Food Thread: Smoke 'Em If You Got 'Em...Otherwise Just Grill!

My grill and smoker are no longer covered in snow, so it's time to ponder the first attempt of the year....smoked pork butt, pork ribs, beef ribs, smoked sausage, smoked leg of lamb (try it...it's great!), and one I am going to try this year...smoked beef clod (shoulder). The clod is a huge cut, so I will probably chicken out and try a smaller chunk.

But it doesn't really matter what goes on the grill or smoker...there is something about cooking over coals (or gas...I'm not a Luddite) that is pleasurable in an uncomplicated way. I think the smoker is the biggest lure, because once the meat goes on, that's it! No poking or prodding or flipping or basting or any of the many things we do when fussing with food. Smoking is a matter of faith. Keep the temperature where you want it (low and slow baby...low and slow!), make sure your meat has been seasoned correctly, and then put your trust in the low-temperature combustion products of wood and charcoal. No peeking and prodding, no constant stirring and tasting. It's just you against the collagen, and may the best man win.*

As you may have noticed (check the photo up top), I am dreaming of grilled sausages. That's going to be the first outdoor event at Chez Dildo, a casual late afternoon meal of beer, burgers and some of those great sausages from my local maker. I know that some of you swear by brats poached in beer, but I prefer them grilled. Yes, I am an iconoclast, but try it, you'll like it.

As for the burgers? I think small ones (about four-five ounces) on potato rolls is the best combination. It's not the Platonic ideal of a burger, and it's tough to get a nice char without overcooking them, but the size is important because of course you'll want at least one burger and one sausage. And potato salad. And beer. And bourbon...don't forget the bourbon while you are setting up the grill.

Sorry about the obnoxious website...all too often food sites seem to revel in being as busy and complex as they can get, and it's a huge waste of time. But the recipe looks like fun! I haven't made it, but it's simple and quick, so i'll probably give it a shot.

Oh...I probably won't use flank steak. It's pricey in my neck of the woods, and I think whatever is on sale will work. My local market has sirloin on sale about half the time, so I'll try that.

I have eaten Boudin, and it's pretty damned fine eating. I have also had versions that were a bit pungent and strongly-flavored, so be aware. Not as bad as the French anduillette, which smells pretty much just like shit, and tastes only slightly better. Boudin: The Beloved Sausage of Cajun Country It's a bit different than most sausages because it uses rice as a filler, and that adds an interesting texture and flavor that makes it unique. If you can get the real stuff in your neighborhood you are very lucky.

How did home cooking become a moral issue?
Over the course of five years, the authors interviewed more than 150 low- and middle-income mothers and a handful of grandmothers, in and around Raleigh, North Carolina, all primary caregivers of young children. Ultimately, they focused on nine. It’s not that foodie doctrine is wrong, exactly — home-cooked meals are great, we should eat more vegetables, it is nice when families eat together — but rather that the prescriptions of (mostly white, mostly male) public food intellectuals stop making sense when confronted with real life.

The mothers and grandmothers in the book do take food seriously. Across income levels, they care about how they feed their families, and across income levels, they feel like they’re failing. Which they are, in a way, because the task is impossible. A societal problem requires a societal fix.

Look at the sample they used. One small region (really just a neighborhood) and a tiny sample. Yet they feel confident that extrapolating wildly is perfectly reasonable.

Well...here's my extrapolation. They are wrong. Completely and totally wrong, and I use my multi-year study at Chez Dildo, and before, at Chez Dildo's parents' house.

The smug tone of "We know what's best for you" is maddening, as is the even more offensive suggestion that family dinner is unrealistic because it is the purview of White middle-class families.

You know? Family dinner is great, mostly because it reinforces the idea that the family is a profoundly important part of a vibrant culture. Nobody gives a rat's ass that you serve cold pizza or day-old rice-and-beans. The idea is to increase the cohesion of the family...to make it axiomatic that family can be counted on and trusted and relied upon if necessary.

But that is antithetical to Vox's true love, which is overbearing, all-controlling government, so they dug up some bullshit "study" to justify their progressive agenda.

We are having pork chops with a side of Carrot-Zucchini Latkes with Pear-Apple Sauce.

It's actually snowing, so I'll be "grilling" the pork chops inside.

I prepped some bacon today, so that we could have BLT's for lunch, but mostly because I'm making a Frittata tomorrow with bacon and potatoes, so I oven-baked a full package. I needed to use up a dozen eggs because we're going out of town. Emptying out fridge.

Tear or cut rotisserie chicken into chunks
Mix those chunks into equal parts
Cream of chicken (or mushroom)
Broth
Sour cream

Top with crumbled up saltines

Put in a pan and cook for 30 minutes.

