Food Thread: Ova There! Look Ova There! Someone Is Browning An Omelet!

There is a conceit among a certain class of chefs that the perfect omelet is not browned, but is perfectly yellow. I guess that came about from their understandable attempts at avoiding tough and overcooked eggs, but I have never found it particularly difficult to cook omelets correctly.

Sure, there are a few tricks, like preheating the fillings in another pan, or shredding or grating the cheese so it melts faster. But there isn't anything clever about that, and the purpose, at least for me, is to make a good tasting meal, not satisfy an artificial rule based on pretty much nothing.

Oh...brown the butter before you cook your omelet and it will taste delicious! A bit different, but still yummy. And the eggs will most definitely be brown!

That tangent took me away from my point, which is that eggs are absolutely fantastic, easy to cook, relatively inexpensive, and can be tarted up in dozens of ways so it will always seem that you are getting a little bit of strange every morning.

One of my favorite things to do with eggs is to boil them so they are just hard (not gross and green and crumbly), ice them down so they stop cooking (that is 10 minutes for me), and then eat them with...um...mayonnaise! Yup...eggs with an egg sauce. That works for me.

Although inflation has reared its ugly head in the egg cases around here. I used to buy an 18 pack for $2.99. Last week it was $5.99, So...FJB!

Who could possibly predicted that the vaunted wave of fake meat made from plant protein would fizzle? Personally I am shocked that Americans don't want to eat highly processed ersatz meat that is also very expensive and doesn't taste nearly as good as those plain old burgers you make with the $2.99/lb ground beef you buy at your local market.

It's almost as if Americans aren't the hipster, virtue-signalling douchebags that the idiot marketing people think we are.

I like my culture of eating beef and chicken and pork and lamb just fine, and I don't need an over-educated and amazingly out-of-touch and ignorant analyst who specializes in "Food and healthy living" to pimp shitty new-age crap.

On one hand that is a catastrophe, because most of the beer I drink is made by small producers, although I am not averse to a cold one or three from one of the big guys. I have no idea what I will do without beer, other than channel Rogers Hornsby when he was asked what he does during the baseball off season...

Long-time commenter "RedMindBlueState came through like a champ with a recipe for Greek Gigante beans! Well, actually it was his mom, so screw that, I'm not giving him any credit.

I'm going to work on the recipe a bit , since it was really only a list of ingredients (no amounts!) and an outline of the technique.

I really, really, really love fried seafood. Any kind is fine with me, from flounder (Southerners know how to do that with a whole fish) to cod to shrimp to clams. You fry it and I'll eat it.

Italian Baguettes? What? When I think of Italian bread, I definitely don't think of baguette-shaped loaves. The Platonic Ideal in DildoWorld is the Pane di Casa that we used to buy from Addeo's Bakery in the Arthur Avenue neighborhood of the North Bronx. But this sounds amusing, and certainly easy, so if I remember to buy durum flour I will give it a shot.

Friday, I was originally doing soup and sandwich as dinner - BLTAs with a Leek and Onion "French Onion-inspired" soup. I had spent 45 minutes carmelizing the leeks, vidalia onions, serrano pepper, and garlic (s&p and olive oil, too) when my youngest said - mom, that would be better with egg. So, changing plans on the fly, I beat 16 eggs and dumped them into the mixture and scrambled it up. I used some garden cherry tomatoes chopped raw on top, and damn, it was great!

It was a new bacon and egg combo that stays on my list next time my farm sends me leeks...

27 Ms. gourmand is sensitive to onions so I substituted some leeks (diced and quickly parboiled) along w the raw diced celery.
That worked out well. Other ad lib ingredients may include bacon bits, olives, even capers.

It also would have been helpful if she'd put her ingredient list up front, rather than towards the bottom of the document.

But the prep itself somewhat resembles that of a ciabatta but with enough stiffness in the dough that you can fold the edges inward instead of just pushing it inward with a bench scraper and treat it sort of like a baguette. And the recipe also bears a fair resemblence to Rose Levy Beranbaum's Golden Semolina Torpedo. Except Rose's recipe makes a batard and bakes it in a rectangular cloche (Italian bread maker).

Either way, tasty!

I had originally thought quiche for the leeks (or as I call mine - egg pie b/c with dairy free milk and double the eggs, it's eggier than "real" quiche), but I had a ton of leeks (and I had the serranos)...it worked out here b/c the kid doesn't like pie crust, so he did eat a huge helping!

