Food Thread- CBD On Special Assignment

Chef Charles is on special assignment this week. You get me. It could be worse. At least that is what you should tell yourself. Over and over and over again.

As we approach the Labor Day Weekend, does The Horde have any special plans involving food? What's on the menu? That big ass steak above will involve a 2nd mortgage I'm afraid.

The Casa Mis. Hum. will be enjoying flesh grilled over charcoal. Do you use charcoal? Or are do you use LP Gas? There is no right or wrong answer. To be honest with you we have both types of grills here.

Speaking of menus, do you folks plan out menus at home? If so, how far do you plan out? What happens if things don't go according to plan? For example you forget to defrost the chicken, didn't catch any fish? Do you folks have a go-to-meal that is quick and delicious? I'm always looking for ideas.

Creme de Menthe Squares

INGREDIENTS

1-1/4 cups finely crushed Oreo cookies (about 14 cookies)
2 tablespoons butter, melted
1 teaspoon unflavored gelatin
1-3/4 cups cold 2% milk, divided
20 large marshmallows
3 tablespoons green creme de menthe
3 ounces cream cheese, softened
1 package (3.9 ounces) instant chocolate pudding mix
1 cup heavy whipping cream

DIRECTIONS
In a small bowl, mix crushed cookies and melted butter. Reserve 3 tablespoons for topping. Press remaining mixture onto bottom of a greased 8-in. square baking dish. Refrigerate 30 minutes.
In a large microwave-safe bowl, sprinkle gelatin over 1/2 cup cold milk; let stand 1 minute. Microwave on high for 30-40 seconds. Stir until gelatin is completely dissolved. Add marshmallows; cook 1-2 minutes longer or until marshmallows are puffed; stir until smooth. Stir in creme de menthe. Refrigerate 15-20 minutes or until cold but not set, stirring often.
Meanwhile, in a small bowl, gradually beat cream cheese until smooth. In another bowl, whisk pudding mix and remaining cold milk. Gradually beat into cream cheese.
In a large bowl, beat cream until soft peaks form; fold into marshmallow mixture. Spoon half of the mixture over prepared crust; refrigerate 10 minutes. Layer with pudding mixture and remaining marshmallow mixture; top with reserved crumbs. Refrigerate 2 hours or until set. Yield: 9 servings.


We've been making this for a couple of years now for holidays and special occasions. It is tasty.

This "vodka sandwich" escapade, for example, is a hilarious example of someone getting a little too creative.


As we approach Labor Day let us not forget that autumn is right around the corner. Nothing like warm apple cider and pumpkin pie candy. That's right, Pumpkin Kit-Kats.

Your Cob isn't a pumpkin fan. Think I'll pass on these Kit-Kats and continue to consume the good old regular candy bar.

10 The worst thing that happened to me mid-grill was running out of gas before the steaks were done. I brought them in the house and finished them. But since wifey can not eat regular food anymore I don't grill too much.

14 Oh, I forgot. I used to use gas. My last gas grill rusted out and since I couldn't cook that much on it anymore I got the smallest charcoal grill Walmart had. I rediscovered that charcoal grilled steaks actually have better taste than gas grilled ones. Its just more trouble.

16 Yesterday I made a Ham stromboli with some pepperoni, fried sweet pepper onion and home grown tomatoes sweet basil and oregino and cheese. Had 3/4 pound of store bought pizza dough 1/4pound of ham , not sure how much the other ingredients weighed but ate the whole entire ghing myself.

21 My gas grill had itx gas feed hose chewed through and since its old the line and parts connected has to be replaced but haven't been able to find them.
So have used charcoal a few times this summer but its not as easy and quick.

A few years ago we had a freak spring storm that knocked out the power in our area for a few days. On the second day the local grocery store was a distribution point for free bags of ice and we happened to be passing by when the truck arrived. People were acting like animals for free bags of ice and it had only been about 48 hours. I pointed this out to WeaselWoman, and asked her to imaging how they would be acting if they hadn't had anything to eat for a week.

Here's a quick dinner:

Italian Sausage....or whatever kind you want. sliced in small rounds.

Saute in butter/oil mixture. I use either olive or avocado oil.

When browned throw in some slice/chopped peppers. Red, yellow, orange or all of the above. (Not a fan of green)

One large onion...sliced however you like.

Add some more oil if necessary and salt and pepper.

Throw in some Italian seasoning mixture.

Let them cook together for about 5 - 10 minutes.

Throw in some chopped garlic and saute for a couple of minutes.

Add some chicken broth (or broth of your choosing) and some white wine if you like.

Let it simmer for a while.

Serve over whatever you like...or nothing at all.

49 Charcoal, lump coal, or wood for me. I have an ancient smoker with an offset fire box, which I can use as a grill. However, got a Big Green Egg last year and haven't used the smoker since. Will probably keep the smoker for larger smokes (2 pork shoulders, or several racks of ribs), but I'm liking the BGE.

