Food Thread: Grilled Meat: Food Just Doesn't Get Much Better Than That!

From the world headquarters of the Deplorables Global Initiative, Inc. (Bluebell's kitchen table) comes some rather good news!

Would you mind putting a note in the food thread this Sunday letting everyone know that we mailed off our first donation checks this week? We sent $2,500 each (along with a complimentary cookbook) to Marine Toys for Tots and Fisher House. We sent the contributions in honor of "The Horde at AoSHQ." Not to worry; we also sent a letter to each place explaining about the Horde and the cookbook.

Here are some numbers from Weasel, if you would like to use any of these. I know it's not strictly necessary but Weasel feels very strongly (and I agree) that we have an obligation to be very transparent about how the money is being handled.

2,250 paperbacks and eBooks sold to date. Sales continue at a rate of one or two per day.
$8,400 in royalties earned to-date (payment of royalties are deferred up to 60 days)
$1,700 total cost to produce
$5,000 in donations made

Additional donations will be made quarterly as royalties are received while maintaining a small reserve to meet operating costs (annual corporate filing fees, postage & mailing, etc...)


The cookbook was immensely amusing, and it turned out pretty damned well. But sending nice fat checks to two worthy causes makes it a more tangible success. Congratulations to all of the many Morons and Moronettes who contributed their time and bought lots of books!

In my younger and more vulnerable days, I used to hang around with a lot of Koreans, and had the pleasure of eating lots and lots of great authentic Korean food. One friend would occasionally give me her mom's kimchi, which was wickedly spicy but incredibly good. One of the fixtures of these meals was that ridiculously simple and fantastically good grilled meat that seems to be ubiquitous.

is AmazingRibs version of it, and it looks good! But I don't recall ever having a bad plate of it, so maybe I am biased.

So, here's a recipe that I wouldn't make in a million years; mint simply does not belong with meat. Yeah, you WASPs and your mint jelly with lamb are just weird, and I will brook no argument about that! Anyway, orange and mint with pork tenderloin just doesn't do it for me, but the technique is solid, and the idea of a salsa to go with the seared pork is a really yummy sounding one. So while I won't use this recipe, I will absolutely make something derived from it.

Or, in the case of the crappy Manhattan I ordered last night at a new local restaurant...where's the sweet component?

Folks, this isn't rocket surgery. It's cocktail making.

Booze + Sour or Bitter + sweet = cocktail.

See? That wasn't too hard!

A Manhattan is made from Rye whiskey, Red Vermouth, bitters (I like Angostura + Regan Orange) and a sweet. I prefer using maple syrup, but simple syrup, or a muddled sugar cube if you are a purist, is fine. Garnish it with a good cocktail cherry or a twist, and you will be all set. Nothing complicated about this recipe. It's a great cocktail if executed well, and a thoroughly crappy one if it isn't.

Oh, it is stirred in ice then served straight up. Not shaken, and not served on the rocks, unless you are a savage.


  • 3 1/2 ounces good Rye Whiskey
  • 1 ounce good red Vermouth
  • 2 dashes Angostura Bitters
  • 1 bar spoon (1/8 ounce) maple syrup

This looks interesting, although I haven't made it so I can't vouch for it.

Ingredients


  • 2 ounces pancetta, cut into 1/2-inch pieces
  • 1 small carrot, peeled and cut into 1/2-inch pieces
  • 1 small celery rib, cut into 1/2-inch pieces
  • 4 garlic cloves, peeled
  • 1 onion, halved and cut into 1-inch pieces
  • 1 (14-ounce) can whole peeled tomatoes, drained
  • ¼ cup extra-virgin olive oil, plus extra for serving
  • 1 anchovy fillet, rinsed, patted dry, and minced
  • ¼ teaspoon red pepper flakes
  • 2 teaspoons minced fresh rosemary
  • 2 (15-ounce) cans chickpeas (do not drain)
  • 2 cups water
  • Salt and pepper
  • 8 ounces (1 1/2 cups) ditalini
  • 1 tablespoon lemon juice
  • 1 tablespoon minced fresh parsley
  • 1 ounce Parmesan cheese, grated (1/2 cup)

Another short pasta, such as orzo, can be substituted for the ditalini, but make sure to substitute by weight and not by volume.

