Early GAINZZZ Thread/Low Carb Recipe Bleg Thread

I'm in a busted fast -- I went four full days of fasting (Tuesday through Saturday), then I got panicky that I was going to do damage to myself and the panic spiraled until I broke the fast, first with not-so-unhealthy chicken noodle soup, and then with the greasiest carbiest Chinese food that $60 could buy.

Then I felt like a total dick and total pussy for having gotten panicky and permitted that as an excuse to break the fast, so I threw out what was left of the food (which wasn't a lot, tbh -- I went train on that fucking Chinese food) and restarted the fast Sunday.

So Tuesday through Friday fasting, EAT ALL THE CARBS Saturday, then Sunday through today fasting again.

That makes today Day 3 (again), which is always a real bastard of a day for me. So I've had to go through the really tough Day 3 twice in a week.

I'm thinking about what delicious but low-carb/keto things I can eat when I break fast.

So, talk about YO GAINZZZ here, generally, of any kind.

And also, if you've got some favorite low carb/keto recipes, please let me know. Links to online recipes, whatever.

I'm looking for really good stuff to start making when I break the fast.

One thing I can't find online: a recipe for low-carb fried clam strips, using crushed pork rinds as a "breading." I don't know if the lack of a recipe for this means that this just won't work, or if the lack of a recipe just means, "It's the same as every other recipe where you substitute crushed pork rinds for breading, stupid. Use your imagination."

Anyone have any ideas?

Also, while I've found a lot of recipes for low-carb fried chicken (using almond flour, parmesan, and crushed pork rinds for "breading"), I wondering if anyone has one they would say is the best. The most like KFC, or the most like Popeyes.

Also -- what would the best oil be for it? Buttermilk and egg for the wash, or just egg?

I found a "fried rice" recipe using riced cauliflower -- anyone have any suggestions for how to prepare pork so I can cut it up and make pork fried riced cauliflower?

I'm also really jonesing for batter-fried cod or flounder. Or a McDonald's style Filet-O-Fish. Basically any excuse to deploy some tartar sauce.

9 For a "comfort food" type of dish I will steam cauliflower, drain well and put it back in the pot with some butter, sour cream OR ranch, shredded cheese and the Costco bacon pieces, salt, papper, garlic powder and mash it all up with a potato masher ( or fork would work) just chunky, not trying to get it smooth or anything. Then pour into a baking dish with more cheese on top and bake until bubble. It's actually pretty simple and quick. The leftovers also makes a great breakfast - kind of hashbrown casserole kind of deal.

38 I need to get back into IF patterns.

Intermittent fasting, not the crazy multi-day versions , has really cut my food intake. I simply can't eat as much as I used to. When I try, I get sick. In a way, I'm kinda sad...

I've given serious thought to going straight meat and veggies with two slices of bread a day, right after workouts so I don't bork my gut bacteria entirely.

But I also really love rice and taters so I may not manage to do the meat and veg only thing happen.

You might laugh, but one of the best things I broke fasts with was canned peas and carrots with butter and pepper. It's what gave me the 'meat and veg diet' idea to me. I could eat a whole can of peas and carrots and be very happy. Toss in some meat and that's a good meal, to me.

41 Just stick to a low carb diet and eat normally, ace. It isn't that hard and surely it must feel better than fasting.

Didn't you nearly kill yourself a while back from that fasting routine?

As for your easy pork, do a pork shoulder/butt wrapped in parchment and foil (two layers of each), and cook in the oven at like 225 for 10+ hours; or use a slow cooker instead of all that. Season with whatever spices/salt/pepper you like. Should come out to a nice pull-able consistency.

42 I'm continuing my lifelong enjoyment of carb foods like pancakes, oatmeal, rice, bread, tortillas and potatoes. Can't say I ever liked pork rinds. Salted peanuts in the shell are among the things I'd never give up.

I don't crave deep fried foods - my superhero weakness is sour cream. There's nothing in this world not improved by baking, dipping, stuffing or blending with sour cream.

46 Ace, if cauliflower is okay, then just roast it with tons of olive oil and garlic and chili flakes and kosher salt. High heat (425 degrees) for as long as it takes to make it nice and golden...maybe 30-40 minutes.

While you are doing that, cut up some pork into bite-sized chunks and saute it on high heat, and when everything is done, toss it together.

Or bacon. That will work with the cauliflower too!

the only problem is that breading packs a lot of carbs. Can be something like 10 or 16 carbs just for breading.

That's why I'm keen to do this pork rind breading thing. I love breaded stuff and I cheat a lot having breaded stuff.

I made a keto pizza the other night that was really good. The crust is 1 block of cream cheese a cup of parmesan and 2 eggs and garlic powder. Blend it and bake in in a cake pan fo 15-20 min or until brown. LEt it cool a bit and then top it with whatever. I found a sauce called Rao's that is only 4 carbs in a half cup which is all you use on the pizza anyway! I browned some spicy Italian sausage and some onions, mozzarella and a little more garlic and then cooked it for 10 min or so until the cheese was brown. It was pretty damn good!

Dropped about 20 pounds 223 to 203 since last September. You'd think being so close to sub 200 would motivate. But, only down 4 since the year began. I've bounced below it (after-exercise weigh ins). But not quite there for real.

May be worth buying a few packages of cheap drumsticks just to harvest the skin and use the rest chicken soup/salad.

