Food Thread: Proportions: It's What's For Dinner

Rib steak with roasted potatoes and asparagus. That looks like an herb butter happily melting on the steak, and the asparagus look nicely cooked. I would quibble with the temperature of the beef; I think it should be a bit less well done, but all in all I would be very happy with this meal.

Steak is to Potatoes, as Fish is to? As Lamb is to? As Pork is to? As Tofu is to?

Or is it that steak and potatoes is perfect, and there are no other combinations that make such wonderful sense?

Remember these? I am a sucker for sugar candy, especially if it is sour or spicy. As I recall these aren't all that good, but the photo is marvelous, so why not...although I think it needs a little bit more garlic and oil. And maybe a sprinkle of Parmigiano-Reggiano.

I got an interesting e-mail from commenter "SkinnerVic," and the follow-up wandered into territory that fascinates me: the concept of balance in food proportions. Here he is discussing hot dogs and the various toppings and condiments that elevate them to sometimes dizzying heights. And I am not being hyperbolic. I think hot dogs and sausages are marvelous foods when executed well. But simply piling it high and deep with chili and onions and French Fries and relish masks the wondrous flavor of a good dog!
After your excellent grilled meat post a couple of Sunday's back, I thought better to weave it into our current Sabbath day eating meme -- Gourmet Dogs. We've been working a different type of more sophisticated hotdog each Sunday as they are a usual clan pleaser. Prior dog winners include a Californian Dog (Bacon wrapped, with Avocado, sautéed onions, and a spicy mayo) to our rendition of the Porky Dog (inspired by - Number one reviewed eatery on Kauai, Kalua Pork Dog). All dogs require a fully buttered, then toasted bun on the flatiron.

I decided to combined the Korean Kalbi recipe with the hotdog. The basics of making it work for our crowd (as I have some smaller mouths) is that there should be a range of flavor and texture, all of which have to be a clean bite – nothing too hard or stringy requiring a gnaw. The marinade we used on the Galbi, was cooked down (to clean/purify and thicken) which makes a great condiment sauce. To offset the sweet/savory of the meat, we did a quick pickled veg recipe with a sub of cucumber for cabbage. It provides an acid and crunch for sure.

It rated well and is now in the “would make for company” category (which is a step up from “would make again” pew).


I love the point that he is cooking for "smaller mouths!" What a great way to approach the proportions of a dish.

This recipe disturbs me on many levels. Hell, even the name is faintly nauseating. Admit it, Pressure Cooker Macaroni and Cheese sounds...wrong! But Mike Vrobel, the guy who writes this blog, really knows how to cook. So I am going to try it, or at least the sauce part. I can make the macaroni in a regular pot.

Regular commenter "ibguy" has an interesting question about braising brisket....

He is planning to serve it for the second night of Pesach (Passover for you Goyim) and presumably because of space constraints he will be cooking it on the grill. Eight pound brisket, Covered roasting pan, using a classic cola braising liquid. The question is: For how long and at what temperature should he cook it?

Although....my question is: Why not just smoke it? Nothing wrong with smoked brisket for Pesach!

Here is a nice simple pasta dish with a bit of a twist. I rarely cook with vermouth, but I made this and it sort of works! One caveat: be careful not to overcook the shrimp. I would cook them on a more gentle setting.

Capellini with Shrimp and Creamy Tomato Sauce

• 3 tablespoons olive oil
• 1 lb peeled large shrimp
• 3 large garlic cloves, forced through a garlic press
• 1/4 teaspoon dried oregano
• 1/2 cup sweet (red) vermouth
• 1 (14- to 15-oz) can diced tomatoes, drained
• 3/4 cup heavy cream
• 1/2 teaspoon fresh lemon juice
• 1/2 lb capellini (angel-hair pasta)

Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then cook shrimp and garlic with oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper, turning once, until golden, about 2 minutes total. Stir in vermouth and tomatoes, scraping up any brown bits from bottom of skillet. Add cream and briskly simmer until sauce has thickened slightly, about 1 minute. Stir in lemon juice.

Meanwhile, cook capellini in a pasta pot of boiling salted water (3 tablespoons salt for 6 quarts water) until al dente. Reserve 1 cup pasta-cooking water, then drain pasta.

Serve immediately, topped with shrimp and sauce. Thin with some of reserved water if necessary.

This week I was sauteing chopped vegetables in sake, sesame oil, and oyster sauce and it got me thinking about what it is that creates the "Chinese restaurant smell". It's more than just soy sauce, but I don't know what else. I thought the sesame oil and oyster sauce got close but am curious what other Hordelings think.

