Food Thread: Popcorn Here! Get Your Hot Popcorn!

A note before we begin. 1589 copies sold! And...there is another Moron cookbook giveaway! Of course the usual rules apply: nobody who has won a cookbook in one of the previous giveaways is eligible, the winners must provide a mailing address and the email address used in their comment to moroncookbook at gmail dot com by midnight tonight, and the winners must also submit a video of them imitating a bonobo flinging its poo.

I saw a movie -- in a theater -- yesterday, and of course I got popcorn. Why is popcorn the go-to snack when watching a movie? I get the financial advantage of selling it; it's about as cheap a food by volume as anything on the planet. My guess is that the packaging is more expensive than the popcorn. But what is so attractive about it to the movie-goer?

If any of you young punks who grew up on microwave popcorn haven't made fresh popcorn on the stove, then you are missing out on a wonderful culinary experience. It simply tastes better. None of that artificial butter flavor (which I actually like...a little) or overly-salted crap from the bag. Just pure, hot, clean simple popcorn popped in a good, neutral-flavored oil, a bit of Kosher salt, and the biggest bowl you have in the house. I use a huge aluminum food prep bowl I bought at a commercial kitchen supply house about 100 years ago, and it's perfect!

Use a big, heavy-bottomed pot with a lid. Pour a couple of big glugs of oil (enough to cover the bottom of the pot) into the pot along with three or four kernels. Put it on medium heat, and when the kernels pop, pour in the rest of the popcorn. Shake the pot, and leave the cover ajar to allow the steam to escape, otherwise your popcorn will not be quite as crunchy and delicious. As soon as it as mostly stopped popping, take it off the heat, salt it, toss it into the bowl, and chow down. Oh, if you have any extra bacon fat, try using that instead of oil. Yes, it's marvelous.

This video is from Thermoworks, a company that sells excellent temperature probes and thermometers and such. They often include recipes in their promotional e-mails, and this one is a doozy. They make it seem so easy! But I have made chocolate-covered caramels before, and cleaning the spattered chocolate off the ceiling and out of my hair is a bit tedious. Coating the caramels is a hugely messy project!

I mentioned Chicken Baked With Potatoes, Cherry Tomatoes and Herbs a few weeks ago as my planned meal for that evening. It was a resounding success, and has entered the "Oh shit! What should I cook tonight?" rotation here at Chez Dildo. I used fresh herbs, which I think is the key to this dish's success. I was also struck by how well the rosemary and the basil complimented each other. It was odd, because I could taste them separately, but they also blended wonderfully. It's a simple dish to make, and well worth a try.

Full disclosure - I'm not from Texas (was in the Army there a few times). I'm from Minnesota. My advice to anyone about chili is never ever try to make it without a good old fashioned cast iron Dutch Oven. I've made chili thousands of times but the best results only come using cast iron. Crock pots and stove top stew pots are fine, but cast iron has never failed me. The colors and textures it produces are something you can't get using any other method.

Below isn't my best effort - but I've always liked this recipe.

Texas Red: no beans, no tomatoes

Ingredients
Caveat: I've never made chili the exact same way twice, I use any chili recipe as a starting guide and season as I go, according to my own tastes (Use caution if adding the optional peppers)


  • 4 slices bacon, chopped
  • 2 onions, chopped
  • 8 cloves garlic, chopped (easier to use minced garlic from the grocery store, 1 tbsp).
  • 2 tsp dried oregano (a little less if using fresh)
  • 1-2 tsp cayenne pepper (use more if you like spicy)
  • 1-3 Habanero peppers (optional) seeded and minced (use a food processor or just cook in pan with onions/garlic until soft, then chop; wash hands thoroughly)
  • 3 tbsp paprika
  • 1/3 cup chili powder
  • 1 tbsp cumin
  • 4 pounds boneless beef chuck or rump, cut into 1/2-inch cubes
  • 4-5 cups water (1 12oz beer - optional; but reduce amount of water to compensate)
  • 4 canned Chipotle peppers in adobo sauce, (optional - seeded) and minced
  • 2 tbsp cornmeal or corn flour

Directions :

In a Dutch oven, brown cubed beef - best results put 1 tbsp vegetable oil in the dutch oven on the stove top, heat to high temp and brown off meat (meat should sizzle and brown quickly) - repeat until it's all browned off. Remove and set aside.

In a Dutch oven, cook bacon over medium heat until crispy, stirring occasionally. Drain off excess grease, leaving enough to coat the bottom of the pan. Add onions and garlic; cook and stir until the onions are tender. Season with oregano, cayenne pepper, paprika, chili powder and cumin. Cook and stir for about 30 seconds to toast the spices.

