Food Thread: Unlabeled Containers...What's In Your Wallet Freezer?

I usually have pre-portioned cookie dough in my freezer, and often two or three different kinds! I'll chill the extra dough, form it into balls, then freeze them on an aluminum pan before tossing them into plastic bags. It's a great way to avoid baking and eating the entire batch of dough, and it's fantastically convenient to have ready-to-bake dough at hand. I have found no degradation in quality after freezing, and preparation is simple. If I have time I will allow the dough to defrost directly on the baking sheet, or if I am strapped for time, just bake them directly from the freezer. That requires a bit of attention, but there are worse things in life than peeking at cookies as they bake!

But last night I poked around the freezer and found only one bag of cookie dough, and for the life of me I had no idea what the hell they were! They looked like they had oatmeal in them, but clearly they weren't run-of-the-mill oatmeal raisin cookies.

But I am nothing if not adventurous, so into the oven they went, and 17 minutes later they emerged to much acclaim and rejoicing. I think they were these, from Martha Stewart, but really, that's just a guess, because I DIDN'T LABEL THEM!

It worked out quite well, but just imagine if they had been something completely different. Something like these, or these, or these?

So...what's in your freezer or refrigerator that isn't readily identifiable, but still in that hazy realm of, "maybe I should defrost that and eat it for dinner?"

Any success stories? Probably, but what I am really interested in is the horrible failures!

Last week I mentioned cooking lentils, and how good and satisfying they were. But I neglected to explain the entire recipe, and the ingredient I left out is pretty important.

Yup. Bacon. I chopped some up and sauteed it for the fat in which to cook the rest of the ingredients, and also because...duh...bacon!

Commenter "clutch" mentioned recently that he makes his own hardwood charcoal, and he was kind enough to share how he does it. If you haven't grilled with it, it is absolutely worth trying. It burns hotter and cleaner and at least in my experience longer than commercial briquettes.

First, I thought CBD stood for Coached by Duffy (Daugherty). Oh well...

There are a few ways to make your own lumpy charcoal. I use a blue enameled roasting pan and put my hardwood scraps in it and put it in the woodstove that I use to heat my house. The wood gas (methane) leaks out of the loose lid and ignites. When no more flames come out of the lid, your charcoal is done.

Another way to do it would be to make a fire in a 55 gallon barrel and you could put your wood scraps in a new paint can, punch a few holes in the lid to allow the wood gas to escape. You'd best do that outside, not in your kitchen...

I use hardwoods like oak, hickory, locust and cherry gleaned from a cabinet shop across the street from my Dad. I probably have a dozen sacks of charcoal for this summer and another couple hundred pounds ready for next winter's cooking in the woodstove.

I have never heard of this stuff, but it sounds like loads of fun. Chili Crisp: Spicy, Salty, Crunchy, Tingly, and Good on Everything. There is a recipe along with the article, so if you can't find the brand in question, you can always make it yourself. But...it sounds like a bit of a chore, so I am going to look for a jar of it before I plunge into homemade.

A simple salad is such a great accompaniment to a meal, but too many chefs and too many restaurants make it a bigger deal than it should be. Salad doesn't need 10 ingredients! The recipe at Chez Dildo is simple: red lettuce, chopped endive (the mildly bitter flavor is a great counterpoint), a few grape tomatoes and a good vinaigrette. I love the crisp and tart flavors, and it is a great palate cleanser, almost like a digestif!

Biscotti are great with a cup of good coffee. Although come to think of it, they would improve a cup of bad coffee...

I have made this a couple of times, but never got 65 pieces out of the recipe. Maybe I was doing something wrong, but they tasted good, so tough.

ANISE BISCOTTI

  • 2 cups sugar
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 4 large eggs
  • 4 1/2 cups all purpose flour
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/3 cup brandy
  • 1 1/2 teaspoons anise extract
  • 1 teaspoon vanilla extract
  • 1 cup whole almonds, toasted
  • 2 tablespoons aniseed

    Preheat oven to 350°F. Line 2 heavy large baking sheets with foil. Beat sugar and butter in large bowl until light and fluffy. Add eggs 1 at a time, beating well after each addition. Mix flour, baking powder and salt in medium bowl. Combine brandy, anise extract and vanilla extract in glass measuring cup. Add dry ingredients and brandy mixture alternately to sugar mixture, beginning and ending with dry ingredients. Stir in almonds and aniseed.

