So, I have no dishwasher, and I tend to have little meat on Fri/Sat in Lent, so I declared tonight a beef night.
So, it's hamburgers tonight with optional toppings of cheese, bacon, lettuce, tomato, onion, and pickles (yes, it's like a toppings bar at my house). To go with, I've got roasted brussels sprouts and onions with a balsamic glaze and fresh cut strawberries and grapes. Originally, I was gonna do the "potato" option, but TMobile gave me free Dunkin Donuts for the kids, and I don't need an extra carb...so veg it is (and since it's on parchment, no cleaning for that one)... Jet Tila mentioned using this in his vegan pad thai...so since bean sprouts and tofu were uber-cheap, I'm gonna make a vegetarian pad thai (with egg, tofu, peanuts, and sprouts) later this week and try this in my sauce for some extra sour kick... It's a laudable hobby ma'am and in extreme cases could be a societal boon. I need a good hobby when I get settled, if I still drank I'd give serious thought to a meadery. One of the challenges with mead is learning your local environment's impact on fermentation times and yeast requirements. Happy brewing, and I am curious as to real birch beer. Had some beef ribs I wanted to roast for the first time. Found a recipe that called for 3 hours at 300F. Holy moly I could hardly get the temp probe in they were so tough. Took 7 1/2 hours to get to 205F. Could have put them in the crock pot or braised them covered I guess but I wanted the crispy outside fat. Haven't tasted them yet.

I have a bottle of "Bedtime Bourbon." It's a small batch Bourbon from the Louisville Bourbon Transit Company. Batch #4 950 bottles from 4 barrels. 90 proof. About $60 which I think is a pretty good deal for a limited run. Very good for sipping or mixing. Notes of vanilla, spice and cream. Very smooth. Well dang. that throws a wrench in my plan to shift my koji and sourdough starters to an oat-based diet. Not sure what my next best option would be. Koji can culture practically any grain or legume, I just need to build the skill to get it to do so. There's nothing more American than cowboys, and where would they be if we started eating that non-beef that Bill Gates is pushing? I've been trying to buy more meat from local ranchers (like Ranch Foods Direct). It's not cheap either, but I know it is healthier for me.

The great thing about chicken legs and thighs, even if the bone is left in, is that it is difficult for even the worst inattentive cook to totally over-cook them - thus leaving more time for the cook to enjoy that Old Granddad!

My solution for the over-fermented fruit and liquid was to simply eat the fruit, but to add a tablespoon of cultured cream to smooth out the bite. Pretty much all that was left was a white fleshed Asian melon, lotus root, and the ginger I'd put in for flavoring.
I decided to use the juice to make vinegar by adding some sugar. In one jar I just added sugar and in the other I added the fruit peels/cores from the fruit I was processing for my new ferment. The jar with fruit bits started bubbling the next day but the other jar did pretty much nothing for nearly a week. At that point I split it into two jars and added fruit bits to one and herbs to the other, along with more sugar. Russia produces about 20% of the total, but fully half of it is minor producers not on the chart I saw so they're still about half of the production that matters. Chicken burritos/enchiladas here tonight. Filling is a pint jar of shredded,home canned chicken, some mushrooms and onions sauteed, some shredded jack cheese and 1/3 can of cream of mushroom soup. Gonna mix the rest of the soup with some of the liquid from the canned chicken and pour it over the top. Bake till hot - half hour.

I feel your pain - it's been over fifteen years since I developed issues. I've tried some vegan baking recipes, but the only one that tasted good was a peanut butter cookie (add semisweet or dark chocolate chips in...mercy) but most vegan baking is...bleah.

And I know they are both really good, b/c when I do bake, my kids demolish everything in 24 hours, so I tend to get 1 or 2 of what I make. Most here are, of course, too young to remember it, but while Scotch was gaining new respect in the 60's and 70's, it was at the expense of the old bourbon brands. When a whiskey goes down, either the name gets snatched up and stored away by a richer company, or the brand goes "bargain" and slips down a shelf. Old Grandad and Four Roses were a couple that had been highly respected once, and became just bar-bourbon. In the last decade or two the owners have been building them back up with improved mashbill and higher-class mixing and aging. Of course the price goes up, but the market is there. Meanwhile the odd Scotch here or there slips away...

