Food Thread: Pizza-->Calzone: The Best Laid Plans Of Mice And Men...

That's what it was supposed to look like, and it was a good plan. Divide my usual pizza dough recipe into three rather than four portions, so I could make a larger pie. Why? No idea. I just felt like it. But that larger pie was slightly more difficult to slide off the peel and onto the steel (used to be a stone, but I upgraded after the stone cracked). There are a few reasons for the almost spectacular failure and resulting mess, but it boils down to my insufficient skill at stretching the dough into an even thickness, and the slight increase in time from stretching to baking, which gives the wet ingredients more time to soak through the dough.

But I recovered fairly well, and was able to fold the pizza over into a sort-of-calzone thing. It tasted okay, although the broccoli rabe I used was too bitter and astringent, so it was, ultimately, a failure. But at least I didn't dump the entire thing onto the bottom of the oven and make a huge smoking mess, so really, it was a resounding success.

The next time I made a thicker pie, so the issue of inconsistent thickness wasn't really an issue. And I liked it very much! The crust was chewy and crispy and quite nice, and it was trivially easy to stretch and top. I also put the stone under the broiler while preheating, because I wanted to see whether it got hot enough at the top of the oven, far away from the burners. It did, and I turned the broiler on for the last half of the bake to get the top nice and toasty. it worked like a charm, so all's right in Chez Dildo, at least from the pizza perspective.

Oh, that is raw sauce, topped with dry mozzarella, sweet soppressata, a sprinkle of fresh-grated Pecorino Romano and a bit of crushed red pepper.

The Food Lab: The Reverse Sear Is the Best Way to Cook a Steak, Period

No. It isn't. Although it is quite good and certainly produces a marvelous steak. I am put off by these pronouncements from food writers, no matter how skilled they are, and Serious Eats is a solid source for food information. But I have tried many different ways to cook steak, and executed well, most of them are great. Sure, that English technique of boiling then frying wasn't the best, but there are lots of different ways to cook steak that are stylistically different but wonderful nonetheless.

Triple Layer Peanut Butter Crunch Brownies
I appreciate her modifying the typical peanut butter filling...many of them are cloyingly sweet, but she doesn't use any sugar in it. I would push that even farther and use bittersweet chocolate for the top. I think the combination of peanut butter and dark chocolate is marvelous, and why you will see me hunched over the sink shoving dark-chocolate Reese's into my mouth whenever they show up in my kitchen.

At a very popular hipster restaurant in London I had a cocktail that was absolutely spectacular. it really was the capper to a perfectly disappointing evening, because the food was great, which confounded my hopes and expectations. I hate popular places. I really hate hip and popular places. So this place totally ruined my "get off my lawn" hopes.

Bumblebee

  • 50ml Beefeater Gin
  • 20ml Lemon juice
  • 20ml Honey-ginger syrup
  • 25ml Dry Curacao
  • 2 dashes orange bitters

I left it as the bartender wrote it, so play around with the proportions to suit your taste. For the honey-ginger syrup I decided on a warm water extraction of one part grated ginger in two parts water. I pressed it dry and filtered it, then mixed it with an equal volume of honey. The dry curacao is really just a brand of triple sec, so use what you can find (try to buy the 40 proof stuff...it isn't as sweet).

What to Drink Next: Trust These Names in Wine
Whenever I see these lists my reflex is to scoff and mock and poke with a sharp stick. But this list...isn't bad. these are, for the most part, solid and respected producers, so if you aren't familiar with what is available wherever you may be (restaurant, liquor store...), you could do a lot worse than these wines.

And...I have a soft spot in my heart for Yalumba. I visited a town east of Sydney called Katoomba a long time ago, and stayed in a small hotel that must have been converted from a whorehouse. I confuse the names all the time.

Such a simple pleasure. Crust, sauce, cheese, optional meats and/or veggies.

The key is to not put non-pizza toppings on the crust (i.e. buffalo chicken, Caesar salad, etc.).

22 I found that to get an even thickness on my dough for pizza, the best method is to use a rolling pin.

I have tried tossing it, pushing it flat, stretching it like filo, and in the end, using a rolling pin is probably the best method.

It could be that I like to use refrigerated bread dough, but all in all, it is what works for me.

