Food Thread:The Belly Of The (Tasty) Beast, Sex In The City And Russian Layer Cake?

I recently had a marvelous dish, but I can't find a photograph of anything similar, and I was too frantically stuffing it into my mouth to push myself away from the plate long enough to take a photograph. Above is a porchetta from New Orleans, and it looks similar enough, although the spicing would, I guess, be radically different.

What was it? Well, as far as I can tell it was a trimmed pork loin wrapped with pork belly, then slow roasted for awhile, then finished in a very hot oven to crisp the skin. It was served in three-inch slices, and every bite was wonderfully moist meat coupled with the fat of the pork belly and the intense crispiness of the skin. It was served with a Yorkshire pudding and sage gravy, with apple sauce (thankfully on the side, because apple sauce is disgusting).

Many pork belly recipes call for aggressive spices and herbs, but this one was pretty simple: salt and pepper and maybe a bit of thyme. Nothing else except for that luscious pork and pork fat...

This is excellent cooking. It wasn't chef food, it was more like the stuff great cooks make when they want something simple and wonderful. Start with good quality pork, pay attention to time and temperature, and you will be good to go. That's the kind of cooking most of us love, and actively seek out, whether it's coming out of a local restaurant or an aunt's kitchen.

For some strange reason, commenter Bluebell thinks this is the greatest cocktail in the entire cocktail-drinking world, and held her breath and stamped her feet until I posted the recipe. Personally, I think it is way too much work for what shakes out as a fancy Cosmo. I don't drink 'em, but some of you people (probably Mets and Red Sox and "Sex In The City" fans) might...

The recipe is from Bobby Flay, via Ina Garten and The Today Show, which should tell you all you need to know.


Ingredients

  • 1 cup sugar
  • 1 cup fresh cranberries
  • 6 1 x 3-inch strips orange zest, plus extra for garnish
  • 1 cup water
  • 1 750ml bottle good vodka
  • 1 cup cranberry juice cocktail, preferably tart
  • 1/4 cup Triple Sec
  • Ice

Preparation

1. Several days ahead: Place the sugar, cranberries, 6 strips of orange zest, and 1 cup of water in a small saucepan. Bring to a boil, lower the heat, and simmer for 5 minutes, until the cranberries start to pop open. Pour the vodka into a large pitcher, add the cranberry mixture, and store covered in the refrigerator for at least 2 days and up to 5 days.

2. When ready to serve, strain the vodka mixture, reserving the cranberries and discarding the orange zest. Stir in the cranberry juice cocktail and Triple Sec. Fill a cocktail shaker with ice, add the drink mixture, shake for a full 30 seconds (it's longer than you think!), and strain into martini glasses. Rub the rim of each glass with fresh orange zest, spoon a few cranberries into each glass and serve ice cold.

The recipe claims this makes enough for six drinks, but as Bluebell pointed out, that is a hefty pour, even for tough Yankee fans. It's also pretty sweet, which would suggest a smaller drink, at least for me. Actually it's the sugar that makes it too big a pour, not the alcohol. My martinis and Old Fashioneds are that big, but they aren't sweet.

Russian Honey Cake sounds great. And way too much work for me. But I am not a very good baker (except for bread), and even worse at fine baking like layer cakes. So someone please make this and invite me over for a slice or three. I'll bring the port.

Okay, I have a vague recollection of this stuff, but not in my house. Maybe on a camping trip with someone else, or just walking past it in the supermarket and pausing in horrid fascination.

Anyone remember this stuff? Here's a crazy Russian and a ditzy American tasting canned bread and not being sure what to make of it.

This is the Dutch Baby I made Thursday morning, The top should have been a little more fried but was rushing it.

Buttered Black iron pan, apples sliced and placed pinwheeled fashion fried a bit, pancake mix poured over and covered on stove top. After judging the time right move to 350 degree oven until toothpick comes out clean.

Za'atar roasted chicken over sumac potatoes

I like za'atar quite a bit, but sumac less so, so I will try this without the sumac. The technique is solid, however I would suggest that you simply use a temperature probe and shoot for about 155 degrees in the breast.

