Food Thread: It's Just Food...Make It Fun

I will be violating that maxim below the fold, but in the meantime, it really is just food. No need to take it so seriously all the time.

Cooking can be fun, and eating can be even more fun. Hell, food shopping can be amusing and a diversion from the grind of the day. We control a hefty portion of our cooking and eating experience, but all too often we (that means, "I") allow it to overwhelm us with crap.

If you don't feel like cooking...then don't. Scour the refrigerator and freezer for leftovers, or just pour yourself a bowl of cereal or eat a handful of radishes or whatever floats your boat.

Over the course of weeks or months most of us get what our bodies need. There is no reason to obsess every single day. In the end, it's just fuel. Sometimes $10 of regular from a generic gas station is all we need, and sometimes a full tank of ethanol-free 100 octane fuel is just what the doctor ordered.

Have I tortured this metaphor enough?

Anyway, what's the goofiest meal you have eaten? Reddi-Whip and frozen orange juice concentrate? Pickles and peanut butter? A butter-stuffed burger on a buttered brioche bun?

Yum. Profiteroles. I made them once, and while they aren't difficult I managed to get chocolate everywhere, because there is no neat way to coat them.

Yes, this is a typical hysterical Daily Mail article, with lots of awful photos and a few choice quotations. Too fat to stand and their flesh rots while they're alive: The REAL reason America's 'Frankenchickens' have to be washed with chlorine as US industrial farming practices are exposed ahead of possible post-Brexit trade deal But it is an issue, and one that is difficult to deal with absent wholesale changes in food production in America and the rest of the world.

What? The rest of the world? Of course...America is just the fattest target. The Daily Mail doesn't care about farm animal abuse in China or India or Indonesia or, God forbid, Pakistan!

I don't have an answer, other than knowing that the answer most certainly isn't government regulation, of which we have plenty in the food production industries that seem not to be working very well.

And I have said this many times, but I think it bears repeating. While the lives of food (and other) animals should be valued and respected, I'll kill 1,000,000 animals to save the life of one human being. Our lives are more important, and if the price of less starvation and malnutrition is substandard treatment of animals in our food chain, then that is unfortunate but necessary.

Here's a good example of why I sometimes despair for America. 6 Reasons Why Vegetable + Canola Oil is Bad For You is a mishmash of poorly researched claims, voodoo food myths, a profound misunderstanding of chemistry, and flat-out falsehoods. But because it hides under the mantle of natural and holistic and non-GMO and a dozen other mantras that we hear chanted by the food crazies, it avoids rational analysis. And because the author "cured" herself with food, and without medicine, we must take her seriously. Except....I don't want to base my treatment on a study with exactly one subject, and that's what she is doing.

I could have sworn that I posted this recipe, but I can't find it in any of my searches, so I apologize. It's really good and really messy, especially if you don't like peeling things.

It's originally from Cooking Light magazine, although I have seen versions of it in other places. The next time I make it I think I will skip the chile roasting part and just poke around for canned chiles. And of course use more than one pound of chicken. That's just silly. It makes six servings, and I am a red-blooded American man...I want more than 2 2/3 ounces of chicken!

Chicken Verde Stew with Hominy

  • 2 Anaheim chiles
  • Cooking spray
  • 1 1/2 pounds tomatillos
  • 1/4 cup finely chopped fresh cilantro
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 cups chicken broth, divided
  • 2 tablespoons olive oil, divided
  • 1 1/2 cups finely chopped onion
  • 1/2 cup chopped carrot
  • 1/2 cup chopped celery
    1/2 cup chopped red bell pepper
  • 3 tablespoons flour
  • 4 teaspoons finely chopped garlic
  • 1 pound skinless, boneless chicken thighs, cut into 1 1/2-inch pieces
  • 3/4 teaspoon kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 (29-ounce) can golden hominy, rinsed and drained
  • Sour cream
  • Cilantro leaves (optional)

    1. Preheat broiler to high.

    2. Halve, stem, and seed chiles. Place chiles, skin side up, on a foil-lined baking sheet coated with cooking spray; broil for 5 minutes or until charred. Place chiles in a paper bag; seal. Let stand for 15 minutes. Peel and discard skins. Arrange tomatillos on prepared baking sheet, and broil 14 minutes or until blackened, turning once. Combine the chiles, tomatillos, 1/4 cup cilantro, cumin, and oregano in a blender. Add 1 cup broth; process until smooth.

    3. Heat a large Dutch oven over medium-high heat. Add 2 teaspoons olive oil; swirl to coat. Add onion, carrot, celery, and bell pepper; sauté for 2 minutes, stirring occasionally. Stir in flour; sauté for 2 minutes, stirring frequently. Add garlic; sauté for 30 seconds, stirring constantly. Place onion mixture in a large bowl.

