Food Thread: Technique Trumps Ingredients...Or Is It The Other Way Around?

I have no idea who Laurie Colwin was. Apparently, at least according to The New York Times, she was a great food writer. Since they are never wrong, I must be an ignorant food savage. Anyway, they featured one of her recipes recently, and since it was a technique I had never tried, i gave it a shot.

Laurie Colwin's Baked Mustard Chicken worked very, very well, but I should never have ignored the whispers in the back of my mind that were saying, "don't use cinnamon you idiot!" They were right, and a fine technique was, if not ruined, certainly marred by the discordant flavor of not even as much cinnamon as they called for.

Luckily the technique survived the NYT's rewriting of her recipe, and I will be trying it again this coming week. It's really quite simple, and I think very forgiving, since the crispy crust seems to keep the chicken moist and tender, even after two hours of cooking at moderate heat. My guess is that the mustard and herb rub helps too, and combines with the bread crumbs to build an impenetrable layer to keep the moisture in.

Or I could be wrong, which has happened before and will happen again. Whatever the reason. the end result was very good (ignoring the cinnamon imbroglio). One modification though; I put the chicken on a rack instead of directly onto the pan. I think that the bottoms of the chicken pieces would have gotten soggy had I followed the recipe even more slavishly than I did.

Anyone care to bet that the "City Of Seattle Sweetened Beverage Recovery Fee" isn't going to raise quite as much as the geniuses on their city council think?

And how do you like that little bit of Newspeak? What exactly is the fee recovering? The additional health cost of sweetened beverages compared to...what? Coffee? Alcohol? Crack cocaine? Maybe Seattle should just go all in and tax illicit drugs too. That way drug crime would drop to zero as all of the dealers and users would rush to pay their fair shares instead of trying to avoid the law.

As usual, the soccer moms and latte-sipping liberal assholes are the ones who won't be paying this tax, because many of them will simply drive their Priuses and Range Rovers to the Costco outside of town. It's the poor and working class folks who will pay the disproportionate share of this insanity.

Anybody have a good recipe for "posole?" I haven't had it in years, but I walked past a display of packages of dried hominy and suddenly returned to my youth. I dated a woman whose mother made great posole, and I have never been able to recreate it. I have had good versions in Mexico, but I won't be going back there for the foreseeable future.

Classic French Onion Soup

Yummy! I love onion soup, but for some reason I don't make this much. Probably because I am an obsessive-compulsive and refuse to use commercial stock, and I just don't have the ingredients at hand for beef stock. Perfect is the enemy of good.

This recipe has an interesting technique for cooking the onions. Anyone ever see it before?

This came from someone, but I simply can't remember who. Maybe Marcella Hazan, maybe Bluebell or Fixerupper. I don't remember.

PENNE WITH CAULIFLOWER AND GARLIC

• 1 large head of cauliflower
• 4-40 garlic cloves, minced.
• Olive oil
• 1 pound box of dried penne pasta
• Salt and pepper
• Red pepper flakes

Trim the cauliflower and cut into florets. Leave some of the stem…it tastes good!

Rinse it thoroughly, leaving some of the water in the florets.

In a medium pot, add about 3/4 cup of good olive oil and the garlic. Put it over medium-low heat, watching carefully so that the garlic does not brown. When the oil is fragrant with the lovely aromas of garlic, add the cauliflower, toss as much as you can (it’s tough to do, so don’t worry too much) cover and let simmer for about 30 minutes over low heat, stirring occasionally. The cauliflower will gradually break down into smaller and smaller chunks as it cooks and you stir.

When the cauliflower is soft, remove the cover, increase the heat to medium, add a large pinch of salt and stir occasionally until the cauliflower begins to brown a bit and it breaks up almost into a mash. Add red pepper flakes to taste, check the salt, cook for a few more minutes, then toss over al dente pasta and serve hot.

10 CBD I made posole last year some time, probably moved by the availability of pork (bought a few big pork shoulders at more than half off). As I recall I followed the first recipe I came across on the web (that looked right). Pretty simple.


I toned down the chile heat a bit (plus as you know the hotness of chiles varies and is unpredictable, even with the same bag or batch). Used canned hominy, I think.


Anyway, spicy, filling, and good.

When I used to go skiing every year, always to great hotels in swanky places, my room service order was always french onion soup, a shrimp cocktail and a couple beers. I could actually live on that stuff. Never tried making it myself.