Can go medium (which is more common now a days) but just keep it cooking longer, as bacteria is sensitive to temp AND duration. Too much protein when you're not lifting heavy to build muscle or above that will turn to glucose. I eat low carb/high fat and don't worry about ketosis, but if he's eating protein, veg, and fat then he's close to keto or is metabolically flexible, which is really the real goal. Not to bitch about fellow commenters here (who are more supportive than most people), but that is one of my biggest gripes.

Everyone -- and I mean EVERYONE -- has a fucking opinion on what I eat, when I should eat it, how much I should eat, and how often I should eat.

I don't get it.

A person I barely know was getting super judgey with me because I don't eat during the day. She was almost yelling at me for not eating lunch. She was telling me I'm super unhealthy and all these other things.

And it's not like she was in great shape -- I'm probably thinner than she is. Clearly what I'm doing works for me, I've lost a decent amount of weight, and more importantly, feel a lot better and less sluggish / fatigued all day.

So... why is it anyone elses business if I don't feel the need to carbo load 3 meals a day?

168 I found a Keto no-carb baked fried chicken recipe. It's awesome, and it uses - get this - fried pork rinds as the coating! It freaking works!

Just dip the chicken pieces in milk (or soak overnight) and then dip in egg, roll in crushed pork rinds flavored as you like until well coated. There's so many brands and flavors you'll need to figure out the seasoning on your own, a lot won't need any added salt.

Plop on nonistick baking sheet, drizzle a little melted butter or olive oil on top, then bake it at 325-350 for however long.

169 Ace, do you meal prep? I've been controlling carbs for about five years now, and I find meal prep smooths out the rough patches for me.
For example, just this morning I made a batch of lunch/snack. Nabbed three big chicken breasts from the store ($6), half a bag of frozen chopped spinach and frozen broccoli florets ($2 apiece), and Mission carb balance tortillas ($4 for a pack of eight). I season and cook the breasts, heat up spinach and broccoli. Then I chop it all up and grind it together in a cuisinart. So I end up with a huge container of ground chicken with vitamins and fiber mixed in that lasts about a week.

Toss it on a tortilla, season if you want, add low fat cheese, and throw it in a George Foreman grill for two minutes.
It's a high protein, low carb, high fiber meal replacement with vitamins on the lower end of calories. It's my go to when I can't decide if I'm hungry or bored. Filling, too.
Just having that in the house saves my ass a lot of the time when I don't want to be bothered cooking and just want something to eat. Maybe give it a whirl.

BTW, to all those here suspicious of what a keto diet does for your health, if done right it ENHANCES your health. You're cutting out _all_ sugar and flour products. You're eating tons of fresh and cooked veggies (at least on my version), and yes, you're eating fat and protein. You will feel great, not be hungry if doing it right, and have more energy.

You will lose weight.

Add intermittent fasting (eating once or twice per day) and you will do even better.

There is no limit on quantity, only on type. It completely changed my appetite, I have little desire to snack.
Last spring they came out with a recipe book, "Always Delicious". We've used quite a few, but it takes some experimentation. They also have a facebook page where people share ideas and recipes. One of our favorites is cauliflower with melted cheddar, sour cream, and chives.

192 Ace, the KETO diet is the exact same thing as Atkins which has been around for decades. I was about 50 pounds overweight a few years ago and started Weight Watchers but got tired of counting every morsel I ate. So I switched to the old Atkins: All the meat, butter, veggies, pickles, olives, peppers, eggs, cheese you can eat; but drink lots of water. You can get pretty creative with recipes if you like to cook. the most important thing is to eat whole and avoid manufactured anything. If you want bread eat it; just make sure it is whole grain. You can eat potatoes and rice, pasta as well but just in smaller portions. You should not fast or starve yourself because that's when the cravings overwhelm you. I've been at my ideal weight for 7 years. You got this!

P.S. I'm a 19 year lurker on your site and really enjoy it; rarely post. Thanks for reading!

I plan on transitioning into keto in a month or so, adding kettlebell tabata-timed lifting.

I'm lazy as hell, but sous vide makes it easy. I can fix 6 chicken breasts at once, throw some in the fridge and the rest in the freezer.

Posted by: Nigel West Dickens at February 19, 2019 03:11 PM (GTKWb)

Right.

It's generally true that you need to burn more calories than you consume.

However, a) your body doesnt process all food the same, and b) certain foods seem to trigger much worse insulin reactions in some people that cause them to be really hungry.

For example, I realized that if I eat a bagel for breakfast, I'll be tired and hungry all day.

if I don't eat my first meal until I'm hungry (usually in the late afternoon/ evening), and it's fat and protein heavy, I feel great all day, and can much more easily eat at a calorie deficit.

I also find it easier to wake up and go in the morning.

Just my personal observations about myself though, YMMV.

233 If you struggle to lose weight no matter what you eat and have chronic indigestion issues, heartburn, or constipation, Google "low stomach acid symptoms".
Low stomach acid is incredibly common and often the first domino in a host of other health issues.
It's also easily reversible: you can take HCL (replacement stomach acid) capsules with meals.
(Do NOT take that if you're using NSAIDs: you'll give yourself an ulcer)

A simple way to test yourself for it is to mix 1/4 tsp baking soda into 6 oz water and drink that on an empty stomach first thing in the morning. You should have a fizzy, carbonated burp within 2 minutes. Test 3 mornings in a row to get an average.
If you burp after 2 minutes, it's a little low. Burp after 3-4 minutes, it's waaay low. Never burp and your (desperately needed) gastric juices are so low you're on a fast track to a gallbladder attack.

