Food Thread: Pork Belly Is God's Way Of Saying He Loves Us And Wants Us To Be Happy

If pork belly is on the menu I will probably order it. All too often it is a poorly executed blob of fat with very little flavor. But when it is done correctly, it is a glory of unctuous fat and wonderfully flavored meat and a cracklingly crisp exterior. I think it is partly a function of the quality of the pork, and while the Brits are failing according to almost every one of my measures, they still have a great pork industry that provides spectacular quality stuff.

This pork belly was simple; it wasn't over-seasoned with weird stuff (star anise does not belong on pork, except in Chinese food) or undercooked so the fat was raw, or overcooked so the meat was dry. It was just perfect. And yes, I ate the whole, very large, portion, along with those great crispy potatoes and even the green stuff that seemed like...shudder...kale! Oh, that is a grand and glorious English Bitter, at about 4% alcohol, so one can drink two or three pints (20 ounces to boot!) without being blind drunk.

I have made pork belly, and while I am a reasonably good amateur cook, I haven't come close to making it this well [Limey bastards!].

I'm not sure why, but this summer has been great for tomatoes. We got plenty of rain, and aside from a few short stretches of miserably hot weather, it was temperate. Whether that is perfect tomato weather I have no idea, but I am going to keep eating them until the inevitable transition to horrid factory-farm ersatz tomatoes hits the market.

That is goat cheese and a sprinkle of kosher salt. And that's it! The cheese was particularly tart, and that went well with the sweetness of the tomatoes.

I had a pretty good hanger steak with a red wine reduction that was almost ruined by the addition of truffle oil. Why are people still using it? I think that it is an interesting flavor that has its uses in a few foods, but this indiscriminate use of an artificial ingredient that mimics (poorly) the flavor of truffles has run its course. Just stop!

A good bratwurst (or any good sausage) is just fine on its own. I will grudgingly accept a few variations, but when well-meaning people stray this far afield nothing good can come of it.

I had a ginger-based cocktail recently, and it was a revelation. I asked for the recipe, and it specifies a ginger-honey syrup. I found some recipes on the internet, but my first attempt was not particularly redolent of ginger. I think the next time I will blend the ginger to maximize extraction, and then figure out how to filter the water so it isn't a mess of ginger pulp..

Anyone have any thoughts about this? I could use some help. Not having the correct ingredients is cutting into my drinking!

Why yes, I am having lamb tonight! It is Rosh Hashanah, the Jewish New Year, and it is a festive holiday that requires good food, and lamb certainly fits the bill. Boneless leg that i will rub with a parsley/garlic/Rosemary/mustard mash and then grill to medium or, if it is raining, roast in a hot oven. But lamb takes to the grill so well, I might just brave the cold and hunch miserably under an umbrella for the few minutes I need to be in front of the grill.

1st World Problems! I love it!

But that doesn't look like kale to me - too light-colored. Definitely Green Stuff though.

As for filtering your ginger water, use cheesecloth or muslin, or just a fine strainer, which I'm sure you have in your well-equipped kitchen.

I didn't know that truffle oil was phony. I assumed it was a legit oil infused with real truffles. Remember the truffle butter craze?


My fondest truffle memory is of a pizza in L'Aquila, Italy. It had arugula, asiago cheese and truffles. L'Aquila is a mountain town so the ingredients reflected the locale.

It might not be too far off from normal? Depends how much "pumpkin spice" they use, other than nutmeg, which is a standard spice for bratwurst.

30 Ginger extract can be made in an Instant Pot.
Peel, slice into matchstick pieces, put enough to mostly fill a mason jar. Top off with vodka, loosely cover with lid. Pressurise for 30 min or so.

Works for vanilla beans, almonds, almost anything you want for an alcohol-based extract.

sea cucumber is an echinoderm, like sea urchins, and starfish, and about as edible, i.e. not. Although the Japanese lurve them some sea urchin gonads, and there is a fishery for that in B.C.

Dad used to call something similar 'Italian Salad'. Marinate green peppers, white onions, and a few pinches of mozzarella in red wine vinegar and olive oil for about 3 hours. Add tomatoes and basil 30mins before serving.

78 Delightfully we found fairly cheap, high quality pork bellies at our local supermarket. (Large Hispanic population shops there, so we got a lot of cool stuff that mainstream people don't want cheap. Think beef shanks, too.)

