Food Thread: On A Wing And A Prayer

Chicken is surprisingly resilient, and handles a wide range of cooking techniques that would destroy other meats. Low-and-slow works nicely, and surface-of-the-sun temperatures can be fantastic. But...there is nothing quite so disappointing as overcooked chicken. Yuck! I can eat overcooked beef, and in my opinion lamb cannot be overcooked; I'll eat the crispy burned end of a leg of lamb, and I'll do it every day and twice on Sundays!

So what to do about that? Well, take a close look at the chicken in the photo, and you will see a temperature probe that is set in the thickest part of the breast. This was a new recipe (in the language of the greater suburban Dildo, that means, "I have no idea what I am doing, and I don't want to keep jumping up from my drink to check how the chicken is cooking"), so I figured that if I just cook the breast to the correct temperature, everything else should be fine.

And it was. That is some browned and golden and sexy looking chicken!

What? No! You may not have the recipe.

"Serious Eats" is a pretty good cooking site that tries hard to clean up a lot of detritus in the cooking world. So many recipes include (or exclude) steps just...because. For instance, here is a nice recipe for Classic Blueberry Muffins that has a rational solution for the horrible and sometimes marriage-ending problem of blueberries sinking to the bottom. It has the additional advantage of keeping that extra flour out of the batter, so the muffins are moister, and there is nothing worse than a dry muffin!

I got two emails within a few minutes asking my opinion of instant cookers. Artisanal'ette should know better...what the hell do I know about this stuff? Actually, she and I had the same opinion; we already have multipurpose tools in the kitchen that do all of the things that an instant cooker does. This is my response:

Eh….I have never used a pressure cooker, so I don’t know what I am missing. I have a Dutch oven that works perfectly as a slow cooker, and I steam stuff all of the time on the stove with a simple pot and steamer top, and that is really easy. I usually jazz up my rice with sautéed onions or garlic or shallots and then cook the rice a bit in the fat before I add the water, so I have no need for a rice cooker.
I rarely need a time-saver in the kitchen. I know how to cook, and for most things I know exactly how long they take. And…I like to cook, so it’s not some onerous chore to putter around the kitchen checking how my artichoke looks in the steamer, or popping the lid on the Dutch oven to see how the pulled pork is doing

Bluebell's similar question was a bit scary, because RED SOX FAN, so kitchen safety is paramount. As you may know, none of her knives have sharpened edges, and her husband turns off the breakers for the kitchen when he leaves the house.

Adding a big appliance to the kitchen counter doesn't mean that most people would throw away their Dutch Ovens and their steamer inserts and such. All it does is duplicate what most of us already have. If time is of the essence and (sort of) one-pot convenience is important, then have at it! But I really don't see the advantage, although I am confident that I will be beaten soundly about the head by the commenters for this heresy.

Basic Tuna Tartare

  • 1 pound very fresh tuna steak
  • 1 ounce olive oil
  • 1 lime, juiced and zest grated
  • ¼ teaspoons wasabi powder
  • ½ tablespoons soy sauce
  • ½ teaspoon hot red pepper sauce
  • ¾ teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cups minced scallions, white and green parts
  • ¾ tablespoons minced fresh jalapeno pepper, seeds removed (optional)
  • 1 teaspoons toasted sesame seeds,
  • 1 ripe Hass avocado

Cut the tuna into 1/4-inch dice and place it in a large bowl.

Combine the olive oil, lime zest, lime juice, wasabi, soy sauce, hot red pepper sauce, salt, and pepper.

Pour mixture over the tuna, add the scallions and jalapeno and mix gently but well.

Cut the avocados into 1/4-inch dice.

Carefully mix the avocado into the tuna mixture.

Allow the mixture to sit in the refrigerator for at least 1 hour.

Add the toasted sesame seeds, if using, and season to taste.

Serve on good tortilla chips.

12 Six hours in the smoker with apple wood smoke, then two more hours in the oven to finish it up. I really liked it just as it was but Mrs928 thought it was too salty so I washed off the heavy salt crust on the fat side and then flipped that side down in a large square skillet to cook off a bit more fat. She liked that better but still not to her taste so I OD on pork fat last night.

This morning I sliced up some thin and cooked it like, well, bacon and that has won her heart.

