Food Thread: Just Shut Up And Eat!

Whether it's about the food or politics or baseball or the silly shoes in the window of the shoe store next door to the restaurant is secondary to the simple joy of conversation. And I am not that much of a curmudgeonly old fart that I don't get the loud bar vibe. It's high energy, and it works when people are mingling and drinking and trying to get laid. But for fvck's sake, can I please have a simple meal in a bistro without the noise level of a catapult launch on an aircraft carrier? How hard is it to manage sound in a restaurant? I'm not asking for recording studio quality, but a few baffles on the ceiling and some soft materials on the walls will go a long way to dampening the racket. And maybe while you are at it Mr. Restaurant Owner, get that loud table in the corner with the braying, combed-over asshat bragging about his new boat to tone it down a bit. Buying a meal in a restaurant is not a license to ignore social graces. Hell, there's even some research that shows changes in taste perception corresponding to noise levels.Effect of background noise on food perception I won't even mention the precious little snowflake children who squawk and scream and run around. My parents would have dragged my ass out of the restaurant and slapped me silly before tossing me into the car while they finished their meals. Now get off my lawn!

Oh man! This brings me back a long, long way. My mom used to make this every now and then. It's a great dish, but quintessentially French, so it might not be for everyone. And what do I mean by that? I'm not sure how to describe it; maybe a reliance on dry and astringent flavors. In this recipe the red wine is in the forefront, and it doesn't provide any counterpoint of sweetness. Yeah....I'm babbling. Somebody help me out!
Chicken sashimi is risky; and gross
No! Really? I sometimes joke about "chicken tartare," but it never occurred to me that there were actual human beings dumb enough to try it. I have read studies that show between 1/3 and 2/3 of raw chicken is contaminated with Salmonella or other even nastier bugs. It's partly a function of the natural filth of chickens (cloaca anyone?) and the way they are processed. I will eat raw fish, and I will eat raw beef. I am aware of the risks and understand how to minimize them. But eating a food that is almost certainly contaminated with a pathogen is behavior I associate with profound stupidity.
I have been on a red pepper flake kick recently. For some reason the jar of the stuff in my spice cupboard seems to be awesomely flavorful, unlike the usual stuff which is just hot but without much complexity. So while poking around I came across this recipe. I haven't made it, so no guarantees, but it looks like a straightforward recipe. Spicy Pasta Alla Norma. I love the ricotta garnish, which is becoming a fixture on pasta here at Chez Dildo.
I found this recipe at Cooks Country, and it's useful because the ingredients are almost infinitely flexible. Needless to say it needs more bacon, and don't bother peeling the potatoes.
3 tablespoons half-and-half
Table salt and ground black pepper
1/2 cup crumbled goat cheese
1 (6-ounce) bag baby spinach
3/4 pound Yukon Gold potatoes, peeled and cut into 1/2-inch pieces
6 slices bacon , cut crosswise into 1/4-inch strips 1. Adjust oven rack about 5 inches from heating element and set oven to broil. Whisk eggs, half-and-half, 1/4 teaspoon salt, and 1/4 teaspoon pepper together in bowl until combined. Stir in 1/4 cup cheese. 2. Microwave spinach in large microwave-safe bowl, covered with plastic wrap, on high power until wilted, about 90 seconds. Transfer spinach to clean dish towel and squeeze out excess liquid. Microwave potatoes in now-empty bowl, covered with plastic wrap, on high power until tender, about 5 minutes. 3. Meanwhile, fry bacon in medium nonstick ovensafe skillet over medium heat until crisp, about 6 minutes. Transfer bacon to plate lined with paper towel and pour off all but 1 tablespoon fat from skillet. Add potatoes to skillet and cook until golden brown, about 5 minutes. Add spinach, bacon, and egg mixture and cook, using rubber spatula to stir and scrape bottom of skillet, until large curds form but eggs are still very wet, about 2 minutes. Shake skillet to distribute eggs evenly and cook, without stirring, until bottom is set, about 30 seconds. Sprinkle remaining cheese over top. 4. Broil until surface is spotty brown, 3 to 4 minutes (eggs should be slightly wet and runny inside). Remove from oven and let stand 5 minutes to finish cooking. Slide frittata onto platter and cut into wedges. Serve.

I had a simple rule. If the kid has a meltdown, me and the kid are going to sit in the car in the parking lot while the rest of the group enjoys their meal.
We'll get our meals in doggie bags.
No drama, no anger, no lectures laced with irony .... just a consequence.
I had to do it once. I grabbed some jelly mints as Kid and I left the building.
After that, no problems.

Make a Jalapeno Popper filling and stuff a pepper.
Instead of breading and frying, wrap the jalapeno in a small flour tortilla and fry it.
You end up with a jalapeno popper that tastes awesome and don't have to worry about screwing up the breading, egg wash, all that crap.