Yes. Turkey roll. The turkey breast is pounded out until thin, a layer of cranberry salad and stuffing is spread on it, roll, tie, roast, slice on bias. Beautifully mutated.

29 Zeno. Brine it. I use the Pioneer Woman's apple cider brine recipe. I do cut down on the sugar since sugar tends to brown the skin too quickly. Nice flavor and very moist breast meat.

Bluebell is a lovely woman and her husband is not too intimidating so I'll totally hit on her next time we meet, but that cocktail is silly.

Any cocktail made with vodka is just take something you like to drink and pour vodka in it. Cocktails in general are silly, they're a relic from the days of Prohibition when alcohol tasted awful and you had to gussy it up.

I have said something similar before and some smartypants had a pre-Prohibition cocktail recipe book but that's not the point.

i mix up a liquid made from various ingredients, such as fresh fruit juice, powdered spices, pomegranate molasses, dissolved jalapeno jelly, etc, as the spirit moves me, then push it into the bird.

being a pharmacy family, we have a supply of 60cc syringes, and the appropriate needles, but there are inexpensive kits out there that do the same thing.

Our home-made applesauce is much better; we'd make it from bruised apples that we got at the farmer's market for next to nothing. However, that pales in compared with our homemade pear sauce. Our old place had a pear tree in the backyard, and we'd sauce the overripe pears and can it. No extra sugar was needed, but we'd add some cinnamon and occasionally some allspice. That sauce is absolutely delicious on roast pork, especially when it's hickory-smoked.

Jewells, was never fan of carrots except when cooked w roast. However, lately I've been cooking them stove top and/or roasted in oven. Cover w beef broth, throw in some thyme (rosemary optional).

59 In the Philippines that pork belly would be called lechon. We just had some 2 nights ago. Of course my wife can't roast an entire pig as would be traditional, so she uses pork belly. Seasoned with herbs such as whole segments garlic and long stem lemon grass (very fragrant), which is then rolled and tied. Placed in a rotisserie until the skin is very crunchy. Makes a nice gravy too, although Filipinos don't do gravy.

70 I had the canned brown bread as a kid - it was OK, warmed - but very heavy, so a slice of it went a long way. IIRC, it was part of a dinner menu featuring Boston baked beans and codfish cakes - I think it must have been a staple of Mom's Depression/WWII era childhood, as she told me that it was the first dinner that her mother taught her to prepare.
Basically opening cans and frying the codfish cakes.

75 Re: canned bread. We used to take this on long boy scout hiking or canoeing trips (think 10 days to 2 weeks) where regular bread would either rot or get crushed in your food rucksack. It was terribly dry and crumbly, so we improvised and used it for French Toast. Powdered eggs, powdered milk and water for the batter. No syrup, so we used canned butter and sprinkled cinnamon sugar or canned fruit on top. IIRC, it still sucked, but was a better use of the horrid powdered eggs.

In the Knoxville area there is a Filipino business that does that for catering. Look around. But if its done by Americans it seems like they always cook it too fast, so that its black on the outside and pink on the inside.

I had a pretty good dinner yesterday... pasta with Bertolli's Rustic Cut spicy marinara sauce, also topped with cocktail shrimp and plenty of shake-on Italian cheese. Wish I had taken a pic. One of the best meals I've been able to make for myself for a while.

80 Love stuffed cabbage as a winter dish. I alternate making it Italian style and as my ex-husband's Rumanian relatives taught me (sarmale). Their recipe of sarmale included cabbage leaves stuffed with ground beef, rice, paprika and onions and then layered with sauerkraut and ham hocks cooked in a giant covered pot on the stove. I never liked sauerkraut until I had it this way.

84 My husband and some friends did a slow-roasted whole pig a few years ago. It was delicious. They accompanied the meal with roasted oysters.

This will be the very first year I haven't roasted a turkey. Because I still have a lame paw, I've ordered a roasted turkey from my local Publix. I'll just have to reheat it on The Day. I'll also have smoked ham and will do all the sides and deserts.

I've scaled down the guests to just us, our son, and our two adopted foreign students. I feel bad for not inviting the elderly couple and some other friends we normally have, but I can only do what I can do.