30 There are two pizzas that haunt my dreams, both eaten in Rome. One was easily 18" diameter, but the crust was so thin it was a single-serving pizza. Crisp and light, just enough sauce and cheese for both of them to contribute taste.

The other was almost a thick crust, with edges folded over a little for "fillings" -- ham, sausage, mozzarella, and broccoli rabe, each in their own little pockets. That one was just unique.

Heat the pan to high, put in some oil, a couple crushed cloves of garlic, half a diced onion and cook it until the onion is translucent.
At this point you can add sausage and fry that too.

I also add a chili, right now for example the cayennes are getting red so I am using one of those.

Then take two or three tomatoes from the garden, cut the stem out, and chop or crush them into the pan and add basil and cilantro (to taste) and let it cook down to a paste over a low heat.

Then you can put anything on you want for toppings.

We haven't had apples for four years. So while I am glad we do have some, there is a lot of work involved. We were lucky to score a cider press. For HARD cider

73 I tried the reverse sear method probably a year ago or so... and I have to say that the steaks turned out really well.

That said, it feels weird to put steak in the oven. I prefer to grill, so I usually just do my normal method on the gas grill and live with a small layer of overcooked meat.

As much of a carnivore as I am, and I am, I don't really care for meat on pizza. I really don't like pepperoni at all, but I will eat sausage if that's what other people want.

For a red sauce pizza, my favorite toppings are onion, mushroom and bell pepper. And molto formaggio.

I hate to be a snob, but I can't stand the national pizza chains. It's drunk college food.

There's nothing I love more than a good pizza, but I feel like most pizza is not good pizza, so I largely just ... don't eat pizza.

I generally like Tetley British Blend for a black tea or good Irish Breakfast tea. I picked up some of the Celestial Seasonings Sleepytime Extra today Fenelon suggested and will try that tonight.

Do Hordlings have teas they especially enjoy? The topic doesn't come up often like coffee preferences.

Thought I would toss this out there.

The price of groceries has just been climbing. Out of control, really. Hubby told me to get ready for higher prices - probably due to trade wars, who knows. Just an excuse in my mind.

Smaller packaging with higher price points.
Pay for grocery bags or bring your own.
Produce has been insane in my part of the world, and it's the bulk of my grocery shopping.

I've taken two actions to help.

Joined my local grocer's points program;
and found a credit card that gives me money back for certain categories, one of which was "Groceries". It's a percentage of how much I spend.

Works out pretty well. Money back for buying groceries without any work is great. There is always more you can do. One of my sisters still coupon clips and there are all of those coupon sites out there to look through. I don't always find Costco a good deal if I can get it on sale in my local grocer. I don't like to go to more than one store. I have no idea how good Amazon is.

I don't think many do. The cost of fabric and patterns means it's less expensive to buy ready-made. I bought 2 t-shirts on clearance at Wal-mart last week for $1 each.

Domino's is a decent, predictable pizza if you aren't in an area that has a good local place, or if you haven't found a favorite place and just want a pizza. It's much better than it used to be. Some of the local places here are amazing and some are abysmal and you can't tell which is which until you've tried it or asked around.

107 Grammie, I do a certain amount of modification on dress shirt collars, trouser cuffs, repairs, and I sew my own pillow cases out of worn out sheets.

The collars are the most fun, when my collar wears out and gets too shabby for office wear, I pick out the seams on the collar and re-sew it as a nehru type collar.

Granted, I can't wear dark crew-necked sweaters because people start eyeing me in stores like they should call me "father" but other than that it is fine, and saves me the cost of a new shirt for a year or so.

I did sew a cape for a friend's daughter once. That was fun and simple, but unfortunately I made it too big and her shoulders would slip through the neck-hole unless she wore the hood up -- it was the only thing that would keep it on her.

I hope she grows into it.

I've also found that a generous dusting of corn meal on the peel gets the dough to slide off every time. Alternatively, use parchment paper. I did that for a long while. Just slide the parchment paper with the pizza onto the stone, let it bake for a few minutes, then pull the parchment paper out (it's generally not recommended for the temps you need to cook a pizza).

A guy at work that has battled skin cancer for as long as I can remember who's wife is also fighting her own cancer battle had an accident at his home last week.