1. Process pancetta in food processor until ground to paste, about 30 seconds, scraping down sides of bowl as needed. Add carrot, celery, and garlic and pulse until finely chopped, 8 to 10 pulses. Add onion and pulse until onion is cut into 1/8- to 1/4-inch pieces, 8 to 10 pulses. Transfer pancetta mixture to large Dutch oven. Pulse tomatoes in now-empty food processor until coarsely chopped, 8 to 10 pulses. Set aside.

2. Add oil to pancetta mixture in Dutch oven and cook over medium heat, stirring frequently, until fond begins to form on bottom of pot, about 5 minutes. Add anchovy, pepper flakes, and rosemary and cook until fragrant, about 1 minute. Stir in tomatoes, chickpeas and their liquid, water, and 1 teaspoon salt and bring to boil, scraping up any browned bits. Reduce heat to medium-low and simmer for 10 minutes. Add pasta and cook, stirring frequently, until tender, 10 to 12 minutes. Stir in lemon juice and parsley and season with salt and pepper to taste. Serve, passing Parmesan and extra oil separately.

29 If I may add a suggestion....and I'm not trying to be pushy, but you might try adding a Luxardo cherry to that Manhattan. I also use a bar spoon of the cherry syrup from the Luxardo cherries in place of the maple/simple syrup.

I like to get a couple of fat onions, slice them thickly, and use them to line the bottom of a casserole dish. Add equal parts lemon juice and oil to coat the bottom but not above the onion slices. Salt and pepper the fish and put on top of the onion layer, out of the oil/juice mix.
Bake at X?? degrees for however long fish takes.

I do enjoy 'one pot' meals where I'm frying the hamburger though and then cooking the rest of the food in the beef grease. Mmm.

Slow cooker meat is also nice, if you have the patience or planning.

I'm going to Vegas in a week and a half. So if you have food suggestions downtown or on the strip, love to hear it.

I keep a bottle hidden in the back of a cabinet behind the bar at work for my prized regulars.

My idiot co-workers would dump them in every sorority girl's amaretto sour and my poaching customers would get drunk and treat them like the Golden Corrall buffet if I kept them anywhere within reach of them.

But for the house...well...it's worth the $25 investment to have yourself a top shelf Manhattan or Old Fashioned in the comfort of your own home at the end of a long day.

The best way is for me to do it. Invite me over.

Next best is sashimi. Just eat it raw with some soy sauce and wasabi and ginger. If you have to cook it, please for the love of gawd don't cook it all the way through. Sear the outside and let the inside warm up enough to flake.

Same day tuna can actually cook a little bit mushy. It's one of the few things in the 'verse that needs a day or three in the fridge to set up and firm up.

(Kidsharn and I prefer Angels Envy when we can get it, our go to is Knob Creek) 3/4 shot sweet vermouth. Add a bit of juice from maraschino cherries and up to 4 cherries. Stir and sip through straws. 1=drink, 2=drank, 3=drunk. Normally not indulged in until Friday evening. Gotta stick a roast in the oven.

Though, to be honest, I don't see why you couldn't use charcoal briquettes to get things started then, once the briquettes have a good coating of ash, toss some pellets on.

I'd try it, but, then again, I'm not quite all there in a lot of ways.

67 Right now I'm in the prep stage for making ginger pork with noodles. I cut the mostly-frozen pork loin into very thin slices, and now am marinating them in soy sauce, minced ginger, and minced garlic with a little white wine.

In about an hour I'm going to cook the marinated pork in the wok with a whole bunch of green onions, then serve it with ramen noodles (sans broth). Dr. Mrs. T has a silly habit of insisting on vegetables, so I may have to stir-fry some broccoli just to placate her.

