The pro bowlers are on a whole different level than the recreational level. The thing that no one can see is the oil pattern on the lane. The amount of oil and the length of the pattern dictates how you play the lanes. I've bowled on some of the pro shots. I'm a scratch (200+ average) on house shots. I've never been able to average more than a 178 on pro shots. The pros average more than 225 on the same shots.So, the pros are like MLB players, and the recreational guys are like the Saturday softball guys. A huge world of difference. Bowling is a sport. Many people's perception is a bunch of out of shape people drinking beer and smoking cigars. The same could be said of Saturday softball leagues.
Wait - is the microphone on on my computer? Skill at an activity sport. Chess players are enormously skilled, MUCH more than bowlers, yet chess is not a sport. Not that I was even remotely competitive; my obsession lay in science, not in chess. Still, my favorite recollection was a guy getting his balls beaten off by one of the highly ranked players. IIRC, men and women used to complete against each other in chess. But when the women would get into tough spots, they would unbutton a button or three from their blouse. They soon found out that "Cannonball Run" gambit failed. So they quit playing against men.

You don't really need a perfectly random number generator, even dice aren't that (they will tend to favor one side for example). You just need one random enough for your purposes. For cryptography that means something so random that figuring out the pattern would take at least as long as simply decrypting the information for example.

Here's an example of economists failing. Every basic historical and economic standard says that simply printing money to pay for things without an economy to back it should cause rampant inflation. Out of control.
Yet for 8 years, the Obama administration spent more and more and more money on everything they wanted, DOUBLING the debt, creating deficits over a trillion dollars despite never having growth of even 3% overall for that time period. There was inflation, mostly hidden by the press and clever accounting, but it wasn't the huge inflation you'd expect. Other factors entered in and made the system not give the typical results. Economics is like climate science. Your models make perfect sense in a closed system but in the real world its too complicated and vast to understand or predict. It's not possible to do controlled experiments, and so economists are reduced to making observations and trying to draw conclusions from them, but as you say, there are lots of uncontrolled variables in between observations that confound the interpretation. I can't remember the details, but I remember reading a few years ago a paper showing how the "efficient market hypothesis" is blown away by real-world behavior of markets. It's bunk mostly, they know it, but to admit it would invalidate and render useless a lot of modern theory and work. The story went that he was the only person in his village to own a camera, and when the Russians knocked down the U2 the cops excitedly came and got him from his house, dragged him to the site and he snapped the official photos (as a young child) with his hobby camera. The cops took the film away when they left, and he kept the camera. The grown man later came to America, after getting an engineering degree, moved to San Diego, invented a bunch of stuff (most notably, critical parts of the early tympanic thermometer), and made a pile of dough.