Stir in all remaining ingredients.

Cover with cast iron lid and bake in 350 degree oven 60-90 mins. (the longer time is for more tender beef, but don't overcook or the sauce will taste odd)

Serve with hot cornbread, and/or your choice of fixin's (onions, cheese, sour cream, etc)

Here's a pretty good recipe for Potato Latkes, fried potato pancakes traditionally served during Hanukkah.

I'll be honest; While I like eating them I am not a big fan of making them. It's a lot of work and cleanup that I much prefer other people do. But here is a good start if you feel like going for it.

box of vanilla wafers ground fine
1c semi sweet chocolate bits
1c confectionary sugar
3/4 cup rum

melt choc, stir in sugar and rum, fold in wafer crumbs, chill, form into balls roll in confectionary sugar, enjoy like the bum you are.

1 1/2 cup milk
Small handful of Crerry Craisins
Slightly more of raisins
Shake of Cumin
Heat for a minute but do not stur
Take spoon and carefully try to scoop off cumin from the top.
Add shake of cinnamon
Heat to just boiling
Add 7/8 cup of 5 minute oatmeal
Cook for 5 minutes and serve

37 I'm on my 3rd or 4th air popper now. I like it because it's quick and
easy and you don't have to stand there and shake it. Adding butter to
the corn after it's popped and in the bowl is no trouble at all . It
takes about 10 minutes to pop enough corn for caramel corn, which I make
pretty frequently through the holidays to give away to family and
friends.

Caramel popcorn

4 quarts of popped popcorn in a large aluminum baking pan

1 stick of butter
1 cup of brown sugar
1/2 cup of corn syrup
1/2 tsp of salt

Bring to a boil on low to medium heat and let it boil for 5 minutes.
Remove from heat and add

1/4 tsp of baking soda
1 tsp of vanilla extract

Stir until smooth and pour over popcorn until well coated.
Bake in the oven at 250F for 20 minutes, stir it around to redistribute the coating. Do this twice more.

After an hour in the oven, pour it out onto a sheet of aluminum foil to cool slightly, then bag it up.

54 I used to prefer popcorn cooked in a pan on the stove. Now I make it a different way which I think is better tasting. I put 1/4 cup of popcorn into a brown paper lunch bag. Then microwave. With my microwave it takes 1 minute 55 seconds. It does not taste like air popped popcorn, more like popcorn cooked in oil. When it is finished popping I added butter and salt, and sometimes parmesan cheese. Give it a try, simple, no clean up, and my favorite popcorn

58 Popcorn! The preferred snack of Mrs. JTB. We have an old HEAVY (it must be 60 years old now, maybe older) aluminum pot dedicated to making stove top popcorn. Enough corn oil to coat the bottom, put in 5 tablespoons of kernels which will fill the pot when done. Pour in a big bowl and use the residual heat to melt the butter. We have both regular and pickling salt to use as desired. Chow down.

Never tried microwave popcorn. I haven't made Jiffy Pop (is it still offered?) in decades but some of it always burned. I had better luck with a wire basket in the fire place.

Mrs Farmer just takes leftover mashed taters, makes them into patties and fries them in butter. We recently discovered they are even better when you mix in some chives.

It's a combination of two things for me and the wife:

a) find a reputable store near you where the staff are not pushing things on you, but guiding you to the wine that suits your taste and what you want to pair it with.

b) time and patience! You have to just take a chance sometimes and be sure to write down in a notebook what you've tried. Even if the exact bottle is no longer available, you still have the region, variety etc. to go by to find something similar

Sounds like fun, Jewell!! I have so many happy memories baking Christmas cookies with mom, and more recently, baking cookies with her for church coffee hour.

Our tradition since the grandkids arrived (my son and nieces) has been making gingerbread houses. Mom has a recipe and template for individual houses, but in a pinch, we've just made them out of graham crackers - and it works just as well.

We prepared Mr. And Mrs. JTB's "Rosamond's Beef Stroganoff" from THE cookbook last night.

We used thin cut sirloin steak and stayed exactly to the recipe. It was rich, rich, rich and most delicious. It called for optional paprika. We opted for hot Hungarian paprika. That added a nice bit of bite! Will try again!

I skipped my blood sugar test this morning. Did I mention it was rich?

A Dutch Oven - despite the kinda stupid name - does an admirable job of taking less expensive cuts of beef and making them tenderly delicious. Bought some 2.99 a pound round roast recently and was shocked how good it became.