Most people lose 10-15 lbs in a few weeks just taking HCL with every meal. Without enough acid in your stomach your food ferments in your gut, causing bloating, indigestion, weight gain, joint pain, thyroid issues, hair loss, and weak nails, to name a few.

I'm not super serious about the diet. I'll eat whatever, but I do like to see the numbers go down. And yet, I seem to have poor impulse control when it comes to delicious foods.

239 Hmm...maybe I should get my husband to cut carbs.

I am one of those lucky bitches who can, in general, eat whatever she wants and still stay thin. I was having a little trouble keeping 2-3 extra pounds off (I'm 5' tall and about 101 lbs, so 2-3 extra lbs is visible on me), but I started doing cardio exercise 30 min/day every day and eating smaller meals (like, a slice of cheese and some crackers is the entire meal). After sticking with that for about six weeks, I finally dropped those 2-3 lbs, and I have been holding steady between 100-102 for a while - even with the occasional cookie.

240 >>>Why do you do five days? Is there a certain biochemical reason?

And the third day is the hardest, why?

...

I want to do ten or 12.

As for reasons: first of all, it just does a lot of good for a lot of things. Improves insulin sensitivity, spikes Human Growth Hormone, starts autophagy. And of course you start losing a pound of fat a day.

The third day is the hardest because by day 3 you've definitely run out of all stored glycogen and you might not be in full ketosis yet, so you're in an energy dark zone where you can't feed off your stored glucose energy but your body isn't really kicking on to ketosis yet.

plus hunger just tends to reduce for whatever reason on day 4.

I lose about 11 pounds, and immediately gain 8.5 pounds back, but I hope in the process I'm wiping out a lot of precancerous cells through autophagy. 249 233 If you struggle to lose weight no matter what you eat and have chronic indigestion issues, heartburn, or constipation, Google "low stomach acid symptoms".

Posted by: Brunette the 'Ette at February 19, 2019 03:20 PM (adsVM)

How odd--because watching all the adverts one is led to believe the problem is too much stomach acid. Then again, the adverts, right?

251 I've actually been reading a bit on gut bacteria as well.

Imbalance can greatly effect your nutritional absorption and hunger hormones.

I was watching a story on a women with an intestinal disorder that caused her intense pain. They did a fecal transplant from her daughter to replinish certain strains of her gut bacteria. It worked well and cured her illness.

However, she went from slim and fit (BMI under 1 to clinically obese within 8 months.

The documentary I watched said researchers are still trying to isolate specific strains of bacteria that promote healthy weight that seem to occur in larger numbers in fit people, but for now their best advice is to create a diet that promotes all levels of gut bacteria, which doesn't seem right because you are promoting the ones as well that may contribute to obesity, but I'm no nutritionist, so I can't say that with certainty.

As to batter, you can crush corn flakes or another crispy low-carb breakfast cereal or crushed cracker (wheat thins are fantastic) if you don't want to use standard tempura-style batter, or a simple egg, milk and flour (gluten free? Rice or almond flour?) (and Salt!) set up. If you use a breakfast cereal or cracker mixture, you just need something that will help it stick to the fish before you toss in the super high-heat oil for a quick fry. Egg mixture with flour works great. Just make sure to heavily salt the fish BEFORE applying any of the coating.

Yup.
Why tell people to take a little acid with meals when you can write them a recurring prescription?
The stomach is closed off at the top by the lower esophageal sphincter: when food entered the stomach the system generates more stomach acid to digest it, acidity increases, and that highly acidic fluid splashes against the LES, triggering it to close.
When that fluid *is not acidic enough*, the sphincter doesn't close and the acid washes right past it and you get heartburn.
Taking a shot of pure lemon juice stops heartburn in minutes.
Antacids neutralize it *so you don't feel it*: they don't close the stomach and stop it.

Put "low stomach acid heartburn" into a search engine. Revealing. And infuriating.

311 Ace, this is easy and awesomely delicious baked pork loin. I've made it 4 or 5 times in the past 2 months because it's mouthwateringly satisfying. Get a Hormel marinated pork loin (1.5 lbs) - I usually buy the lemon-garlic one. 4 cloves of garlic, minced, combined with 1 tbsp Italian seasoning. Brown the pork loin on all sides/ends on med-high heat in EVOO, then place it on foil, top with garlic herbs and 4 or 5 thick pats of butter, at least 4 tbsp. Wrap it up in the foil and bake for about 35 minutes at 350F. Tender and juicy, and you can spoon the melted butter-herb mixture over the slices.

A mood thing?

I remember when I realized that I could watch anything at any time, no matter the mood.

I was at my dad's house with my sister, and she decided to watch Spirited Away. I love it, but I was just not in the mood. Still, she won, and we watched it. I ended up really enjoying it (of course). Combine that with how I treat Netflix DVD's (I have it. I must watch it and get it back out the door as fast as possible) and I can pretty much just turn on anything and go.