I make a marinate for salmon that sounds like it would go well with this:

Rice Vinegar
Soy sauce
Garlic powder
Lawry's season salt

No set amounts, just cover the bottom of a 9x9 baking pan with soy, add an equal amount of rice vinegar, a few shakes of garlic powder and season salt. Mix all together and marinate filets skin side up in fridge about 3 hours.

I cook them skin side down on the grill in a cooking spray coated foil pan.

Using dust italian dressing is good too.

I use pellets in a charcoal grill. I usually have some apple wood on either side, then put some pellets in the middle. The pellets fire up pretty easily and get the apple wood going. If I'm going for a longer burn then I'll use charcoal too.

The pellets get REAL HOT, REAL FAST. Charcoal takes a while. It depends on what you're after. A couple days ago with pellets the temperature gauge went so far to the right it got stuck there.

Bleu cheese on a thin coat of Dijon mustard is a great alternate topping. Put it on about 2 minutes before the steaks come out of the oven. When it starts to brown a bit, it's ready.

Parents immigrated from Africa and father was a janitor at a Baltimore tennis club. Frances and his twin brother would go to work sometimes with their father and eventually started hitting tennis balls and the club eventually let them play for free and provided coaching. The brother plays college tennis now and Frances is on his way to be one of the top American players.

133 I have never seen a Manhattan recipe that calls for adding simple syrup (or maple syrup, for that matter). And I just searched again online and looked both at classic and variation recipes. The sweetness comes from the red vermouth, the cherry, and (occasionally) a dash of the cherry syrup (although for me the vermouth is enough with the sweetness). Personally, if I wanted it sweeter I would just up the vermouth component. That's not to say you can't use maple syrup, but that's not a very common version of the Manhattan, is all I'm saying.

An Old Fashioned, on the other hand, does use simple syrup, or sugar muddled with bitters.

Luxardo cherries are indeed extremely expensive, but Tillen Farms makes a couple of equivalent products that are less than half the price. One is called 'Merry Maraschino' and the other is 'Bada Bing Cherries'. They are carried in most of the big box liquor stores, and are also available on Amazon (although on Amazon you have to buy multiple bottles at once, which is a little problematic because one jar of cherries goes a looong way).

I haven't broken down the price per pound but I suspect a bag of pellets is cheaper then a bag of charcoal. Being smaller they sure do fire up easier. Since the idea is to get the applewood hot and smokey quickly it seems to make more sense then charcoal.

I just checked the gauge on my charcoal grill. The temp went way past 800 degrees within minutes.

But I think any intelligent person can tell the difference between payment authorized and payment given. So, I think it's easier to figure out than Shiffty thinks.

Zang's Honey Poppyseed Dressing

1 C canola oil
1/3 C red wine vinegar
1 T sugar
1/4 t dry mustard
1/4 t paprika
1 t poppy seeds
1/4 C honey
1 T fresh lemon juice
1/3 C finely chopped onion
1/4 t salt

Blend everything except the oil, then add oil slowly to create an emulsion. Serve over salad greens.

214 Infidel. Yrs ago I worked in a butcher shop. He made cubed steak out of round steak. He had a thing that just bashed they he’ll out of it and that was it. So if you used something spiked to break down the fibers of the meat and then season the meat with a bit of lemon, salt and pepper before battering and frying it might just work. Any acid would work so if not lemon, maybe a bit of some type of vinegar.

The fishing I grew up on was party boats, or head boats. It's 20 or 40 guys who show up and the captain drives to where he thinks the fish are.

When it was mackerel season it was also squid season. They'd both migrate in schools and they'd both make the same disturbance on the surface and a lot of the times they would intermingle anyway so sometimes when you were mackerel fishing you'd catch squid.

Squid were considered nasty. They'd squirt ink at you. (First time I ever laughed at my father was when he got inked). They got in the way of catching mackerel.

The thing I never understood was that there would always be some old Greek or Italian guy on the boat saying "I'll take that squid".

We didn't know what calamari was back then.

Three corn casserole

Prepare ingredients in 3 groups.