I have been curing and smoking my own bacon for some time (based on the Charcuterie book recipe), but the last time I used Meathead Goldwyn's recipe. What a revelation! Easier and the bacon was awesome. My go to from now on.

When they have bellies again, I'll have to try more variations. And I agree with CBD. I hate five spice powder with pork...or with anything else. But, then, I don't like syrup on French toast either, so I'm apparently an outlier.

On a different tack, I tried some pickle brined chicken breasts today. (Supposedly it's the secret ingredient in Chick-fil-A and has been a recent foodie thing.) Meh. Needed some additional seasoning after cooked. Won't try it again.

What about canned goods? In a "hunkering down" situation, canned goods>>ramen. You can eat CheF Boyardee ravioli cold right out of the can, and it is more or less palatable. Kind hard to eat uncooked ramen noodles.

I made it up Lizzy and Ben Had.

If you want to shortcut the sauce, Dave's makes a prepared Butternut Squash sauce in the jar. It was too sweet for my taste, but the gorgonzola cuts the sweetness. You can make your own butternut squash sauce, of course labor intensive.
I used a recipe from the CHOW website for that.

Only thing I suggest is getting the dolcelatte instead of regular gorgonzola due to the creaminess.

Boil the pasta, when it's done drain it. add the sauce first, then stir in some chunks of the cheese. Everything should be melty at this point so you can plate it. Then add the toasted walnuts right before serving, if you like some Italian parsley sprinkled on top for a little zest and prettiness.

I like it with whole wheat pasta, which I know is anathema to some. But it works well with penne, farfalle, linguine, fettuccine. Wouldn't go too skinny with the pasta though.

But ravioli was even gone.

We have a charcoal and a gas grill. Have access to a fish fryer. We'll be fine as far as cooking goes.

Funny story though. The morning after Matthew went through I figured we would do breakfast on the charcoal grill. Wanted to save our LP. Bacon was great. But don't ever, EVER cook eggs on a charcoal grill. Tasted them for 3 days. Blech.

I kicked off it and hit a spiny sea urchin (the black ones with 8" spines).

I drove about six spines into my heel, just under the bone. I then spent about two hours in the ER getting them pulled out.

That was not pleasant

We lived off coldcuts when we returned after Matthew. We lost power with Irma as soon as the storm intensified (transformer blew up near us). I cooked over a two-burner camp stove for four days, didn't attempt to use the charcoal Weber because the charcoal was damp (note to self: bring the charcoal in the house next time).


We're stocked up with whatever we might need in case Florence comes south. Local forecasters are predicting TS-force wind Wed. - Fri., so we may lose power again. We're as ready as we'll ever be.

I have sliced ginger as thin as I could, and then boiled it in simple syrup, extracting a lot of flavor. I thought I was making candied ginger, so I slow-boiled it for a long time to tenderize. It never candied properly, but the syrup was a great ginger flavor--quite strong.

He finally had his dream of buying a small farm property in NW IL. Don't know what my sister will do because he was having so much fun with his little farm.

Anyhoo, bless his heart that he cooked for days after my dad died to make sure that holidays were well-fed with traditional and new cooking stuff. Years ago, he did the deepfried turkey. He also had three grills on his patio (plus the fryer), so that he could do the family entertaining. Bless him for catering to all of us with such joy and humor. Clove, ginger, and nutmeg are often used with pork.
I haven't tried any pork dish with cinnamon myself, but I bet there are recipes out there that use it.

My SIL makes a cinnamon chicken dish is that is great --- although I admit it doesn't really taste all that cinnamony.

Horse meat used to be eaten in the USA, too. They are grazing animals, so the meat should be OK to eat. They have to do something with horses that die, or are euthanized. If you won't eat them, your doggie will.

That's what happened around here with Matthew. Many BIG hardwoods in the neighborhood were uprooted. Normally the case with leaves still on the trees. But...

Even pines at work were uprooted. Pure soup a foot underground. I have never really seen that.

Our community lost over 4,000 large trees, mostly pines, but also some old magnolias and a few live oaks. Some friends of ours cut some huge pines in two and used equipment to push them aside far enough that we could get to the house. It was shocking to see the devastation, but two years later everything looks new normal.

Oh my! It's 5:00 and I have a new bottle of Tito's in the freezer that needs to be opened.