    Form two 2-inch-wide, 13-inch-long strips on each sheet. Moisten fingertips and smooth dough into logs. Bake until golden and firm to touch, about 40 minutes. Transfer sheets to racks and cool completely.

    Reduce oven temperature to 300°F. Transfer cooled logs to work surface. Using serrated knife, cut logs on diagonal into 3/4-inch-thick slices. Arrange slices on baking sheets.

    Bake cookies until dry and slightly brown, turning every 10 minutes, about 40 minutes. Transfer to rack; cool. (Can be made 2 weeks ahead. Store in airtight containers at room temperature.)

    Makes about 65

    I always throw stuff in the freezer and forget to label it. Once I was trying to bolognase but defrosted chili instead...had to change plans quickly.
    I've got a batch of gluten free chinese almond cookies baking right now. Not huge into the gluten free thing but these cookies are great. this is the 4th time making a batch in about 2 months. My boys love them.

    35 I think raisin cookies is a thing from a time before they come up with the idea of sweetening dried cranberries and there was little importing of fresh fruit during the winter.

    Take that recipe and substitute choc chips for raisins and you have a yummy cookie.

    38 I had some left over pork roast so I chopped it up and made a sour cream and onion sauce, planning to serve it on brown rice.

    I make rice in the rice cooker and then freeze smaller portions in little bags. So I took one of those out to defrost.

    Right before dinner, porky stuff all ready, I go to heat up the rice. Damn. It's not rice. It's leftover sauerkraut from about 6 months ago.

    Eh. I use it anyway!!! It was quite good!

    50 Fyi, there are toaster pastries in "The Homemade Pantry" by Alana Chernila. They are not low carb as they use pie crust. She also has recipes for sandwich cookies and fig bars. The rest of the cookbook has more useful things like salsa and hummus.

    Generally when I have a roasted chicken or a hambone that I have picked everything off of I will cook the bones down for broth. I save the broth for making rice or cook noodles in them.

    I also have some tubs full of pumpkin puree and some full of strawberries. Fortunately I can visually spot the difference there.

    .If you had OCD that wouldn't happen. It does not happen in my house, everything in the freezer is labeled to exact contents and date frozen.

    54 My biggest problem is that I'll cook something and eat part of it and refrigerate the rest. But then I become bored with it and let it sit there for the better part of a week while buying new food. Eventually it weighs on my mind and I steel myself to eat it. There have been a few cases of spoilage where I've had to discard it. Maybe I should use the freezer, but it'd probably fill up lacking the motivation that it will be wasted.

    My sister. Her recipe includes soaking the raisins in warmed up orange juice so they taste more orange-y than raisin-y.

    82 I think a comic did a bit about putting leftovers in a container and into the fridge until they are spoiled enough to throw them away. I have a dog so I don't do that a whole lot but some stuff, esp. veggies gets pushed to the back and forgotten and then if I used tupperware etc instead of a throwaway butter container I am bummed.

    But my pet peeve is the co-workers who do this when they go out to eat and leave those cartons in the work fridge. For petes sake people if you are not going to eat the rest of that meal within the week just let the restaurant compost it right away instead of fouling the work fridge with the moldy remains that *I* throw away a few weeks later after going " EWWW what is that horrid smell"

    I think a Moron 'must have' kitchen item is an infrared thermometer. They're not very expensive. Made a shrimp thing last night: onion, pepper, bacon fat, olive oil, mushrooms, garlic, cheese, pizza sauce, cherry tomatoes, etc, with fan-tailed shrimp over a very modest amount of pasta. To my interpretation -- very Paleo level meal. Keep the pasta boiling time short -- under five minutes to keep glycemic level lower.

    Pressed for time, cooked the thawed shrimp in small pot and brought them up only to sous vide 'done' temp -- about 160. Not boiling as usual. Much chewier and flavorful. Fan-tailing the shrimp exposes more flesh area to absorbing delicious juices.