Throw some veggies and potatoes in and that's a meal, Jerry. But slow cooking is the key. And perhaps a touch of red wine the first hour.

I go to Total Wine for European beer, which they have a real nice selection of. Good German Pils and Hefe Weizen. British ales. All kinds of micro brews. Really, for a wine specialty store its beer selection is great. Its, inadvertantly, helped the other local grocery stores to compete by also providing a fine selection of beers. Win Win!

So I mentioned this to several people; two years later I was getting dozens of them sent to us (people are always hunting good gift ideas). And the quality was nowhere near as good. In fact, I had to toss some as inedible. Next year, same thing. Even complaining to H-nD and getting a replacement shipment did not help.

So I said no mas and please don't send us any more of them. YMMV.

120 I haven't been satisfied with the last few batches of New England baked beans I made. Used a crock pot and they always seemed too soupy, which I don't care for. I found an old recipe for use in an oven that cooks low and slow for hours. It worked! And is simple but takes a while to process what with soaking the beans and cooking time.

No tomato. Molasses, dark mustard, salt and pepper mixed with the bean cooking water. I used half a pound of maple cured bacon chopped instead of fat back.

The key is a low slow oven: 325 degrees, uncovered. Check every few hours. The top got crusty but the beans were sweet, creamy and flavorful. This batch took about 6 hours. Delish!

The next time I'm going with a lower temp for a longer time. I believe the recipe comes from a time when they cooked overnight using residual heat from a brick bread oven.

For the preferred popcorn bowl, I use an Ellengers 13" agatized wood bowl. It also double as salad bowl. Not pretty, but efficient.

The problem is it is a tad dry and there are a lot of kernels that do not pop. If you use a timer setting to get the last of the kernels you are close to burning the popcorn. You have to actually monitor the pops.

It is a grad school or lazy bum trick. Stovetop in grapeseed keeps my wife happy.

168 If you like stove top popcorn, I highly recommend the Whirley Pop. Throw in a tablespoon of oil, half cup of kernels, and some salt, turn on the heat, and crank away for 4-5 minutes (until the popping slows).

It's also great for making kettle corn (same process, just throw in some sugar as well), though there is a bit more clean-up after making kettle corn.

168 If you like stove top popcorn, I highly recommend the Whirley Pop. Throw in a tablespoon of oil, half cup of kernels, and some salt, turn on the heat, and crank away for 4-5 minutes (until the popping slows).

It's also great for making kettle corn (same process, just throw in some sugar as well), though there is a bit more clean-up after making kettle corn.

A few years ago, my husband got me one of those movie-style popcorn machines--the glass box, the stirring pot, and all. It's nice, I like that it keeps the popcorn warm while I'm eating the first bowl.

I love popcorn, so he thinks it's the best gift he ever gave me. I let him think so, but truth be told, I liked making it in the cast iron skillet just fine.

Heh, it's mostly for my 80+yr old Dad --who loves *real* butter and not "that fake butter-flavor crap", hates to cook and REALLY HATES kitchen cleanup...

I was going to buy a popcorn maker for him, but realized it would only present more cleaning (and storage!) issues.

He can be a bit unsteady on his feet, so heavy pan over hot stove is getting too difficult for him now.

I've got one in a 12" skillet; it makes nice omelettes. Mine isn't top quality though; the no stick coating is chipped around a couple of the handle brads. Hey, I got it free, so I ain't bitching (much).

Case in point, one time I was all sore and stiff from gardening and kiddingly remarked that I needed one of those long-handled shoe horns like my father had. Two days later I was the proud owner of *2* long-handled shoehorns.

Well I made the mistake of saying out loud that I needed to get some cilantro.

I now have 1#, yes, that's right, one pound of cilantro. O.o

Picture the volume of a pound of cilantro. It looks like a pound of weed (or so I hear).

MmmmHmmm. Sure.

I like using fresh cilantro, but there's way too much in a bundle from Walmart (about 99 cents iirc), so I take the remainder and wrap it tightly into a cylinder using 2 or 3 plastic grocery bags, and freeze it. When I need more, unwrap and slice off a section from the leaf end. I get several dishes out a bunch that way.

Well, I've substituted a mix of basil and oregano in salsa recipes. Not bad. Better than the soapy taste that cilantro renders to me, and better than omitting it.

I don't make guac. Mostly because there were just *never* any ripe-enough avocadoes when I've wanted to make it. I gave up.