Grrrr. I cannot believe I didn't go ahead and deal with having to redo the cabinetry where the cooktop is and do a gas one.

Some Drudge link I just went to had a map of areas with higher then normal rainfall the past 30 days. Up to a foot. I'm in one of them, but not in the HC path. Plenty of people in VA and NC got the same overage of rainfall, though. A bunch of south to north rainfall this summer. Over and over and over again.

It might get very interesting for some. Hopefully those living under a tree-line, with a recent history of above average rainfall, get out of Dodge.

High winds, heavy rain, saturated soil, and trees still carrying leaves is a really bad combination.

Unfortunately, most of the current models do have it stalling, the question just being where and for how long. The odds of it turning out to sea are extremely slim, so right now pray that the circumstances will allow Florence to move along instead of staying put and dumping over the same area for a few days.

One of his sisters is the go-to for baked goods. My family can't do it even on a bet -- so it worked out that he deferred to Italian grandpa (my dad) on meats and rutabaga, but his family was in charge of sweets for family stuff.

This thread just reminds me how hard he worked on recipes and stuff like that. Other brother in law and I have no idea how to do any cooking beyond basics and when we attempt anything like a fancy recipe are mocked endlessly.

When Lions Club or Kiwanis or HS Parents needed someone to oversee the kitchens he would do it. He does have a lot of blessings stored up.

We are all set, although it would be unpleasant to say the least. We have three propane tanks for the grill, a gas cooktop we can light with matches, full fridge & freezer and pantry, drinking water, gas for the generator, etc.

The only thing we can't do anything about is all the leafy green trees, and the pines, which are the first ones to lay down on the job in circumstances like that.

Summer here in my neck of fly over country has been weird. June was hot. July was even hotter, plus dry. August has been yoyo-ing between hot and cold -- with lots of rain, which is very unusual. Normally, August is very hot and dry as a bone. Today is a little on the cool side which is why Swedish Meatballs. I don't know if it's the weather or not, but we didn't eat our first home grown tomato until the second week of August, and they have been very sparse. XO Sabin hasn't canned but a very few quarts of maters. Looks like we may actually buy canned tomatoes this winter. Yuck!!!

If there's the risk of your house being severely damaged from trees and wind, you might want to evacuate. We're well prepared here, but the 100' pines we haven't taken out (we've removed over a dozen) would probably land on the house in strong winds, what with the ground being soaked all summer. I hate evacuating, but it beats the worse case scenario. One guy here died during Irma after sending his wife and kids to safety. A tree fell on the master bedroom and killed him as he slept.

THIS^^^ Here's a tip right off the bat: In the event you lose power or have to evacuate, turn off your ice maker (pre-evacuation) and as soon as your power goes out, if you don't have a generator, empty the ice compartment into a cooler. People have been known to return home and find the area around their refrigerator soaked and ruined (if you have hardwood flooring).

Salt pork is pork belly with curing and a lot of salt. It's awesome, but not the same. It's a great addition to recipes in small quantities (because of the saltiness). I love it in minestrone.

As Votermom says, pork belly is the original product before it is either cured, salted, or smoked. Harder to find.

It can be hard to find, partly because stores don't carry a lot of it, and they stock it in odd places.

I use it in bean pots, and like the meatier chunks.

The good news is that it freezes well, so if I find two, three, or even four nice pieces, I buy and freeze them.

Seems like you could put part of the meatloaf in the pan, form a trough, fill the trough with prepared mac'n'cheese, and put the rest of the meatloaf on top and press around the edges to seal.

I actually don't. I know she stays home and he does something but I don't know what it is.

They're friendly enough the few times I've interacted with them. She has an adult son who has MS and it's really bad. They used to have a van come over and they'd unload him with a ramp. He was in a wheelchair and it looked pretty advanced. I haven't seen the van in some time so I don't know what's going on. I'm not sure he's even there anymore or if he's even alive.

One time I bumped into the guy and he literally brought up global warming within 10 seconds of the conversation.

519 Regarding ginger syrup: wash the ginger well but don't peel it. Slice it and place it in water (an amount 1.5 times the volume of ginger) and bring to a boil. Steep for 30 minutes then strain. Then mix with a simple syrup.
I use this to make ginger ale (mix with vanilla simple syrup and club soda) and lemon ginger tea when i have a cold.