Cook some rice while you wait.

After 30 minutes put the oven on broil for 3 minutes to brown the cracker crumbs

Eat

Andouille sausage has its uses - now some people really love hot spicy sausages (coughHEAVYSMOKERScough) but one of the best gumbo's I've ever had is Prejean's Duck and Andouille Gumbo - to die for!

26 Girl grilling. Yeah, I'm the main griller and the sole smoker in our family. Smoked two slabs of baby back ribs for husband's birthday this weekend. Don't have any idea how many days it will take the two of us to eat them.

The seafood buffet reminds me that as way plus 29s we can't eat that much anymore. But we are planning to reconstruct the amazing scallop pizza we had at the Bistro East in Annapolis Royal, Nova Scotia a few years ago. Secret ingredient? Carmelized onions.

i'm sure advocates say there's nothing to worry about, but if it was me i'd coordinate with my doctor. when you are finished, get a check-up, with particular attention to your internal organs - kidney's, pancreas, liver, etc. you are no doubt stressing your system and any damage may not necessarily be apparent now. i.e. you might not be in any pain when those organs are being damaged.

At the Crow and Gate Pub in Nanaimo--recommended by friends--we had the most amazing raspberry pie, made from fresh raspberries picked from their garden that morning. If you are ever there, you should stop in. And you actually might be because Nanaimo is a big BC Ferries stop.

60 There used to be a couple of all you can eat seafood buffets in CT back when we lived there.


Nordic Lodge was one and Cutsy's was another, not sure they still exist They were $100 plus tip to eat there. You had better be hungry and able to shovel in a whole lot of lobsters for that price.

Why not do both? I put my brats in the blue speckled enamelware loaf pan on the grill with dark beer, onions, garlic. After cooking in beer, move directly to grill to sear and brown. Good stuff, I tell ya'.

63 The myrtle Beach area has lots of the seafood buffet restaurants. Not outrageous, but it will be $100 for a family of four. BUT you can also just get a plate full of big fried scallops and Crab legs and such, so it's not a horrible deal.

I haven't had a kitchen knife accident - but there was a time I was up on top of a steep roof patching a leak with tar and a putty knife. I slipped, and in contorting to keep myself from flying off a pretty tall roof, I landed on top of the putty knife and slashed my wrist open. I guess because it was pretty dull it just slashed the skin and didn't penetrate anything beneath, but it was freaky to look at all the stuff in your wrist with the skin hanging open. Took 7 or 8 stitches.

96 To stray a bit back to the topic, the two things I've found that help with smoking are use way less flavoring wood and smoke than you think you'll need, and absolutely try to maintain your smoker temperature. Gas and electric smokers have an appeal despite breaking from the meat + fire way because they're so good at keeping a steady temperature.

This morning was another Jimmy Dean busciuts and gravy extravaganza which brings the following to mind.

I use McCormack Country gravy mix but make it with all real milk. The residual gravy is then used by spreading to take the oxidation off the copper bottom pots and pans. When the gravy develops a kind of green tinge, you know its working. A couple hours of close watching might be needed.

The bit about knives triggered my kitchenophobia but this time not my bayonetophobia.

99 I was at a New Years Eve party years ago, some friend took me to some rich guys house who I didn't even know. He was drunk, and had a bunch of drunk friends. They had a bucket of unshucked oysters, so he decided to show off by grabbing one and showing how he could open it with a butcher knife. Long story short, I was standing next to him right when the butcher knife (predictably) slipped, and put it straight through the palm of his hand where it came out the other side. Turned out I was the only out of all those idiots so I gave him some first aid and wrapped his hand up in a towel, and then all his friends carted him off to the ER.

And then came the weirdest part - me and my buddy were left in this mansion, basically, owned by people we really didn't even know, with a seafood buffet plus beer and champagne for 20 people, and we were all by ourselves. So we ate and drank til we were stuffed and decided that was enough of that.

Speaking of knives, my daily workhorses are Mundial Commercial Brazilian higher carbon stainless with riveted synthetic handles. German machinery sent to Brazil back in the dark ages. Superb daily drivers. The color is faded out of some of the handles but the blades are pristine save sharpening marks. Highly recommended if you can find them.

I think the little white ones and the baby bellas are the same variety, just picked early or left to mature, respectively. The darker ones have a stronger flavor and different texture, like you noticed.

Whether it's worth the price difference is up to you.

156 Grilling: I had good success grilling the Tomahawk steaks (a 2" rib steak on a giant rib handle that I had to saw off most of to fit in the Big Green Egg). Thickish coat of salt and some pepper, right before cooking. Both sides, because it's so thick. 6 minutes on each side at 525, nice crust, then over to the side for some indirect heat. Pulled it when there were still some spots inside at around 105, but the thing is so big that it evened out to perfection. Really great cut of meat, and you can't beat the pure pleasure of looking at it.