29 I have to admit that it has been years since I cooked a Boston Butt and very much underestimated how long it takes to cook. It was in the oven with the pork belly for the extra two more hours, and then 3 more and it still wasn't soft enough for pulled pork.

Today it's back in the oven at 250 and I'm going to leave it in for 5 or 6 more hours.

38 I have a slow cooker that I love to use in the winter. The flavors have longer to mingle and meld in the pot and meats get super tender.

But for the most part I use my French oven, which is basically a Dutch oven with sloped sides, for a lot of cooking. Sometimes even rather using a skillet, I just put it on the rangetop and go to town.

I started to experience Instant Pot envy about a month ago but after reading CBD article maybe not so much.

I cooked one in the oven for the first time recently. The recipe I used called for 160 internal and that is wrong for fall apart tender. Shoulders have to go to 195ish to 205ish and if, on the way there they get too dark, foil is your friend.

I think the smallest you can get is 5-6 quarts. A few years back I got one at Lowe's for 9.99. Did everything it needed to do, got some great meals out of it.

Then I upgraded to a model that has an insert that you can use to brown meat so it removes one extra skillet that you have to clean. It cost a lot more than 9.99.

As far as I can tell, it excels at making hard boiled eggs and potatoes.

52 Coffee recommendation request: Roasted whole beans I can order on the Internet. Medium roast, breakfast -type coffee. I like Denny's coffee if that's any help on my taste (or lack of).

I prefer to grind beans myself for french press brewing. The only local fresh roaster is hit-or-miss on what they have at any time. (I refuse to give Starbucks my business). I've tried the beans at grocery stores and it seems they were roasted during the Civil War.

AND I promise you that the pressure (as opposed to a slow cooker) "infuses" herb flavor and aroma PLUS its a steamer, AND it browns, And you can set a delay, AND it cooks frozen foods (a whole chicken)in a flash just as well, AND it makes incredible soup from dry beans in about 13 minutes. Stick that in your oven and smoker and smoke it. Which is only thing it doesn't do.

I cook in it for guests and don't tell them. I turn it on while we are having drinks. The meat loaf i made in it i was told (by serious eaters) was the best meatloaf they ever had.

Slow cookers are so yesterday or the day before.

61 Whole chickens like that one are much easier to not dry out. In fact there is no comparison between the meat from those, and from the parts we all more commonly cook.


Did one yesterday, on the grill (indirect heat). Wanted to see if the steel smoker box full of soaked applewood chips would impart any smoke to the bird - did a turkey breast this way at T'giving, and was stunned at how much smoke flavor resulted (gas grill, not smoker).


Smokiness seems to have been achieved in the wings, and drumsticks, and skin. Of course turkey was in the grill for more than twice as long, so I wasn't expecting similar results (about 100 minutes for the chicken). Like CBD, stuck a thermometer in thickest part, got the perfect 165-degree reading, done.


Otherwise was my favorite whole chicken recipe. Meyer lemon zest and salt under the skin (have a Meyer lemon tree), sliced lemons in the cavity, whole bird painted with olive oil and crushed dry and fresh thyme (have a bush in the yard). Need to look up those Utoob videos on cutting up a whole chicken, seems I've forgotten the tricks on that.

You can get smaller ones at Target. I've got a 3qt one, and they make cute little ones for hors d'oeuvres/dessert fondues.

Votermom - Check the recipes you'll use the slow-cooker for to make sure a 2qt one will work. A lot of recipes I find are for 4-5 qt size that I then have to trim by 1/3-1/2 so that it fits. Also, you're not supposed to fill a slow-cooker to the brim.

65 People roast chicken? I've been experimenting the last couple of years with roasting pork and sometimes beef. By experimenting I mean basically stabbing it a lot and putting garlic slivers in the stab wounds and rubbing spices and oil on the outside.

But Stop n Shop will sell me a whole roasted chicken for $4.99. Already roasted. It goes in salad, it goes in rice, you can eat it off the bone. They won't sell me a whole raw chicken for $4.99.

Is there some sort of chicken perfection to be achieved by roasting your own?

68 Really a good recipe, the Meyer lemon/thyme one. Shallots go in the roasting pan (drizzled with olive oil). Remove them after an hour, into a blender with chicken stock, white whine, some fresh lemon juice, add drippings from pan when chicken's done, then heat/reduce gravy on the stove. Oh my. Highly recommend this one. Store-bought lemons will work, non-Meyers will work, though I'd use less (Eurekas and Lisbons much much more acidic, less flavor).