I use gas when I visit my dad's place. I like the convenience, but the flavor's not the same.

Aperol is like the friendly version of Campari.

Less bitter, sweeter, fruitier, more citrusy.

Very usable as it's in a bunch of cocktails. Not particularly expensive. Worth buying.

Hard to believe that these nationalities altogether amount to a fraction of the criminal aliens from Mexico/Central America in custody in the US. No - impossible to believe, in fact. Which means we're actually getting cooperation from the main sources of illegals (winning!).

And Eritrea? At least a while ago, the country had no crime to speak of. One big small town in terms of ethics and treatment of each other, far as I could tell from traveling all over it. That's a real puzzler.

But ..... but .... but ..... how can the "judiciary" allow this outrage to happen? Surely the executive branch has no authority to, you know, conduct foreign relations - I learned that from "courts" in the last 7 months. Oh yeah there's laws and shit, but there must be a campaign statement or an analysis by Al Sharpton or Barbara Lee that a "court" can rely on to usurp additional authority. We can only hope.

Mexican rice is always on hand (rice, salsa/sauce, chicken stock, onions, canned chiles), refritos are from a can, unfinished tortillas keep well in the frig.

I've only had a gas grill for a short time. Sure it was convenient, but the taste was sub-par. Now it's nothing but a combination of charcoal and wood from especially aromatic trees.

The fat dripping on aromatic wood, causing a sudden outburst of scented flavor and char -- well it's something you want.

Eritrea, I would think, would fold instantly - there is a relatively large dual-national and naturalized Eritrean community in the US. Visa suspension will hit many, many people, hard, fast - and it's a tiny country, the leadership will know and be affected as well.

Again, the fact that these 4 very small sources of illegals in the US (Eritrea case still puzzles me), and specifically criminal aliens, are the "hold-outs" is encouraging. It means that the main sources have buckled and are playing ball.

We have a gas grill but we never use it.

We use a piece of wax cartons to start the wood.

I bought my son an expensive set of cook books written by a former tech dude who took a hiatus to examine cooking in a sci-ency way. I eventually got a chance to peruse the section on grilling and remember that dripping fat on a flaming ember did especially delicious things to the meat above. The resulting tongue of flame seared the outer meat in a measurably and sci-ency and most delicious way.

Charcoal will do that somewhat, wood does it better, but propane hardly at all.

144 I mentioned on the book thread that I just got a copy of "Stacy Lyn's Harvest Cookbook" by Stacy Lyn Harris. This is her third or fourth book and it gets all 5 star reviews on Amazon. Her personal story is interesting but her recipes, so far, look great. She includes sections on the health value of fresh veggies and game meat, what to look for in heirloom tomatoes, the benefits of figs and many other things. I'm learning a lot and haven't even made any of the dishes yet.

The book ain't cheap but I think it is worth it. She has a number of videos on YouTube and her native southern belle voice is delightful.

BTW, if you can't get fresh game meat, it's easy to substitute commercial. That will help since I don't hunt anymore and Mrs. JTB won't eat game anyhow. I'm looking forward to trying the recipes.

Anyone familiar with Stacy Lyn Harris or her books?

By the by. If anyone is interested. Baking cheesecake for real, from real ingredients isn't difficult but it does take some practice. Even your mistakes will be very tasty. The trick is not having the cake crack (which you can cover up with a frosting)

"Junior's Cheesecake Cookbook" by Alan Rosen and Beth Allen (available on amazon) are the original recipes from Juniors in NYC. If you can read, and don't mind the labor, you can make most excellent cheesecake.

163 Pumpkin pie filling also comes in a can. You need a ready made pie shell, one egg (or is it two), 5oz can of evaporated milk, and bake for fifteen minutes at 450, then reduce the temperature setting and bake another hour - maybe an hour and ten minutes - depending on your oven. Top with ice cream, cool whip, dream whip, or just eat it.

Buy a already made Keebler graham or shortbread crust.
SF Jello - raspberry, lime, lemon, strawberry, et .
Yogurt - same flavor as jello
Cool Whip.

You make the jello, stir in the yogurt & cool whip, pour in in the crust, and stick in frig/freezer.

I used SF stuff, but you could probably also use the regular jello, cool whip, and yogurt. I sometimes would add real fruit too, if taking somewhere, and put fruit on top and make fancy schmancy.

The exact quantities for the pie are probably at the Keebler site...or somewhere else on internet. Or if anyone is super interested, I'll look for my copy.

P.S. I liked the freezer texture, but most like the frig texture.

173 Waaaaaaaaay back in the day, we would smuggle C2H5OH (ethanol) into football games by fractionally distilling vodka, and then injecting it into oranges. Smush up the orange, tear a piece of rind off, and viola! A Screwdriver.

To fractionally distill vodka, pour it into a stainless steel bowl, place it into the freezer for a few hours, and skim off the ice a few times.