It's the ambiance. you can't have a trendy bistro without ambiance.
And hard surfaces, they are easier to clean, so have lots of hard surfaces. It makes the music louder.

Her Majesty and I are too busy reading to be a loud table. Then there's the adjoining party of ten yelling from one end to the other and cackling at maximum volume.
We go to the same Cajun restaurant most Saturdays so HM can have her chargrilled oysters and her drinkie. We order without fuss, treat the staff courteously, eat quietly, tip generously and leave when we're finished. We get treated like royalty when we come in.
We switched from Friday nights because that's happy hour, way too crowded and noisy.

I finally got around to watching 'Burnt' over the weekend. Some good moments, but a lot of inane and annoying political correctness to it.
Since it didn't cost me a penny to watch I got my monies worth. Did I learn anything about upscale cooking?
Not in the least. Sous vide. Wow! What a discovery. As if a caveman 2,000,000 years ago didn't notice that food placed on a wet log cooked more evenly.

Made burgers last weekend on the recently cleaned, derusted, seasoned cast iron griddle. "Smashed Onion Burgers" where you put chopped onions on the grill, slap the patties on top of the onions, and cook.
Turns out 'grilling burgers on a flat top' is pretty awesome.

We went to a nice little seafood place nearby that we like on a Friday.
This place is just a large room with linoleum floors, hard walls and hard ceiling.
They had some LOUD blues band that suddenly started playing. Unpleasantly loud.
The sound just bounced all around the place, reverberated, and made talking impossible.
They were loud enough that their equipment even distorted.
We thought the meal sucked.
And have never been back.

From what I've seen from the longer-range ones, it'll do loops in in the Atlantic and then move north. At this point, this is all uncertain, but it's worthwhile to be aware of it.

There is an italian place out near the airport that is nice like that. Great for lunch during the week. Nights, different menu, dim lights and not loud. (Except Fri. nites in the summer) You can even eat, drink and smoke on the patio.

Someone repeated the old joke the other day (Mudd?) that "a civil engineer designed humans. Who else would run a sewer pipe through a recreational facility".
It amazes me that the cloaca, a real sewer, is used for excretion and reproduction in chickens, and yet you can safely eat raw eggs. I'm surprised the embryo chicks don't all die from bacterial diseases.

Turns out there's more variety than I expected: American brandy, cognac, and Armagnac all distilled from wine (or grapes). Then calvados from apples, eastern Europe for plum brandy, etc. They are much more different than I anticipated. Makes things interesting.
Like with bourbon, I'm finding out that price does not determine my preference. It's easy to find brandy that costs well over one or two hundred dollars. Screw that. Part of the fun is finding bargains.

Very well aware. Gov. Deal has declared a state of emergency for every county in the state. Right now it looks like Savannah isn't going to get hit nearly as bad. Main concern is tornadoes.
Back on food topic, I had to feed several hungry people Friday night as we were prepping, and I bought packages of Mama Mancini's meatballs, some decent jarred marinara, and served a yuge bowl of pasta. Made a nice salad and some garlic bread, and had some leftover melty chocolate cherry cake and ice cream for dessert. Everyone was very happy.

Table turnover. They're trying to maximize the number of customer per day by balancing the food/atmosphere drawing in customers vs the noise level causing them to leave as soon as they're done eating. The trick is to keep the noise level just below the point where the customers decide not to return in the future.

I see less of this because not that many families around here can afford to take their kids out. Sunday brunch after church is a big deal, but the kids who learn to sit still in church do all right in restaurants.
When smoking sections were a thing, my friends and I would ask for the non-screaming child section. There seemed to be a lot more kids 15 years ago.
That said, I still recall a group of adults who sat at one table and allowed their 8-11 year children sit at another table. I put up with their noise, but the gross comments put me over the edge. I was with my little nephew, who was shocked that "big" kids behaved like that. Those parents couldn't have been more condescending if they had PhDs in jerkitude. (I gathered they had degrees in chemistry, engineering or medicine because it was Midland Michigan.)The gist was that their children were spectacular and I needed to lighten up and sit down. After the mini food fight started, the manager came over and the mothers had to do a noisy conversation to find out who did what, followed by the culprits moving to the parents table, etc. And shooting me dagger looks as if I called the manager.
It still makes me mad thinking about it
The music thing is kind of funny. Almost none of the restaurants around here have music, except Big Boy's oldies and the Italian restaurant's mix of Rat Pack and lady crooners. Last weekend I took my brother to birthday dinner and the restaurant had Phil Collins greatest hits (the solo work) playing in the background. It was just loud enough that we noticed when a song we recognized came on, but it was in the background otherwise.

I had the worst job interview ever there once. The guy who interviewed me was a huge prick for some reason. I got up and left before it was over. While I walked to the car, I called the placement service that sent me there and told them alllll about it.
I later had a job there and the boss actually expected me to come in during a hurricane after the po-po had asked everybody to stay off the roads (this was back in '05 or thereabouts). I told him over the phone, "Are you serious?" Some people actually went to work.
Too many strange things happened to me over there. Couldn't wait to get back here.