409 Microwave popcorn made our microwave blow up. My daughter had gotten a package of it, I think someone gave it to her at work. My son put it in the microwave, and about 3 seconds later there was a huge POP and sparks and boom went the microwave.

When my husband and I went to Costco to buy a new one, we ran into our realtor, and when she saw us looking at microwaves, she said oh, were you making popcorn? Apparently it's a fairly common problem.

434 My Dad bought his own Popcorn maker from a supplier and they sell the popcorn with oil and popcorn. It's like 22 bucks and you get like 50 packets of popcorn and oil. I get the Gold Medal Product Coconut oil kit 2838 Popcorn which is also listed on amazon. My Dad was in a Wheelchair and hated where they had the handicap seating in theaters so we build our own Movie Theater and made sure his seats were in the best spot instead of all the way in the back or in a corner. He also built his own little pub outside of his Theater

We've really gotten fond of the popcorn seasonings like white cheddar, nacho, etc. I like the ranch a lot.

Regardless, I made some great chili this week in our instant pot. I think it was so good because I browned the beef, pressure cooked the beef, then made the chili and pressure cooked the whole thing again before letting it slow cook for an hour.

The whole thing had a great texture. Tender as heck, as you can imagine.

The Instant Pot guy deserves every penny of his millions.

It depends on the brand. Some are dandy but everyone got on the bandwagon and there are a lot of cheap knockoffs that are crap. Reviews are helpful but a lot of the reviewers don't even seem to know what brand they really bought.

Yesterday we dined on the fine cuisine of a funeral luncheon, as we shall again tomorrow. (different dead people, so - fresh). Today we had our church Christmas lunch at a local buffet named for a politically incorrect Indian. That's three days I don't cook. Tuesday we'll have leftovers.

In the Mennonite culture I grew up in funeral lunches always include bowls full of sugar cubes. People would dip in the coffee and crunch them down. Never understood that.

They are, and they are like a ceramic non-stick, rather than a teflon. I think the copper coloring is a marketing gimmick.

They are pretty good, until the pores get clogged. But you can scrub them with a scrubber sponge. I still like them OK. We got ours at Costco and they are grey.

Honestly, I bought mine because I was looking for an actual LOW cooker. They're hard to find these days because food safety whatevers, and I saw that you could set the instant pot on low and let it barely cook away.

Then, once I realized what it actually could do, I started using it every day or two. It's mostly just an all-in-one pressure cooker/slow cooker that can saute, too. It really is great and extremely useful.

Plus side, it doesn't terrify my wife like our old pressure cookers. She always hated being in the house when those things were gassing off.

The no-stick is good as advertised, but the handle is rather chintzy. Not heavy duty enough. Attached by rivets. In time, the handle will degrade from weight and shock of pan flipping. Otherwise, it is a good non-stick pan with good heat dispersion.

547 I don't blame you, lin-duh. It's hard trying to do it all, and besides, you can't.

Do what I do. For cookies like Mexican wedding cookies, make the dough, roll into balls and then freeze on the baking sheet, then put in Ziploc bags. Whenever you're ready to bake them, all you have to do is bake them! No clean up because you did that before.

It helps to break it up, timewise.

Favorite Airport - Love Field in Dallas, much much more passenger friendly than DFW. I remember Tampa as having a very friendly, easy to negotiate airport as well.

It's a clever design with a removable stainless inner pot, and everything (not the heating part) can go into the dishwasher. I personally like not having non-stick on this because I can scrape away at the stainless with scouring pads or what not.

But what I have found myself doing is browning meat prior to pressure/slow cooking using the saute setting and then all of the charred bits stuck to the pot stay in and release as flavor in the stew, chili, etc.

It probably needs to work with your style of cooking, but if you use a slow cooker a lot this is a revelation. Throw a frozen london broil in, pressure cook for twenty minutes, vent, throw the carrots, potatoes, spices, etc. in and pressure cook for another twenty minutes, and you've got essentially a slow cooker meal from frozen to on the plate in under an hour.

There's a bit of a learning curve, but it's not too bad. They even recommend going through the trial run process that is in the instruction manual. I think you boil water, essentially.

Like anything else, what makes you better is using it a couple of times. There are +/- buttons and "adjust" buttons that are a bit counterintuitive, but it makes sense after cooking a couple of things.

The hard part for me was there is no "start" button. Set your desired times and temps and it will start automatically after ten seconds or so after the last button was pushed.

I bought one and ended up throwing it away. I did not think it cooked nearly as well as a real, stainless pressure cooker. I was able to burn things in the instant pot that I never burn in the PC. It also takes longer than a real PC as well.