89 Bluebells recipe is basically a vodka cranberry from scratch with some interesting and very good twists to this refreshing summer drink - I like the addition of triple sec - which is really a thick orange liquor. That and the orange zest makes this a better drink than the standard vodka cranberry that traditionally had lime added as the citrus flavor - thanks Bluebell!

112 I was thinking spicy beef on chow mein noodles today, but after checking supplies I found that I lacked beef and chow mein noodles (and possibly spicy) so I went with an experimental white trash chicken noodle soup in the instant pot instead.

Cut up rotisserie chicken bits, can of mixed vegetables, some bullion, salt and pepper, etc. Pressure cooked on "soup" for 30 minutes. Uncover and add a bag of egg noodles, fill up to top with broth, and press the saute button. Let it bubble until the noodles are tender, then eat.

Piece of cake and the kids loved it so I considered it a success.

123 I grew up with zaatar used in recipes. My grandparents didn't carry much of their Lebanese heritage with them except for some recipes. Zaatar was most often used on a thick pita bread, held in place with a bit of olive oil while it baked. IIRC, it was called manoushi.

The bread was a snack by itself but was great for scooping up baba ganoush and hummus.

It should go great on spuds and meat. Actually, it would make an excellent spiced rice.

One of my dad's Navy buddies and his wife invited me to their house for Thanksgiving one year when I was in Hawaii, and they had Okinawan sweet potato. I'd never had those before, and it remains the only time I've ever had sweet potatoes that I actually liked.

As for traditional Thanksgiving sides, mom does a crumbled cornbread wild rice that's really good.

A couple of years ago, we added a Spanish kid and two from Croatia. It was fun. When the turkey came out of the oven, there was a mad rush to the kitchen to get pics on their cellphones to send home to their families.

Actually, wrestling with a turkey was an expression from a dear Polish Jewish lady who came her in her 20's to escape the Nazis. She was still making TG dinner for us in her late 70's because her husband had died and she had no children. She was a rather small woman I thought the expression was such a colorful one, so I still use it

147 Skip that dutch baby looks great! I made mine this morning. I couldn't find mom's cast iron skillet so i made it in her larger-sized, heavy stainless steel one. It worked, but next time i will bring my cast iron from home. This one was browned, but not as crispy as i think it would've gotten in the cast iron.

I made a blueberry sauce to go over it. It was pretty good if i do say do myself.

I've been to Okinawa many times and never had this vegetable - sounds very delicious.

By the way, the Okinawans are considered the "county or island cousins" to the Japanese - they are mostly farmers, fishermen, and live stock ranchers - and they are very much more earthy and friendly toward Americans in my experience there. The Japanese, especially those from the upper mainland ("Edonese") - are the elite and these poor Okinawans are the deplorables in a very American type analogy.

This is whole leaf version of Cracker Barrel Brussels Sprout and Kale salad. My favorite. I made it for last year's Thanksgiving dinner at my daughter's house. Her parents-in-law loved it. I think I'll make it again this year.

161 The good news is, I ALWAYS lose about five lbs. at Thanksgiving. Like one of my girlfriends says, you get so darned tired of preparing everything, by the time everyone gathers at the table, you just pick at the food.

I always have plenty of takeout containers for people to take food home.

Now comes the challenge: Daring my husband to fill the garage frig with beer, when I need the space for the sides. Grrrrrr.

I sort of prefer the simple one, but it's such a staple in that part of the world that no one uses a recipe. It's like cooking rice. People just know what to do, and make modifications to their tastes.

167 Skip that dutch baby looks great! I made mine this morning. I couldn't find mom's cast iron skillet so i made it in her larger-sized, heavy stainless steel one. It worked, but next time i will bring my cast iron from home. This one was browned, but not as crispy as i think it would've gotten in the cast iron.

I made a blueberry sauce to go over it. It was pretty good if i do say do myself.

171 New dish for Thanksgiving? Mrs TP has demanded it for years so, This year, cranberry sauce pushed out of the can so it retains it's lovely cylindrical shape on the serving plate.