One thing to remember is that a real gas-fired wok burner, even in a hole-in-the-wall strip mall Chinese restaurant, is orders of magnitude hotter than what you can get at home, even if you aren't doing penance for your myriad sins by having an electric range, like I am. I think a propane turkey fryer burner gets close on a good day.

I cooked a brisket for a Purim celebration I did for our Sunday School.
Step one- dry rub of salt, pepper, garlic powder, onion powder, (equal parts- in this case 2 tablespoons) t tsp red chili flakes,1 tsp cumin, 1 tsp dry mustard, 1 tsp paprika, 1 tsp celery seed. Slather on some good olive oil, then the dry rub. Let rest overnight in fridge, wrapped in glad wrap.

Step two: next day, grab a can of cranberry sauce, place unwrapped brisket in large pan or crock pot, then slice cranberry sauce on top. Cook at 450 for 20 minutes per side, then reduce heat to 325 for three to four hours. If in the crock pot, put it on the night before and leave on low.

For the grill: wrap in foil, with the dry rub and cranberry sauce, place on one side of the grill with heat off, and on medium high on the other side(375 ish) it will probably take several hours to cook like this, and you will need to check it periodically to baste with a wet sauce, to keep it moist.

If you can, grab a 7 quart crock pot, and through the sucker in there. Guaranteed tender, and you don't have to fuss.

26 The creamy tomato sauce in the capellini recipe is similar to the from scratch tomato soup I mentioned last week. I realized that it would make a good sauce for a number of ingredients but hadn't considered shrimp. Clams and mussels should work as well. Thanks for the reminder.

30 ibguy, I don't know the answer to braising brisket on a grill, but if you are doing it for space considerations, could you not just make it a day or two ahead in the oven and then reheat it, on the grill if necessary? Or is making the food ahead of time not kosher? (really)

36 Polliwog, add fresh grated ginger and garlic to those ingredients, and you've got it. My Chinese colleagues in Hong Kong gave me a simple brown sauce recipe for stir fry that was just that: soy sauce, sesame oil, a dash of rice wine vinegar, garlic, ginger, and a touch of honey or brown sugar. I do stir fry once a week with this recipe, and we enjoy it a lot.

For thicker sauce, add a tsp of cornstarch to the sauce, and stir well.

Yes! And I degummed them. I looked at the Amazon reviews and the seller recommended the Remington clothes shaver for various issues people had brought up (not gum though), so I got one and shaved the bits of gum off and they look and work good as new.

I've been stumped about that myself. I recently decided it might be that the Chinese restaurant smell comes from the peanut oil they use. I've always used canola oil. I plan on buying some peanut oil to test it.

54 Polliwog. Kind of related to your question about the Chinese smell. Spent almost 10 hours this week cleaning my stepdaughter's kitchen of her new rental. She's renting from a Chinese couple who lived in the house previously. That must have cooked everything in oil. I used a putty knife, straight razor blade and straight from the bottle Mr. Clean to remove 3 years of built up oil. 4 hours on the microwave alone.That smell you're looking for is hot oil and Chinese 5 spice powder.
I may never eat Chinese again.

62 JTB, good for Mrs. JTB! The dryer sheets are not only bad for your clothes, but also bad for your dryer. Any time I have ever had to call for dryer repair, the first question they ask is "do you use dryer sheets?" I have taken to pre-empting them by announcing right off the bat "My dryer isn't working and I have never used dryer sheets or any kind of fabric softener." Takes the wind right out of their sails.

I do think they help things dry quicker. Not so sure about the claim to lessen static, but that's really only a problem with a few things for me anyway.

Naturally, the sweet lamb with mint marinade are countered by the salty leeks.

For asparagus I usually roast at 375 or 400. Doesn't take long, but I'm afraid I can't give you a time because I never time it. Just til it starts smelling good and you can just pierce the stalks with the tip of the steak knife you will be using for that awesome steak.

Probably a combination of chinese black vinegar and a bit of dark soy sauce. You don't usually see folks using those on the home cooking front but they do have that characteristic chinese restaurant smell...

For instance, it's common to use colored mashed potatoes to stand in for ice cream (it was very common in the days when photo studios used a lot of very hot lights) BUT you're not supposed to do that if the ad is FOR ice cream. Fake ice cream in a pizza ad -- okay. Fake ice cream in an ice cream ad -- not okay.

For me, wild sockeye salmon with corn. Cook the salmon on a cedar plank. Grill the corn on the cob, and slice it off. Top it with scallion greens. The corn takes on a nice nutty flavor. Perfect match.