He was mowing his back yard on a pretty good slope when he and the ztr mower tumbled down the hill. Long story short- his wife called me the next day from the er. They were waiting for him to be admitted. Broken hip on the right side and ligament damage in his left knee.

The kicker? Xray of his chest for broken ribs showed no broken ribs but it did show a spot on his lung. He didn't want me to know but she thought I should so she told me on the phone outside his presence.

I went to see him in the hospital the next day. He looked like an old man dying in the hospital. FFS he was just mowing the grass!

Anyway, if you could spare a thought for my friend "Mr. Shakey" or his wife Angela I'd appreciate it.

Get it hot. Really hot. Very very hot. Steak in the pan 90 seconds on each side, then 2 minutes each side in a 500 degree oven.

Let the steak rest for about 3-5 minutes.

A inch-and-a-half steak comes out medium rare.

126 I would recommend Bols curacao over the 40 proof commodity triple sec offerings, it's much better at about the same price point.

Pierre Ferrand dry curacao is very good, as is Senior (actually bottled on Curacao) but Senior is not dry. Clement Creole Shrubb is rum-based and is my first choice when making tiki cocktails that call for curacao.

You can also use Grand Marnier or Cointreau if you don't mind a bit of extra kick from their higher proofs.

133 Grilled a hamburger for lunch today. I have been sprinkling my burgers with beef rubs I have laying around. We particularly like one that is supposed to be used for steaks, and then I add some fresh pepper and salt. Some Swiss cheese melted on top, lettuce, tomato, and I even sliced up some kosher dill pickles for crunch and added flavor. Condiments. Delicious.

Tonight leftover from last night: Curry with pork, eggplant, mushrooms, and green beans. Coconut milk, fish sauce, and Yellow Curry paste, a handful of basil. Simmered with some chicken broth too. Jasmine rice.

Pretty easy all in the wok - veggies first in coconut oil, then simmer a bit with the liquids and basil chopped up. Had the perfect amount of heat.

Thanks to you all. Yes, bb their lives have been filled with horror. They lost a daughter years ago when she fell off the hotel balcony on spring break. The wife has had more surgeries for her cancer than I can count. Not to mention his skin cancer. How they haven't already said f it, I don't know.

168 Back around 2001, I was doing some vineyard tours while considering becoming a small producer, maybe 3-5 acres of grapes. The state was pushing a program for growers, trying to establish some alternative incomes for more rural areas, and had a couple viticulturists traveling the state.

One wine maker had grown up in France on a vineyard, and had won national awards after he became the vintner for some company in Wisconsin. (point being, good grapes are important, but not necessarily dependent on region)
But Bruce Bordelon (horticulturalist from Purdue) was there for a meeting, said the main thing we (the region) needed was more experienced wine makers. The Midwest can certainly grow good grapes, even if they are hybrids of the tradionals (e.g. Traminette takes some of the Gewurztraminer traits, but endures the cold winter)

Not being a wine drinker, I don't recognize any of those name linked above. But I've been of the opinion that the region is less important that the craftsmanship of making the wine. And marketing is equally important. California has established its own respectability now, and Illinois could do that. Upstate NY has some growers, many other states as well.

But a good "Bordeaux" will automatically sell better than a good "Adams County" for now. Those blind tests though, tend to show a lot of $10 wines tested equally to the $40 ones, even to the "refined" palette.

176 Been practicing for the 1st Annual BBQ cook off at the VFW here in November on Veterans Day weekend. Two categories, ribs and brisket. I am only doing ribs as the mistakes are not as expensive as ruining a whole brisket. Pork Spareribs only.


Settled on a mild rub with salt, pepper and brown sugar and a touch of paprika for some color. Into the pellet smoker for 2 hours at 225. Take them out and put some Sweet Baby Rays BBQ sauce on them and wrap them in foil, toss them on the smoker for another 2 hours at 225.


For the final hour I pull them out of the foil, put a bit more BBQ sauce on them and lay them meat side up on the smoker rack for about another hour checking every 15-20 minutes or so for doneness. Can't let them get fall off the bone done for the competition though.


I have to say they are the best ribs I have ever done and it only took 6 tries to get it right.

You get a hearty amen from me.