21 Yesterday I used the first recipe from TDG. Moron Robbie's Slow Cooker Beef Curry, (page 222).

Tasty-good. I did it with extra potatoes and carrots, less water for a thicker sauce, and using a 1 lb Ranch Steak for the beef. Did 4 hours on high as I didn't have time to do the 8 on low. Just the two of us so plenty left over for later this week.

While looking up the "Golden Curry" I found this site reviewing other similar items.

Found the "Golden Curry" at our local Meijer. Since we have a rather large Japanese community here, there is a store that sells just Japanese food items so I'm going to see if they carry any of the others to try out. Also plan on trying using boneless chicken or pork lion replacing the beef.

22 Laurie Colwin had a column for years in Gourmet, to which I subscribed for years and years. She died young, sadly. I always enjoyed her columns. I like cinnamon in some things (like French toast batter, for instance) but I don't think I'd attempt it with mustard and chicken.

I have nothing whatsoever to say about the penne recipe except that it's missing marzipan and mint jelly.

I tried a broccoli cheese soup recipe that I found on line, supposed to be just like Panera's but it called for a 1/4 tsp of nutmeg and you could taste it in the soup. Yuk. Next time I made a batch I just added a little sprinkle. Much better.

What recipe book are you using? Mine didn't come with one. I downloaded the app and was going to use their recipe. However it varied so much time wise from the one I looked up on the internet that I got very confused. Used the seasoning from the app and the cooking time from the online recipe. Steak was dry.

I used to do that when I worked at an establishment that had a t-shirt press. During slow periods I'd get bored so I'd use the press to iron all the bills. The bank loved us because it ran through the counter so smoothly.

Aside from just being gross, I don't see how consuming chitin could be good for you. Just pinch the tail segment where the last bit of shrimp is located, and the whole body will come right out.

133 degrees for 2 to 4 hours. McCormicks Montreal Steak seasoning on both sides before vac-packing. Take steaks out of bags, place on folded paper towel, pat top dry with another paper towel. Sear on hot grill or in hot lightly oiled pan for a minute or so per side. Serve.

Good? Nooo. Grandma's was nice and bland. Add cheese and oregano.

The first time my mom cooked it for my step-father he decided we needed more toppings for flavor. Avocado was one.

First (and only) time I made it for my husband, he couldn't even get past the idea of pork soup.

They found that not only did the tax raise far less revenue than originally predicted, but enough county residents were going outside Crook Co. to buy untaxed beverages, plus all their other groceries and gasoline, that overall sales tax revenue actually dropped.

Now they have something like a $200M hole in the county budget because they had already spent the money they expected the tax to raise.

What recipe book are you using? Mine didn't come with one. I downloaded the app and was going to use their recipe. However it varied so much time wise from the one I looked up on the internet that I got very confused. Used the seasoning from the app and the cooking time from the online recipe. Steak was dry.

As for carmelizing the onions, I never tried it with foil. I use a non nonstick pot such as stainless or enameled cast iron to get the brown bits to deglaze; otherwise the onions do not carmelize to the point of flavoring the soup enough for me.

I've never used foil either, I have a staub cast iron dutch oven (I know,phrasing) that I use. It takes so long to make and the Red Barn in Santa Ynez makes a delicious version so I haven't made it in a while.

112 I got a Joule Sous Vide immersion circulator thingie before Christmas. So far, everything I have tried has been a hit. The key for me was using a hot cast iron skillet to char the liberal sprinkling of spices on the meat.

I did ham hocks that were unbelievably good. I had no idea that ham hocks could be delicious on their own. Served them with spatzle and red cabbage. It was the best meal of all last week.

I have a pot roast going right now that I expect to be a failure. We will see in a few hours when the timer goes off.

The remaining store directed customers to their store outside of Seattle. It had been projected to raise $300k the first year. It raised less than $100.k. The 2nd Amendment Foundation had to sue to get the revenue figures and the city fought it which cost more than the tax had brought in. Sugar tax because the cool kids in CA are doing it. The state wants to put a per mile tax on, which will devastate Eastern WA. The gas tax is, I think 2nd or 3rd highest nationally. The city attempted to put a, "High Earner's Income Tax" but were disappointed when the state Supreme Court, to my considerable surprise, ruled it unconstitutional because, uh... it is. Without a vote by the people. I fled that shit hole three years ago to the center of the state and have been back twice, Once to fly out and once for a book launch. That, was however, not in Seattle, just west of the Cascades.