Try it at about 400-450 over a grill or especially a kamado. And like the char a hotdog gets that way, your asparagus will have a nutty flavor you don't get any other way.

This time instead of using rice I got some slider buns and street taco size flour tortillas to use as a platform for the PB.

Street taco flour tortillas with pork belly, poison sauce, and shredded cabbage was the winner by universal acclaim.

The contributing bear was a 2.5 year old boar. Tastes almost indistinguishable from beef when its ground. For steaks, you can see a difference because there is little fat marbling - most of the fat is outside the meat. I've had bad bear before - depends a lot on how old they are and what they have been eating. If their primary source of food is rotting garbage, well you can imagine. Bears around here eat well off the land.

Pound out the boneless skinless breasts, that's the part of the prep I like. I use a white oak mallet I made for woodworking, with flat faces.

The chicken is served over brown rice, and the topping is the spinach, sauteed in the pan, with dollops of goat cheese. Red pepper flakes spice it.

The recipe called for HI broil on the top rack of the oven for 8 minutes. And it charred it. I had to bite my tongue to avoid pointing out that, as far as my cookery goes, I don't care what the recipe says; once it starts to burn it has to come off the heat.

On the bright side, the marinade was very tasty.

117 Well time to turn off the pressure cooker. Chili should be done. I took out elk steaks to thaw last weekend that had been in freezer a long time. Decided there was too much freezer burn for steak but they should work in chili.

The dog got the bits that were badly freezer burned, hopefully I don't regret using the rest, but its only chili if I decide it has to be tossed.

The opposite of California. When I moved to Hermosa Beach in 1979, I couldn't believe how huge the roses were on the neighbor's bushes. Then I sniffed them-- no aroma. I marveled at the huge tomatoes in the grocery store, until I tried to eat them-- they were tasteless. Even the veggies and flowers were phonies. I didn't last long there.

I'm 100% sure they would if they could. Especially if you throw in beer. They wake up hungry (real soon) and they often will start hitting bird feeders because there isn't anything else other than road kill. They love spring green growth (not picky about what it is). Later in the summer they eat corn and beans in the fields, alfalfa, and their absolutely fav is acorns.

Never had fish tacos, but daughter wanted them for her b'day back in Dec. I think it was caligirl who kind of gave me some ideas and this is what I came up with.

1.5 lb - 2 lb white fish ( I used 2 lbs flounder but talapia is ok) blackened and lightly fried in couple tblsp corn oil.

Slaw
1/2 head shredded red cabbage
1/4 head shredded green cabbage
1/2 onion diced
1/2 C cilantro
juice of 1 lime

A nice pico de gallo is good with it. Pioneer woman had good recipe. Served with black beans/rotel tomato side and spanish rice. It was a hit.

157 Anyone remember the Burger Chef special sauce?

Here is the recipe from the Burger Chef Reliquary website (the last note is from "Gary" who used to work there and made it all the time):

Ingredients:
Dill relish (not sweet relish)
Dehydrated onions
Salad dressing (Miracle Whip will do)
Louisiana Hot Sauce
Add the dehydrated onions to the dill relish. Let it sit for a couple of hours for the onions to soak up the juice from the relish. Then add that mix to the salad dressing. Add a little hot sauce to bring out the flavor, but not too much!
I hope this helps. I've read about some variations to the recipe, but this is how we made it.

Plus, they are expecting again so I get to hold a newborn baby later this year. The grandparents live in Europe so I'm unilaterally declaring myself the surrogate grandma, at the ripe old age of 29, but whatever.

167 If you are out of dryer sheets, or the dryer balls, you can use aluminum foil. Make balls out of those and they eliminate static cling. They can be loud though. I only did it a few times. I prefer the dryer sheets.

I do a few Chinese dishes, using peanut oil and a light rubbing of the pan with ginger without ever achieving that glorious odor. I really and truly have no idea what causes it. I would get married again for the chance of having another little one. I know it is not the same, but some hospitals have volunteers who hold preemie babies, bcz the human touch is so important. I remember a story about a grandpa that loved it. He sat in a rocking chair and would sing to them. Just a thought I had.

While I have never done an 8 pound brisket, I have seen enough videos of folks grilling and smoking brisket to know it's gonna take longer than two hours.

Go to YouTube and search for braising brisket..

Here's one.. Andrew Zimmern talks about making these for Jewish holidays..

He browns it and then braises it at 300 degrees for 6-7 hours... sounds about right to me..

You should be able to do that on a grill if you can regulate your temp to a steady 300.