It's no good unless it keeps the exact can shape - including the tin can ridges on it or so I have been told. No homemade cranberry sauce this year. Alas.

That's not a bad price. The last one I did, the cleaned and dressed pig cost about $200. $60 to rent the spit / grill. $80 for the charcoal. That doesn't count what I spent on stuffing and Cornish game hens (we put them inside with the stuffing and cut up apples). I also paid a butcher to come and carve it, since my carving skills are less than zero, especially after drinking beer from 7 AM till 4 or 5 PM when it was ready.

179 Last week I did a beef tongue in the slow cooker. Yesterday I heated the last bit in the smoker. The resulting sandwich was wonderful. Really.
Yesterday I smoked a couple of slices of pork belly. Today I will reheat it in the smoker, which amounts to double smoking I guess.
I may go for a sandwich again unless I care enough to do something more interesting.

182 Tami, here it is:

Parmesan Brussels Sprouts

Makes 4 servings
12 ou. Brussels sprouts, halved or quartered depending on size
2 T. olive oil
Kosher salt and freshly ground black pepper
1 cup shredded Parmesan

Nonstick cooking spray for the skillet

Put a 10" cast iron skillet in the oven and preheat the oven to 425 degrees F.

Toss the Brussels sprouts with the olive oil in a medium bowl. Season lightly with the salt and pepper. Add the Parm and toss together.


Carefully remove the hot skillet from the oven and spray with the cooking spray. Add the sprouts in an even layer. Bake until the sprouts are tender and browned, about 20-25 minutes.

*I had it in my head the sprouts went on top of the Parm, for some reason. Anyhow, it comes out like a big ol' sprout pancake. Remove it as soon as possible to a cutting board and slice it like pizza.

Huh, I've never heard of a French 75 made with cognac. How was it? I usually use gin, champagne (really prosecco), lemon juice and lemon peel, and simple syrup. It's delicious and refreshing, but really easy to get hammered on.

217 I have never understood why Honey Cake is so popular in Russia. It was everywhere but I often found it dry and lacking much flavor and not terribly sweet. Generally, I find Russian cakes dry and not at all sweet. It's a lot of effort for a cake I wouldn't eat if it was the only dessert available.

I'm not sure Russians normally use whipped cream between the layers. It never tasted like whipped cream to me.

there is a Korean yam as well, which you can get at an H-Mart, and my GF adores.

apparently you make soju out of it too.

I dug potatoes yesterday, and made mashed potatoes as well.
The one secret is to use to water you boiled to potatoes in, and it needs to be hot, when you mix it in with the taters as you are mashing them.
I like lumpy potatotes, so I use a pastry cutter. It is pretty much the only use I get out of it too.

A really good recipe is to mash turnips and potatoes together, but you need to cook the turnips separate becasue they take longer to cook

I buy for 8 little ones ranging from 16 yo to 1 year olds and they all get multiple gifts. My son, DIL, daughter, MIL, 3 sets of niece and nephew couples (1 gift each), 1 single nephew. One niece has a yours/mine family of 8 kids...they just get an amazon gift card cuz, no, just no.

I don't have anything for my husband yet.

Oh and son and DIL are expecting so...ya know.

We find out the sex this week so I can stop buying gender neutral stuff!

I never liked sauerkraut until I had it this way.

We love them too. They can be a lot of work, but worth it. I try to make a lot so it lasts since you have to put so much time and effort up front.

I have never heard of the sauerkraut and ham hocks version, but the rest is very similar to what I make.

meat, egg, onions, Hungarian sweet paprika, salt, pepper, cooked rice, egg... stuffed into individual cabbage packets.

I usually make a sauce for the base of the dish, and always layer some of the extra odd sized or torn leaves as a bed at the bottom of the casserole dish. Today I cheated because I'm not feeling perfect and just mixed a bunch of stuff in the casserole without making a sauce on another burner. Some sauce, white vinegar, basil, salt/pepper, garlic powder (because I was too lazy to mince garlic), I use both beef and chicken broth to cover the rolls at least halfway up the sides. And I sprinkled a bit of hot pepper flakes before laying the rolls in. For some sweetness, I squirt a bit of ketchup on each roll. Then I baste throughout. Almost 3 hours of baking at a low temp.