A.
3 T butter, room temp
8 oz cream cheese, room temp
1 egg plus 1 egg white

B.
1/2 C chopped onion
1 C chopped roasted (jarred) red pepper
2 C corn kernels, drained, from can*
1 C creamed corn

C.
1 box corn muffin mix, jiffy should be fine

Spray 8x8 pan with oil. Mix A til smooth, add B, add C. Bake for 50 min at 350 or til toothpick comes out clean.

*probabaly a 15 oz. can is enough.

It takes a little time to get the knack of it. But Shake and Bake honestly is not a bad idea. I'e done both.

Our 6 quart was about $80. I really do use it every two to three days at a minimum. It has to fit your style of cooking, though. Where it shines for us is going from freezer to table in an hour and ending up with something that takes a slow cooker all day of a Sunday to make.

Same with tacos, pulled pork, chicken (it's great for indian dishes where you pour the jarred seasonings in), etc.

That it also cooks rice extremely well is just an added bonus.

There are varying schools of thought.

The original is, to the best of my knowledge and training, actually just whisky and a dash (8-10) drops of sweet vermouth stirred and served up with cherry garnish.

The traditional Manhattan incorporates a dash or two of bitters, sweet vermouth and a cherry and typically is muddled before the incorporation of ice and whisky.

The addition of a little cherry syrup is just my addition, personally.

I agree there are good competitive cherries. I prefer the original and TBH, even at $20-25 a jar, I'm really only looking at adding 40-50 cents to a cocktail, so I don't mind the added expense. Whatever the choice, just avoid the grocery store maraschinos. Great for mamaws pineapple upside cake, but worthless in a cocktail other than a Shirley Temple for an eight year old.

The only antique show that I would do was in Houston, twice a year. Best food town I know of and I live 2 1/2 from NYC and Boston. Switzerland has great food if you can afford it. I can't anymore. I used to always stay at the Allen Park Inn in Houston until it flooded.

324 I was so happy with the hot and sour soup I made last week, I'm making another batch today. Not only does it taste exactly like the hot and sour soup I've had in restaurants, it's easy-peasy and quick to make. From the Cooking Light cookbook:

Hot and Sour Soup - 4 servings

10 dried shittake mushrooms (I doubled that amount when I made it)
1 1/2 c. boiling water
3 (10.5 oz) cans low-sodium chicken broth
1 4 oz. boned center cut loin pork chop, cut into thin strips (not enough meat! I'm adding another pork chop when I make it today)
4 oz firm tofu, cut into 1/2 cubes (I put it in because it's authentic, but if you are completely tofu-phobic, throw in another pork chop instead)
2 tbsp. cornstarch
3 tbsp. white wine vinegar
3 tbsp. low-sodium soy sauce
2 tsp. fish sauce
1/4 tsp crushed red pepper or to taste
1/4 tsp black pepper, or to taste
1/4 c. minced green onions
1 tsp. dark sesame oil

Combine the mushrooms and the boiling water in a bowl; cover and let stand for 15 minutes. Drain in a colander over a bowl; reserve the liquid. Discard the stems, rinse and cut the caps into thin strips.

Combine 1/2 c of the reserved liquid and the broth in a large saucepan and bring it too a boil. Add mushrooms, pork, and tofu; reduce the heat and simmer for 3 minutes. Combine the rest of the reserved liquid with the cornstarch, vinegar, soy sauce, fish sauce and red and black pepper in a small bowl and whisk it together. Add it to the pan, bring to a boil and cook for 1 minute, stirring constantly. Remove from the heat and stir in the green onions and the sesame oil

338 Still mastering the Sous Vide. 50% success rate. The beef ribs I made this week were awful.
Have had great success with boneless, skinless chicken breast. They are a staple on Weight Watchers since they do not go against you daily point total when eaten in moderation. Tried steaming them, zero taste. Have been using the Sous Vide and putting different fresh herbs in while they cook. Did thyme and rosemary today. The thyme cooked chicken went into chicken pot pies. Need to modify the recipe a bit but they were pretty good. Have to work on getting the sauce thicker.

The great bit of luck was that, being christmas day, the strip mall it was in was completely vacant, so no one was hurt.

