Food Thread: Oysters And Squirrels And Ribs...Oh My!

Is this a successful attempt at humor, or is it mandated by the unelected lunatics of the EU or is it a bit of both? I'm not sure, but it got a chuckle out of me.

I saw this at a Sunday market in Scotland, and was amazed that they can actually sell it! Is squirrel legal to sell anywhere in the US? I have eaten it once and was underwhelmed, so I am not rushing out to clandestine meetings with squirrel poachers for my weekly fix. Although...I just put a red dot sight on my 10-22, so I am capable of becoming a squirrel bootlegger....

I am a big fan of oysters, and I will seek out Dollar Oyster happy hours for my fix, simply because I am a glutton and just love to eat to excess. But as many of you oyster fans are aware, the typical dollar oyster is a pretty pedestrian thing. Around here they tend to be good, but nothing exciting. They are usually Long Island grown; pleasant, but nothing to write home about.

So I was thrilled to discover that Pound Oyster happy hour was an actual thing in Scotland, but resigned to the low end of the oyster hierarchy. And I was spectacularly wrong! This bar offered three different local oysters, all of which were magnificent. Certainly some of the best oysters I have ever eaten!

Yes, I promptly got fitted for a kilt and will be moving to Edinburgh.

Yup. That's in my yard, from a couple of months ago. It was a little long in the tooth when I discovered it, and i am only 99% sure that it is a morel, so I wouldn't have eaten it anyway without a positive identification from an expert, but damn! Maybe next year I will have a huge crop and be able to bathe in morels sauteed in butter, or grilled steak topped with morels, or scrambled eggs and morels, or French Toast and morels.....

Regular commenter and shiv aficionado Bluebell and I are a bit puzzled by this recipe. I made it a few years ago and remember nothing except the cookies were good. But why is there molasses in it when there is also quite a bit of brown sugar? And what's up with the double dose of vanilla? Inquiring minds want to know, so put on your Baker Geek hat and figure it out.

I saw some really nice meaty beef ribs at the store yesterday, and I couldn't resist. So I will be smoking them this afternoon with a simple salt and pepper rub. I did cheat a bit and put a light dusting of garlic powder on them last night, for no particular reason. Any thoughts about beef ribs? I like them simple, but there are plenty of people out there who use lots of ingredients in their beef rubs.

16 CBD. You posted a browned butter chocolate chip cookie recipe about a year ago. Different then this one. No molasses and absolutely wonderful. I use it instead of the recipe off the Toll House bag. Also use 72% cocoa chips. A bit more vanilla then normal. Not at home so I cannot check amounts. Now I want a warm chocolate chip cookie.

26 CBD, go for it next time! Morels are one of the easier mushrooms to distinguish from the poisonous varieties - if you can cut it and see all the way through the hollow stem to the top of the cap, you're good. And even the false morels won't kill you. It's like starting a game of mushroom on easy mode.

30 I made those cookies today, and left out the molasses and pecans, but added a half-cup of chips to compensate. If you make it, use 2 cups of chips just like for Toll House cookies. This recipe calls for only 1, and even at 1.5 I felt they could have used more.

I've been committing the Glycemic Index to memory lately. Cliff Notes version is that items high on the scale will spike the ever-living-hell out of your insulin response and perhaps give you the diabeetus on a long enough time line. Perhaps even Alzheimers -- which some health care folks are referring to as 'Type 3' diabeetus.

You know what's surprisingly low on the scale?

Ice cream and chocolate cake. Both of them down around strawberries.

Surprisingly high on the scale? Baked potato and carrots. Worst item I've seen is corn bread.

43 I wish I had known CBD would be writing about squirrel. I have a recipe that someone submitted to the cookbook that I could have sent him. Darn it. I used another one from that contributor instead because it was rather lengthy and I didn't think too many people would be able to use it, but it was great. It started with "De-fuzz and de-gut four red squirrels" and went on from there.

44 Made what I call peaches and cream pie yesterday for the gkids.

Basically it's a peach flavored cake in the bottom of a pie pan. Followed by a layer of peaches from a can and then topped with a cream cheesey layer. Bake for a half hour.

They ate it like it was going to be their last meal.

A million years ago I was a New Yorker. Then I was a New Yorker on a business trip to El Paso.

There were oysters on the menu and the New York part of my brain said oh hey I like oysters and I haven't had any for a while.

