This time Weasel has hooked up with some of Bluebell's "friends" on the outside, and there is rumor of a jewelry store heist...that's just idle talk. But all of a sudden there are a few more cookbooks to be given away! Coincidence? Of course. The Morons whose comments correspond to random times between 4:00pm and 6:00pm EST when Weasel gets bored will receive a free cookbook. Of course the usual rules apply: nobody who has won a cookbook in one of the previous giveaways is eligible, the winners must provide a mailing address and the email address used in their comment to moroncookbook at gmail dot com by midnight tonight, and the winners must also submit hair samples and three vials of blood. And a bottle of Valu-Rite. And a good grilled-cheese sandwich.

That loaf is a rye-wheat-sourdough from Parc Restaurant, a bistro in Rittenhouse Square in Philadelphia. And as good as it looks, it tastes even better. It is a magnificent example of the baker's art, and their baguettes aren't far behind. The restaurant was packed, and the staff was a bit overwhelmed, and I think the my experience suffered for it. The Old Fashioned was thoroughly mediocre (on the rocks? Really?), and all the food came at once. That's just silly. But the bread was the star, and they sell it, so even if I don't feel like eating there, I will definitely pick up more of their baked goods the next time I am in Philly.

Bread is one of those elemental foods that is incredibly satisfying when done correctly, but can't be bothered with when done badly. Good scrambled eggs are fantastic! But when they are overdone, only liberal dousings in hot sauce can make them edible. And overdone bacon is...um....pretty good. Never mind.

So what foods do you love when executed well, but ignore when done badly, or even just "ok?" Because there are some foods that I will eat no matter what. Put a hot dog and a bun with mustard in front of me, and I will eat it no matter what its provenance. The finest German butcher or a ring-meat special in a convenience store. I don't care.

Is it that time again? When Morons the world over discuss hangover remedies? Why yes...yes it is. But a true Moron, -- a professional-drinker Moron -- knows that tonight is amateur night, and it is best spent quietly at home or a local establishment, where we can eat and drink on our own schedules and call it an early night; leaving the grandly stupid stuff to those less worthy of the title, "Professional Drinker."

But, a McDonald's bacon-egg-cheese biscuit is a fine remedy if one should, through no fault of one's own, suffer a bit of morning malaise.

It would be a much less interesting thread without your input, and I am thankful that I can rely on the Moron Horde for so much good stuff.

And to our wonderful and tolerant host, who puts up with so much crap and still manages to amuse us and challenge us and educate us and occasionally wow us with his insights, thank you for this rare and special opportunity. I mentioned in the Book Thread that Ace trusts us with his livelihood with nary a complaint or criticism, and bends over backwards to accommodate the Horde and the cobloggers.

The time from Thanksgiving through New Years Day is for most people filled with overeating, too little exercise, and a fair amount of family-induced stress. So here is a recipe for Kale Salad that is a must for the day after, when we really ought to start eating more sensibly, get in tune with our inner selves, and maybe even decrease our carbon footprint a bit.

Pavés du Mail
(Pan-Fried Steaks with Mustard Cream Sauce)

  • 4 8–10-oz. flat iron steaks, cut horizontally without the connective tissue
  • Kosher salt and freshly ground black pepper, to taste
  • 1 tbsp. unsalted butter
  • 1 tbsp. corn oil
  • 5 tbsp. cognac or brandy (the cheaper the better)
  • 1⁄4 cup heavy cream
  • 1 1⁄2 tbsp. Dijon mustard
  • 1 tbsp. minced flat-leaf parsley

1. Season steaks with salt and pepper. Heat butter and oil in a 12" cast-iron skillet over medium-high heat. Add steaks and cook, turning once, until browned and cooked to desired temperature, about 6 minutes for medium
rare. Remove pan from heat. Transfer steaks to 4 warm plates and pour off and discard all but 1 tbsp. fat.

2. Add 4 1⁄2 tbsp. cognac to pan and stir, scraping browned bits from the bottom with a wooden spoon. Return pan to medium-high heat and cook for 20 seconds. Add cream and mustard, season with salt and pepper, and cook, stirring vigorously, until sauce just comes together. Stir in remaining cognac and pour sauce over steaks.

Serve steaks garnished with parsley and black pepper.

Any meat cooked properly is either great to edible. Overcook it or in the case of ground meat, undercook it and yikes, bleh.