182 Pumpkin is high beta carotene. I put it in chili, or anything I need to thicken up. Got my dog on pumpkin. He's getting old & had issues lately but improved greatly since I added pumpkin to his food. But easy does it for kids & dogs, it has laxative properties.

185 If you want a smallish charcoal grill, check out the Lodge cast iron sportsman grill. Being cast iron it takes a little care but should last forever. The reviews are, shall we say, enthusiastic. But it is heavy and takes a while to cool down. Some people rest it on bricks or cinder blocks. However, it fits inside a standard Weber grill which is safer and the dome top can protect it.

I'm with you on Cool Whip...now that I've read the ingredient label. Our store sells a natural Cool Whip alternative that when I use in the yogurt pies is fine. But on its own, does not match Cool Whip taste enough. Then I default to Rheddi Whip - the real cream one.

A few years back, I had the most delicious, refreshing herbal lemonade purchased from a Mennonite festival booth. I do not recall for sure whether it was supposed to be lavender lemonade or basil lemonade.

I've been trying to replicate it at home, and I think I've finally found the secret ingredient -- french tarragon.

I use a vegetable peeler to peel strips from the outer layer of (clean) lemons. Then I cut up and press the fruit for juice. I put the zest strips in the juice and add water until they are submerged. The strips should not be left in much more than an hour because they get bitter tasting after awhile.

Then I put tarragon sprigs in the lemonade and muddle/bruise the leaves and let it set for awhile, like overnight.

Sweeten very lightly with sugar or honey and dilute it further if required until it tastes light and refreshing.

Yum! For some reason I got better results with tarragon than I did with basil.

191 If looking for canned pumpkin remember some of it is canned pumpkin pie filling mix and some is straight pumpkin. I love pumpkin and all winter squash so we get the regular stuff and doctor it up as desired. That lets me use Splenda in place of sugar for desserts. Helps with the carbs for diabetes purposes.

Several years ago the pumpkin crop was bad and canned pumpkin was scarce. Haven't had that problem for a while.

Then you make a red peppermint frosting, you can go the easy route with Peppermint Extract & red food colorIng, or do from scratch. Spread thick on top of brownies

206 The last time I sautéed a salmon filet, I put it on a bed of rice flavored with tarragon fresh from our garden. Delish! I used good dill and lemon on the fish itself.

I mention this because I have a gorgeous cod filet thawing out for tomorrow. Same rice and tarragon but simple butter and lemon drizzled on the fish.

220 Pumpkin seeds are really good for bladder issues. In the past while in the summer when I drink more water, had middle of the night pit stops. Not so since I started putting raw organic pumpkin seeds in my daily salads. They are soft enough to be an easy chew but dense enough to add texture to a plain salad.

Thanks for that. I think what got me interested was a news account of people getting raw milk from farmers and making their own yogurt. The government people got upset because the raw milk wasn't pasteurized.

There was also some news about government regulation of cheese making. Commercial vendors were using wooden boards (which can't be sterilized according to government people) instead of stainless steel. Make no never mind that the cheese makers have been using wooden boards for multiple hundreds of years.

227 I have a pellet grill. Usually I use a competition blend of hickory, maple and cherry wood. Depending on what I'm making. Trust me once you get a pellet grill you won't go back. I still have my gas grill as a backup but I haven't used it in a while. I did a brisket last week. 6 hour smoke after a 24 hour rub and injection. (That sounds dirty!) mmmm ribs are great too. It's no less hassle than gas and more accurate.
It's got a digital temp gage that feeds wood as needed.
I've made pizzas etc in it like an oven and smoked ribs the same day. Mmmmm

Yeah, I've looked at a Traeger. I love my Egg, but for cooks of more than, say, six racks of baby backs, it gets pretty crowded. The Traeger would fix that and, like you said, the automatic temperature control is a big deal for us who like to sleep.

I have recently used frozen breaded veal cutlets, cooked in butter in a frying pan about 5 minutes a side, then top with whatever gravy in a jar you like or just good old H57 to dunk in.

Served with steamed in a bag veggies for easy and tasty dinner.

413 Actually thinking hard about going and buying a propane cabinet smoker. The hardware store has the last one in stock for 85.00$. I know it is a cheap one, and I do like the taste of charcoal, but there is something about setting the gas to the right temp and then being able to let it go and not need to worry about adding fuel, and or wood.

I went from my charcoal smoker to an electric. It's great! It's digital and holds the temp within a few degrees. Got a timer too!

415 Gas or charcoal? I have both and use them both often. But I never run out of things I can burn in the charcoal grill and cook over, if I plan poorly on the LP tank then I have a problem.
Chalk up a win for charcoal!

Oh, and gas grills = White Privilege Somewhere No Doubt.

416 I refuse to have an electric stove in my house. It takes too long for the electric burners to react. When I turn the heat up or down under a pot, I want it to go up or down NOW, not next week when it gets around to it. Not to mention burnt fingers because the stupid burner was still hot -- just not enough to glow and give a warning.

I agree with that on cook stoves...but an electric smoker is the garthog's narful.