599 Back in my 4-H days I used to make candy to enter in the county fair. (Why candy? Because my clever mother realized that only three or four people entered the candy division, so I was almost guaranteed a prize, as opposed to several dozen entries in the cookie division.)

Here's my recipe for delicious and easy caramels:

1 cup butter
1 cup Karo light corn syrup
1 cup light brown sugar
1 cup white sugar
1 cup sweetened and condensed milk

Heat everything in a saucepan to a soft ball stage and pour into a buttered 9"x9" pan.

606 Late to the party, cutting wood today, but I want to thank Bluebell and Weasel for the great job on the cookbook. Mine came Friday and just let my greasy mitts go thru it for a bit before I wrapped it for my sister.

Over the last few years we have been compiling all of our old family recipes, believe we are over 200. B4 I retired last year gave thumb drives to all the nice ladies at work as my going away present.


Off to a hot shower b4 I stiffen up.

613 Have a question for the cooking horde in reference to my soggy duck skin. Duck is due to come out in 10 minutes. Can tell from looking through the oven window that skin is not crispy like I want it. Which would be better? Zap it with the broiler or take a torch to it? Worked that the broiler might dry out the duck, but all that fat with my propane torch might start a kitchen fire?

Of note, I am a klutz. If there is a way to botch something, I will find it.

617 Ah, popcorn! Up to about a year and a half ago, I used to get the jars of popcorn kernels at Walgreen's because you could get two of them for $3 while the same sort of thing, whether name brand or store brand, at the grocery store was like $8.

Made on the stove in just the way you describe. Coat the bottom of the pan in oil, drop a kernel in, and when it popped, you'd pour the rest of the batch in. As I recall, precisely 1 tablespoon less than half a cup of unpopped kernels would absolutely fill the pan I used, and it was so much better than any in the microwave.

One Sunday afternoon in August of 2016, I made a double batch and sat down to enjoy the HQ. By noon the next day, I had extreme abdominal pain. The CAT scan said "diverticulitis" and my doctor said "no more popcorn." Nobody else in the house wants to make it on the stove, so my wife threw out most of two bottles of popcorn kernels, and I was sad.

After my colonoscopy (the worst part being having to spend more than a day on "clear liquids") the doctor said that if I increased the fiber in my diet, the diverticulosis might heal. So, twice a day like clockwork, I'm drinking this orange goo. Maybe I will be clear to eat popcorn again in 2021. Oh, I hope so!

619 Regarding popcorn, I started doing the stovetop pot method. A lot less expensive then microwave, and it doesn't dry out like the air poppers.

I've used peanut oil, canola oil, coconut oil and also the Orville butter flavored oil (which is soy oil, coloring and flavor).

Right now I pop in canola or coconut oil (I can't taste any coconut flavor), pour a little out into a bowl and spray with a canola and yellow food coloring mix (or the Orville buttered oil) then salt. Then repeat until all is salted and buttery. Canola actual has a slight buttery flavor to it.

I don't like melted butter because the water content makes some of the popcorn soggy.

624 Great thread. As for popcorn, coconut oil is a must. We like to make bacon popcorn, where you fry up a half dozen pieces then use the grease with coconut on the stove. Drizzle remaining bacon fat and butter mix in big steel bowel with salt, pepper and broken bacon bits. Dem bits r tasty.

The chili recipe is close to the boss, but we use seamed Chuck tenderloin. It makes a world of difference.

627 I've made stovetop popcorn before, and it turned out great. I wanted to submit my recipe for the cookbook, but when I tried it again it didn't turn out well, so I didn't. I don't know what went wrong that time. I hadn't made it in a while, so maybe the popcorn I had was stale.

I second the suggestion above of using coconut oil. I also used popcorn salt, which is ordinary salt ground to a fine powder, so it sticks to the popcorn better. I also melt butter in a separate pan and drizzle it over the finished popcorn.

The great thing about making it on the stovetop is that you can adjust the salt and butter to taste. And it's real butter instead of that oily yellow goo.

My first use of Ace of Spades recipes was way back when, for Thanksgiving I was given the task of bringing cranberries and found this great recipe on Ace for bourboned cranberries and have been the hit of many Christmas and Thanksgiving dinners! 1/4 cup popcorn kernels in a brown paper lunch back.
close the bag up, fold it over a couple of times
lay on the side in your microwave
microwave for ~2 min, until popping slows to about 1 or 2 per second
remove immediately into a bowl

No oil, just pure corn.