Kitchen knife accident: I use Chinese cleavers for most things, and I was cutting a carrot piece lengthwise. I had unwittingly selected a thicker cleaver than I thought, and so the carrot rolled underneath the blade, which came down on my left fingertip, splitting the nail and leaving a good bit of fingertip on the unanchored side. In the emergency room, the local anesthetic guy was way backed up, so I got my stitches without any, rather than wait. Some of them had to go (shudder) through the nail. Not fun. The finger is fine now, but there is a touch of numbness that remains.

158 Kitchen knife experiences. Weeeell. For a awhile I decided that real men didnt use knives. They used only cleavers. In fact I thought I would have a youtube channel. "A mans kitchen, cooking with cleaver." Or some shit. Yeah, oh sometimes there was alcohol involved. I still have the end of the thumb but had to lay the flap piece on the end and really cinch it down for a long time.

164 We stumbled on a wonderful addition to our smoker list of must do the week after Christmas when we throw our traditional "It's over, stop obsessing and have a drink" mostly annual blowout.I had a case of frozen oysters on the half shell (which plumped up in brine very nicely for the raw bar) and as the afternoon and alcohol drifted by, we thought, why not smoke some. (Did I mention the Alcohol?).We put them in the smoker frozen solid and wandered away for an hour. We may have discovered anew form of cold smoking, because these were perfect.I may try some frozen salmon next week.

175 Had a kichen knife in the sink once, and was washing something. The knife flipped so the sharp edge pointed up, and I slid my thumb against it by accident. Cut about 1/4 inch down the meat of my thumb roughly parallel to the nail. Didn't go to the ER. Just cleaned it, applied pressure and kept it bandaged snugly. Healed up fine.

It's tricky because you'll see an experienced Chinese chef using a Chinese chef's knife to detail-strip an entire carcass and then make delicate little flowers out of a radish, and a Chinese chef's knife looks a whole lot like a cleaver. It's not the same thing.

The Washington Post has a Peep contest each year where people create scenes using Peeps, and the pictures are always fun. I would say maybe try corn starch instead of flour and see how that goes. You might have to adjust the ratio, but maybe not.

It turns out this young woman of his races what I thought initially were go-karts. Go-karts with motorcycle engines on them - they hit 90 mph or so. Her Dad has a 1st class machine shop in one of the barns and his own rifle range on the farm. Owns multiple full auto weapons.

Try making a paste with corn starch and Kirsch. Add after all the cheese has melted.

The kirsch gives it a little understated cherry kick that goes great with the cheese, particularly if you use emmental which has a little nutty flavor to it.

He is a thoughtful guy and I'm pretty sure he sees the value in marrying the right woman. Coffee for breakfast, with just a dash of cream and butter (can't do black).

Lunch was celery filled with brauschsweiger, queen olives and pork rinds dipped in high end blue cheese dressing. Not bad.

Supper was ground chuck mixed with sauteed shredded red cabbage with pepper, season salt and about a tbsp of A-1. Also not bad.

354 This isn't a knive accident, years ago when my wife and I were getting married, we went to a large department store to register. We decided on the usual appliances, etc, but also wanted to get some kitchen knives.
I am not a chef, but I am a forensic pathologist, so I only knew the knives by what *I* used them for. So, we wandered along, and I said that I thought that looked like a good liver knife, a good brain knife, one for doing subcutaneous dissection, etc. I wasn't paying attention, but the saleswoman apparently started looking a bit alarmed, and my wife had to step in and explain things.

We forensic pathologists also have a deep appreciation for cutlery, at least those of us who trained with large knives (there's another school of practice that relies more heavily on scalpels and small knives).
When I was a trainee, I had a great knife, but when I graduated, I left it behind. It was such a popular knife that it was etched as the "Billo memorial knife." After a year or so, the Chief Medical Examiner decided to make it his personal knife. Years later, I returned to the state where I trained, at about the time the Chief retired. I went to his retirement party, and he returned my knife to me. I have been using it for the past 10 years. The knife has been in continuous service for 35 years, and has probably been used in over 10,000 autopsies.

359 I barbecued a 4 lb. corned beef flat yesterday. Washed it off and then soaked it in fresh water to get rid of some of the salt. Seasoned it with corriander,rosemary, garlic and pepper. Smoked it for 4 hrs. at 250F using oak for smoke. Then into a pan with the veggies and 3 cups of water, sealed with aluminum foil and back onto the grill at350F for an hour or so. It was excellent.