I have sliced sweet mangos on the ready for a summer flair. 71 Tonight's dinner (since the kid asked for a month of "his: Sundays, as you've seen from the past few) is Thanksgiving in the summer.

Aldi's and my farm box determined the actual meal contents. Aldi's turkey tenderloins, mashed yukon gold potatoes, my "no sauce" green bean casserole - aka, roasted green beans, baby bellas, and vidalia onions with garlic, s&p and then topped with fried onions 10 minutes before it finishes), and a white peach/nectarine/reg peach/blueberry salad.

83 I made a great egg recipe yesterday. An egg drop soup from a 1981 Michigan cookbook, a community cookbook of the “Michigan Telephone Pioneers of America”. Appears to be an organization of Michigan Bell employees, specifically in the Detroit metroplex and the Grand Rapids metroplex.

Very simple and quick. 2 cups chicken broth, a well-beaten egg, 1/3 tsp salt, 1 tbsp (green, but I used normal) minced onion, ½ tbsp corn starch, a pinch of white pepper, and ¼ tsp sesame oil.

Bring the broth to a boil; add salt. Mix cornstarch with 1 tbsp cold water, add to broth, stir several minutes until thickened. Turn off heat. Add the egg slowly, stirring in a circular motion so that the egg forms thin shreds. Add the minced onion, pepper, and oil. Serve hot.

Two servings, sort of. I made it for breakfast, and ate the whole thing. One egg = one breakfast.

Be careful where you place it. Never place it on anything made of plastic. Lots of types under $25.

97 Food related: Yesterday I drove up to the Aldi in our far northern exurb, about 35-40 miles. The store was clean, but smaller than I expected, about the size of a Save-a-Lot. Like that chain, you need to bring your own bags or purchase theirs at checkout. Also you need a quarter to unlock the grocery cart; you get it back when you leave.

Overall they were not vastly cheaper than a Walmart. Meat was about the same price for the same quantity. Bread and bagels and pizza were better. Eggs, maybe .20 cheaper for a dozen; lettuce, maybe a dime cheaper. The pack of 8 frozen beef and bean burritos I picked up was about $3.99 compared to WM's $4.99 for the same size. And so forth. The clientele seemed better and nicer too -- but then I was in a suburban area, not near the 'hood.

If they open one within a 10-20 minute drive of me, I'll go. (Their website indicated there was going to be one, but not anymore. I think Somebody at Aldi took a look at that neighborhood and nixed it.) Trekking nearly 40 miles? I think not.

102 21 Friday, I was originally doing soup and sandwich as dinner - BLTAs with a Leek and Onion "French Onion-inspired" soup. I had spent 45 minutes carmelizing the leeks, vidalia onions, serrano pepper, and garlic (s&p and olive oil, too) when my youngest said - mom, that would be better with egg. So, changing plans on the fly, I beat 16 eggs and dumped them into the mixture and scrambled it up. I used some garden cherry tomatoes chopped raw on top, and damn, it was great!

I love a good egg drop soup! Lately I've been making Stracciatella alla Romana with spinach.

6 cups chicken broth, 5 ounces baby spinach, 2 large eggs, 1-½ tablespoons semolina flour, 2 tablespoons freshly grated Parmesan or Romano cheese, 1/2 cup pastina, salt and pepper to taste.

Bring the broth to a boil and add the spinach and pastina. Cook at a low boil for 6 - 7 minutes. Whisk the eggs, semolina, grated cheese and salt and pepper together. Lower the heat some and swirl the egg mixture into the broth. Cook for 1 minute more and serve.

106 I was almost 30 before I tasted freshwater fish. Now I crave it when well prepared. (Well prepared is another term for fried.) Properly fried walleye or perch is a treat for the gods. This doesn't keep me from eating cod, salmon or swordfish, etc.

I've found the Kent Rollins batter works every time. Thin, crispy, and flavorful. By the time the coating is golden brown, the fish is just cooked through, not overcooked. I've used it for cod, flounder, trout, and catfish fillets with great results. The secret seems to be using corn starch in the egg mixture. It lets the coating stay on the fish instead of ending up in the cast iron pan. And it doesn't require a lot of oil or fat.

50 lb bag of cracked corn costs $16, and lasts me about 2 months.

So 28 dozen eggs for $16, or 57 cents a dozen. Plus they have those good, deep orange yolks from all the bugs they eat when roaming.

Would definitely recommend keeping chickens.

Love sauerkraut. Got a great recipe for brisket, sauerkraut, and dumplings from an old Pennsylvania Dutch Cook Book. My brother used to make sauerkraut and give it away, and it was perfect for that.