On her missions, no humans accompanying her were ever injured. Specifically, the dogs record of military service included Afghanistan with more than 400 patrols and three combat tours in Iraq. She was credited with finding ammunition, explosives and insurgents at least 40 times, without a single human casualty under her watch.

The PDSA noted that she protected thousands of human lives as part of her assignments. On her last mission in 2012, when she was on patrol in Afghanistan, she sniffed out a 30-pound (13.6-kilogram) IED and was continuing her search when she lost one of her legs when another IED detonated underneath her. Cpl. Juan Rodriguez, her handler, thought she had been killed, but was able to rescue her. He administered first aid, and Lucca was then airlifted to Germany for medical treatment and rehabilitation. Ten days after the explosion, she was walking again. Following her recovery from her injury, Lucca retired. She lived in California with Gunnery Sgt. Chris Willingham and his family.

According to Amy Dickin, the dispensarys spokesperson, the award of the Dickin Medal to Lucca garnered more public attention than any other Dickin Medal honoree in the programs 73-year history.

The story of Luccas life has been turned into a book, Top Dog: The Story of Marine Hero Lucca by Maria Goodavage.

Its with a heavy heart that I tell you that Lucca passed away yesterday. Juan was able fly in to spend some quality time with her in her last few days and we were both at her side as she took her last breath.

Lucca served in Marine Corps for 6 years. Her service included 2 deployments to Iraq and 1 to Afghanistan. She led over 400 hundred patrols and saved countless lives, mine and Juans included. In retirement, she became an ambassador for the Military Working Dog (MWD) community and brought awareness regarding the service and sacrifice of our MWDs and their handlers.

Lucca truly was a special dog. Juan and I are both fortunate to have served as her handlers. We will forever be grateful for her service and companionship. After her injury, we did our best to keep her spoiled during her well-deserved retirement. We truly appreciate the time we were able to share with Lucca. Luccas incredible personality and spirit left a lasting impression on us and countless others who knew her.

*The clay pot is great for roasting whatever is on sale - always comes out tender and delicious. I use it all winter long for easy, hearty meals.

85 A few weeks ago I was browsing the pasta sauce aisle at Whole Foods and something caught my eye: a foil packet containing Skillet Sauce. You just dump the contents into a skillet with water and dry pasta, and cook for 15-20 minutes. I thought the test drive would be terrible but it wasn't too bad, so I went back and got another one, this time white garlic flavor instead of fire roasted tomato. It's great for a quick meal for the fam, but I wouldn't serve it to company. Would cook pasta the normal way for guests.

I don't think the "crack" (as with petroleum) has changed much for maple syrup - you still get various amounts of different grades during the cook-down, right?


Remember discovering Grade B in Vermont back in the early 90s, when I'd buy from individuals. Perfect stereotype farmer riding a tractor - plaid coat, barking done running along next to him - flag him down, he says he's sold out except for one 1/2 gallon can of Grade B. Perfect, I tell him. Never looked back ..... until now.

Season and brown a Chuck roast, throw it in the cooker with a can of tomatoes, can of old school Campbells mushroom soup, one envelope of Lipton onion soup mix and a can of water. Set it on low and go to work. eight hours later, incredible pot roast. Serve on whatever you have time to make when you walk in the door and pour your drink, potatoes, rice, polenta, whatever. I don't think I've ever had a bad meal come out of a slow cooker. You could use an old boot with the above ingredients and it would be good. I don't trust leaving the oven on all day with the house empty.

Turned out real fine. Nice to brown the roast in the cooker instead of a skillet.

126 I was in the "I don't need an Instapot" camp for a long time. My husband bought me one for Christmas. I am starting to see what the big deal is. I made an excellent stew in a fraction of the time and some baby back ribs that fell off the bone in a hour. I can see how this is going to be a life saver in the summer. Roasted chicken is going now. My last one was a fail. Hopefully this one will be better. My bone broth was amazing. I will never make a cheesecake in it because that is sacrilege, but this contraption will probably replace my slow cooker. And honestly, good riddance.

Monday, I was served with a court summons. The collection agency working for the hospital is taking me to court. I owe $4500. I have no way of paying in full. I have to appear in court with the next 35 days.
All I am asking from the Horde is prayers that a workable solution might be found. I am not asking for money; everyone has done more than enough after my heart surgery and when I almost had my electricity cut off a couple of years ago. I believe that with enough prayer, a way will reveal itself. At this time, I don't know what it is. But I believe there is one.