Except bacon. Even burned bacon is edible.

I used to toast two slices of bread and the second it popped up slapped some provalone and salami or Lebanon bologna on it, put it in a plastic bag and take it to work. By the time I got there the cheese had softened and the flavor of the meat soaked into the bread. Excellent with hot coffee.

88 Veal Parmigan. There's a restaurant in town here that used to make excellent veal parm. These days, the veal park is pathetic and the service is worse, so I just don't go there any more. And Korean gal-bi. My favorite Korean restaurant changed hands, and I didn't realize it. As usual, I ordered the gal-bi. What I got was thin steak dredged in five spice powder and sugar. And I didn't recognize a single one of the sides dishes except the kimchee. I tried a couple other places with the same results. Blah.

110 For some reason I have lost my mind and decided to make Chinese and Japanese New Year food for New Year's Day. It started with a reasonable(ish) plan to make cucumber/nori salad with cooked shrimp and fake crab. And maybe some hand rolls because those take minimal dexterity unlike rolled sushi.

Then I remembered that I'd bought adzuki beans and glutinous rice flour the one time we went to the Asian market so filled mochi joined the menu. And I might as well try dango if I'm already making mochi right? And I have the sweet bean paste made (found a pressure cooker recipe online) so why not give steamed bean buns a try? And I made the dough for the buns (which is really tasty by the way) so I should use a quarter of that for bao which can be filled with beef stir-fry and a relish made from sliced root vegetables.
I'd blame the sake that I used at some point in each recipe, but I bought the sake *after* deciding to try all these things.
Oh, the trial steamed buns were pretty good and now I want some for breakfast.

115 This is something I haven't made in a while. It is mostly from the back of a bottle of the spice mix but changed a bit. I've also used other spice mixes like Lemon-Pepper in this.

Roasted Garlic and Bell Pepper Chicken Strips

Makes 4 servings

2 boneless skinless chicken breasts, cut in 1/4 inch thick strips
1/4 c. salt
2 T. McCormick® Roasted Garlic Bell Pepper seasoning mix
1/2 c. plus 1 T. flour
1 red bell pepper diced
2 T. vegetable oil
1 1/4 c. water

Cooked rice or noodles


Brine Chicken strips in 1/4 c. salt dissolved in 1/2 to 1 gal. water in gallon zip top bag laid in a bowl and placed in refrigerator for at least 1 hour.

Rinse and dry Chicken strips. Blend 1 T. seasoning mix and 1/2 cup flour. Coat chicken strips with mixture shake off excess.

Mix 1 T. flour and 1 T. seasoning mix into 1 1/4 c. water with small wisk.

Soften diced red bell pepper in 12 inch skillet with 1 tablespoon oil for 3-4 minutes at medium-high heat. Remove peppers to small bowl.

Add remaining oil to skillet. Brown chicken in oil on medium-high heat 5 - 7 minutes turning once to brown both sides.

Add the peppers to skillet. Re-wisk 1 1/4 cups water-flour-seasoning mixture and then mix into skillet. Reduce heat.

Cook, uncovered, 8 minutes or until sauce thickens, stirring occasionally. Serve over noodles or rice.

This holiday season, I was served mashed potatoes for Thanksgiving and Christmas. One cook used a mixer to mash; the other used a stick blender.

Both times the potatoes came out soupy and gluey. I ate them with gratitude, but still craved properly mashed potatoes.

Last night I boiled some potatoes and mashed them by hand with a potato masher. THAT'S what I'm talkin' about! I also added as much butter and cream and cream cheese as I wanted. This morning I discovered they fry up crispy and tasty in bacon grease.

175 Did a choice-grade rib-eye roast for Christmas. Coated it with a worcestershire sauce with a couple of splashes of bourbon mix, and then rubbed, and allowed to sit overnight. Smoked at around 250 degrees F for about 5 hours, and pulled it at 135 degrees F.

It was fantastic! I was dubious about the value of the bourbon, but it definitely added to it.

Going to do some ribs here shortly the same way. Suspecting that soy sauce might be better than worcestershire for pork, but my wife insists on the experiment.

I think the best bread in Philly are the pretzel rolls at Smith and Wollensky's, also on Rittenhouse Square. I could eat nothing but those rolls and call it a great dinner.