    Impossible/dangerous to cook shrimp without proper instrumentation -- which is why infrared probe recommendation. Wife cleaned her plate and scraped the bowl for the last remnants. I snuck a few shrimp from her bowl. She didn't stab me in the wrist with her fork which I considered non-committal.

    When I leave the dinner table with puncture wounds to the back of the wrist from a fork I knew the meal was really good. And not to snitch from her plate again.

    I haven't made them in years, I promise! But those cookies have a lot of butter and brown sugar in them, so they taste kind of butterscotchy, which I like. I never eat raisins plain, but i do like them baked into things, or in some salads.

    The exception is raisin bagels. Yuck.

    114 I'm on a low sodium diet so I crave lots of food items. I found a Spanish type of olive and pickle that is spicey and pretty low in salt but they are hard to come by. So I save the left over pickle juice they come in and right now I have like 6 containers in the freezer. I put a container of it in a sauce pan and bring to a boil, add red pepper flakes. While it is coming to a boil I cut up small cucumbers or persian cucumbers into slices and then pour the boiling liquid over. I leave it on the counter until it cools a bit, then into the fridge it goes. It's best 24 hrs later but I can eat the slices even if it's only 8 hours. It helps satisfy my cravings and add the spice makes up for the disipation that happens with the flavor.

I think I cured at least one person by tossing their $$ glass dish with silicone lid because the contents were gross and they had been warned twice before I simply tossed the re-usable container along with the scary moldy contents. I have not had to toss the restaurant to go boxes lately. I don't know if local eateries just shrank portion sizes or what but its a good change.

    Hardwood is more dense and burns longer. Softwood will give a more porous charcoal and burns faster.

    The English charcoal burners traditionally used a lot of filbert because it grew fast. Linden and beech and other fast growing softwoods also were used. That was used for making bog iron until techniques to use coal were developed.

    133 Eris, strawberries and oranges are both good in spinach salads. I don't eat kale raw so I don't know, but I suspect they would work with that as well. And bacon and some sort of cheese - I would probably use feta. Maybe some hard-boiled eggs, too.

    This romaine lettuce/e-coli thing is pissing me off. Both my wife and I felt sick this week. She bought a bag of chopped romaine lettuce last week. We both had some.

    My kidneys upon wakening one morning this week felt like someone had punched the ever-living-hell out of them during the entire night. An entire wasted day for me feeling like shit.

    We have a 'salad spinner' to wet down lettuce and try to clean it. She never used it. For whatever reason. Perhaps thinking the same people that demand instant citizenship and voting and welfare rights had cleaned it.

    I would go for a "wilted spinach salad." (There are a lot of recipes out there.)
    It's basically spinach/kale, hard-boiled eggs, and crumpled crisp bacon. The dressing is any variation of Italian/vinagrette mixed with hot bacon grease.

    158 I like CBD's approach to salad. In the garden we plant leaf lettuce and spinach together in the same containers. Just cut some for a combination, add some scallion or onion and some tomato. Herbal vinargrette is nice but even salt, pepper and lemon juice will do.

    If the salad (along with Beano) is the whole meal, I can get rather inclusive: carrots, bell pepper, celery, etc. with the leafy stuff above.

    Warm crusty bread is not really optional.

    If you take the same cloth and soak it with melted wax, it makes a fabulous fire starter for bad weather conditions when cooled. I use a swatch about the size of a business card.

    Oh, I made hard tack last night. I will try some whole wheat hard tack today to see if makes a difference. (Bucellatum, right?)

    Reduced broth, wine, and carmelized onions -> ice cube tray -> ziplock bags. Instant flavor for soup, stews, pasta etc.

    Also, I make some herb mixes like cilantro, chopped roasted garlic, chili paste for instant Tex Mex.

    Miso paste, hondashi, sesami/ginger paste for Japanese.

    Haven't don't it yet but - grated lemongrass, cilantro, garlic chili paste, and ginger for Thai/SE Asian.

    Lasagna keeps pretty well in the freezer. I cut it into long rectangles for individual servings. Nuking it works just fine.

    For late night ramen adventures i freeze leftover shredded pork and keep in small ziplocks. Cook up your noodles and pop in a wad of the pork. Good times.