And of course on hot dogs with mustard; and if I go to a restaurant that looks like it makes a good Reuben, that’s at the top of my list of what to order.

I also eat it out of the jar over the sink.

I had a meat cutter try to explain that to me once. Has something to do with the first or second cut of the front of the ribeye. Sometimes they call them delmonico steaks.

Rib stake has the bone in, and people complain that the best parts are shaved out to keep the bone - some folks like the bone, saying it adds flavor. The problem with steaks is that some cuts fit someone's taste and other cuts do not - best to figure out what type of steak fits your taste.

I like the bone in - tomahawks are the best. But here is the thing - always buy 'prime'. I know, it's expensive. But I worked as a teenager for a butcher in a local market - 'Choice' is shit and they all laugh when people buy it. It's not worth the cost and unless you like it rare...you're eating boot leather.

50 lb bag of cracked corn costs $16, and lasts me about 2 months.

So 28 dozen eggs for $16, or 57 cents a dozen. Plus they have those good, deep orange yolks from all the bugs they eat when roaming.

Would definitely recommend keeping chickens.

Mine went nuts, too...thankfully, my cherry tomatoes went equally nuts, so I'm actually struggling to use up tomatoes, but I'm staying ahead of the basil. Who knew how many dang tomatoes one plant could give you if you let it take over the spring garden area (I think I've gotten 3.5 pints worth every week for the last 4 weeks and they are still coming in just as fast and furious for now)...

There is a huge amount of variation in beef, and I have seen choice that looked better than prime.

178 Blackstone griddles... we have a "portable" one. It's pretty heavy for "portable." Takes the 16oz propane bottles but you can buy an adapter to use the larger tanks. We did fajitas on it a couple days ago. Cooked breakfast once or twice on it too. The griddle itself needs to be seasoned properly... plan on a couple beers but it's necessary or shit will stick and burn.

Yes, mine are only 2 years old.

Coyotes (I suspect) decimated the flock last year. I had about 14, as one of the hens was broody and hatched out a clutch.

Their output I cited is during the spring, summer and fall. When it gets cold their laying slows down considerably.

It and herbs are about the only thing I ever have luck with - animals eat the rest of my stuff (although my pepper plant is now flowering again, so maybe these flowers don't get immediately eaten b/c the tomato plant is now a huge camoflauge!

I admit that this year, my guest got me multiple 6ft bamboo stalks from the lake, so that's holding up the plant in multiple places and probably helping the production - normally, I don't go that high...

My wife and I stayed in a guest house, last year, next to the chicken run the owners had. Due to hawks, the owners had covered their chicken pen with some sort of net. Pretty good size area, too. maybe 30' by 100'.

197 Last night, i made a Gimlet, which once again reminded me what a perfect and stupidly simple cocktail it is.

I kinda gilded the lily by using Monkey 47 gin, which to my surprise made a still tasty yet inferior Gimlet to one with Plymouth Gin (Churchill's choice and the gin most of the classic cocktails were first created using) or good ole Beefeater's,

I think to make a great Gimlet you need a fairly good splash of juniper in the mix.

Oh, and don't gimme any of that "Oooooo, I never use Rose's Lime. I only use fresh lime juice and sugar" guff. No, no ,no. That a gin sour and an entirely different beast.
Rose's Lime Cordial's peculiar "we're given this to you British tars to prevent scurvy" medicinal taste makes the cocktail.

I suppose the only way that could be improved is to get some Rose's from Aussieland where they still use cane sugar and not corn syrup as in the US.

Our neighbors have a small-ish coop and a 10X10 fiberglass shed for theirs. In-between is a fenced area.... but they let them "free range" most of the time. The chickens hang out in the buildings after dark.

The shed is decked out with mood lighting, chicken furniture, etc. It's a avian condo.

Get like a custard cup or small ramekin or even I suppose a smallish coffee cup.
splash in a tiny bit of water.
crack open an egg and gently plop the egg's contents into your cooking vessel.
Cook for one minute.*

Believe it or not you wind up with a perfectly cooked runny yolked egg with "fluffy" white. Very nice mouth texture and delish.

Give it a try.
*Your microwave may be a little different than ours so you may have to fiddle a little bit with the time.

I'll sometimes just pull my pan from the fire, keep the mixture moving, maybe slip a little butter under, if I think it's getting overcooked. I do like mine a bit wet on the inside.

