Food Thread: Just Shut Up And Eat!

One of the pleasures of dining is the conversation with one's dining companions. Whether it's about the food or politics or baseball or the silly shoes in the window of the shoe store next door to the restaurant is secondary to the simple joy of conversation.

And I am not that much of a curmudgeonly old fart that I don't get the loud bar vibe. It's high energy, and it works when people are mingling and drinking and trying to get laid.

But for fvck's sake, can I please have a simple meal in a bistro without the noise level of a catapult launch on an aircraft carrier? How hard is it to manage sound in a restaurant? I'm not asking for recording studio quality, but a few baffles on the ceiling and some soft materials on the walls will go a long way to dampening the racket.

And maybe while you are at it Mr. Restaurant Owner, get that loud table in the corner with the braying, combed-over asshat bragging about his new boat to tone it down a bit. Buying a meal in a restaurant is not a license to ignore social graces.

I won't even mention the precious little snowflake children who squawk and scream and run around. My parents would have dragged my ass out of the restaurant and slapped me silly before tossing me into the car while they finished their meals.

Oeufs en Meurette
Oh man! This brings me back a long, long way. My mom used to make this every now and then. It's a great dish, but quintessentially French, so it might not be for everyone.

And what do I mean by that? I'm not sure how to describe it; maybe a reliance on dry and astringent flavors. In this recipe the red wine is in the forefront, and it doesn't provide any counterpoint of sweetness.

Yeah....I'm babbling. Somebody help me out!

Chicken sashimi is risky; and gross
No! Really? I sometimes joke about "chicken tartare," but it never occurred to me that there were actual human beings dumb enough to try it. I have read studies that show between 1/3 and 2/3 of raw chicken is contaminated with Salmonella or other even nastier bugs. It's partly a function of the natural filth of chickens (cloaca anyone?) and the way they are processed.

I will eat raw fish, and I will eat raw beef. I am aware of the risks and understand how to minimize them. But eating a food that is almost certainly contaminated with a pathogen is behavior I associate with profound stupidity.

I have been on a red pepper flake kick recently. For some reason the jar of the stuff in my spice cupboard seems to be awesomely flavorful, unlike the usual stuff which is just hot but without much complexity. So while poking around I came across this recipe. I haven't made it, so no guarantees, but it looks like a straightforward recipe. Spicy Pasta Alla Norma. I love the ricotta garnish, which is becoming a fixture on pasta here at Chez Dildo.

I found this recipe at Cooks Country, and it's useful because the ingredients are almost infinitely flexible.

Needless to say it needs more bacon, and don't bother peeling the potatoes.

Spinach, Potato, and Bacon Frittata

10 large eggs
3 tablespoons half-and-half
Table salt and ground black pepper
1/2 cup crumbled goat cheese
1 (6-ounce) bag baby spinach
3/4 pound Yukon Gold potatoes, peeled and cut into 1/2-inch pieces
6 slices bacon , cut crosswise into 1/4-inch strips

1. Adjust oven rack about 5 inches from heating element and set oven to broil. Whisk eggs, half-and-half, 1/4 teaspoon salt, and 1/4 teaspoon pepper together in bowl until combined. Stir in 1/4 cup cheese.

2. Microwave spinach in large microwave-safe bowl, covered with plastic wrap, on high power until wilted, about 90 seconds. Transfer spinach to clean dish towel and squeeze out excess liquid. Microwave potatoes in now-empty bowl, covered with plastic wrap, on high power until tender, about 5 minutes.

3. Meanwhile, fry bacon in medium nonstick ovensafe skillet over medium heat until crisp, about 6 minutes. Transfer bacon to plate lined with paper towel and pour off all but 1 tablespoon fat from skillet. Add potatoes to skillet and cook until golden brown, about 5 minutes. Add spinach, bacon, and egg mixture and cook, using rubber spatula to stir and scrape bottom of skillet, until large curds form but eggs are still very wet, about 2 minutes. Shake skillet to distribute eggs evenly and cook, without stirring, until bottom is set, about 30 seconds. Sprinkle remaining cheese over top.

4. Broil until surface is spotty brown, 3 to 4 minutes (eggs should be slightly wet and runny inside). Remove from oven and let stand 5 minutes to finish cooking. Slide frittata onto platter and cut into wedges. Serve.