With a family loaded with food allergies, we tend to be restricted in what we eat, but when we stick with those foods, we all feel good, which is a rare and beautiful thing. Grilled chicken or salmon, chicken roasted with schmaltz (oh my goodness), plenty of fresh veggies and fruits? Yes.

Do we go off diet? Yep. Do we pay? Yep. Sometimes it's worth it, although more and more, husband and I tend to agree that it's not.

And root vegetables cooked with good meat is a gift from the Almighty. Just sayin.

192 My husband owned a pizza restaurant eons ago. He can actually spin it in the air like in the old movies. He knows his pizza.

We both prefer a thinner crispy crust, but have made all varieties at home. We haven't found much difference in dough recipes, so it's mostly execution.

That said, here are his tips:

1. Small amount of fennel seed in the sauce. Don't over fuss with it otherwise.
2. Secret ingredient? Muenster cheese in the cheese mix. Trust me. You'll be amazed.
3. Sweat any veggies before using them as toppings. Especially fresh mushrooms. They exude an amazing amount of water when cooking.
4. Particularly if you like it on the crispy side, partly cook the crust on one or both sides before topping.

An English housemate introduced me to PG Tips* when he complained to his mom about American teas and she sent him an emergency resupply. World Market started carrying it shortly after and he never complained, and I've been ordering the big boxes online and never noticed anything odd. If it isn't as good as UK PG Tips, it's still way better than the ordinary US teas.

JTB, no it's not, it's from a place called Peppercorn. I bought it in Pennsylvania a couple of weeks ago. The little store only sells balsamic vinegar and olive oil, all from Italy, and infused with different things. Some of the balsamics, like the peach one, are white balsamics - much lighter flavor. But they're all from Modeno.

Really comes alive in a daiquiri - tastes like you made a great tiki drink with only 3 ingredients. Use their daiquiri recipe : 2oz Banks, .75 oz simple syrup, .75 oz fresh lime juice.

Great stuff. This is what James Bond would use were he a daiquiri drinker.

Honestly grammie, it depends. Some weeks I am with it, and prepare a couple of weeks worth of meals in one day. I love those weeks, because I can pull prepped meat out of the freezer and thaw it, then grab cut up veg from the bin and put together a meal in twenty or so minutes.

On the weeks I screw up and don't do that, it's usually forty five minutes to prep and cook dinner. One thing I always do is make a weekly menu. I have about thirty to forty meals that I rotate through the month, along with seasonal changes, like turkey and chili in colder months, and more fresh veg and salads during the summer.

Start out with a week of easy meals that you enjoy, you can cook in an hour or less, and the build up from there.
I try to do three chicken, one beef, and one vegetarian meal per week, with leftovers for the other two days. Very little food waste, and I can control costs pretty well.

I have high heat gas burners so I cook like a restaurant does - fast and hot. I *wok* cook alot of my proteins but they aren't necessarily Chinese dishes. Just seems easier to flash cook it and side dishes are cooked normally.

I have an IR broiler so I use that alot too. Veggies, protein, whatever.

We eat at the same time every night unless there are extenuating circumstances even now that the kids are gone. When the kids were here, they told me that we were one of the few families that had dinner together every night. Even their friends noticed it. I imagine that's why they seemed to show up at dinner time.

I start scrounging for ingredients and looking at recipes when I realize I haven't eaten all day, then start cooking and nibbling at whatever I'm preparing. Then I remember that I'm missing something I need and run out and get it along with a bunch of stuff I don't need because I'm hungry. Then, once dinner is ready, it goes directly into storage containers in the refrigerator to take to work for the next few days because I am not hungry any more.

Peppers don't have any particular gender, it's just one of those things like how you're supposed to be able to tell male from female eggplants by the shape some part of them and one is bitter and the other isn't. It doesn't really make a difference, biologically.

Hopefully this saves someone else from having to do a search for "do peppers have sex" to make sure. I don't recommend that one, as a search string.

287 209 ... Hi bluebell. The business I mentioned has a local store. It's a family business but Greek not Italian. We are spoiled with their olive oils and balsamic vinegars. Not cheap but we are going for taste and the good stuff can be used sparingly. They even offer tastings in their warehouse.