370 Skip it's mostly just a desire to match the reddish-brown coloration typical of Soviet re-arsenal jobs. So, messing around with colorants. I am lazy, use canned shellac, don't mix my own from dry flakes. But I get a very nice result if I'm patient and do lots of very thin coats.


Next would be buffing up the bolts with dremel and rouge to get them very shiny. Just nice to have sharp looking rifles. They were all re-arsenaled once or twice before I got them, so no legit "battle experience" seasoning lost.

I'm up to one third whole wheat flour in my pizza. I like. It's chewier.

Pizza can actually be kinda healthy if you're adding lot's of veg's.

If you want to change the color of shellac and have access to a good shoe repair, you can use Fiebings leather dye. It comes in many colors. It's as shellac, alcohol based. But you have to be careful because the dye is potent.

Chicken marinates in fresh lemon juice, blk pepper, some olive oil all afternoon, then grilled and chopped up. Sort of the default no-shopping meal - all ingredients in-house most of the time. 396 REDACTED I'm aware of Fiebing's dye (think people use it on holsters, too), and thanks for that reminder. Actually have to sand the stock a bit, tried some dye last time, ended up coloring the wood - whereas I want the color just in the shellac. The arctic birch wood cleans up very easily.


I start with amber shellac but substantial experience tells me the tone I'm looking for requires some colorants. Eventually I'll probably do all my Mosins save one that actually has finish in good condition.


There will be variations in color - just as there in most of them as they are when you get them. Most were re-arsenaled in Ukraine in the 60s and 70s, and as someone noted it's actually hard to imitate the Soviet shellac - can't get anything as crappy here now.

Not that I've seen. I've got an old Craftsman gas grill that I use quite a bit in good weather. I'm thinking of getting a Trager pellet grill that I could use as a smoker this year.

Just remember that the shellac will yellow with time. The hardest thing to do in finishing is to achieve an antique patina, if that's what you are going for. I personally like shellac. For antiques, it works well especially as a sealer since it doesn't allow wax to fisheye the finish as lacquer and other finishes. And it dries fairly quickly

The nice part is that you can adjust the proportions any way you like. When I was a little kid with a sweet tooth I mixed it about 50-50. Nowadays I brew tea on the stove, chill it in the refrigerator, and add just a splash of grape juice. Yummy.

I made a tasty dish last night from leftovers...I had about 2 cups of homemade Arrabiata sauce*, 8-10 oz of cooked linguine and half a roasted red pepper lurking in the fridge. But that didn't do it for me.

So I fished 4-5 oz of frozen calamari rings & tentacles out of the freezer. I quickly thawed the calamari under cold running water, patted dry and heated 2-3 tbsp of Pure Olive Oil in a wok over med-high (EVOO is bitter at higher temps). I then tossed two sliced garlic cloves in until they just began to color. Scooped them out to a warm plate and slid the calamari in and tossed for 1-1/2 minutes. Scooped them out to the warm plate.

I then added about 1/2 cup sliced roasted red peppers, and a slug of Zin to the wok...pushed that around for a minute or so and added the sauce..mixed well and turned the heat down a notch to bubbling-lava-splattering-the-stove (med) temp for 5 minutes.

Then added the cooked linguine and gently turned and heated through for a minute or two...mixed in the calamari & garlic, tossed a couple times and forked into two hot pasta bowls garnished with freshly grated Parm and flat leaf parsley. We know...cheese on seafood...major foxes paws....I say eat what ya likes and the devil take the finicky.

Anyhoo...this was right in my wheelhouse; fast, one pot, spicy and comforting.

* jarred roasted red peppers and arrabiata sauce works too.

I sometimes add a sliced green pepper after I brown the chops...you're right...this is so good over mashed or boiled taters. Chicken legs work really well cooked this way too. My Dutch gran used to brown the chicken legs in butter which almost too rich.

The saute setting on the IP is genius, it makes all the difference...doncha think?

I use my IP for pulled pork when it's too cold outside to smoke or have little time...and it's sooo good.