EASTER DINNER update
(Gluten- and sugar-free testing) GF brioche rolls had rich flavor and great texture. Baked half the yeast dough Monday after rising once, froze other half in roll-size portions, and baked today (tested this to learn if it could save me time on Easter AM). Freezing did not affect the flavor or texture -- so, yippee, the brioche recipe from letthemeatGFcake-dot-com is on the Easter menu! Another successful test this week was GF cardamom blondies. After baking, the warm blondies got a thin layer of caramel sauce then were later topped with a cooked frosting (1/2 c. apple jelly, 1 egg white, and 2T sugar whipped in a double boiler). The texture is like Marshmallow Fluff and, supposedly, can be made using any flavor jelly. Changed my mind about putting DIY sugar-free Nutella into mini coconut nests (the nests had fragile sides and soggy bottoms). So, instead, I will be making a GF+SF Nutella cheesecake -- adapted from https://tinyurl.com/bdcmzkd6 -- using GF graham crackers and stevia. Slow roasting/crock-potting will cover a multitude of sins when it comes to tough meat, as I'm sure everyone here already knows.
It's no coincidence that delicacies like the Italian Beef sandwich, corned beef and cabbage, and slow barbecue had their origins in poor/immigrant communities. Old Granddad takes me way back. Since Inspector is, mostly, doing keto I started mixing him a sauce of siracha and mayo when I made him breakfast. He really likes it and has started doing that with a ghost pepper salsa as well. The mayo really helps him get the fat needed because otherwise it's *really* tough to do that. It's super easy for him to slide into just heavy protein, and that doesn't work the same way as keto. Brewing is something that I might experiment with sometime. Tennessee has plenty of cows, modest local grain/legume output, most of the good whiskey between us and Kentucky, but not much in the way of beer outside of a few microbreweries. So it might be a useful skill if things ever fell apart.

I don't know about Kentucky, but the Ozarks were a major wine-producing region before Prohibition, and I think the climate and geography is pretty similar. Minor failure yesterday with the fajitas.
The chicken and pork were perfect but for some reason but beef fajitas were still tough despite the usual treatment. Suppose next time I buy Kroger Brand Pre-Pemmicanated Cow Flesh, I'll beat the hell outta it with a meat tenderizer. I think I'll cut up the remaining beef and work it into chili. That ought to soften things up. I can always tell if a "may contain" actually contains any part of milk b/c I react pretty instantly, although thankfully at that cross-contamination level, pills almost always work for me. My epi is for tree nuts, b/c my reaction on those is way worse...although then again, i haven't actually had any milk except by cross contamination since getting the tree nut allergy, so maybe they are both equally bad now - I'd rather not test that out... I can always tell if a "may contain" actually contains any part of milk b/c I react pretty instantly, although thankfully at that cross-contamination level, pills almost always work for me. I like to make what I call "redneck lasagna". Jimmy Dean hot sausage rather than Italian sausage. Some chili seasoning in the sauce. Simmer the sauce for a long motherfucking time, then put alternating layers of cooked lasagna pasta, sauce, and good quality cheddar cheese (like Tillamook Sharp) in a crockpot until that sucker is full.

My wife, being from Brooklyn, once came to visit the Boswell clan in the south in the mid-90's. We all headed out to buy something to cook for the family get together and so we took her to a Seessel's Supermarket - now Kroger's, I think after a few acquisitions.

"Next Level Chef" cracked me up cuz they clearly took their inspiration for the show from an oddball Spanish horror movie titled "The Platform",
wherein political prisoners were held in a vertical jail with a platform(!) that ran dow through a hole in the middle of the cell. Those near the top could eat whatever they wanted, with the food on the platform ever diminishing till those on the lower levels had nothing but scraps and poo at best. Interesting movie. Worth a watch. NLC wasn't mean enough with that concept where those on the bottom level would get stuff like Rocky Mountain Oysters or Underwood Deviled Meat Spread or Bull Penises or sea cucumbers to work with. My grandparents on my mom's side were farmers and my grandmother was a very good cook (not a lot of variety - but what she made, she made well). For some reason (even though there was a freezer full of beef and fresh chickens available (he was a dairy farmer who also raised a small amount of chickens) they would always have canned beef & chicken (not "home" canned - commercial). You could make something decent tasting out of it, but GOOD LORD the smell of that shit when you opened a can.