Yrrch!. I love chicken in all its fully cooked iterations, but I am crazy-paranoid while preparing it; washing my hands repeatedly, isolating the cutting board I use, switching knives. You do not mess with raw chicken.

11 Restaurants and Kids

I had a simple rule. If the kid has a meltdown, me and the kid are going to sit in the car in the parking lot while the rest of the group enjoys their meal.

We'll get our meals in doggie bags.

No drama, no anger, no lectures laced with irony .... just a consequence.

I had to do it once. I grabbed some jelly mints as Kid and I left the building.

After that, no problems.

RECIPE:

Make a Jalapeno Popper filling and stuff a pepper.

Instead of breading and frying, wrap the jalapeno in a small flour tortilla and fry it.

You end up with a jalapeno popper that tastes awesome and don't have to worry about screwing up the breading, egg wash, all that crap.

If we lose power, we have a generator so we can keep the fridges/freezer running, the computers, coffee maker, TV, and can run a line to a George Forman hamburger thingy my son gave me a few years ago that's been hiding in a cabinet.

15 You have to understand, they HAVE to turn up the music to be heard above the diners' chatter.
It's the ambiance. you can't have a trendy bistro without ambiance.

And hard surfaces, they are easier to clean, so have lots of hard surfaces. It makes the music louder.

16 I've been to some of the new micro breweries. They seem to favor setting them up in a industrial style setting, one even have metal high top tables and bar stools. The noise bounces off of everything and if it's one that draws in the after work crowd, jeez. They usually have one or two beers I like, but I prefer a good bar/tavern and a selection of some decent beers

20 I despise peoples' kids running around in restaurants. I've noticed it's been getting worse the last few years. Ours was taught to keep his butt in the chair, use utensils to eat his food, and we always brought a coloring book and crayons or something to keep him entertained. Never had a problem.

And ditto on the noise factor in some restaurants.

Her Majesty and I are too busy reading to be a loud table. Then there's the adjoining party of ten yelling from one end to the other and cackling at maximum volume.

We go to the same Cajun restaurant most Saturdays so HM can have her chargrilled oysters and her drinkie. We order without fuss, treat the staff courteously, eat quietly, tip generously and leave when we're finished. We get treated like royalty when we come in.

We switched from Friday nights because that's happy hour, way too crowded and noisy.

I finally got around to watching 'Burnt' over the weekend. Some good moments, but a lot of inane and annoying political correctness to it.

Since it didn't cost me a penny to watch I got my monies worth. Did I learn anything about upscale cooking?

Not in the least. Sous vide. Wow! What a discovery. As if a caveman 2,000,000 years ago didn't notice that food placed on a wet log cooked more evenly.

26 Revived some rusty cast iron cookware - including a big-ass griddle.

Made burgers last weekend on the recently cleaned, derusted, seasoned cast iron griddle. "Smashed Onion Burgers" where you put chopped onions on the grill, slap the patties on top of the onions, and cook.

Turns out 'grilling burgers on a flat top' is pretty awesome.

One even described an episode where this stupid woman actually changed her baby's diaper on a table in the middle of the restaurant where people were eating.

Know exactly what you are saying. Would much prefer to be in a cave-like dark tavern w/wooden tables and Naugahyde wrap around seats. And I am not even a barfly and don't go out to drink, but I've been in both places and much prefer the latter.

36 Was turned on to an epic restaurant a few weeks ago by a new friend that has not upgraded it's decor or menu since the '70s. Seafood mainly but also a killer prime rib. Real cocktails like Old Fashioneds and Martinis and not a craft beer in sight. Nothing froo-froo. Who knows what the real paint color is: lights are down low and cigarette smoke has turned the walls yellowish decades ago.

And quiet - you can actually talk to each other.

The objection to ill-trained kids to me is less running around and more eating like pigs, trash on the table, trash on the floor, etc. We call the manager and give $5 for them to give to the table cleaners.

No narrator, no BIG STORY, no history lessons or lectures: just a series of people talking about barbecueing food with family and friends. Starts out with South Africa, goes to Japan, Sweden, Mongolia ...

Surprisingly affirming of the basic decency of people.