But get your thyroid, etc. checked if you haven't already. You need to stick around, making liberal heads explode, for many more years.

thanks. BUT, it's not the people questioning fasting I'm getting annoyed by. I understand people think fasting is dangerous. And, admittedly, I did wind up in a hospital a few days after a fast. (though diahrea was a major factor in that deydration)

It's people preaching the Standard American Dietary Advice that are annoying me. This doesn't work, which anyone who's ever tried it knows, so people are just spouting off, as people tend to spout off, about things they know absolutely nothing about.

No one would be trying new diets or "fad diets" if the standard american medical advice worked.

It doesn't. It doesn't matter how many times you say Calories In Calories Out. It doesn't work. As I said, this is the single most thoroughly established FACT in all of health. The experiments have been run with 100,000's of test subjects. IT DOES NOT WORK AND IN FACT CAUSES WEIGHT GAIN AND HEART PROBLEMS.

337 290 Question on the HCL: Do you think taking an acid reflux medication would cause low HCL?
Posted by: sniffybigtoe at February 19, 2019 03:29 PM (xfb67)
--------
Shit, yes.
Proton pump inhibitors actually shut off your stomach's acid factories, and regular mineral antacids (like TUMS) neutralize your acid, and then your food isn't broken down properly and your body *can't absorb the nutrients it uses to make stomach acid*.
Leading to silent reflux, bloating, indigestion, constipation, SIBO, Candida overgrowth..and that's just the tip of the iceberg.

Ace is correct.
Undereating long term CANNIBALIZES muscle, which really is just muscle loss from lack of protein. Fasting actually creates new cells and gets rid of old ones. It also puts you straight into ketosis.I mean, if you don't end the fast with wontons.

That includes juices. First I mostly make my own juice because almost all you buy have other juices or ingredients you don't want. I also try to stay with things like grapefruit juice, which has fat burning properties. But the key is really to ensure you do PT every day. A good routine that covers all body parts.

Buy big shrimp. Butterfly cut them open, almost all the way through. Mound stuffing into the cavity, press the top butterfly food over the top, and bake in a 375 degree over for 20 minutes or until stuffing is golden colored.

Stuffing: I use a mixture of crushed wheat thins, garlic, salt, herbs of choice, and room temp soft butter. But you could substitute wheat thins for whatever (but may have to add more salt, cuz they're salty all by themselves). Substitutes could be corn flakes, another cracker, oven-dried gluten free bread (crushed), or whatever. Squeeze lemon over finished shrimp and enjoy.

Posted by: Curmudgeon at February 19, 2019 03:36 PM (ujg0T)
-----------
Yes, that's why it helps a lot of people with heartburn.
Some people whose gut microbiome is in really bad shape should avoid vinegar because it's a product of fermentation and they already have a serious fermentation problem, but pure lemon juice (1-1.5 oz tossed back straight, without touching the teeth) works very well, as does taking HCL capsules with a mouthful of lemon water.
Also avoid drinking water within 30 minutes of meals, so you don't dilute your acid.

Doctor's Best is a great brand for HCL: I got it on Amazon. 360 capsules for about $15.
Best $15 I ever spent.
Don't forget to use Ace's amazon link if any of you need to get it, y'all.

439 We supposedly need 4,700mg of Potassium a day, and it's damn-near impossible to get that. So I supplement.

Of course, the good ol' government has made it illegal to sell otc supplements more than 99mg per pill, so that's only 20+ pills per day assuming you get the other 2,700mg from food, which is still a stretch.

OR...or...you can buy potassium chloride water softener pellets from Lowes and grind them up in a coffee grinder. Food grade. Pure. Cheap. Lifetime supply for 28 bucks. Fuck you, gubmint!

440 Ugh I can't imagine doing both fasting and keto. I don't even really fast, just have 2 meals a day with 16-18 hr break to sweep the insulin out M-F. It still works, cuz its about 25% fewer meals per week. I eat a bit more for those 2 meals, but its still overall less calories than when I thought I had to have 3 meals daily.

441 Does buckwheat count as a carb in the keto diet?

Remember that buckwheat is not wheat in any way -- the name is a linguistic misnomer in English. Buckwheat it totally unrelated to wheat and is instead a kind of seed which still can be cooked and used like a grain.

Anyway, if buckwheat is allowed, I HIGHLY recommend it, either for breaking the fast or for just eating under normal circumstances. Healthy and tasty, and a very convincing substitute for gluten-y grains, without losing any of the carby satisfaction.

One of our favorite thing to cook up is pepperoni stick. It's a family recipe, and not everyone likes it. We buy two sticks of Bridgeford pepperoni. Slice rounds about 1/4 - 3/8" thick. Might I recommend...chess?

It is extremely difficult, and yet has a definitive skill-acquisition curve in that active players get a "rating" which precisely and inarguably pinpoints your actual skill level, to a very precise degree.

And since you (rumors say) live in the NY area, there is a LOT of real-world in-person chess events there. Plus of course tons of chess online, no matter where you live.

It's mentally challenging, has "gravitas," is addictive, makes you look smart, and (believe it or not) is an extreme calorie-burning activity. Running your brain at full RPM for hours at a time day after day consumes a massive amount of blood sugar. Some players have reported losing between 5 and 7 pound during a three-day tournament! (Seriously).

I buy whole pork loin, and cut up for what I want, a small one for roasting, thick chops for stuffing, thin ones for topping rice or noodles, and leave enough for two or three fried rice portions -- cut either in thin strips or cubing the portion -- and freeze it. Once thawed, it only takes few minutes to cut up and a few minutes to fry in the wok. Season as you like in the wok -- it's usually the second to last ingredient I do in the wok, the last thing being the dried out, 'day' old rice.