As much as I like the good, dark balsamic (not the crap from the supermarket) the fruit flavored white balsamics are wonderful. A slight drizzle of it on salad greens from our garden is a treat.

Grilling or frying a pork chop is always a challenge. My best results come from a thick cut and grilling or frying at a high temperature to get the sear, then lower the temp and drop a lid on it.

Works most of the time. But not always.

chop. I think tender pork chops went extinct sometime in the 80s maybe.
That's the last time I had one. Of her technique I only remember
shakebake was involved, some how. I make a well done rubbery puck or a
pinkish rubbery puck. I would love to know how to make them tender.

I do tender pork chops on the grill all of the time. I get the thick center cut ones from Sams and put just sea salt on them and put them on a pre heated charcoal grill with the top and bottom vents almost completely closed. 8-10 minutes on a side and they are done. Smoke will be pouring out of the grill while they cook.


Be very very careful not to overcook them. Even one minute extra can make them tough and chewy. I know mine are done when I get a pool of golden fat/juice on the top after I have turned them over once. They almost look not done, but I tent them with foil for about 5 minutes and they are almost fork tender at that point.

324 312 Harry P - for me one of the big selling points was no electronic gear to burn/wear out. No electronic timer/clock, no circuit boards, nada. Yeah, it has burner igniters but that's it. Just straight up power.

Convection oven if I want it, an integrated rotisserie and kickass IR broiler. If I move it's coming with me.

I sold my house and am living in a rental now, so no need for an oven -- but I was planning on going high end when / if I ever remodeled my kitchen. It's not THAT much more money, and it's pretty awesome having high quality equipment.

My parents have a six burner Viking Stove, and that thing cooks unbelievably well, is easy(ish) to work on, and looks amazing in the kitchen.

I'm kind of a big believer in spending the extra money for non-consumer grade stuff in general, it almost always lasts longer. Especially since the advent of big box stores, where the store sets a price point and manufacturers have to figure out a way to hit that point, even if it means sacrificing quality, longevity, etc.

334 298 , Hogmartin, As far as I know, for the good balsamic check the label for non-vinegar ingredients, it should be relatively thick and syrupy, and the price should seem crazy high. The company we are using started giving taste samples at the local farmers market which is how we learned about the good stuff. I suspect doing a search on 'award winning balsamic vinegars' should provide proper information. Chances are that the good stuff will be from the Modena, Italy area.

Yes, definitely don't overcook them. The heat should even out and contribute to the food-safety thing while it's resting too, so don't worry that maybe you pull it at 165 but there's some hidden part that's still at 150.

Trichinella spiralis is pretty much eradicated from US pork, there are something like 20 cases annually on average and most of those are from wild boar. It's a shame that people overcook pork so often when poultry is a way more common vector for food poisoning.

Well now that I think about it I do think I remember she finished them in the oven on some rack thingy. What I wouldn't give to have a few of those days with her back. Although, I think she'd be a little worried about her boy bothering her in the kitchen.

Thanks. I figured price was a good way to rule out the cheap stuff, but there's nothing that says a $20 bottle is necessarily worse than a $30 one. I'll check the ingredients on a cheapie bottle of balsamic-style battery acid and see how they compare to the ingredients in a real balsamic vinegar, then work from there.

I was just a kid, but I remember the Phold of 1964. My dad had died suddenly of a heart attack on Memorial Day weekend that year (he was a WWII vet, and the coroner thought that combat stress probably caught up with him years later). Come September and the Phillies went down in flames, and my mom said, "If your father had lived to see this, he'd have died all over again." My Uncle Joe did a double take and said, "That sounds like something Yogi Berra would say." We were able to laugh about it even though the circumstances were sad.

367 OK, I will take partial exception to what CBD says about the reverse sear on steaks.

I've been a cook/chef for over 32 years and me and the wife are meticulously hyper-critical of our food, and the food prepared by others. So much so that we eat out maybe 4 times a year. And even THEN we aren't impressed. Call it scientific/artistic snobbery if you will, but there we are.

So, here's how I've done steak now for a while, after trying just about every type of preparation style.

Take a THICK (1.5" - 2" thick) ribeye, NY Strip, or Porterhouse. Salt quite liberally (Sea Salt or Kosher) on both sides, then place on plate back in the refrigerator. 2 hours is good.