Prayers that her eyes would be opened to the hurt that this is causing everyone around her, even if we're all trying to accept it (with varying degrees of sucess moment by moment) with dignity, grace, and love. Most importantly, prayers for our young children, who while appearing to be bearing it better than expected are clearly (at least to me) not themselves.


AllenG- (1/9/18 ) None of my normal pith tonight. I desperately covet the prayers of the Horde.
The 9 yr old son of one of my old HS/Church youth group friends wouldn't wake up this morning. They took him to the ER and an MRI found a mass in his brain. A first surgery to remove it was only partially successful, he still hasn't woken up, and he's been back I surgery for the lady couple of hours.
His name is Brody Nelson. I grew up with his mom, Courtney. They and their family could really use a miracle right about now...

Gabe- (1/9/18 ) I have a couple of good friends, Patrick Porter and Barbie Turner who are both battling cancer. A petition to the almighty by the horde would be huge IMO.

Commander Cobra- (1/9/18 ) Prayers for active Service Members and those who have served.

sulla- (1/9/18 ) I'd ask to have my mother and sister-in-law added. My mother broke her shoulder this week, and my sister-in-law is recovering from a liver/kidney transplant.

Fox2!- (1/14/18 ) Please add a friend to the list. She is in ICU, sedated and intubated.

jeannebodine- (1/14/18 ) feeling particularly low right now in this brutal winter. My 68-year old husband suffers from Early Onset Alzheimer's Disease and he is deteriorating rapidly.
We have no family around us and friends are thin on the ground, even though we always had many friends throughout our lives. Even close friends have disappeared.
It sure is a different world out there than the one I grew up in. Prayers would be so appreciated for my husband and for me, a full-time spouse caregiver.

Mary Poppins' Practically Perfect Piercing- Job issues; (1/16/18 ) A friend's wife of barely 2 years was killed by a train. No word on whether it was an accident or suicide. Prayers for him and his daughters.

Nathan- (1/16/18 ) Kitsapbass (and family) homeless. Long story short. Wife's ex husband has custody of elder two kids, goes to jail. We move in because state is mandating parent must be in residence, requiring us to break lease. Ex-husband kicks all (including kids he has custody of) out of house because he is upset that we are in the house (even though he knew all this was required by state).

Kim Jong-nun- (1/16/18 ) Please pray for the complete recovery of Wayne DuPree's sister who has the most virulent form of breast cancer.

Northernlurker- Wife has passed, (1/17/18 ).

Czarkazm- (1/17/18 ) We are grateful to God for taking care of our daughter in her first semester at college while earning a 4.0 GPA.

thathalfrican- (1/19/18 ) My mother for healing from her cancer and weight gain. My father for having the weight of the world on his shoulders. My siblings for being so young and having to endure all this. My wife for a safe finish to her pregnancy and delivery of our child.
Some good fortune for my family would be helpful heh.

134 I have to admit that it has been years since I cooked a Boston Butt and very much underestimated how long it takes to cook. It was in the oven with the pork belly for the extra two more hours, and then 3 more and it still wasn't soft enough for pulled pork.

Today it's back in the oven at 250 and I'm going to leave it in for 5 or 6 more hours.

I just dump the whole thing in the slow cooker in the morning before I go to work.. By the time I get home, it is perfect.. And I only spice it with salt & pepper.. That way I can either pull it and add BBQ sauce at that time, or slice it or pull into bigger chunks to serve with noodles or sauerkraut and spaetzle or dumplings.. very versatile.

136 110 Slow cooker is indispensable for me. Season and brown a Chuck roast, throw it in the cooker with a can of tomatoes, can of old school Campbells mushroom soup, one envelope of Lipton onion soup mix and a can of water. Set it on low and go to work. eight hours later
eight minutes later!, incredible pot roast. Serve on whatever you have time to make when you walk in the door and pour your drink, potatoes, rice, polenta, whatever. I don't think I've ever had a bad meal come out of a slow cooker. You could use an old boot with the above ingredients and it would be good. I don't trust leaving the oven on all day with the house empty.