Try to add in stuff that's quasi-primal like walking in a woods, or by a river, in sunlight.

Try a combat sport. Try, as garrett always suggests, a climbing gym.

You can turn all that back around, but make sure you don't have gastritis (it's common to develop that after prolonged PPI use: your stomach's protective mucosal lining thins because there's abnormally little acid in your stomach, leading to irritation and eventually ulcers). And don't take HCL or lemon juice/ACV with any NSAID (like Ibuprofen), because those thin the stomach lining all by themselves and you can do yourself a damage.

I put a good link about addressing low acid in my nic, so I don't blow the margins.

It really pisses me off... See you got these here eyes and they are super eyes. But they aren't super eyes like the can see far away or microscopically or ultra vision or x-ray. No, these eyes work like regular eyes and shoot laser beams.

So they are not super enhanced eyes where the function of the eye has been enhanced, but rather they have made it an energy emitting device, which seems to be counter productive to a eye that actually see's things. Can she see things when she is shooting her eye beams.
This makes as much sense as fembots with 45 caliber boobs.
And what makes her fly? Sparkle rainbow farts? From where does she generate thrust?

496 If you can stand cabbage and celery, then make a big pot of soup from smoked turkey wings or pig's feet.

Just cover them with water in a big ass pot, add a little vinegar, bring to a boil, and then cover and lower the heat to a simmer for a few hours.

Put in scraps of onion, celery, and garlic. Just rinse it before you put it in. I usually add some bay leaf, as well. Any pathogens will be killed by the boil and long simmer.

Pull out the pig's feet or turkey wings and put on a plate. Strain out all the other solids and put into containers for the fridge. Shred the meat off the bones by hand, and put into a separate fridge container.

If you have a skillet with a lid, use it to make your soup. Pour some of the broth into the skillet. Cut a wedge from a head of cabbage and then slice it into bite-sized pieces. Cut up the shitty parts (white and leaf parts) from some celery into rather large chunks and save the good parts for celery sticks. Throw the veggies into the skillet with some of the shredded meat, cover and simmer until the veggies are soft (about twenty minutes).

When you are ready to serve, take an egg from the fridge and put it into a coffee cup. Run hot tap water over it for about thirty seconds and let it sit for about a minute to take the chill off. Break the egg into the soup and stir it around.

Add salt, pepper, and hot sauce to taste. This is extremely filling and contains nearly zero net carbs.

497 I try to eat low-ish carb. Meat, veggies, an occasional fruit or yogurt, and an occasional bit of bread/pasta/etc. I have a little stash of chocolate in the cupboard because it makes me happy. It worked pretty well until my fiance got me a gallon-sized container of chocolate for Valentine's Day (local store sells a lot of different bulk foods and he was trying to make a trail mix, only he's not very good at estimating volume). Really?

How transparent.

"People on the right enjoy the movies of John Wayne. He was a man from a different time in America. Dredge up John Wayne's double plus ungood wrongthink and drag him through the dirt. Then if someone likes John Wayne, our NPCs can paint him as a racist. They will be shamed into silence about liking John Wayne and the old, masculine values he embodied. Take everything away from them. Even the old movies."

G-d, I fucking hate these people so much. It's just burning, incandescent hatred at this point.

504 and now for your request:
Buffalo Keto Chicken Tenders

we haven't tried it with pork rinds, but that's probably next time

First marinate in buffalo sauce, overnight is best. I make it with 1:3 butter:Frank's hot sauce. So that's 1oz of butter to 3oz of Frank's. Because I'm broken, I also mince garlic and add it to the sauce.

1 lb chicken breast, cut into thick strips (thicker than fajita strips)
1 cup almond flour
1 large egg
1 Tbl heavy cream
salt/pepper

Preheat oven to 350
season chicken with salt and pepper
season almond flour generously w/ salt and pepper
beat egg with heavy cream
dip each piece in egg wash, then in the almond flour
(I tried to do the shake and bake thing, suboptimal with 3 lbs of chicken)
place chicken on lightly greased baking sheet (or one with a silicone mat)
Bake 30 minutes, if you want more crispy, broil for 2-3 min
cool for 5 minutes, then toss in buffalo sauce, shaking gently so the batter doesn't fall off
(we omitted the last step and just dipped in sauce or poured it over the chicken)

It was excellent. We've deep fried chicken with an egg wash, and parmesan with almond or coconut flour too. That's a good bit more work, and doesn't lend itself well to asian dishes (our favorite).

505 Here's what I do. Not that anyone cares. You will just find a way to eat shit and make yourself feel like a turd for self-flagellation reasons hahaha.

I am 5'10" 170lbs and probably 10-12% bodyfat right now. I still have a long way to go to my desired 190lbs and sub 10% body fat but I used to be 165lbs and at least 20% body fat, and could not gain muscle to save my life. I tried for my entire life and couldn't do it.

So right now I am at about 2,500 calories per day.
200g protein
205g carbs
95g fats

In theory I track my macros but most days I don't whatsoever, I just stick with routine stuff I like and fits my plan.

Higher glycemic foods in the morning and before a workout.
Little to no carbs in the evening (lots of veggies and meats and fats)
MCT oil in the coffee
anti-inflammatory foods
I take a CLEAN pre-workout and post-workout
and I will have some exceptionally clean meal replacement shakes daily.