Ah. Well, I'm pretty crotchety about loud restaurants and unruly kids running around too. If it's a low-end place I don't really pay much attention but if I'm spending a fair amount of money I don't want to be surrounded by chaos.

As they were leaving, the entire restaurant burst into very loud applause.

We went to a nice little seafood place nearby that we like on a Friday.

This place is just a large room with linoleum floors, hard walls and hard ceiling.

They had some LOUD blues band that suddenly started playing. Unpleasantly loud.

The sound just bounced all around the place, reverberated, and made talking impossible.

They were loud enough that their equipment even distorted.

We thought the meal sucked.

And have never been back.

From what I've seen from the longer-range ones, it'll do loops in in the Atlantic and then move north. At this point, this is all uncertain, but it's worthwhile to be aware of it.

There is an italian place out near the airport that is nice like that. Great for lunch during the week. Nights, different menu, dim lights and not loud. (Except Fri. nites in the summer) You can even eat, drink and smoke on the patio.

Turns out there's more variety than I expected: American brandy, cognac, and Armagnac all distilled from wine (or grapes). Then calvados from apples, eastern Europe for plum brandy, etc. They are much more different than I anticipated. Makes things interesting.

Like with bourbon, I'm finding out that price does not determine my preference. It's easy to find brandy that costs well over one or two hundred dollars. Screw that. Part of the fun is finding bargains.

Very well aware. Gov. Deal has declared a state of emergency for every county in the state. Right now it looks like Savannah isn't going to get hit nearly as bad. Main concern is tornadoes.


Back on food topic, I had to feed several hungry people Friday night as we were prepping, and I bought packages of Mama Mancini's meatballs, some decent jarred marinara, and served a yuge bowl of pasta. Made a nice salad and some garlic bread, and had some leftover melty chocolate cherry cake and ice cream for dessert. Everyone was very happy.

108 Noise level in restaurants is more than an irritant. Two years ago I joined the head and brain injury club. Many people with brain injuries experience hyperakusis, oversensitivity to noise. A noisy environment is torture. For "normals" (people without brain injuries) the equivalent of sitting near the speakers at a rock concert. We regularly ask business to turn it down, usually they do. When they don't, within minutes I'm exhausted, unable to think, and if the volume is high enough, I've been unable to place an order or even speak.

When the music is loud, people speak louder, it's a vicious cycle.

What customer or patron has ever complained about the background music being too soft? Why... *why* do businesses and other public establishments do this?!?

He certainly lacked his usual clarity in this one - in a lot of areas. I think the 'models' simply don't allow for a simple principle: objects in motion in a certain direction tend to continue in that direction. Especially when they're in the highest strength category.

A car traveling down a four lane interstate at 185 mph is little influenced by crosswinds. Irma sat at Cat 5 for a long time.

My own hearing is somewhat compromised (too many metal concerts and too much time shooting without ear protection--all in my youth), so I dislike the loud places.

Table turnover. They're trying to maximize the number of customer per day by balancing the food/atmosphere drawing in customers vs the noise level causing them to leave as soon as they're done eating. The trick is to keep the noise level just below the point where the customers decide not to return in the future.

I see less of this because not that many families around here can afford to take their kids out. Sunday brunch after church is a big deal, but the kids who learn to sit still in church do all right in restaurants.

When smoking sections were a thing, my friends and I would ask for the non-screaming child section. There seemed to be a lot more kids 15 years ago.

That said, I still recall a group of adults who sat at one table and allowed their 8-11 year children sit at another table. I put up with their noise, but the gross comments put me over the edge. I was with my little nephew, who was shocked that "big" kids behaved like that. Those parents couldn't have been more condescending if they had PhDs in jerkitude. (I gathered they had degrees in chemistry, engineering or medicine because it was Midland Michigan.)The gist was that their children were spectacular and I needed to lighten up and sit down. After the mini food fight started, the manager came over and the mothers had to do a noisy conversation to find out who did what, followed by the culprits moving to the parents table, etc. And shooting me dagger looks as if I called the manager.

It still makes me mad thinking about it

The music thing is kind of funny. Almost none of the restaurants around here have music, except Big Boy's oldies and the Italian restaurant's mix of Rat Pack and lady crooners. Last weekend I took my brother to birthday dinner and the restaurant had Phil Collins greatest hits (the solo work) playing in the background. It was just loud enough that we noticed when a song we recognized came on, but it was in the background otherwise.