The day NL's wife died, the following verse sprang up in an app I have:

Deuteronomy 31:8
"The LORD himself is who goes before you. He will be with you. He will not fail you nor forsake you. Don’t be afraid. Don’t be discouraged.”

It reminded me that He does not promise to make our earthly life smooth & sorrows disappear, but He promises to walk through them with us, if we ask. And He has gone ahead to prepare a place for us on the flipside of life.

I've been in places in my life where I've read that and been like "big whip-tee-do"...like that really helps me right now in a practical way. And other times where it has encouraged, assured and strengthened me.

I got into essential oils, not the doterra pyramid kind, but trying to source from reputable dealers who source from the best places. I found out it ain't a cheap hobby. Paying hundreds of dollars for a few milliliters of Rose Otto essential oil is not for the average person. I made coconut oil sugar scrubs, ointments/balms, and body butters for friends and family. It was strictly a hobby although sometimes someone would come back wanting to buy more.

Yesterday, however, I saw a baked chicken recipe on a corn meal box for corn meal, shredded parmesan cheese,and spices. I dipped the chicken in milk and then dipped it in the spice/corn mea/l.four recipe and basted it with butter. Cooked in the oven for 40 minutes. It really turned out well.-liked fried chicken , really. FenSpouse asked to have it again sometime.

well, yeah there are treatments but I did not know there was a flu test. My flu test was the doctor who would say flu or cold then dispense medicine.

you should get some Tamiflu when it is available and store it for when you need it because they always seem to run low during flu season then people start rationing for old people.

Commodore Cocktails

1.5 oz bourbon
1 oz creme de cacao
1 oz fresh lemon juice
Dash of grenadine.

Shake with ice. Strain. Drink!

Sounds like it'd be too sweet but it's not. One of those classics from the 20s-30s. Goes really well with steak.

Um...don't taze me...but antibiotics if viral will only make her more susceptible to other viruses. Antibiotics kill the germs but also the good bacteria that powers our immune system.

However, maybe they they thought she had something bacterial and not viral,and got it wrong the first time.

224 Spatchcock chicken, awesome. I've found that roasting the breast to 160/165 degrees lends the best results. Dark meat cooks faster so finishes at a higher temp, which it needs to.

If you don't have a digital meat probe, get one. Absolutely necessary.

I am a big fan, actually I am on my third pot. No need for an instapot, but if you don't have a pressure cooker, it makes life easier.

Ah, the InstantPot debate. Good job, CBD! Haha.

I will probably buy one down the road as a convenience tool (see reasons below).

Here is some of what I discussed with CBD


1) I would use the rice cooker, and even steaming eggs. Broth. Steamer for veggies, which we do a lot. Seems very versatile for one unit. And stainless steel interior.

2)... in response to a response: ... I have never owned a pressure cooker or crockpot/slow cooker either. My sisters and my mother own the slow cookers. I never saw the value in a crockpot (my mother used a pressure cooker when we were children, but I can't remember what she used it for, but we had a huge garden and my parents froze and jarred a lot of vegetables. They may have used it for sanitizing jars too).

I cook like you, and I have the time to be persnickety, while others do not. But even when I was working much more hours - you know, in the 60 or more range a week, I didn't buy a crockpot. I was looking for a crockpot cookbook for my sister when she first bought hers and all everyone complained about was how it really is not a "one pot" deal. You have to do things in steps and layers and outside the crockpot, so you can't just put stuff in it and go to work, so to speak. Only very simple things.

Everything you say is how I cook too. I think it would end up being a luxury item (like a microwave - we only use it for certain things but not for cooking in; heating leftovers, or warming coffee, but I will do baked potatoes in there) and it would never really replace any other appliance. I do not have a rice cooker, which my sister and mother have too and swear by. Never understood that one either because I make so many different types of rice, and like you, I add to it at times depending on what I'm making. But for sticky rice for Asian dishes with enough flavor and sauce, I keep it clean. Most of the time I only add parsley, or chives, or green onions, or parmesan cheese after the rice is cooked. And if a standalone side dish, I'll use chicken broth, etc.

I might use it when having guests and running out of stovetop burners. Happens a lot for me when making a multiple course meal. I have that countertop convection oven now which helps with some side dishes or appetizers, and the Instant Pot could be used, I suppose for a few things like rice or steamed veggies if I need the room.

Dunno. I think I'm just trying to convince myself I would use it. But, there sits my juicer, only used occasionally too.