Oh, yeah. Fats are good. Consuming alcohol with meal also diminishes the spike iirc.

There are so many *asterisks in glycemic index information. It's a crap shoot, but becoming familiar with the index is kinda important for those very few here north of 29 years of age.

76 If you purchase a whole squirrel, make sure it has the tiny EUDA inspection stamp.

3x3 whole wheat hardtack is finished. The stuff will yield to nothing below rock or hammer.

Starting up the pemmican production line tomorrow. Dried the beef and blueberries and tonight the fat shall be rendered. This time I'll try rolling it thinner for the vacuum seal. Easier to pack.
One day I'll try the salmon recipe. Still trying to shake Lewis and Clark trashtalking dried salmon.

You are right. The best case scenario for oysters (or mussels) in Colorado is that they taste bad. Worst case scenario is being dead from food poisoning.

Shrimp's okay. Lobster too I guess if you don't mind paying through the nose. They at least have cardiovascular systems and immune systems worthy of the name, and can survive in brine-ponds here once imported.

The winter and Spring were too long.

I made my first batch of jam, "Peach Butter" which requires bruised peaches, ginger, allspice, cinnamon, and star anise if you can get it, lemon juice and sugar to taste.

I picked up windfalls at a UPick place (don't tell them you got windfalls because they get all weird on you since getting food from the ground violates health rules or something), cut the pits and the obvious issues out of them, and then cooked them down for about 12 hours in a crock pot.

Half way through I mushed most of them up with a food mill and dumped it all back into the crock pot and kept simmering it down to decent thickness.

I just got done canning them all, 8 half pints total.

Times were hard then, and I think for them the main attraction was that when it was winter, and you only had a 50 lb bag of dried pinto beans to last a few weeks on, it was a nice way to actually be able to cook yourself up a meat stew with a little bit of flavor.

They've never been anything but a very poor person's meal.

Look up insulin index. That's actually a much indicator of the load given foods put on the body. Glycemic index is easier to measure and it does correlate, but not always.

The insulin index is a measure of how much insulin your body has to pump out to handle the glucose load a food is putting in your system.

For example, a ribeye steak has a non-zero insulin index, even though its glycemic index would be zero.

When they're bad, they always give an olfactory clue. Do not eat a bad oyster or clam. You will spend hours bowing and paying homage before the ceramic Gawd if you do.

Making Italian tonight.... dish called Bosta. Maybe real Italians call it something else...a very simple dish...


One big white onion ( chop it up and throw it in the big pot on stove ) if you really love onions use two of 'em


a teaspoon and 1/2 of minced garlic ( throw it in there)


A pound of hot Italian sausage or more/less what evs
( make small or medium roundish balls of it...and throw it in the pot to brown )


Throw two large cans of diced tomatoes in the pot once the sausage has browned.


Pour a regular sized can of tomato sauce into the mix.


Throw in a couple of Bay leaves.


Cover a quarter of the top with Oregano.


Cover the whole top with Italian seasoning....then stir it all up...


Let the stuff cook for two hours... check on it occasionally to stir and to make sure your kitchen is not on fire.


If the Bosta seems too watery...thicken it with a small can of tomato paste... use two cans if you think it's still not think enough what evs.


Make some pasta shells when you are ready to eat.


Serve with some garlic bread or what evs.


Done.


It's a tasty dish that takes minimum time in the kitchen to prepare....and will serve a small gathering or serve one person for multiple meals. It's freezable for later as well. Good stuff.

Whenever I would take photos for one of my essays, it would always take an immense amount of time to "process" and select the photos for the report, and well over half that time was necessarily spent on a step I called "Reflections, shadows and cameras." In each photo chosen for publication, I would have to search every square inch of it for just those three things -- reflections that might reveal me, and also my shadow, and finally I make sure that my picture does not depict anyone else pointing a camera in my direction.

Only after all three elements are excluded is the picture deemed upload-worthy. You can't believe the number of great photos I've hd to reject because they contained a reflection of me. The squirrel-meat photo would be rejected, for this very reason.

True, but what I meant was that in the grocery stores around here, tasty tomatoes that don't transport or keep well are in the organic section and really photogenic ones that hold up well and taste like slightly bland water are in the general produce section. Not that the certification means anything by itself.