I had the worst job interview ever there once. The guy who interviewed me was a huge prick for some reason. I got up and left before it was over. While I walked to the car, I called the placement service that sent me there and told them alllll about it.

I later had a job there and the boss actually expected me to come in during a hurricane after the po-po had asked everybody to stay off the roads (this was back in '05 or thereabouts). I told him over the phone, "Are you serious?" Some people actually went to work.

I just tackle one hurdle to the next of home ownership. But isn't that what everyone has to do? Miss the CA weather when the weather is gnarly here, but that is all I miss. I don't even miss the beach, because the beach drastically changed from when I lived in Redondo Beach back in the 70s. Now the whole strand sucks, from Seal Beach to Malibu to even farther north in SB.Without a doubt CA is doomed unless a very, very good deal happens. MAGA! :-)

I think it provided a needed counter-point to a certain drug-addict 'chef' who still does the tv stuff who glorified his own drug abuse. There was no glorification. He got beat up, lost the love of his life, went into hiding for years, and was rejected by nearly everyone.

But I saw a lot of controlling behavior, obnoxious controlling behavior that he somehow gets away with. I expected some revelation about upscale cooking, perhaps. All I got was sous-vide and butter.

270 232 ... Tammy, Thanks for the pear brandy name. Xante is less expensive than some but gets great reviews. (I just checked.) It is a four year old cognac infused with pears then aged in oak barrels. It isn't sold in Virginia but can be ordered.
If Thor hasn't done this, tell him to try it on ice. Some of the reviews said it changes the taste profile slightly, bringing out different qualities. It sounds like it would be good in a cup of strong tea.

271 Noise in restaurants can indeed ruin them. I thought that for everything above the most basic mom/pop local place, there was *some* understanding of this. Bistro-environment, family restaurant, steakhouse - they each have their own style and noise level. But like CBD and others, seems that more and more places don't match their noise to their overall niche.

And that's important, at least to us, because we've dramatically reduced our restaurant-going, though mostly because the value proposition has collapsed. Most places are *so* expensive now, for what you get. Not even a close call.

We're decent cooks, and the epicurean revolution has meant available ingredients are now about limitless (SoCal area), so ..... fewer and fewer compelling reasons to eat out, when the price will equal 2-4 meals at home.

Yes it has, for several years (I'm in NY).

This is why I have a hard time taking government officials seriously who care about "price gouging".

They let hordes of illegals in here, who despoil supermarkets like locusts, reducing supplies. As a result, prices go up. Even if they don't immediately raise taxes to cover entitlements, inflation they create acts as a hidden tax.

313 Found a recipe for a baked chicken you make in the crock pot. Place carrots, celery and onion on bottom of cooker. Rub chicken with special rub (ask me if you are interested) and place whole chicken on top of veggies. Cook for about 8 hours for a 4-5 lb chicken. Remove chicken and place in 9x5 pan and cook in 400 oven until skin crisps, about 5 to 10 minutes. Supposedly placing the chicken on top of the veggies will keep it from completely falling apart when you try to remove it from the crock pot.. It's cooking now so we shall see. Sure smells good!

Don't know how long you've been where you are, but a ways back, Olamendi's had fantastic carnitas. Heard it went downhill years ago, has been an age since I've been there.

Ever see that movie he did with Kathleen Turner? I forget what it was called, something like Becky Sue Got Married, or Becky Sue Went to the Prom, or something along those lines.

Cage played the husband. He was like a parody. He was so bad he was funny. The exaggerated facial contortions to try and portray agony, the over-the-top weeping and sobbing. It was a real tour de farce.

354 Tinfoil I'm south of you - we both have excellent access to Mexican and about any other imaginable "ethnic" grocery store (actually Thai stores are limited to parts of LA, unfortunately).

Up above I reported that our restaurant dining has declined dramatically, mostly due to the value proposition fading away - few places have offerings that are worth the vastly inflated prices any more. And with good ingredients available, cooking at home is better than ever. One exception to this trend would be cheap Mexican places - I mean the few really good ones that are still no expensive. Hard to duplicate their stuff at home.