Take out and pat dry with paper towels. Heat oven to 250 degrees and place steak on wire rack on a sheet pan and put in oven. Heat until internal temp is 95 degrees (about 35-45 minutes) and then pat dry, flip, and put back in until internal temp is 105 degrees (maybe another 10 minutes). Between the flip and the final 105 degree temp heat grill at MAX. If you want, you could heat up a cast iron skillet on the stovetop instead. MAX heat, again.

Take steak out, pat dry again, and then coat top of steak with a thin coating of good quality mayonnaise - I like Dukes. Place steak, mayo side down, on grill or in skillet. Let sear for about 2-3 minutes, turning at 45 degree angle once. Then coat top side with mayo again and flip over, again for 2-3 minutes.

Take off heat and serve - no need to tent with foil. Add some fresh pepper if you like.

The oil/egg combo of the mayo seals in the partially cooked and juicy steak from the oven, and forms an amazing crust.

I do this with fish as well - insanely good.

Honestly, the secret to all delicious meats is to buy quality, expensive meat at a butcher shop -- preferably meat that is sourced from an actual farm.

Yes, it costs more money. Yes, it's inconvenient.

But most factory raised meat does not taste good or cook well.

His film came in 8th at the box office making 3.5 million which is incredibly good for a documentary.
Farehnheit 9/11 which was made in 2004, cost 6 million to make which was a lot for a documentary even back then.

Knowing how he works and his methodology, this latest film probably cost less than half to make than the 2004 film, being that he overwhelmingly uses selectively and deceptively edited archival and news footage, cobbled together with contemporaneous interview which cost nothing to setup and shoot.

And I'm pretty sure he's going to have an interantional roll out and end up making some coin from that as well as streaming and other sales.

So the film will be profitable.


Hopefully he chokes on cheeseburger, stupid fat fuck.

407 Look at it this way -- Walmart's (and most grocery stores) goal is to bring you the best value meat, not the best tasting meat.

The highest quality meat brings in a price premium at wholesale. That goes to restaurants, high end butcher shops, etc.

The next quality meat gets a slight price reduction and is the "expensive" meat at your local Krogers or whatever.

The lowest quality meat (still perfectly edible, for sure) is what ends up in the meat bin at 95% of grocery stores in the country (and at the chain restaurants, too.)

I salt my steaks liberally... I don't really taste the salt when its done cooking. The idea is to pull the moisture to the surface of the steak, it helps "tenderize" it. I imagine a lot of the salt drips off as salt water as it's cooking.

Marbling first. One of the reasons pork chops are so dry is that they've bred all the fat out of the pigs, going for "the other white meat". The more fat in the tissue the more tender and flavorful it will be. Don't fall for the prepackaged stuff. That's not fit for dogs. Find a shop with a decent butcher who cuts his own meat.

If your chop has a membrane around one edge don't cut it off. Just make several slashes through it to keep the chop from curling.
Thicker pork chops are best on the grill. If you're going the Shake-N-Bake route, (which I confess I love) thinner is better. It also makes for better snacking on cold leftover pork chops.

Sixty-mumble years ago I remember the butcher telling my dad to NEVER salt meat before cooking. Said it made the meat dry. He advised rubbing it with lemon juice.

And I've done that for sixty-mumble years. Then, a few months ago, my son cooked a steak that he'd salted liberally before cooking it. I was aghast. Till I cut into the steak. It was juicy and tender. Every piece of meat I've cooked since then has been salted first.

Of course, if you brine the chops you might not have to salt them. bluebell?

since my dear mom made bone in pork chops have I had a tender pork
chop. I think tender pork chops went extinct sometime in the 80s maybe.
That's the last time I had one. Of her technique I only remember

As others have suggested brining works. It's just a salt solution. Make sure it's ice cold before adding to the pork. But you can also just dry brine; salt both sides, cool in refridg for an hour on a wire rack. (Don't salt again before cooking, btw.)

If you leave the outer ring of fat and silver skin on the sides, be sure to put several shallow verticle slices just through the silver skin before cooking to avoid cupping.

And yes, most tough chops are due to over-cooking. You don't want super high heat to start. And in regards to the final meat temp, the USDA is now ok with 145'F. Rest after for 5 min for a regular chop, 10 for those monster chops.

