’t just a snack, it’s an ecosystem. Every slice contains billions of microbes — and they are what makes cheeses distinctive and delicious.

People have made cheese since the late Stone Age, but only recently have scientists begun to study its microbial nature and learn about the deadly skirmishes, peaceful alliances and beneficial collaborations that happen between the organisms that call cheese home.

11 Homemade meatballs with spags for supper. No parmesan to be found though. I used it all up making the meatballiums.

Damn. More wine is the answer.

After Mass this morning we went to a little hole in the wall place for breakfast. I overheard the owner/server talk about scrapple to another customer and I asked her about it. Apparently some detail man from one of her supplies gave her a case of it gratis for her to try. She was absolutely disgusted with it - and that's coming from a woman that ate possum, squirrel and rabbit as a child. I offered to buy it from her to take it off of her hands but she wouldn't hear of it. On the way out, she gifted me the remaining case of it.

I love the south!

I made a couple of pans of lasagna last month. Froze one and started on the other. I live alone so this is not unusual. The problem is that the unfrozen pan I was forced to use gluten free noodles. I had never done that.
To minimize graphic content, let me just say that the results made for a much better tasting colonoscopy prep.
Has anyone ever had this from gluten free stuff? I scraped the filling off and used it in sloppy joe's and it was great.

Must be an Italian wavelength tonight - I'm making mussels arrabiata over orzo. Totally not fancy though, since I'm using up a jarred sauce my spouse was supposed to use 4 months ago (aka, it's sat on my shelf long enough). Frozen deshelled mussels were on a great HMart sale, so that solved the protein. To go with, we're having fresh raspberries (b/c everyone has them on sale) and roasted asparagus, which doesn't totally match but the spouse REALLY wants it of my on sale veg buys, so okay.

We have to watch the oldest in her choir performance at her college, so I won't be on much, but wanted to say HI!

I have a friend who has a severe gluten allergy. He says skip gluten free beer. Opening a loaf of bread in the same room sends him into a panic. Justifiably.

43 A couple days/weeks ago I mentioned that there's a truck stop and gas station here in Kentucky that's purportedly "home of state's best sausage." My wife and drove about 25 miles to this joint and got two sausage and egg biscuits, homemade and 4lbs of the sausage.

It is actually pretty good stuff. Local to the truck stop. Guy has a hog farm nearby and sells his stuff there. A steady stream of customers, all getting biscuits and/or sausage.

Wife is going to make sausage and kraut balls. Yum.

I've heard that on occasion shots taken from the booths of the diner chain are an event because the crispy hash browns are missing or customer wardrobes drew colorful comments.

There does seem to be a smoking-mania for foods, almost as if the native taste of the food is gross and has to be masked. 64 Brave Sir Robin, I would think you could reuse the pickle juice as long as the cukes are entirely submerged, and just keep it in the fridge. I don't see how that would be any different from making refrigerator pickles, which I do and haven't poisoned anyone yet.

Christmas morning is Egg Bake, both the traditional ham and cheddar cheese (and egg, milk and bread), and a sausage, mild green chili and Jack cheese version. Both are usually gone by the end of the meal.

Christmas dinner has varied. Last year it was a nice rib roast cooked in a Traeger.

Innocent in the ways of fresh water fish and under the impression that pike was just some scales wrapped around fish bones, I ordered it. DELISH! I then ordered a second one.

I don't miss the thousand mile drive to Wisconsin but the best freshwater fish I ever had was there.

93 Last year I tried making an English Christmas Pudding, and it came out so well I'm doing it again this year. The big secret is that you have to start in October, but the actual work of preparation isn't very hard. You mix everything up, put it in a "pudding basin" (=metal bowl) and steam it for several hours, then age it for a couple of months with occasional doses of brandy or bourbon. And then on the big day of course you warm it up by steaming and then SET IT ON FIRE!

I told the checker that I wasn't sure how I would mail it to Oregon. She asked if she could make a box for it. Left it so that I can take it out and wrap it. Love living out here and really love Tractor Supply.