    Not so good; turkey mushroom rice. Turkey doesn't do well in the freezer - always seems to get that freezer taste real quick.

    Recently opened a vacuum sealed bag thinking it was marinara sauce. Actually ended up being sauce and 2 meatballs. Meatballs looked less then edible. Threw it out.
    Typically make a batch of chocolate chip cookies and freeze the balance of those we don't immediately eat. Same process that CBD described. Had company last night and baked the entire batch. Only 5 left. Really didn't think 7 people could eat that many cookies.

So next time I was in a store I read the labels. Flavored soy or rice milk should be called sugar water with soy or rice. Even the plain stuff is higher in sugar than milk from a cow IIRC. I don't know that I looked at almond milk.

    I'm on a low sodium diet so I crave lots of food items. I found a
    Spanish type of olive and pickle that is spicey and pretty low in salt
    but they are hard to come by. So I save the left over pickle juice they
    come in and right now I have like 6 containers in the freezer. I put a
    container of it in a sauce pan and bring to a boil, add red pepper
    flakes. While it is coming to a boil I cut up small cucumbers or persian
    cucumbers into slices and then pour the boiling liquid over. I leave it
    on the counter until it cools a bit, then into the fridge it goes. It's
    best 24 hrs later but I can eat the slices even if it's only 8 hours.
    It helps satisfy my cravings and add the spice makes up for the
    disipation that happens with the flavor.

    If you are on a low sodium diet because of heart issues the new advice from most doctors and heart specialists is that unless you are "salt sensitive" it does not hurt to use salt. When I had my heart attack I did a test where I ate salty potato chips all afternoon long and took my BP every hour. It was not effected by the huge salt intake.

    Look into Pascalization or High Pressure Processing of food. It kills bacteria and such without heating it, by taking it to 50,000 PSI or 3.5 Kilobars

    Some foods are processed this way, there is a place out of Gresham Oregon that processes raw hamburger this way for sale.

    I was looking into doing a traveling truck with the equipment to go from small farm to small farmstead to sterilize whole milk for farm sales of raw milk so the farmers could keep it on hand a bit longer by avoiding the fast spoilage and vector risk.

    Come to think of it, it would work like a dream for maple syrup too.

    Take it from a pro: Hickory shirt and heavy leather gloves, and to be sure, duct tape the cuffs over the leather gloves.

    Then, buy a Stihl gas hedge trimmer like the SL94. Use it like your personal 2-stroke Vorpal sword.

    Some of the guys use a small chainsaw and get into the middle of the thicket to cut the base canes, but that is not always possible. A machete is not optimal and I have used them a lot, but in the swing you get caught by the thorns and you can't stop before they tear through your delicate skin.

    Hand clippers are a good method too, but you wind up clawing up your arms if you don't have a heavy shirt on, but don't get too deep and have some place to stack the cut canes. A good garden rake or a pitch fork is good for doing that

    Everything's a trade off. More surface area means they spoil faster.

    I think freezing them in the first place is the mistake. Cure them like a Prosciutto di Parma and they'll last forever.

    .Unfortunately I am one of the few people who are salt sensitive. If I eat at KFC or Chic Filet my arrhythmia comes out full blast.

    I get numerous SVT's and PVC's starting about 45 minutes after I eat something with a lot of salt in it and they last for about 1-2 hours.

    And I quit going to the VA when they asked my why my blood pressure was high after I waited 1 hour and 42 minutes after my appointment time to get seen.

    I was trying to make corned beef and pork by vacuum sealing the meat, seasoning and pink salt in with a couple of ice-cubes.
    If you try to vacuum seal a bag with water the vacuum sealer will suck all the water out.

    by the way it did work but it made extra salty stuff that I never could soak long enough to get the salt out.

    I have my own cuff and am always amazed by the difference in results. Gotta pee? Off the charts on the high side. Just ate a big meal? Under the charts on the low side. Pissed off by the news? Off the charts on the high side. Dropped a blue pill? Under the charts on the low side. At the Drs. pissed off by the procedures? Off the charts on the high side. Arm raised too high, or too low? Bad results.

    There are about fifteen variables in BP check. I doubt the VA help is following established protocol. You're better off buying a cuff, checking it yourself a couple hundred times, tossing out the highs and lows, and averaging the stuff in the middle.