129 Got a 3.5lb chuck roast in oven. Seared 3 onions halved and pound of carrots in roaster and removed. Then seared roast, removed. Deglazed with cup o' wine and placed roast back in along with onions and carrots. Added 3 cups beef broth, 2t rosemary, 1t thyme. Covered and put in oven for 3.5 hrs. House smells divine.

Indeed! I try to always expect the worst when it comes to something new. . But this pot roast has a high chance of failure. I found way too many recipes online with different instructions, times, and temps to have any faith that it will not have to be thrown into the pressure cooker to finish.

152 About 15 years ago I started using a vacuum machine to freeze package meats. When I first saw sous vide done on that first "Next Iron Chef" competition it interested me but the pricing was way high.

Then a site called "Seattle Food Geek' ran plans for building your own and I did in May 2011. Later as prices dropped I got an Anova unit and this year added a Gourmia one so I can do a long time item and still do short ones too. I now use the Rubbermaid 12 and 18 qt. containers and have lids that fit the two heating units and seal the bath for hardly any evaporation.

I vac-pak and freeze almost all meats pre-seasoned, rubbed, or marinaded ready to pull out and put in a heated water bath. I just add a 1/2 hour to the time to allow for the thawing out. I bought this book ( http://tinyurl.com/y7x78wc5 ) back at the beginning and use it mainly for the time/temp guides.

And don't forget to sear all sides of the cut of meat in a skillet. You can then use that skillet to carmelize the onions and the carrots and then take that and put into some beef broth and put that with the roast.

I upped it to 170 so that it would be done in 24 hours for Sunday dinner as opposed to 48.

I also made the mistake of putting the veggies in the bag with the roast. I doubt the potatoes will be done.

Now you know why I expect to have to throw it all in the pressure cooker.

Townsend clip of a recipe for Onion pie, with onion, apple, potato, and hard-boiled eggs. I leave out the hard-boiled eggs, instead make a custard of raw egg and beef broth . . . the apple, onion, and potato are sliced thinly and the whole thing is baked between a top and bottom crust. I got a bottle of Glenmorangie Nectar D'Or as a Christmas gift and was anticipating (becuz aged in sauterne casks) a great dessert scotch, but

alas, no.

However, it turned out to be a great cocktail scotch, like so:


Why Yuzu!

1.5 oz Glenmorangie Nectar D'Or

1 oz Cointreau

0.5 oz fresh lemon juice

1/8 tsp of finely grated fresh yuzu peel

Shake vigorously with ice. Strain but do not strain finely you want to leave the minuscule bits of yuzu peel floating around to delight your nose and your palate. Drink!

Surprisingly, light fresh and fruity.

And bonus! It goes very well with Japanese food such as sushi. tempura, and kara-age.

Following CBD's advice, I used chuck and short ribs. Same weight of each, but that was counting the bones in the short ribs, which of course get discarded. And following some other advice, I hand-chopped.

The burgers were amazing. Flavorful, and with a much better texture than even home-ground.

So what's the problem? Cutting that tough short rib meat into little tiny pieces is a serious pain.

Sous vide pot roast is 140 for 2-3 days for medium still pink or 160 for 1-2 days for more traditional look. Sear either before sealing or after cooking. A marinade for flavor, I like McCormicks New York steak one or Lawrys,in the bag but no onions they don't take well to long cooking sous vide. Vegetables, carrots are 183 for 40 to 60 minutes, potatoes are 183 for 30 to 60 minutes for small, 60 to 120 for large so they could be done together. Butter, salt can be added to pouch.

244 Sous vide pot roast is 140 for 2-3 days for medium still pink or 160 for 1-2 days for more traditional look. Sear either before sealing or after cooking. A marinade for flavor, I like McCormicks New York steak one or Lawrys,in the bag but no onions they don't take well to long cooking sous vide. Vegetables, carrots are 183 for 40 to 60 minutes, potatoes are 183 for 30 to 60 minutes for small, 60 to 120 for large so they could be done together. Butter, salt can be added to pouch.

Definitely going into the PC then. Maybe I should go ahead and yank it out of the water and start now. Oh boy.

I did potatoes fairly thinly sliced at 190 for 2.5 hours and they did not get done enough to mash. Ended up throwing carmelized onions, garlic, heavy whipping cream, and cheddar and mixing to get them on the table unmashed. Family was actually pleased with the results. I have made them two more times since.