Use your favorite chili recipe, but use the sealed (pressure cooked) "meat" setting on your meat of choice first. Completely first, before browning. If it's frozen, then all the better because it will be a fast way to thaw it.

Pressure cooking, then browning, then mix up with other ingredients, then use the sealed soup/chili setting to pressure cook it again, and then let it slow cook for however long you want. Or just eat it then because it will be ready to go.

208 Here. I am routinely told these are the Best Sugar Cookies. No mixer required. They are beautifully chewy in the center and the optional rest in the fridge adds a deep caramel note. I bake with weights but I tried to convert below where needed. Enjoy:

2.2 oz (a little more than half a stick) butter, melted
1 tbsp water
7 oz (1 cup) white sugar
8 oz (a little less than two unpacked cups) all purpose flour
1 scant tsp sea salt
1 tsp baking powder
1/2 tsp baking soda
3 oz vegetable oil
1 large egg
3/4 tsp vanilla extract

Melt butter and combine with water and sugar
Add vegetable oil
Add egg and vanilla and combine
In separate bowl combine flour, sea salt, baking soda/powder and buttermilk powder
Add flour mixture gradually to wet ingredients and mix until dough forms. Do not overmix.
Optional but worth it: Wrap dough in plastic and chill in fridge for 1 to 48 hours
Divide dough into 1.4 oz balls (about silver dollar sized in circumference - recipe makes about 1, roll in white sugar and flatten slightly into discs on parchment lined baking sheet
Bake for 11-12 minutes in oven preheated to 350 just until cookie edges are golden brown. Cookies will still appear soft in center.
Cool for five minutes on pan and move to rack

No matter how bad the hangover, you've got to get up or else when you do finally crawl out of bed, the kids will have spilled a couple boxes of cereal and at least a quart of milk on the kitchen floor making their own breakfasts. Then, they will have spilled half the resulting bowls of cereal on the floor in front of the tv and dribbled something into the VCR. And the dogs are sick from trying to eat the kids' leftovers. Just not worth it. After a few years of not drinking, I found that I had just lost the taste for it. I'm not a teetotaler or object to anyone else drinking; I just don't care to.

I've been using one egg with 2 tablespoons half-and-half, a dash of cinnamon, 1-2 teaspoons vanilla and 2 tablespoons orange juice (Moron precision, of course). works well for two slices of bread. Throw a frozen london broil in, pressure cook "meat" setting, then add some taters, carrots, italian seasoning, some cream of mushroom soup from a can, and a pack of lipton onion soup mix if you're inclined, seal it up again, and hit the soup button to pressure cook it again, and you'll be eating in less than an hour.

319 Rons and Ettes with new Instant Pots: if you use Facebook, there is an IP thread that can help. Also, there must be a bazillion IP recipes and demos on YouTube.

Also, the IP is a really great canner. Mine will hold four or five pint jars. So if you have some leftovers you don't plan on eating soon, you can can then without dragging out the whole canning rigamarole. (Warning: I live in Omaha, which is a tad too high up for pressure canning. But we haven't managed to kill ourselves yet. Check your elevation before you start canning everything in sight.)

I never had a pressure cooker before getting the IP -- probably because I had to help my parents and grandparents wash dinner off the kitchen walls and ceiling as a kid. But the IP is absolutely great. Pot roast comes out from tender and moist. Spaghetti is great. Basically, anything that you don't want a bubbling, caramelized top for -- like a casserole.

320 Instant pots do good chicken and beef tacos, too. Again, from frozen is where it shines. Pressure cooking will thaw and cook, and then the sautee setting will let you brown/crumble/shred the meat to your preferences as you cook the onions and peppers and spices in.

The Black Plum

1.5 oz gin

1 oz aged umeshu (Japanese plum "wine")

1 oz Carpano Antica

6 healthy dashes of Ume Bitters

Shake with ice. Strain into cocktail glass. Drink.

I haven't tried it on a burger, but I have found that it cooks an egg in 1-2 minutes in a nice contained circle great for a sandwich.

I had breast of duck, spouse had beef bourginon (sp), boy had felt mignon with crab on top. He also had escargot and , three profiteroles for dessert. Spouse and I shared a creme caramel. I also had elderberry in sparking wine for a drink. Never had that before. Very good.

Salmon. If overcooked, it should be tossed. Grill it until it just starts to flake in the thick part.