Almost done. Smells nice.

Yup. Undercook them and they are unchewable and unappealing. Overcook them, and they are nasty bitter soggy cabbages. Get it just right, and they are kind of sweet.

I steam mine to just-tender, then stir fry with country ham, black sesame seeds, sichuan pepper-salt (sichuan peppercorns toasted in a pan then ground with salt), with a splash of rice wine at the end, and sesame oil folded in after the heat is off.

Hello Ben! Ace sends a rub from her head and cheek, and a mess of purrs.

Short answer, yes. I might nor might not add the cinnamon, depending on how much you like its flavor addition. You can use 3 or so pitted dates for sweetener, or palm date sugar, or agave, or ... whatever you like.

Since almonds in the U.S. are required to be 'pasteurized', try to use organic almonds, due to the way they're processed.

Almond butter takes more food processing time.

The Pioneer Woman makes a case for pre-soaking nuts before roasting/processing. Not sure I'd do that for pecans, but it sounds interesting enough with almonds that I think I'll try it.

Let it rest for an hour at room temp after I put my rub on it and then 275 on the pellet smoker for two hours. Wrap it and let it go to 195 and rest for 15-20 minutes.

One dish my mother would make for Sunday dinner was stuffed breast of veal. I believe it was a tough, cheaper piece of meat, but hours of roasting in the oven made it simply scrumptious. One of these days I will have to go looking for that cut.. I have never seen one in a supermarket my entire adult life.

Don't be intimidated by a brisket (although they can be obstinate, and, very rarely, infuriating.

Trim it, leave about 1/4" of fat on the fat side. Coat with Worchester Sauce or CYM (Cheap Yellow Mustard) and your rub, which can be salt, pepper and granulated garlic up to whatever. (www.texasbbqrub.com has some good options)

Get your smoker going; aim for a temp of 225-250 degrees F. Put the brisket on for around an hour fat-side down. Turn. Monitor brisket temp until it gets past 160 F (this can take a while; 160 is when all the collagen is breaking down, and you never know how long an individual brisket is going to take to break through.)

At this point, double foil the brisket, with some apple cider in the foil, and return to the smoker. You can keep it at 225-250, or jack it to 350 with slightly less quality, but saving time, until the internal temp is 203 to 205. Take it off the smoker, and let it rest, wrapped in towels and placed in a styrofoam cooler for an hour or two.

Cut against the grain. Serve.

Two - three - four cloves of garlic (whatever you like)

All of the Dutch Baby recipes I have seen, which include both Chef John's and Alton Brown's, are more like a sweet version of a popover or Yorkshire pudding than any sort of cake. My wife's favorite topping is thin apple slices sauteed in butter, then mixed with raisins previously soaked in brandy and sugar. Some people just dust with powdered sugar, however.

The recipe i followed had no sugar in it, but was dusted with powdered sugar. It was supposed to have lemon juice drizzled on, but instead I made the blueberry sauce, i added a bit of lemon juice to that.

It wasn't super sweet, which was nice, and it had a softer custard like middle.

I've been experimenting with jacking the temp up to 350 or so after foiling. It takes several hours off. Still a most-of-the-day cook, but ... brisket.

If I could only smoke one animal for the rest of my time, it would be the pig; but if I could only do one cut, t'would be brisket.

That's why I say put it into the fridge to gel together. It will stay cool, but with the cream cheese as a base it will be easy to spread right away.

It would not have changed a thing. The Japanese would have to have abandoned Midway in less than six months if they had taken it. their supply chain was way too long to hold it against the ever increasing might of the US Navy.

517 Weasel, check all the lever settings. My Kubota has so many darned interlocks that not starting immediately is no longer a surprise. I spent 6 hours once chasing circuits before discovering that the pto lever was not all the way in "off"

519 Carrot recipe: slice in rounds, boil in water with TBL sugar for 20 minutes til a dente. Drain. Return to pan, add pat of butter and some maple syrup (even sugar-free syrup). Cook about 5 minutes then serve with a pinch of salt.