Have not tried whole onions in there yet, but these are fairly small boilers. Will be interesting to see if they can be saved.

Thanks for the timing! I will try again using yours next time. 140 was where I had it prior to seeing the mini-chess thread. Probably would have been fine if I had my days straight and had not thrown all those veggies in the bag with the roast.

249 Tonight's dinner was chicken soup, using stock I made from the Christmas goose, some vegetables, and one of those damned boneless skinless chicken breasts from the grocery. I hate chicken breasts. Too dry. For the soup I cooked the vegetables in the stock low and slow for about three hours, then put in the chicken and poached it just enough to be cooked all the way through, then served up.

Spices used: a whole onion, garlic, salt, thyme, a couple of peppercorns, one allspice, some oregano, some turmeric (mostly for color), a little Tabasco sauce, and a bay leaf.

Ingredients

¾ cup Dijon mustard
1 clove garlic, minced
1 teaspoon dried thyme
¼ teaspoon ground cinnamon
Salt and black pepper
2 cups fine dry unseasoned bread crumbs
2 chickens, 2 to 3 pounds each, quartered, rinsed and dried
1 tablespoon sweet paprika, or as needed
3 tablespoons butter, cut into small pieces

Preparation

Heat oven to 350 degrees. In a large mixing bowl, combine mustard, garlic, thyme, cinnamon, a pinch of salt and 1/2 teaspoon black pepper. Place bread crumbs in another large bowl.
Working in batches, coat chicken quarters on all sides with mustard mixture. Shake off excess mustard, then coat completely with bread crumbs. Arrange in a single layer in a large, shallow baking pan.
Dust the chicken with paprika and scatter butter pieces on top. Bake until crust is deep golden brown and crispy, about 2 hours. (Depending on the oven, the size of the pan and the size of the chickens, baking time may be as long as 2 1/2 hours.) Serve hot or at room temperature.

The times I put for potatoes are just from the cookbook, I've never done them sous vide. Carrots I have and they were crunchy-done.

Pot roast I have done, usually boneless chuck. It turns out good but so does doing it in a crock-pot or a low oven. Sous vide for me is most useful for getting nice steaks, pork loin chops that are done and still pink and juicy, and ribs that are pink, and juicy too.

I'm lazy and the pork usually just has dark brown sugar and liquid smoke put in the bag with the meat on top vac-sealed and cooked at the time and temp in my guide. Then brush with BBQ sauce and grill to sear for a couple minutes.

Alton Brown has a recipe, but with the pie pans and all, it gets a bit involved. I cheated and used the recipe from the Saveur cookbook instead.

307 Posole: Soak dried chile pods overnight in hot water to rehydrate. Plop pods, garlic, salt, and liquor from the pot in to a blender and macerate. A lot. Until lovely golden red color predominates.

Saute pork cubes, garlic, salt, pepper, white onions, and oregano in very hot olive oil. Place in crock pot, add hominy, and cover with red chile sauce. Add tomatoes and green chiles. Cook until hominy are cooked through and through (8 - 10 hours).

Serve with your choice of cold tops (e.g., shredded radishes, oregano, red onion, cilantro, etc.,). Under-cooked hominy is the sign of a gringo.

Whatever you do, don't undercook the hominy.

That being said, I adore onion soup and would recommend Ace's beef bone broth for this. It would be orgasmic. Time-consuming? Hell yeah, but mind-blowingly delicious.

I think it's just to cover them closely so they steam and break down quickly. And correctly sized pot will do.

Not sure how the aluminum would leach into the onions. They aren't acidic, so very little oxidation will occur.

390 People worry too much about making stock. You don't have to boil down a cow to powder. All it takes is a few cooked bones thrown into a big saucepan with veggies, herbs and lots of water. Let it simmer for a few hours, drain the juice and there you have it. It might mean using a bit more than you would compared with a commercial stock, but so what, it tastes great.

391 Just for future reference, the roast and vegetables all were done. At 170 for 24 hours renders roast and veggies much like a crock pot except the meat has a nicer texture and without having to wash the pot as it was cooked in a bag. A big plus for lazy me. . Will do this one again for times I am feeling a bit under the weather and do not want to put forth a major effort towards dinner.

One of her side dishes was some sort of root vegetable that was flash fried them dusted in cinnamon, before being sprinkled with some bitter greens. It was ridiculously bad. I screwed it up so badly, nobody but me could use it the entire seventeen years I used the damned thing for my business.