    4. Sprinkle chicken with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Add 2 teaspoons oil to pan; swirl to coat. Add half of chicken; sauté 3 minutes. Add browned chicken to onion mixture. Repeat procedure with remaining chicken and 2 teaspoons oil. Combine remaining 1 cup broth, tomatillo mixture, onion mixture, and hominy in pan over medium-high heat, and bring to a boil. Cover, reduce heat, and simmer for 45 minutes, stirring occasionally. Stir in 1/2 teaspoon salt and 1/4 teaspoon black pepper. Ladle 1 2/3 cups stew into each of 6 bowls, and top each with 1 tablespoon sour cream. Garnish with cilantro, if desired.

    20 Made myself some bacon cheeseburgers last night. Dang they were good! Hadn't had any in a while. But one thing I like to do is if cooking more than one then use a different cheese on each one. Say maybe sharp cheddar on one and maybe baby swiss on the other.

    The other thing I like on the burgers is BBQ sauce. What I really like is the Jack Daniels #7. Really like that one.

    They sent Michael Vick to prison for abusing animals. I don't know how much truth is in that chicken story, but if it is accurate, it sounds like animal cruelty to me. Living animals with their flesh rotting off them because of the way they are being raised?

    If it is the government's business to criminalized dog fighting, I don't know why this would not be the government's business.

    There are recipes for it that call for starting with corn tortillas. Had none, but had salted chips. Lightly salted.

    Melted chocolate chips with some cream for a good consistency. Poured that over the corn chips.

    Whipped up some cream for the top.

    I think that was it.

    One of my favorite sandwiches.

    You can add a bit of mayo or even mustard, I guess, but it's not necessary.

    I love Chicago dogs (my favorite), and chili-cheese dogs (my other favorite), but what is a Chicago chili-cheese dog? Unless it's just a chili-cheese dog that you get in Chicago...

    However, your addition of giardiniera to a chili-cheese dog sounds like a good idea and I will have to try that on my next batch, although my favorite way to use it is on Italian beef sandwiches. Fortunately I always keep a few jars on hand, so I can experiment.

    That reminds me....a few weeks ago there was some Communist talk here (looking at you, qdpsteve, mmhmm) about disliking watermelon, and cantaloupes too. You know it has to be really ripe to be any good, and if you don't like ripe melon well then there is no hope for you anyway.

    Seriously though,yesterday we finally cut open a personal size watermelon my husband had picked up. It was the yellow flesh variety and I wasn't optimistic it'd be any good. To me it's just a crapshoot sometimes, but this one was really good. Score! I ate so much I'm surprised I haven't been stuck in the bathroom all day.

    I graduated from Palisade High School back in the day. Used to do seasonal work in the peach orchards for spending money. I never made much money picking peaches, because I would stop every other bushel and eat one (tree ripe). Juicy and sweet, yummm! (we got paid per bushel)

    97 Vendette, back when I was at Long Beach City College in the middle to late 1980s, there was one class-- but I have *no idea* which one it was-- that would take overnight trips to Angeles National Forest. It might have been a fire science or a naturology class. Who knows.

    Anyway, every semester the profs would have duplicated (I worked in the duplication room) a semi-thick booklet of instructions on how to get through the trip, because some of these kids had literally never camped before.

    One of their tips was, for breakfast get Quaker instant oatmeal and M&Ms, and be sure to add them to your oatmeal in the morning. Was a way to bribe them into eating their breakfast, I guess.

    Vienna Beef is the standard supplier of hot dogs in the Chicagoland area (at least it was when I lived there), and they are very hard to find in other cities except at Chicago-style hot dog joints, so if you can really get a Vienna Beef dog then I would consider that to be an "official" Chicago chili-cheese dog.

    Regarding Italian beef sandwiches, arguments over which one is better are fierce. Personally I always found the top three (Big Al's, Mr. Beef and Portillo's) to be comparable, although that is heresy to most Chicagoans. However, if you don't live in Chicago, your best bet to get the flavor of a real Italian beef is Portillo's, which has started to franchise outside of the Chicago area so there may be one in your area. If you choose "sweet and hot" as your option you will get sauteed green bell peppers (the most important condiment) and also spicy giardiniera. A great combination.

    Since you are clearly an individual of taste and refinement, let me give you a variation on the venerable chili dog that you might find interesting. Have to make this one at home.

    First, start with the spice blend for Taco Bell beef that you can find online. Don't buy the pre-mixed packets (if they even sell them anymore). Just look up the recipe, adjust it as necessary (I like mine a bit spicier so I add a bit of habanero powder), add it to your favorite ground beef, simmer and set aside.