Once a month I will do a 48hr nutrtitionally supported cleansing fast

I lift weights 4 to 5 times a week with lower reps but it's all about progressive overload. That's the fun part.

I ALSO eat cake, cupcakes, scones, pizza, chinese food, bbq, whatever, and I don't make myself feel bad about it. Instead my food is fuel, not some treat for me being a good little boy.

Thanks, Chris

506 134 Costco sells a roasted vegetable frozen pizza with a cauliflower crust that's actually pretty good. No unusual flavor to the crust. I wish they made a version with meat toppings, but you can buy cauliflower crusts, and add your own toppings, I suppose.
______________

I buy a cauliflower-crust pizza at Fry's (owned by Safeway) that's good, and it comes in a variety of toppings, including pepperoni.

I've tried several brands of the cauliflower-crust pizzas now, and they vary greatly in quality. Some are just plain awful tasting, some are meh, and some are very good. The best tasting ones tend to be the ones where the crust is very thin.

I've tried the cauliflower-trying-to-masquerade-as-mashed potatoes dish (Green Giant makes this, among others) and it's just nasty. Tastes, and smells, like cauliflower, not potatoes. Unless you like the taste/smell of cauliflower, don't waste your money on that.

512 Spaghetti squash is another great low-carb "cheat."

It's really tough (and dangerous) to cut. I jab it a few times with a skewer and then nuke it for two minutes and let it stand for another two minutes to soften it up before slicing in half.

You can make a kickass carbonara with cooked spaghetti squash. Beat two yolks plus one egg with some grated parmesan cheese. Fry up some bacon, add the cooked squash, and then quickly mix in the egg/cheese combo.

A bacon trick: Cook it on the weekend in an electric skillet on really low temp setting until it's 80% done. It renders out the grease and doesn't splatter. Don't drain the bacon on paper towels--just put it on a plate to cool before you put it in a ziplock bag. The extra grease helps it keep longer. When you want to eat it, it cooks up in a hot skillet in about a minute.

Dave Ramsey has one of his staff doing career advice podcasts now. Ken Coleman I think. Might be some good advice for figuring out what kind of job/career might be more rewarding for you if current work is just slogging to the paychecks. Since I like my job tasks, although not always my job I've never explored this, so I don't know how useful Ken's podcast is, just a possible resource.

553 Calories in calories out does work for me, but keto has been much less stressful and more fulfilling. Last time I counted calories I felt like I was starving myself for 2 weeks at the beginning. This time I never felt like I was starving, just dropping weight.

Posted by: Inogame at February 19, 2019 04:48 PM (ySZHT)

554 Inogame. Yup, I've skimmed the papers from professors with "I lost weight eating snickers" Well sure, *you* did not get spiraling cravings eating snickers, and you munched some celery or green beans for fiber and drank some Ensures to meet some protein and vitamin needs and were able to do that for a month to get your paper and lose or maintain weight.

But most people benefit from some kind of system, and the fairly large group that is somewhat IR or whatever is helped by either doing some sort of carb limiting if not actual keto eating; or timing meals so that the body uses up its insulin. And there is some mental aspect too. For some people simply not eating anything 1 or 2 days a week is easiest. For me just skipping supper during the work week works best. If I feel a bit hungry in the evening I just remind myself "well I'm not eating anymore today, If my body is really needing calories I will be extra hungry tomorrow at my meals and I'll get my calories then. "

1. I made a comment about things being in one's head. Not to you, but to Nurse Ratched regarding the third day of fasting.

2. You replied. Fatuously, I thought, but perhaps I should've read that as anger.

3. I spelled out what I meant.

4. You responded, angrily again--though again, I'm not really reading it as anger because we're all friends on the GAINZ threads*--and as a materialist would.

5. Since that amused me, I responded with what I thought was whimsy.

6. Even angrier, you now accuse me of two bizarre beliefs: That prayer would cure your problems and that pills would not.

7. Since neither of those things would have ever occurred to me--I've never told anyone not to take medicine and I don't even think I know what "praying harder" means--I make the observation that you are arguing with someone else, perhaps those who have told you you needed to pray harder.

8. And here we are with you saying there is no other possible interpretation here.

I do apologize for not recognizing your upset sooner but nothing in your head was ever in mine. (And, yes, I'm using head metaphorically again.)

For an easy lunch I use cold cuts or leftover chicken/steak and then a whole bunch of antipasto veggies, like mushrooms, red pepper, etc., straight out of a jar.

563 Caulifower rice is easy. Chunk up you cauliflower, put it in a belender, fill the blender with water so it's just over the top of the cauliflower chunks, turn the blender on and watch it hack the cauliflower into little bits that look like rice, Drain throughly. Yer done.

For pork, get a nice fat marbled roast, bone in or boneless, it doesn't matter. Cut into 2" squares, rub with a package of taco seasoning mix, put it in a crock pot if it has a bone toss it in for collagen, let it cook on low for 6-8 hours. When it's absolutely tender, shred it with a couple of forks.

Follow whatever stupid fried rice recipe you want.

565 Hey Ace...long time lurker here. I love your blog!

Here is the link to our every day Keto breakfast. The name of the recipe is "Crustless Quiche" but my husband says "we will just call them egg muffins". I make them without veggies for my husband and I add a little asparagus, mushrooms, and onions for myself. I make them with a combination of bacon, sausage, and ham.