It is the sesame oil, but I've had a curious experience. I normally buy Kadoya oil, but they didn't carry it at a local Indian grocery. They did carry an Indian brand, though, so I thought I'd try it. It had almost no odor at all. I checked the label, and it says it's sesame, but I doubt it.

221 I'm one of those people who can walk into a room with a screaming, wailing baby with parents who can't figure out WHAT TO DO!!! and I'll just say: "Give me the child" and they'll hand the little one to me and I'll walk with the child, humming and rocking back and forth, for however long it takes for him/her to stop crying (usually shorter than longer time, but sometimes for hours at a time).

For some reason I don't get freaked out, frustrated or angry when faced with a screaming small person. I just pick 'em up and hold on until they are happy again, or have fallen asleep. And even when they're content after hours I just don't want to let go.

Guess it is part of viewing my time and their time on this Earth as the tiniest of open windows in an infinity of time and space.

222 I think it's cute that pressure cookers are making a comeback. They were the microwave oven of the 1950's, and I have one exactly like my mom's, and use it mostly for canning smoked salmon.

I also have one of her Joy of Cooking books that has tons of pressure cooker recipes. It was a Godsend for women of the time, who had huge families but didn't have clothes dryers or Swiffers. My mom made the most amazing pot roasts with potatoes in that thing, something I still haven't figured out how to do properly.

I did not know they were making a comeback. I have a Maga Fesa SS cooker that I have been using for a long time. I pressure cook and pressure fry in it. Makes entrees, soups and chili. It came with a great cookbook "Pressure Cooking in the New Millenium". Highly recommend.

Yes, they made the original pressure fryers for KFC. IMHO AL pressure cookers are good for canning. AL dissolves when in contact with acidic content. 18/0 stainless steel is the way to go is you are cooking soups and entrees.

years back, I was at a b-day party for my neighbors'/dear friends'
oldest son. Mid-July-ish. Their youngest son, who was about 9 months
old at the time, was being very fussy and not sleeping, despite it being
something like 10:00 at night. Little guy was getting passed around
from aunt to aunt to godmother to try to get him to sleep. No dice. I
was sitting to one side of this show and must have been chuckling a
little too obviously, because the godmother looked over and said
something like "OK, smart guy, let's see you do any better". She handed
me the baby, I settled down in my chair with his little head on my
chest, and about 30 seconds later he was out like a light. The
godmother looks at me in shock and says "How did you do that?! You have
no boobs!" When I finished laughing, I said, in my best Hans and Franz
accent "I just rocked him to sleep on my massive pectoral muscles!" We
still laugh about that 10 years later.

And for Pete's sake, watch her, all of the time, whether she likes it or not. A 13 year old is highly capable of doing something everyone will regret.

284 Well I was not full blown feeling suicidal as a young teen, but I can relate to anxiety about school (peers, I liked most of my classwork) Life does get much easier when you get away from the mean-girls age brackets. And if VG's daughter has become the target of a mean-girls group home-schooling might be a good option if there is any adult who can supervise her; there are good on-line schools that present the actual material.

She is in my prayers, I was the unpopular nerd in school. I'm still not popular, but I can go ride my horse, one of 4 that I can afford to support cuz I have a good job thanks to than nerdy bookworm personality; and the horse world is fun to hang out in even for introverts like myself.

I pretty much wanted to be dead by then too. She needs to be watched closely and probably to get professional help as well. Find a psychiatrist who specializes in kids and adolescents, as it's different for them than for adults. Counseling may help, depending on the issues. Also, try digging into what's going on at school to see if any part of it is situational. Talk to her teachers about how things are going with her in class.

I wouldn't set the bar too high about how awesome life can be, because life usually sucks donkey balls, especially if you have depression. But you can try to help her through this stage and hopefully set things up to get better.

311 In case Viridian is reading - from personal experience with a close family member, the onset of puberty is the time when a lot, probably even most, serious mental conditions begin to manifest, ESPECIALLY in women and depression/not fitting in/wanting to die is the first visible symptom for most of them.

Be *Thankful* it is out in the open, and seek serious psychological help, and do not be surprised when medication is prescribed.

We all of us want to think that something like teen depression is the kind of thing that can just go away, because some of the time it does - but some of the time, it transforms into something much, much darker, and that is going to be very hard on any family that has to live with it. I've lived the fight.

There's a whole ton of things going on. Diet might be a small piece of the puzzle, but I don't know. I suspect soybois are soybois for a reason though. Estrogen getting into the water supply can't help either. But the more systemic issue is the suppression and pathologizing of masculine behavior, among boys especially. Masculinity is being beaten out of them from a very early age.