    When I worked for the tree coroner, the climbers like the Pullins cause they were light and disposable. Made it easier to climb around in the trees and if they dropped or broke one, opps.

    .We sucked it up and bought Blue Cross through the VA where my wife works and quit going to the VA for treatment for those reasons.

    Both of us are retired from the Navy but no one within 50 miles of us takes Tricare in network. There are a few places that will take it out of network but I don't want to empty our savings to go to the Doctor.

    The reason they're good is that they're better the day after they're made, so you do them the night before.

    A baguette, or similar crusty bread. Olive oil and balsamico. Prosciutto, fresh mozzarella, roasted peppers. Cut into half sandwich sized pieces and wrap tightly in Saran wrap.

    Keeps forever. Gets better when the juices mingle. Doesn't get soggy if you start with good bread.

    Venison and fish is always eaten, but store bought chicken will be discovered months or years later. I'm actually making a point of working my way through everything right now so I can begin slowly restocking it.

    she went running for Resident Evil, to get her to help them get me to stay. she came in, laughed at the nurse and told her the only way my BP was going to come down was if they released me.

    then she dragged in the doc, who, after talking to RE, told her to let me go.

    and, to drag it back on topic, martinis are a clear liquid, as is scotch and water.

    which is what i had to drink the night before the procedure, as well as when i got back home.

    355 Weasel, I usually do meat, bread and cheese for food. It carries well and goes down easy in a hurry.

    I do keep a SAW ammo box (800 5.56 NATO can) with two propane cylinders, a Century one-burner stove and one of those tiny propane lanterns. It all fits in there with not enough room to rattle if you set it right. (a 50 Cal can is smaller, YMMV)

    I also keep a gym bag with sauce pan, cups, coffee, sugar, bouillon cubes and some single serve canned foods in the car so that I can make coffee for break.

    Hot coffee is a treat in the woods. A cup of hot bouillon is wonderful when you are soaked to the skin and you have a couple of hours left to go.
    And having a lantern for when you get stuck over night make everyone much more relaxed.

    Fat, protein, and salt, the three food groups, right? Sausage is good, like Bander mentioned. Cheese is good, it's got all three too. Same with the crusty sammich suggestion.

    When I used to go hiking with my uncle in Vermont, he would bring a little pack with summer sausage, a wedge of cheese like Manchego, a little jar of spicy mustard, maybe two apples, and a carbon Opinel #6. We'd hike up to an overlook or a stream or something, cut a slice of cheese or sausage, dip it in the mustard, and pass the knife back and forth like that. When we sat down, he'd fire up a Trangia with a little espresso pot on it and by the time lunch was done there was a little dixie cup worth of espresso ready.

    I mean, it's froofy as hell, but that was just a neat way to kill a half hour out on a mountain and about the best I ever ate on a trail.

    Of course, we were just hiking. If I'm burning calories, it's basically the same thing, just less leisurely and more budget-oriented.

    I had an anesthesia mistake before surgery one time. They paralyzed me before they knocked me out. I was suffocating and I couldn't move, breathe, or speak. The Dr realized what he had done and knocked me out. Then he lied to me after surgery.

    So a thread from a few days ago has been occupying my mind, the idea of college students being Food Insecure or something goofy like that.

    Well, I went to the grocery store today to put that theory to the test. I bought a package of ramen, some refrigerated grilled chicken, frozen shrimp, green onions, parsley, sriracha, and eggs. Cooked up the ramen, scrambled an egg, and put it in a bowl with some of the chicken and shrimp. Sprinkled the garnish on it and drizzled with sriracha. A decent and filling meal that, by my calculation, cost maybe a buck fifty. Less if I had cooked the chicken myself.

    I am left with the opinion that it takes real work and dedication to starve in this country.

    I'm not a hunter, but it's been my experience that sweet things "keep" the longest. Fruit juice, candy, gum whatever. It's kind of counter intuitive to me. You'd think sugars are the easiest things to break down, and bacteria would ruin those first.