Whatever you call them, they are awesome! It is so easy to just toss one in the microwave for a minute in the morning.

567 Long-time lurker since the Wicked Pinto and Spurwing Plover days. Always too shy to post till now. And I read the content, not just the comments.

Anyway, I've been on Keto and IF since August and all my bloodwork has improved and I'm off two of my three prescriptions.

Last night for supper I made portobella burgers where you mix a pound of ground beef with about 4-6 oz shredded cheddar/whatever cheese you like, seasonings of your choice. You can also add some minced spinach and the mushroom stems if your portobellas had them. Form into three patties. Place 3 portobello mushrooms, gill side up, on a baking sheet. Now press a hamburger onto each mushroom. Bake at 375 for about 30 mins.

Here is a fast supper. Shrimp Alfredo. 1 part butter and 2 parts each of heavy cream and grated parmesan. Melt the butter, add some garlic, add heavy cream once the butter is melted. Add the parmesan and stir till it's all melted and the sauce is warm enough. Salt and pepper to taste. If the sauce is too thick, add some more cream. If too thin, add some more parmesan. Then add a bunch of pre-cooked thawed frozen shrimp and let that warm up. Serve over shirataki noodles, cauliflower "rice", or zoodles.

Sorry, I don't know anything about deep-frying clams so I can't help you there.

There is a site called KetoConnect.net that has some Indian recipes as the female who owns it is Indian. I can't vouch for those recipes as I haven't tried them.

572 Long time lurker, first time poster here with some easy low carb meal ideas. Most are short prep, long cook time.

1. Chicken with lemon/garlic/zaatar (could probably also do with a hearty fish)
Take your chicken - bone in or cutlets and put it in a pan. Mix 1 part fresh lemon juice, slightly less than 1 part olive oil, a bunch of garlic powder, zaatar (optional) and some salt. Mix and pour over chicken. If cutlets, bake covered and then uncover a little at the end. If bone in, bake uncovered at around 350 for at least 1 1/4 hours (I prefer more like 1 1/2-2), and every 30 minutes or so, spoon some liquid from the pan over the chicken so it doesn't dry out. Serve with whatever veg you feel like, pouring the unbelievable sauce over that veg

2. Spinach/mushroom kugel (that's Jewish for quiche)
You can do this with milk and cheese also, but this one is better I think. Spray a deep pie dish with oil. Sautee a big onion, a sliced package of mushrooms (or a can of sliced mushrooms) and a bunch of frozen spinach with some salt. Do the onions first so they cook a little before you add the rest. Let sit. Mix 2 T mayo and 4 eggs with seasonings of your choice (I cheat and use non-msg soup mix but you can also do salt, garlic, pepper, onion powder). Mix the veg into the mayo/eggs. Pour into the pie plate and bake at 350 for 30 min

3. Wings and Veg
Get a 9x13 pan and spread your favorite frozen vegetable of choice on the bottom of it. Put a package of 12-15 chicken wings on top of the veg. Douse in appropriate sauce of your choice (I do teriyaki, but if you're going keto you might want to do tamari/oil/garlic or even the same lemon sauce as I said above. Or even lemon juice, some oil, paprika, cumin, garlic, salt, pepper, coriander mixed into a paste). Bake uncovered at 350 until getting nice and crispy, flip them over and bake the bottoms for 20-30 min. Done. Your veg will cook in chicken fat and sauce and be awesome.

4. Sausage and peppers and onions
Slice a package of sausage like chorizo and sautee in a frying pan, flipping to get both sides crispy. Take out, and sautee onions and peppers and maybe tomatoes and mushrooms or zucchini OR white cabbage (you get the point) in the pan with the sausage fat. When just about ready, throw the sausage back in the pan to heat back up and serve.

5. Chuck roast (if you want MEAT)
Get about a 3 lb boneless chuck. Get 2 big cans of crushed tomatoes and buy a container of peeled garlic (use around 30 cloves). Put the meat in a deep pan, pour in the tomatoes, and liberally spread the garlic around. Bake covered at around 250/275 for around 2-3 hours (just check it periodically). You can fancy this up with bay leaf, spices, red wine, vegetables, or go with the simple 3-ingredients.

Ok, I'm tired now, so will give you add'l recipes if I think of any good ones. Also, I totes agree with earlier commenters - use finely ground almonds mixed with salt and pepper and garlic and paprika for chicken cutlets. First dip in egg, then dredge through the ground nuts, and then FRY. ZOMG. The nuts really add a great flavor - it won't be the same joy as breading, but it will be a different joy.

573 I usually grill a bunch of boneless pork ribs. Then I cut up the leftovers and stir fry them with taco seasoning and garlic to use for miscellaneous stuff. I cook riced cauliflower in a frying pan with some chicken broth and soy sauce. Add some of the fried pork and some broccoli and you're all set.

Me: "Our personal considerations are of greater impact than we generally appreciate. As I say this, understand that I am an extremist in this regard, as I take this to apply to things others would not."

You: [deliberately misinterpreting "head" in a way one could read as comical or bitter]

Me: [presuming more comical than bitter clarifying I mean "soul"]

You: "Well, if you ever pin down where in the body that is, I can try taking a pill to help it along."