OMG, I thought nobody did that but me (buying sight unseen)! This place was fully remodeled by the seller for his elderly parents, less than 3 years ago. It's in absolutely turnkey move-in condition. Even a new energy efficient AC/heat pump in Jan 2015 with a 10 year transferable warranty. I think it provided a needed counter-point to a certain drug-addict 'chef' who still does the tv stuff who glorified his own drug abuse. There was no glorification. He got beat up, lost the love of his life, went into hiding for years, and was rejected by nearly everyone.

And that's important, at least to us, because we've dramatically reduced our restaurant-going, though mostly because the value proposition has collapsed. Most places are *so* expensive now, for what you get. Not even a close call.
We're decent cooks, and the epicurean revolution has meant available ingredients are now about limitless (SoCal area), so ..... fewer and fewer compelling reasons to eat out, when the price will equal 2-4 meals at home.

This is why I have a hard time taking government officials seriously who care about "price gouging".
They let hordes of illegals in here, who despoil supermarkets like locusts, reducing supplies. As a result, prices go up. Even if they don't immediately raise taxes to cover entitlements, inflation they create acts as a hidden tax.

Ever see that movie he did with Kathleen Turner? I forget what it was called, something like Becky Sue Got Married, or Becky Sue Went to the Prom, or something along those lines.
Cage played the husband. He was like a parody. He was so bad he was funny. The exaggerated facial contortions to try and portray agony, the over-the-top weeping and sobbing. It was a real tour de farce.

Up above I reported that our restaurant dining has declined dramatically, mostly due to the value proposition fading away - few places have offerings that are worth the vastly inflated prices any more. And with good ingredients available, cooking at home is better than ever. One exception to this trend would be cheap Mexican places - I mean the few really good ones that are still no expensive. Hard to duplicate their stuff at home.

The trip last October, two couples, we asked the Hispanic woman at the hotel desk (local Mexican-American) for the best family Mexican place in Santa Maria. Can't remember the name (now I'm gonna go look it up), tiny place right near a major intersection. Very solid. Typical, down to the cute young girl/daughter of the cook serving the food. We were the only gringos there, always a good sign.

Thanks, will write down one more (the seafood cocktail place). Probably won't be getting that cocktail, though ..... been 30 years, but got a case of food poisoning from the cold seafood salad at the Space Needle in Seattle that was the worst sickness in my life (probably would have killed anybody with other health issues). Unbelievable. So, though irrationally, have skipped many incredible uncooked seafood delights in Vietnam, Japan, etc. over the years since.

Tami, check the Yelp reviews for the only Walmart in LA (which I recently heard has been closed). You've probably seen it on tee vee in periods of "civil unrest" when they trash the place. But, the yelp reviews are laugh out loud funny. So, no, never been in one. But, very much looking forward to it.

Keep in mind not all Walmarts are the same. they encapsulate the local populace. The one closest to me is really nice. I even worked there for a couple years during the Bad Times (tm). Choose the Walmart in the better neighborhood.

Noise is certainly a factor. I love the prices, but have a hard time enjoying, the Costco food court for that reason. (Also that it's completely outdoors, crowded, and let's face it-- people are slobs and everything's messy.)

My friend had campylobacter after eating a salad in a restaraunt. My guess is cross contamination.

Not all locations have grocery pick-up, but more are being added all the time. I was pleasantly surprised at how well-designed and efficient it is. Lots of people now order groceries while they're at work and just pick up on the way home. I can also see how this could be great for elderly, frail, or disabled people.

Freaking loud bass line, TV's everywhere, etc. This was a seriously expensive restaurant set up like an effing sports bar.
Never went back.
If you want old school rat pack style dining, try Vic and Anthony's in the Golden Nugget downtown Las Vegas.

Anyway, I learned two hilarious facts:
- Ashley Judd has had *so much botox,* her face is puffed up like Chucky's. She literally looks like a cartoon blow-up doll.
- Cher keeps a "Dirty Harry-sized' .357 Magnum in a safe spot (I think her bedroom) at her SoCal mansion. Great to find out she's another total screaming 2A hypocrite.

I did this at Texas Roadhouse before the kids got there. A table of 30+ church kids and parents were seated after I was. They were horrible. They quieted down pdq.

stopped by the new cajun place for a sample dish on the way home from picking up tacos... someone we met through Pink Pistols was ordering, so we chatted whilst the 20 something covered in tats and piercings took her order in back.
i LOL'ed at the "Vegan Cajun Cookbook" for sale, and PP person said, everything here is vegan....
i looked closer at the menu, saw she was right, and said "you've got to be shitting me..." with the horror evident in my voice.
PP person (who's preggers, BTW) said "you'll just have to try it and see what you think..."
i said "or not", put down the menu and walked out.