    Then cook your hot dogs. If I am in a hurry I will microwave, but when I have time I like to boil first and then grill.

    Warm (or toast) a hot dog bun. Place dog in bun, add mexi-beef on top. Sometimes I then put mustard or jalapeno slices on this, although I think I am going to try the giardiniera idea as well. Today, in fact, because I have some leftover beef that I need to use up.

    It's really not that different from a standard chili dog, except that the beef topping is thicker (and spicier) than that which you get in places like Tommy's.

    260 Had the opportunity to try some interesting/expensive booze the last couple of weeks.

    Here some opinions:

    1) Roku Gin -

    Japanese gin made in Japan with six Japanese botanicals- Cherry blossoms, cherry leaves, 2kinds of green tea, sancho pepper, yuzu- along with the usual gin botanicals.

    Good stuff. In a G&T, you get juniper along with a touch of yuzu at first, the rest of the ingredients show up as a sort of deep earthy taste in the background and the cherry blossoms come though at the end. Very nice.

    2) El Jolgorio Arroqueno Mezcal-

    You know how food critics talk about this or that mezcal tasting "fruity" when it all it really tastes like is some kind of rubbery plastic?

    This mescal really is a fruit bomb. Just slaps you around with one fruit after another. A tiny bit of smoke to keep things balanced.

    Excellent stuff. The best evah. Expensive as hell. So, test drive it in your favorite mescal/tequila bar before committing to a bottle.

    3) El Jolgorio Tepeztate Mezcal-

    Tasty sand(?)- that sort of taste/smell you get into the desert after it rains, grassy flavor, light smoke, sweetness, a bit of tasty plastic.

    Somehow it all works. Elegant as all get out. A bit rare because it take this agave a long time to mature.

    Also, expensive as hell. So, test drive it in your favorite mescal/tequila bar before committing to a bottle.

    3) Rey Campero Jabali Mezcal-

    Yummy clay. Sweetness. A cantaloupe/honeydew sort of smell/flavor, a bit smokey, a bit flowery, a weird "deepness" to the flavor where it seems like there's more going on than you think, if that makes sense.

    4) La Nina del Mezcal Bacanora-

    Bacanora is a highly refined/ very pure mezcal. Tastes halfway between a sweet mezcal and the best tequila you've ever tasted.

    This stuff makes the best margaritas evah.

    323 @265 Soothsayer-My nutritionist is a bodybuilder. I get the stuff fresh in containers every week. It's a body builders diet. Never get to post on Aces Gainz threads (not west coast friendly) but between diet and beatin' up the weights I've put on 15 pounds of lean mass. I do a shit ton of cardio cycling and trail running. Never thought it could be done due to the cardio kills muscle thing. Guy convinced me to try a muscle friendly diet. It works.

    The worst hangover, pukefest I ever endured was sophomore year in college.

    Some friends and I thought instead of our usual beer, we'd make screwdrivers while waiting for one of the college dances to start. (We were not hard liquor drinkers, as you will see.)

    We started drinking and playing poker to kill time. The last thing I remember clearly is vomited shooting out of one of my dorm buddy's nose all over the the cards and chips.

    Then it's all a blur, until I fell off a table at the dance.

    I got lost inside the dorm and couldn't find the elevator so I walked up 10 flights of stairs. Puking on each floor and passing out on at least three of them.

    Then a blur then I woke up puking inside the shower in my clothes. I think I had been trying to sober up.

    Then I went to my room and passed out on my bed and woke up the next morning with my head in a big dried up pool of vomit.

    Then I got out of bed and vomited in the toilet. Worst headache evah.

    Took almost two days before I felt normal.


    And then I ate an anchovy pizza.

    I have a friend who drinks absinthe because he heard the wormwood has anti-inflammatory properties, and he is kind of broken up. Unfortunately the absinth sold in the US does not allow the Thujone in useful amounts, so he started scoring dried wormwood from a connection he has in Europe and macerating it in the absinthe.
    (The thujone was supposed to be what made French Bohemians to go insane, and not, for example, the wood alcohol and syphilis - so it was outlawed in the US)

    I never tried his absinthe, but he claimed it was really bitter, and there is a reason you drink it through a lump of sugar.

    They made Goetta, somehow got the oats crispy and mixed it with quality house-made sausage. It was fantastic

Go monounsaturated (avocado or olive oil) or saturated (coconut.....milk fat, animal fat) or at least supplement with EPA from a high quality fish oil.

    My rocket fuel: instant coffee dissolved in a little hot water. And a pkg of (any flavor) Carnation instant breakfast. Fill up glass with whole milk (or half and half). Add ice. Holds me for a few hours.
