Food Thread: Purina People Chow; An Idea Whose Time Has Come -- Or Just Eat Pizza

It seems like this is the golden age of pizza, just as I went low-carb! I read pizza place reviews and even watch Dave Portnoy's reviews (which are pretty good). But what I don't do much of is eat pizza.

I lived in the Northeast for most of my life, and I know from pizza! But too much of it is just...food. Sort of like Purina People Chow. Sure, it satisfies my hunger, and it is pleasing on some level, but it is rarely great. So I hold out for great. No, that's a lie...I hold out for pretty damned good. "Great" is way too much of a pain in the ass. Going to Brooklyn and standing in line for hours at Lucali is fine for 20-something hipsters, but unless Sophia Loren in her prime is serving the pizza, I'll pass. And driving to New Haven? That might be worse.

There are some solid local places that make good pies, but too many of them are New York street pie, and it's tough to do much better than, "Yeah, that tastes good." I have found that unless the ingredients are fantastic and the dough is top-notch, I'm just not that into them.

If I were to choose one type I would probably go with the classic Neapolitan pie, which I think is an acquired taste.

How about you? What's the pinnacle of the pizza maker's art?

Broccoli Rabe can be a spectacular vegetable when cooked correctly and the ingredient itself is fresh and sweet. But it can also be a bitter and tough mess that is distinctly unappealing. But eating it as a side dish and using it as a sandwich ingredient requires slightly different presentations, and that's where it gets weird.

When I cook it as a vegetable, I blanch it and immediately shock it in ice water to keep its vibrant color and texture. Then I saute sliced garlic until fragrant, add some red pepper flakes, and then add the broccoli rabe. That way I get rid of most of the bitterness. But in an Italian sandwich? I want that bitterness. I NEED that bitterness. So I skip the blanching and go right to the pan. That also preserves the crunch and texture much better. But there is a risk of biting into a wad of bitter greens that is just too much for even the richness and intensity of great Italian salumi.

Even the sandwich I had in Philadelphia's Terminal Market was a bit on the bitter side, and those guys should be able to do it better than most.

Matzoh Brei! Passover is incomplete without several breakfasts of this stuff. It's just a rough mash of matzoh, egg, salt, pepper and onion powder, all fried gently in butter. Oh sure, you can tart it up with fresh onions and other dreck, but a real Jew would never do that.

"Brei" means mash in German and Yiddish, so it's pretty accurately named.

Just don't serve it with maple syrup...I eat it with a bit more salt and a smear of cream cheese or sour cream or even crème fraîche if I've got it.

That's a wireless temperature probe, and I am insanely tempted by it, even though the one significant use I have for it will undoubtedly destroy it. I want to stick it into a rotisserie pork roast so I know exactly when it is perfectly cooked to 136 degrees. Yup, I have temperature creep in my pork world. I used to shoot for 140 degrees, but I think that pushes a bit too much juice out of the meat.

Anyway, My rotisserie has an infrared burner that will probably melt the damned probe after a few uses. And the company hasn't offered me a test unit, so I will have to gaze longingly at the photo and be disappointed...once again!

It's nothing earth-shattering, but this recipe for rack of lamb looks great, and has an interesting twist or two (smoked almonds? Interesting!).

4 Got 3 baby back ribs on the Weber. I brushed them with a mustard-vinegar mix then covered with my special dry rub.

Sides include German tater salad and Spinach salad with Hot bacon dressing.

5 The Navy grub video is terrific. The guy is a serious naval historian and has many great videos out.
He actually prepares and eats the the RN menu.
Grog is okay. The salted beef worked pretty well.

8 The post about the Meater is timely...in a way. FWIW, my experience with wireless cooking devices is universally bad.

But today I made a scaled down turkey dinner (breast and two thighs) and by the end I was ready to throw my probe thermometer and all my instant read thermometers against a wall.

In short: recommendations for probe and instant thermometers that don't cost a fortune appreciated. I can afford a better one, but I'm just cheap.

Kind of, Pizza is actually the one area I am sorta learned on officially cooking wise. Neopolitan style pizza has a thinnish crust often garnished on the bottom with salt cooked until dark golden brown. The toppings and sauce proportions lend themselves when properly done to creating a good 1/3d, 1/3d, 1/3d blend for taste.

If you find yourself in the Miami Valley or Hannibal Missouri drop in to Cassano's.

24 Best pizza I ever had was in a trattoria in Rome, close to the Ponte Garibaldi over the River Tiber. Individual (about 10") thin crust Margherita right out of the wood-fired oven. Unbelievable, stayed about 4 hours and ate like I was Mr. Creosote.