286 Big red mushrooms are likely amanita muscaras. They say they are poisonous, but not in the way that some amanitas are. They are hallucinogenic and it's rumored that the Viking beserkers used them before battle. In the place I used to live, there was a fad for amanita panterinas. They look like the muscaras but are brown with white spots. They do not mix well with alcohol, especially if you are a logger. Police were involved on that one.
You do need to be very careful though as some mushrooms can cause liver failure. Morels seem to be safe as they don't look like anything else and there aren't any poisonous ones I am aware of.

There are false morels here, but it's very easy to distinguish them with This One Weird Trick. True morels are hollow cavity all the way from the stem through the top of the cap, false morels have a cap attached to the stem at the top like an umbrella. Plus, false morels won't kill you outright*

So, her recipe does finesse the brown sugar content.

More stable blood sugar too. Its too soon to tell really but i seem to sleep better and have better focus on my work. Hopefully blood pressure will improve.

360 Found some very cheap, totally fresh thin-sliced ..... top round? sirloin? .... can't remember the cut of beef, this past week. So made beef satay. Marinated overnight (ginger garlic soy fish sauce brown sugar cumin coriander pepper). Gotta be more attentive when it's on the grill, I over-did it a bit (best if it's barely pink in the middle ("middle" isn't much in stuff this thin). Only takes 3-5 min., total, to cook - but I was distracted by guests.


Peanut sauce came out very well (fresh raw peanut butter brown sugar coconut milk onion garlic ginger fish sauce sriracha), as did the simple cucumber salad (persian cucumbers with rice vinegar with sugar and a bit of salt).

Did have a taste that leaned heavily towards lobster.

Well, I stopped eating it after a couple of severe 24 hour stomach cramping episodes. I was told, if I kept eating it, I would develop full blown anaphylactic reaction...so I stopped.

We cooked them last night with advice from my DIL's Mom. All I can say is that it was a lot of work to cook and a lot of work to eat, but pretty tasty all in all. Some foods disagree with my insides, but some, like shrimp and something in the frosting of Baskin Robbins ice cream cakes, make my hands turn red.

It's annoying.

Eggs and bacon for breakfast cooked in bacon fat. Cheeses and bacon for snacks. Lost fo chicken, pork chops and eggs for breakfast sometimes cooked in bacon fat. I grew up on a lot fo meat so not much transition although I went veggie farm awhile cause wife is. I take D3 and a multi once a week. I also star the day with food grade diatomaciuos earth in almond milk, It keeps me rregular and is great for bone, nails, hair etc. I had very weak nails fo some reason and now after 30 days they are clean, smooth and hard. Great fo the ukulele!

Here in DC there is a group of mushroom hunters. They like going shroom hunting like others like to fish. They teach their members how to identify the good ones from the bad ones. I've thought about joining up. Its something I would like to know.

When in school in Scotland county early spring would bring a bumper crop of a shroom purported to be hallucinogenic. Never bothered to find out if it was. I was too engrossed in rattlesnake hunting.

Most likely. I got a giant bag on Amazon for about $15. We use it in the veggie garden to kill bugs ad give it to our pets for many of the same reasons we take it. It kills parasites in their gut. And good for coat etc. can make a toothpaste too to whiten teeth and before a moron says it.

Undercooked chicken is not safe - most of it is contaminated with salmonella. Beef is safe if the surface of the cut is intact (not ground or perforated), so I brown the surface and leave the interior rather rare if it's a tender cut.

Well it is but not damaging so. Just enough to clean and smooth. Wife and i worked up to 1 tablespoon in almond milk mixed with a hand wand blender. No adverse affects at all. One teaspoon in cats food each night. Again no adverse affects.

449 So many hunters have gotten away from actual hunting that most don't even know how to dress a squirrel, rabbit, etc. It's a shame because that's such a great way to introduce kids to a lifetime of walking around in the wilderness.

I personally enjoy squirrel dumplings, and they can be as easy or as complicated as you please. Some of the best I've ever had were just chicken broth, canned smack-em-on-the-counter biscuits pulled into chunks, and fresh squirrel from that day.

I've tried putting the meat in a pressure cooker for a bit prior to using it as intended, too, but haven't perfected it yet. I'm going to tinker with it in the instant pot this season.

We fry them crispy, then into the Dutch oven for an hour or two, elevated, with bacon grease and onion in the bottom.
Same thing with quail, pheasant, any other thing you may have kilt that day.