Me: [presuming you're still more joking than bitter] Pinpointing two obvious problems WITH THIS PHILOSOPHY NOT WITH YOU PERSONALLY: "Surely you realize that a soul wouldn't have a location in the body, nor would it be treated by drugs."

You: "You are personally attacking me and calling me spiritually deficient for my inability to resolve the physical issues you were not previously aware of."

Again, I was not talking to you originally, and at no point was I talking =about= you, personally.

When I say something is in my head, I'm generally talking to myself. I have a great many shortcomings, and I find it helpful to remind myself that they are self-imposed.

576 I got no ideas for batter but maybe it would help to eat fattier cuts of meat? With the extra fat you get more flavor and don't need the batter.
I eat a lot of baked chicken thighs, pork ribs, and fried pork chops, never feel the need to dress them up, just salt and pepper. Lamb shanks and neckbones are great done in a crockpot.

577 Very late to this thread, but if you're still reading the comments Ace:

Lost over a hundred pounds doing Atkins in '06. Kept it off for years. Then had a surprise (first) pregnancy at age 42 with my hubs of 20 + years after we had just bought our first house in order to move my crazy mother (memory loss from a suicide attempt in '85) and step-father (Alzheimer's) in with us. Baby was three weeks old and only home from the NICU for less than two weeks when Dad stroked out and I spent the next four months trying to heal him while he spent those four months dying.

My thanks for all of this sacrificing of my bonding/maternity leave with my son to do things like figure out rehabs/in home care/equipment/manage a daily army of people coming in and out my home while working full time, which felt like juggling bombs with burning fuses while walking a tight rope, was to have my crazy mom leave as soon as she could (six days before my son's first Christmas) to go force her way into my selfish cunt of a sister's house. So now I'm dead to everyone for the sins of doing too much and making my siblings feel guilty for things they were unwilling to face. But I sure did get the blame for Dad dying.

Long story longer, this, shockingly, threw me off kilter for about the last two years and pro tip, using the depressant alcohol to treat depression did not work! Drank and ate my feelings, ballooned up to almost where I was when I lost the weight thirteen years ago.

Started Atkins back up January 9th, cut out drinking, did that for four weeks to little effect (8 pounds slowly lost, re-gained, lost again) until I finally looked into Keto. Fat is way more important in Keto, I have only been doing it for less than two weeks and can already see how this would dovetail nicely with IF so I highly recommend you start tracking your macros Ace, with fat taking precedent over protien. Oh and I've already lost 6 pounds and feel fantastic.

FINALLY (and thanks to anybody who's still reading my TLR manifesto) the app My Fitness Pal has been a lifesaver! Even though I know it's super-Skynet-ish, I don't care because it is an amazing free app that has helped me track macros and calories with ease. Thanks to all the wonderful low carb Morons on this thread and for your Gainzzzz stories Ace, you've all made a difference in my life for the better and sometimes, in the darkness of the last two years this site was the only thing that could get me to crack a smile.

581 Re: Fried Rice.
I have never enjoyed cauliflower or broccoli or whatever chopped up as a rice substitute.

However, chopped-up shiritake noodles (konjac) work great. The down sides are, it takes a little longer to prepare (if you don't prep it right it smells weird), and it looks NOTHING like rice.
Tastes and chews close enough to fried rice, though.

I'm not making fried rice to stare at. I'm making it to eat.

582 I do mostly low carb eating, and the one thing that helps me stay there is smoked almonds. Has to be Blue Diamond, because other brands just taste like a house fire. Blue Diamond tastes like bacon.

I go through a 1 lb bag about every ten days, and they are usually my breakfast and afternoon snack.

583 Bless this post!! Timely. I have to go on a keto diet, doctor's orders. I am halfway there with my current diet, I already use zucchini and cauliflower often as carb substitutes. But need to go full carb free.

Currently working on grocery and recipe lists so I can go full bore at it in March. Bought a few books and am watching lots of Youtube vids. But the Moron Horde is the greatest treasure trove of all for this kind of stuff.

585 LizLem,

You don't need to go carb free. Just look to keep your daily net carbs at 30 grams or less. At the beginning anyway. You'll have the Keto Flu to deal with in the first week or two but thereafter it's actually quite easy. I highly recommend intermittent fasting to go along with it. Choose a window of about four hours in which you do all of your eating for the day. If you can, try going a full 24 hours without eating. You will begin seeing results within a week. It'll be mostly water loss but you'll get a psychological boost out of it. The fat loss will soon follow.

Posted by: Kegeshook at February 19, 2019 08:47 PM (s2LKJ)

586 Mandy, I believe I've been there. I'll go and have another look. My wife has just started cooking some keto friendly meals in the last couple of weeks. I've been doing low carb since mid July and have really been on my own.

Posted by: Kegeshook at February 19, 2019 08:50 PM (s2LKJ)

587 For the last 12 months I have been strength training in the gym. I've made some big gains and just last week completed a long term goal when I squatted 100 Kg for 5 sets of 5.

I'm 42 years old and look and feel much better as a result of the changes in the gym. It is amazing what the human body can do. For my body to recover after the stresses of the gym requires more energy and if you eat the right foods, some of that energy can come from the fat stored in your body.

While nutrition plays the biggest role in weight loss / maintenance, I cannot speak highly enough of strength training to see improvements in body size and shape.

Why starve yourself when you don't have to.