Regarding beef, one of the best pieces of advice I ever got from a YouTube cooking video was to stop buying packaged stew meat at the store. Stew meat is leftover bits that can't be sold any other way; the recommended alternative was to buy chuck roast and cut it into stew-sized pieces myself.

Made an easy chicken soup for dinner tonight and tomorrow ... Temps have been dropping all day, with a hard freeze predicted tonight ... Chicken broth, diced onions, diced fennel, sliced carrots, stewed tomatoes, a little orange juice, garlic, basel, thyme, crushed red pepper flakes ... Simmer a bit then add cooked chicken (canned also works if busy), and some halved black olives .. Low-carb and low-fat, but delicious!

Friends of mine used to make potted beef from left over pot roast, and seal it in the jar with about a half inch of butter. It wasn't very good straight out of the fridge, but once it warmed up to room temp it was fantastic.

Have mentioned before but seems cheaper/easy recipes are even more relevant now.
When you see boned/skinned chicken thighs on sale for a great price, grab a few pounds. Put in slow cooker. Add in your choice of dry spices: paprika, smoked paprika, salt/pepper, garlic & onion powder. Cook 4-6 hours. Remove chicken and shred, reserve half the liquid (it makes its own, no need for any liquid added at the start). Put shredded chicken back in cooker along with BBQ sauce of choice and as much cooking liquid as needed to achieve consistency you want. Done. Fantastic tasty pulled chicken. Local grocery store still has (maybe had) 88 cent loaf of bread. It will be nothing but a distant memory the next time I good shopping. The 4.99 rotisserie chicken is now 8.99. I read WW2 novels and how the Germans had to do with next to nothing to eat and needed ration coupons. I believe Uncle Joe is heading us that way.

Being lazy, I was just buying meat in small packages, enough for a meal and a leftover. Lately I've been getting family packs and breaking them down. Freezer's looking pretty good and I've saved a few bucks. Bought 4 two pound chubs of burger at Braums for just under $6 each. Two days away from sell by date. Broke them down into patties, and twenty burgers for $24 is pretty good nowadays.

Pigs in a blanket are ground pork or beef wrapped in the big leaves of cabbage used to cover your homemade sauerkraut while it ferments. Tried it a few times when I made sauerkraut, otherwise just plain cabbage leaves.

I had my sourdough starter, untouched, in the fridge for probably eight months. A couple of days ago I poured off the alcohol, took out about two tablespoons and fed it. It is happily bubbling along. I'll probably grow it for a few days and start baking again.

Posted by: M there is not much to it, we just suggested to a farmer friend that we had some spare capacity and a friend of ours that wanted some beef that they should get together. from what I understand the farmer said the costs are x based upon these criteria, our friend said fine. if there are any extraordinary vet costs, which there have not been, the farmer just sends a bill over. I got the uncured bacon fried up, crumpled some blue cheese on a plate, fried a couple aigs in the bacon grease and flooped them on the blue cheese. This is serious good food here. Did make some sourdough, fermented KA whole wheat for 3 days until bubblied out, added to 3 cups KA Allpurp with pinch sugar salt tbsp honey +molasses and 2 tbsp veg oil, rose like crazy ,punched down 3 times betwen 7 am and 8 pm formed loaves in pans with parchment baked before it overflowed the pans 25 minutes. TTurned out really good only slightly sour, basically 50/50 ww &WHITE flour.

Trader Joe's has the best frozen foods. I buy sweet potato fries, sweet potato gnocchi, cheese blintzes, shrimp dumplings. I completely skip the frozen food aisle at the supermarket. There produce is also far superior. My newest find: brownie coffee ice cream sandwiches and only 140 calories.

The bell peppers reminded me.

Bluebell, you will not be disappointed. I wish they also came with just vanilla ice cream. I wonder if they use coffee because it somehow cuts the calories?

They probably do it because coffee and chocolate go so well together. Lots of chocolate cake or brownie recipes have a bit of coffee in them. Most of that was jerky and pemmican. Venison fat is considered "bad", but only if it is allowed to go bad. Mountain men used it as a butter substitute.