245 I cook scrambled eggs with mix ins. I don't attempt actual omelets. Actually the most common way I eat eggs anymore is as a casserole, usually in the crockpot during summer so I don't have to run the oven and make the house even hotter. Brown some sausgage, rehydrate a box of dried hashbrowns. Mix eggs with water if no cream on hand or better yet eggs and half and half. Season liberally with salt, pepper, onion, garlic, sage, bit of dried mustard is good. Mix in plenty of grated cheese. Bake about 70 minutes or cook in crock pot several hours. Bread can be subbed for the hashbrowns.

Anyway, it was really good...and I have just enough turkey left over that he can have it tomorrow when we have the salmon I bought from Aldi's (yes, I let him pick what tonight's meal was b/c I got the salmon right as they were putting it out, so 24 hours in the fridge won't change much).

Of course, then I also got their seasoned crockpot pork roast for Tuesday b/c it was the cheapest meat in the store. One expensive (salmon), one middle (turkey), and one cheap (pork) is about as much as I can spend on proteins. And I bought them b/c we've had a lot of chicken and "ground" lately, so I figured we'd have a change.

And the turkey tenderloins don't "feel" so overpriced anymore b/c they have only increased 50 cents since 2020...still under $7 for 1.5lbs (and I make 2 for my crew)...of course, that's still an 8%ish increase in price, but that's nothing compared to everything else!

Turn down the temperature, let it cook longer, these things are paramount. Probably, most likely, you need a larger diameter pan. Is your pan large enough to do a tri-fold omelet? It may be time to invest into a big-ass griddle.

This is exactly how I cook an omelette but I use an omelette pan. I lift the sides and let the uncooked part go underneath. I flip it and put cheese or whatever I didn't cook first in the pan on the omelette and fold it over on the plate with the pan.
The chef at my first job taught me how to flip things using just the pan.
They don't use a spatula or a spoon when they cook. I don't do this because I hate cleaning my stove but I can flip an omelette and yes I've made a mess.

True of most foods, I think. There is a distinction between things reaching a certain temperature, and, being 'cooked'. I use the microwave primarily for reheating, thawing frozen foods, and making hot water.

The pan is DEFINITELY too small for a two-egg omlet.

Try a 10" pan, so that the "sides of the pan" don't come into play. And drop the heat 1/2 of knob-number at a time. Don't cheat, be precise and take notes. If your setting was a "7", then try a "6-1/2", and repeat attempts till things start to work right for you. For that 10" pan, a combo of 1 tablespoon each, unsalted butter and bacon drippings should make for a superior product.

I don't think I've ever tried to make a French omelet - but I have made pizza omelets (pour the eggs into an oven-proof pan, then top with chopped tomatoes etc and some cheese, and place in a hot oven until the cheese melts). I've done it using the broiler for a few minutes. Yum!

358 r.e omelets. I'm a regular on omelets. I've learned several secrets or tips, tricks and techniques from this thread. You may also. Whip the eggs for 25-30 seconds until they appear a consistent color. I use 2 or 3 med or large eggs for single or double serve. Heated or saute on the filling is a booster. No milk in the eggs. I put four helping splashes of Tapatio and four shakes of Tajin seasoning. Usually don't put meat in the omelts. Exception: cubed ham. Spam works if sauted in Tajin with olive oil. Keep the cooks well oil with multiple triple shots of their fave fusil oil will help in almost all situations. That's why I'm called the Everclear Pundit. Thnx S.G.

364 Living in the Twin Cities during the mid-70s beef price burst I remember one supermarket chain selling something called "Juicy Burger II", which was 80% ground beef and 20% "textured soybean protein". It was OK, but nothing spectacular, and turned out to be a market flop quickly abandoned.

I also remember the opening credits for the Mary Tyler Moore show (which took place there) in which Mary is grocery shopping, rolls her eyes at the mystery meat she took, and added it to her cart anyway. I'm guessing it was Juicy Burger II.

368 @227 One 'trick' to making an omelet is to ensure that the eggs are at ROOM TEMPERATURE. If you are going to add some cream (or sour cream, which as noted here, adds a nice flavour), make sure that IT is also at room temperature. If you are time pressed, beat your eggs and cream, then give it 20 second or so blast in the microwave. The difference in the way the eggs cook in the pan is noticeable: you don't get a puddle of uncooked egg on top of a thin crust of already-cooked egg.

369 @106 I have never tried freshwater fish in batter. But I have enjoyed lots of brook trout, pickerel and pike sauteed in butter. You need a fair bit of butter and it has to be almost smoking when you drop the filet of fish in. Takes no time at all. And spoils you for any other fish for quite a while!