For me, it's a thinner crust that must be crispy on the bottom (blackened spots welcome!), a simple sauce and a good amount of cheese. It's all about proportions, and not having one of these elements outweight or stick out from the other two (e.g. jarringly spicy sauce). I have found the perfect pizza (for me) in Gloucester, but they shut down for the winter (womp, womp)! Will be back soon, though. . .

Best probe thermometer by far is The Dot, from Thermoworks. You will love it. Just remember that the probes themselves don't last forever.


As for instant? Eh...I use their cheap ones and they are fine. I am not going to pop for one of their $80 ones that are marginally faster.

42 Back in Colorado, my favorite was Beau Jo's in Idaho Springs. Deeper dish with a more substantial crust, especially along the outer edge, so that after you've gobbled up the cheesy/saucy portion, you drizzle honey on the crust for a little sweetness. Their gimmick is that you order pizza by the pound, and they have a variety of crust flavors. YUM!

The good news for normies is they are in an exansionary phase while taking the quality of the franchises VERY seriously.

The location in Vegas is awesome, but I have seen locations in tonier communities in Ohio, Colorado, and other states.

57 Hub and I love Broccoli Raab, especially with steak and potatoes. I hated the bitterness when I was young but now I crave it. We say liking broccoli raab a recessive gene that kicks in about forty.

The worst part is the prep; cooking it is easy. My recipe is to pick it over, loosely chop it, rinse well, and then pop it in the salad spinner to remove the excess water. I use about 3 bunches for 2 generous servings because it's like spinach and cooks down substantially. 5 - 6 whole cloves of garlic, smashed. 1 cup low sodium chicken broth and 2 - 3 tablespoons of EVOO.

Place the olive oil in a deep pan and heat over medium to medium-high. Throw in the garlic being careful not to burn it and then dump the broccoli raab on top, stirring until it's well-coated with the oil. Continue cooking and stirring for about 5 minutes until the broccoli raab is wilted. Then add the chicken broth, bring to a boil, and slap a lid on. Lower the heat to medium-low or low and simmer for about 5 more minutes. (It shouldn't be mushy -- it needs a little snap.) Serve with plenty of Sicilian hot pepper flakes and extra EVOO for drizzling.

Been making Stromboli's a lot lately, since I found that making homemade dough is really easy. So far I've done prosciutto/soppreseta/provolone and meatball/mozzerella. Does anyone have any other strombo combos they like?

I made my cheesesteaks with thinly sliced ribeye but was not 100% in love with the rolls I got at a bakery here in Columbus. I may have to make my own next time.

Oh, that reminds me of the worst pizza I've ever had: Mario's Pizza in Arlington. They've been there forever, and they stay open into the early hours or possibly overnight (? it's been a while), and it was gross. Also, the sub my hubby got had cabbage instead of lettuce. I think they didn't even try at 2:00am because they figure their customers are all drunk. Not drunk enough to notice they sucked!!

Hardwood charcoal fired pizza oven, from which Manna from Heaven doth emerge. Red & White checkerboard vinyl table coverings, sawdust on the floor kind of place. Not quite a dump, but damn near. Food is great, beer is cold, and the service is brusque, but efficient.

Sublime. Check 'em out, even if you're on a long layover at Logan International. It's close enough, if you've got the time.

All joking aside; I think that a simple sauce made of crushed or finely chopped tomatoes, a splash of olive oil, a bit of salt and pepper and some oregano is all you need. Cook it for a few minutes to meld the flavors.

I definitely wouldn't drive to New Haven for pizza. It is, however, amazing. When I was in college, there was Sally's and Pepe's, of course - which got 4 stars from Mimi Sheraton at the NYT (when that meant something). Now, there are other great pizza places in the city. Modern Pizza, for instance, is excellent; I'd probably go there over any other New Haven pizza place.

Colony Grill, which is basically a bar that happens to serve pizza, is amazing. They have a thin-crust pizza with anchovies and hot oil that is to die for. You don't need to go to New Haven to get it, however, because they're not there. You can go to either Stamford (closest to NYC), Milford, Fairfield or Norwalk.

93 I have not had a serious interest in pizza since I left the Northeast. And a good thing too; it's not nearly as good elsewhere. The two irreplaceable points for me are: a crust so good that you want to just eat it by itself, with some char marks on it. And an elusive flavor you don't get at all outside the Metro NYC area. I don't know what that is, but I think it's something about the olive oil, and maybe the cheese too.