If you're doing a "true casserole" (aka with "glop"), I like to use canned. If you're doing a roasted dish with fresh green beans, mushrooms, and onions, and then adding the fried onions in the last few minutes, you'll wonder why you ever needed glop.

150 114 I love hearing about what Christmas dinner traditions are with everyone. For us, we do a standing rib roast Christmas Eve with all the trappings, Yorkshire pudding, etc. Christmas Day is tamales. This has been the way of my family as I grew up and I have gotten J on board for the most part. My kids know nothing else and do this in their homes, too. We have a slight monkey wrench this year as J’s mom is coming Christmas Day for the the week (this is the time we have his daughter, so it makes sense that is when she wants to be here). I am not sure how onboard she will be with my Texas heritage and tamale tradition.

187 My recent food experimentations: boneless skinless chicken thighs in the crockpot or slow cooker.
I've tried 2 recipes, one oriental type and one creamy.
Start with 8 or 10 chickens thighs (usually a good bargain at the grocery).
Both involve cooking on LOW for 4.5 hours.
I start by combining 1 cup soy sauce, 1/2 cup of ketchup or tomato paste, 1/2 cup mustard (optional). 1 cup onion, 4 cloves of garlic, crushed.
I mix it right in the crockpot, add the chicken, marinate for several hours before cooking. Serve with rice.

The lake we are on is crystal clear and not muddy but overrun with bass. They are decent in the pickle recipe I have. And I don't mind thinning out a few 14"-16" fish.

I stole from the Mississippi pot roast recipe and covered the roast with dry ranch dressing, along with half a packet of Pioneer country gravy. I put half a stick of butter on top along with a quartered onion and a couple of peeled and quartered apples and a slosh of bourbon. Oh and I added some dried oregano and a good sprinkle of red pepper flakes. Cooked on high about 4 hours. Mashed potatoes and carrots for sides and I will make gravy from all the yummy juices in the pot.

I bought some Stilton with apricots too. They carry my favorite smoked salmon. And they carry milk by a local dairy in glass bottles. Before my folks died, I'd gotten into the habit of making a Christmas pudding every year.

I read the Victorians would often cook it a year ahead and that was supposed to be the best.

So, I tried it that way and it was great! I was a bit leery of doing it a whole year ahead so lots and lots of health-preserving booze was used.

The interesting thing was that since you had roughly twelve months be about fancy and experimental like you might add calvados one month or a nice boozy raspberry brandy, things like that to jazz up the usual brandy, bourbon, rum triumvirate.

I found my older brother Joel dead in his bed, trying to get up and get dressed. His eyes were open but he was not responding. The EMTs worked on him for 10 minutes then took him to the hospital but he never recovered.

I cannot express how much I love Joel, I am the youngest of four boys (2 now) and he was just older than I. I grew up with him, I played with him, I did everything with him, he was so completely self sacrificing and supportive of my work and was always there for me. I learned so much from him and he was always my best friend. He taught me about the blues and Avalon Hill games and online games and so much more.

And he was that way with everyone, so many people depended on him and he's gone now and I hurt so bad I want to run away and escape, but the pain is inside. God please help me

Some of you know I write books and game supplements and he was always there to praise me and encourage me and back me up and tell others about it.

I'm not sure if you mean it spoiled the rice pot or that you like the taste. The burnt porridge taste permeated the whole pot and was terrible on top of the usual poor porridge quality. I went to 3 boarding schools, the first one was for junior (before middle school) and that had the worst cuisine. The food got progressively better as I went to the 2nd and eventually 3rd school. The other burnt item was custard. Yeah, smoke for dessert.

No, you eat it one spaghetto at the time and it's very brittle. The kids also love toasting partially cooked pasta, a few pieces obviously, not a whole plate. This is done while the bulk of the pasta is cooking and everyone is hungry. The smell of the sauce doesn't help. If it's a Bolognese sauce then it has to be guarded otherwise it gets attacked by pieces of bread trying to go for dips. Italian or French bread is particularly worrisome and sneaky.