Right, and part of that is just simple economics -- the longer a pig is alive, the more it costs to feed and car for. So the factory farms try to raise animals as quickly as possible, to as high a weight as possible (they get paid per pound)... that inevitably leads to fat animals with very little muscle.

As opposed to taking several years to raise a pig, where the big is running around and exercising and eating a healthy pig diet -- much better distribution of fat (flavor) and muscle throughout the pig. But way more expensive to raise, and thus way more expensive for us as consumers to buy.

And we, as consumers, through the free market, seem to be saying "we're fine with lower quality for lower price."

But if you're going for higher quality, pay the higher price, and support farms that do a "better job" of raising animals, and in the long run, hopefully bend the cost curve down a bit.

Yep, salt on meat is the way to go if you are cooking at medium to high temps. I wouldn't salt any meat if I was doing it in the crock pot though.

Unagi is delicious, grilled, and covered with spicy sweet barbecue-style sauce. Downside: it's eel, so if you can't get over that, then it's probably not for you. But it's basically the BBQ bacon of sushi.

The flavor is mostly from the rice anyway, so don't feel like you have to get anything with fish if that really squicks you out.

yeah, the recent meme here and some places is that the salt thing is baloney ... use all the salt you want, except for certain salt sensitive people. They told me that when I was cutting back on salt for high BP.

BUT just a little research shows it is not quite proven that salt is no issue for most, and I have seen studies showing other reasons it may be good to reduce salt, as many doctors are still saying (maybe just to keep the lawyers happy, idk).

One sailing friend of mine long ago had a friend we were sailing with, just happened she was a heart surgeon. I said I sweat working during the day, I sweat playing sports at night, how can salt be an issue? She said, for you, no problem. But we had beer/wine to drink, sailing to do ... that was that.

I don't trust the "studies show" that salt is no issue. And it is easy enough to avoid. (eggs, good/bad cholesterol ... they flipped on that as well) that's all I have to add.

1 cup warm water
1 package active dry yeast or fresh active yeast
2 1/2 to 3 cups unbleached all purpose flour
2 tablespoons olive oil
1/2 teaspoon salt
Pinch of sugar

Combine the water, yeast, and 1 1/2 cups of flour. Mix well. Add oil, salt, sugar and 1 cup of flour. (Save the last 1/2 cup if needed to make the dough come together) Work the ingredients until the dough comes together and knead for 5 minutes. Transfer to a lightly oiled bowl and let rise 1 hour.

Alternatively, we were taught to start it in the morning with the yeast, 1/4 cup flour and 1/2 cup of water. It creates a nice slurry. Then I dump everything in the kitchenaid and let it go. Our oven has a proof setting which is nice. Also we were taught after the dough is proofed to slam it on a hard surface 10-15 times to break down the gluten.

I put the crust on the pizza stone for about 4 minutes before adding toppings. As others have said I use corn meal to have it slide off the peel.

Only slightly. When they cool the rice they add a sugary/vinegar solution to it and stir it to cool it down in a wooden 'bowl'.

You won't taste it unless you're a supertaster. It compliments the items they add on top.

This. Well, some factory cow is good. And corn-fed is undeniably tenderer than grass-fed. Some beef sourced from a local farm that is pure pasture is almost unusable, in the stew cuts -- they will turn to fibers before becoming tender, and lean and tough in the premium cuts. For whatever reason, the Whole Foods stuff is not like that.

But for pork and chicken, yeah. Supermarket pork, even if you can find some that is truly fresh and not injected with saline, is horribly flavorless and excessively lean to a crazy degree. And chickens, well, they have to eat bugs if you want them to really have flavor, instead of getting it from your seasoning.

Not since my dear mom made bone in pork chops have I had a tender pork chop. I think tender pork chops went extinct sometime in the 80s maybe. That's the last time I had one. Of her technique I only remember shakebake was involved, some how. I make a well done rubbery puck or a pinkish rubbery puck. I would love to know how to make them tender.

Try my Grandma's recipe. Dip them in egg, dip them in seasoned cracker crumbs. Then brown in a little oil of your choice. Place in roasting pan w/ 1/4 to 1/ cup of water. Cover and bake ca. 1 hr. Fork tender.