I've got the crust down at home, thanks to some tricks I learned from that guy who obsessively tried things until he found Nirvana, and a Big Green Egg that can get to 700 degrees. But I'm still not fully happy with the top part.

164 I make a low carb pizza but lining the bottom a small nostick pan with pepperoni, crushed garlic, sliced onion and shaking Italian seasoning nd grated parmesan liberally over it. Then I cover this with shredded mozzarella and put on medium heat. It will sizzle and the mozzarella will melt into goo. When the mozzarella is all melted, and a couple of minutes more to drive water out, turn off the fire and let it sit until the mozzarella firms quite a bit. Serve by flipping it over onto your plate.

166 I tested the waters of time this past week, and made a ham-and-vegetable gelatin loaf. While I’ve made gelatin desserts before and enjoy them, this is the first time I’ve made a savory gelatin dish. It was good, but I think it would have been both better and easier to leave out the lemon gelatin and just mix lemon juice and olive oil into a salad of ham and vegetables.

Also made some croissants. Not as good as commercial ones, but they made great sandwiches.

171 I go to the farmer's market every Saturday, and love the Asian tent since they've got the wildest variety of greens. Some I have no idea what they are, and I've only tried maybe half of what they've got. While most tables have broccoli rabe, these guys have it - and different types broccolini, Chinese broccoli etc. all the time.

Do the CBD blanch, and then stir fry later on. A simple and easy one is to saute crimini mushrooms (I live in mushroom land) with onion, then add in the broccoli and a bit of oyster sauce. The sauce adds a bit of salt and sweetness and glazes everything. Recipe also works great with asparagus.

There's a pizza joint in my daughters neck of the woods. It was decent and edible. Then Chef Ramsey came along, took one bite of the pizza, and hated it. So the place endured a makeover. Post Ramsey, the pizza was pathetic and twice the price.

I asked them about the dough, post Ramsey. They make it the same day - which to me is the ultimate blasphemy. Dough needs to age. There is some exact number of hours, which is probably 36 to 48. But same day? That's just moistened flour.

192 You only find broccoli rabe in MT by accident. Until last year, I used to order a case and set aside two days. For each chopped bunch of rabe I would use about a head of garlic, a generous slosh of olive oil, and red pepper flakes. All done in the microwave. It cooked down, I would slap it into a plastic container and start on the next one. At the end of two exhausting days I had a year's worth in the freezer. Add sausage and orrechiette. Serve with salmon or pork. Instant very good dinner with little effort.

Spent the afternoon sitting in the sunshine with my son and eating fish tacos. Now I'm too full to contemplate actually cooking something for dinner. Weather here went from horrible to gorgeous overnight. Well, not horrible exactly.
I like white pizza. Never been a fan of red sauce. Once had a white pizza topped with arugula and figs. Was very good. I like a type of pizza Trader Joe's has which is a kind of flatbread called Tarte au Champignons. It is a very light thin crust with cheese and mushrooms. They also have one with hand and roasted yellow peppers.

200 Remember Shotgun Sam's pizza? They had one near Bachman Lake near Love Field. For a kid, as I remember, it was pretty cool. Pizza slices were huge and they gave you a huuuge oversized playing card for your order number.

I started working at their second location in OKC. If you worked a full shift, they gave one pizza, any size for lunch. Worked there a couple of years and at the end I was trading pizza for other fast foods.

Mama's Pizza was great!

For a while the lovely and delightful Mrs naturalfake and the kiddos along with me would eat there or pick up pizza roughly once a week.

We lived in Plano, so we may have eaten on of your pizza. I hope you weren't spitting on them!!@!!

They just kinda died out. One day they were gone. Never to return.

Roman style pizza using imported flour that cold ferments for 72-96 hours - results in a crust that is airy and light. One of my favorites is topped with prosciutto, fig jam, mozzarella, grape tomatoes and arugula. Favorite appetizer is bruschetta with grape tomatoes, strawberries, blueberries, feta, mint, basil and balsamic glaze. Oh and a side of burrata.

245 If you're in Minneapolis and don't mind dodging gunfire, try Parkway Pizza. My long-time favorite is their Supreme Pizza. Good quality ingredients, a great crust, and they know how to NOT screw up a basic tomato sauce. The NE store at 29th and Johnson is probably the safest these days. Not much gunfire or carjackings, but the Wild Turkeys that hang out in the neighborhood can sometimes be real A-Holes.

246 The pizza place in Sutter Creek, Ca., Gold Dust Pizza, has the best pizza I've ever had. The chunks of italian sausage are huge. My fave-sausage and onion.