    430 I mentioned this in a thread last week but I'm repeating it because it's the easiest thing ever: To cook a perfect medium rare eye of round roast, let the meat come to room temperature (takes about an hour). Preheat the oven to 500. Salt and pepper the roast. I put canola oil on it, but Jane D'oh told me that's not necessary. Cook at 500 for 5 minutes for every pound Mine was 2.5 lb. roast and I cooked it at 500 for 13 minutes. Then turn off the oven and let the roast sit in there for 2 hours. Do not open the oven door during that time. Then enjoy. It's so easy a moron (and not the good kind) could make it.

    461 JTB - thx for heads up, the recalled salmonella tainted eggs came from Rose Acres Farms in S.C. sold mostly at Walmart. Eggs were distributed in CO, FL, NJ, NY, NC, PA, VA, WVA, and of course S.C.
    So, one good tip certainly deserves another, Pinot Noir being my fav, I tried many labels over the years, IMHO best medium priced PNoir nowadays is Mark West.

    That's something that disturbs me about the reports of lettuce/e-coli issues. Our 'media' never reports if the people so afflicted have health issues in the first place.

    That's kind of an important distinction. Most people should be able to ingest some limited amount of e-coli without going into kidney failure. It's everywhere. I don't have to walk five feet.

    chemo/radiation therapy is another, as are ant-rejection drugs post transplant.

    my partially compromised system is secondary to 3 anaphylactic reactions to cephalosporin antibiotics, triggered by years of low grade exposure to them in the laminar flow hood making them for other people.

    There are a lot of foods that I hated as a child that I like now, like beets and Brussels sprouts. Liverwurst is the opposite - I liked it as a kid, didn't eat it for ages and then bought some 10 years ago. I was looking forward to a nice liverwurst and onion sandwich on rye.     Heh. I've never really been a sweet tooth, but I've always liked bitterish things. Like liver or broccoli rabe. I like how liverwurst combines the fatty taste with the bitter. It's expensive, though. I love chicken livers.

    I have a jar of Sambal Matah (Indonesian salsa) that I got at Trader Joe's. I like spicy foods, but it is insanely hot. It's not so much that I hate it as I have to use it very sparingly - like mixing maybe half a teaspoon into some Asian sauce. When I opened it I tried to eat like I eat regular salsa and it damn near blew my head off. So it's gonna take a while to get through one jar.

    Yeah, you would think. Maybe it's because both my parents loved it and so we had it a lot when I was a kid. After not having it for 25 years, it tasted like a mud sandwich.

    562 I have 3 chainsaws. 1 Stihl, one Husqvarna and one Poulan, the Poulan
    was a cheapie I got on a whim, it sucks. Spend extra on a Stihl.
    Husqvarna is ok too but mine is old and I think they make them cheaper
    now. Go with a STIHL.

    I bought a brand new Stihl, and it was good for the first year, and endlessly temperamental thereafter. And I did drain off the fuel. My go-to saw these days are the baby Homelites like the one pictured in the link. I pick 'em up for ten or twenty dollars each at flea markets and swap meets, tune them up, and they always work great, and do all the cutting I need to do. I also have a number of collector chainsaws.

    564 Spicy chili crisp: ordered and on the way.

    The timing is about perfect because I've been down with the flu and eating a lot of brown rice (yeah, I know, but I got a fancy rice maker and discovered I like the stuff if it's properly cooked) mixed with over-easy fried eggs and/or meat, because eggs or meat alone are somehow too direct.

    Just tonight, I had lamb chops (ok, they were goat chops), cut up into little cubes, coated with soy sauce and sesame oil, then mixed with brown rice and some preserved mushrooms in chili oil (https://preview.tinyurl.com/y7sp88g7).

    This crunchy oil will fit into this sort of eating plan very very well.

    566 ScogDog you can use 2x4 scraps or sticks that fall from a tree for your charcoal. I just use hardwood because I have access to it, it burns hotter and longer and I can choke off my big green egg and reuse it.

    Your paint can in the fire pit would probably work. It would be best on a bed of coals.

    568 I have five to ten year old bottles of hoisin sauce and various other Chinese condiments in the bottom shelf of my refrigerator door because the shelf above it sticks out far enough to hide the fact that there's another shelf. And I never remember to clean those bottles out on trash day because I never see them.