My recipe: filet skin side down on foil on the grill. Dill, kosher salt, pepper, drizzle honey and slice a lemon super thin over the top.

Grill until the thick part starts to flake.
Serve with cheese grits, roasted sprouts and some of my Mosaic IPA.

It will be tasty, but the texture will be much different from one cooked in the oven.

Instant pot/slow cookers are pretty good and convenient ways to make pulled pork sandwiches, though. Or asian style pork stuff.

570 Here in VA we have ham biscuits, one of the best inventions known to man. But I've had, at a funeral, the most appalling excuse for a ham biscuit ever. The ham wasn't country, and there was some sort of sweetish oniony spread on them. Nothing like the ones my wife puts forth.

And that's even now, without here "kitchen Muse", our late basset hound Sally.

BTW, she agrees about scrambled eggs. And I have no sense of timing when cooking them - one of her jobs. About all the cooking I do is (a) help in the kitchen, (b) put meat over fire in the backyard, and (c) I do make sandwiches for her.

574 The shoulder I did in the oven and called for 160F internal which is way under done for me. When I smoke them it has to get between 195ish to 205ish to be tender as I like it. It gets a nice bark on it in the oven too.

Honestly, that's probably been the best part for us. My wife isn't terrified every time I use it.

I'm interested in how it cans. I doubt I'll throw out my old stuff, but I wouldn't mind not having to make canning correspond to her getting the kids out of the house because she's convinced it's going to explode and kill us all.

Srsly, though. I bought a Whirly-pop style popper at a yard sale for 5 bucks one day. It has a copper plate clad between the stainless. That was 5 years ago. Now it takes a teaspoon of oil to make 5 qts of corn. Yes, copper clad transfers heat very well. I have another piece that was given to me. Looks like a paella pan. It is heavy, it is clad. It makes perfect Mexican rice.

I *love* it. Used the one frying pan three times yesterday. Just rinsed between foods (although the savory food was cooked last, so might have used soap if it had been before a sweet dish) and put it back on the stove. I don't love the exposed bolts that attach the handle because those aren't coated and can make eggs and such stick, but it is vastly better than teflon because it can go in the dishwasher. I'm actually considering replacing my current pans, or at least getting the largest and smallest possible to cover the bases.

Did you get it too hot? It can't go on a medium or over burner without something in it. Mine was completely non-stick until Son preheated it to cook so me bacon (I hadn't realized he wasn't putting the bacon on immediately) and now there is a line that is less non-stick, but still not too bad. I do use some fat or butter though for taste, so that might make a difference.

There's a place in Las Vegas called Hangover Heaven that will pretty much do that for you. They add some other stuff, vitamins, anti-nausea drugs. I tried it, mostly out of curiosity, and it worked pretty well, but I smelled like a vitamin pill afterwards, and it set me back something like $160.

Yes, the IV drip is spectacular hangover relief. I was "hooked up" during Balikatan in the Philippines after a few too many Red Horses, and it was awesome. The only problem is the doc was in slightly better shape than I was, took a couple attempts to get the IV right.

Another cure I have besides a Bloody Mary, is a small bottle of Bacchus D, available at most Asian stores. It is a concentrate of Vitamin B and caffeine, best after over toasting Soju or Sake, but works effectively after too many beers too.

Well, that just means that you have not had real peameal bacon, or what Canucks call back bacon. You can't buy it in the States. What Amurricans call "Canadian bacon" is neither Canadian nor bacon. It's at best, mediocre ham, made from substandard pork bits.

Now for a truly awesome sandwich, I suggest getting a "back bacon on a bun", but you'll have to go the Great White North to get it. The best place is in the St Lawrence Market in Toronto (Jarvis & Front), with grilled back bacon an a fresh Kaiser bun. Heaven.

We've reversed engineered the bacon and make our own in Michigan. It's harder to get really good Kaiser buns. They don't sell them here and they're harder to make than the bacon.

My mom made "War Cake" on a regular basis. It was one of my favorites. She learned it from her grandmother. The story I got was that since many things were rationed during WWI, this cake used less sugar and fat. By using the raisin liquid it sweetened the cake.

Bakeries in Philly (I live in the suburbs)- believe it or not, there are even better ones. LeBus comes to mind, along with Conshohocken bakery. Numerous in South Philly, too.