357 The guys in my shop make carnitas for our end of year party for all the workers. I think they buy about 5 hogs. They cut it into chunks and have huge vats of oil and deep fry them.
Then the girls shred all the meat.
The shop guys like the head the best. Also the organ meats.

The trip last October, two couples, we asked the Hispanic woman at the hotel desk (local Mexican-American) for the best family Mexican place in Santa Maria. Can't remember the name (now I'm gonna go look it up), tiny place right near a major intersection. Very solid. Typical, down to the cute young girl/daughter of the cook serving the food. We were the only gringos there, always a good sign.

377 For all my gripes about some restaurants, when I've had an enjoyable meal, I make sure to tell the manager. It might be something as simple as beef, which I like VERY rare, cooked properly, or herbs that make the soup better, or a waiter/waitress that does a good job. When I ask to speak to the manager, he braces for complaints. The look of relief, even gratitude, is evident. Apparently, they don't get much praise. And we are good tippers.These things get noticed and remembered.

They are. I watch the guys cook the parts and they save the gross parts for themselves.
They think I'll be grossed out by them chopping the whole gutted pig. I watch them.
They make me tacos before the lunch, but they give me the white people salsa. They eat habanero peppers with the carnitas.

I'll take a picture this year. We usually have the party around Thanksgiving.

I never fry any meat besides ground, because it can dry the meat & could make my house smell like a dive in Tijuana. Nothing historic, just very solid family Mexican, and not just "border" Mexican. And not expensive.

Thanks, will write down one more (the seafood cocktail place). Probably won't be getting that cocktail, though ..... been 30 years, but got a case of food poisoning from the cold seafood salad at the Space Needle in Seattle that was the worst sickness in my life (probably would have killed anybody with other health issues). Unbelievable. So, though irrationally, have skipped many incredible uncooked seafood delights in Vietnam, Japan, etc. over the years since.

Tami, check the Yelp reviews for the only Walmart in LA (which I recently heard has been closed). You've probably seen it on tee vee in periods of "civil unrest" when they trash the place. Keep in mind not all Walmarts are the same. they encapsulate the local populace. The one closest to me is really nice. I even worked there for a couple years during the Bad Times (tm). Choose the Walmart in the better neighborhood.

When we go to Hawaii and are eating at the resort, the fancy romantic restaraunt the rich people let their kids run all over the place. I want to scream at them. If you can't control your kids eat at the more casual restaraunt.

Noise is certainly a factor. I love the prices, but have a hard time enjoying, the Costco food court for that reason. (Also that it's completely outdoors, crowded, and let's face it-- people are slobs and everything's messy.)

Not all locations have grocery pick-up, but more are being added all the time. I was pleasantly surprised at how well-designed and efficient it is. Lots of people now order groceries while they're at work and just pick up on the way home. I can also see how this could be great for elderly, frail, or disabled people.

Freaking loud bass line, TV's everywhere, etc. This was a seriously expensive restaurant set up like an effing sports bar.

Never went back.

653 Worked in a restaurant in the jersey shore in my yute. Old black man named Smitty played piano 4-5 nights a week. Played piano soft as an angel, voice like Louis Armstrong. People came not so much to eat but enjoy that old mans music. Sweet old guy, always happy. Dont come like that anymore.

657 There was a French restaurant in Denver in the Governor's Park area that lasted only a few years. I forget the name, something like Angels, one word that sounded heavenly, a hipster place that attracted Yuppie types. Beautiful inside, shined hardwood floors, very elegant. Had the best bouillabaisse there that I've ever tasted. Just perfect. But as it filled up, and crucially, as the women specifically became progressively drunk, the place got louder and LOUDER and L O U D E R and more SHRILL, like Salem during the height of the witch trials I'm imagining, until eventually it became unbearable. A few curtains, a few rugs, just a few fabrics here and there would have buffered the cacophony. But apparently unbearable noise is what they wanted. Then they failed.

658 It's not just the lack of sound deadening materials. Or the manager's failure to put a sock in the mouth of a drunken woman. It's most commonly their choice of muzak -- often apparently chosen to please the Gen X servers rather than the adult customers. More than the volume (why must it be COMPETETIVE w/conversation) is its relentless mediocrity. Who knew that restaurant music is a 'lowest bidder' commodity?
