Food Thread: Where Does That Beer Can Go Again? [CBD]

Courtesy of commenter redc1c4 we have a beer can turkey that looks pretty damned good. He used a conventional upright smoker, and as an elegant touch used Foster's!

Looks good and juicy, and the skin has a nice golden color. But what really intrigues me is the Log 'O Meat that Red calls "fatties," which:

can be something as simple, in this case, as Jimmy Dean (or equivalent) sausage rolls, rolled in BBQ rub/spices, then smoked, or, it you're high maintenance, you can make an interior mix of whatever, then surround it with another mixture, then smoke it. the sky is the limit.

what they do when I'm cooking a bird is baste it all the way through the cook, with the left over drippings being caught in the pan, should you wish to make gravy with them.

after all, you ain't cookin' if yer lookin.

That explains the juicy look of that bird!

MisHum sent me this link, and while the food pictured is all pretty disgusting, See The 21 Best Junk Food Recipes (With Pics) there are only three out of the 21 that I wouldn't try and probably enjoy. Anything with bananas is off my list, because they are vile. And raw apples? No thanks, I prefer them cooked in a tarte tatin. Mint-chocolate-chip....anything...bores me. The mint overwhelms my palate and it's just silly.

But this is spectacular:

Artisanal'ette sent me a photo of a broth she made from, among other things, kale. I think she mentioned it in the comments, but it is deserving of a closer look. My first thought when she told me about it was, "Oh God! She's a hipster freak and I was just too dense to see it!" But on further inspection and pondering I realized that there are many delightful soups and broths made from kale and spinach and escarole, etc.

Looks pretty damned good.

It was really delicious. Acorn Squash, thick-cut bacon, white onion, garlic, 1 bunch of kale, allspice+nutmeg+cinnamon spices that were not overly done. Chicken broth. Depending on how much kale you actually have in "one" bunch, you might need to add more broth (I did, about a cup more). Very simple recipe. No immersion blender or stationary jar blender needed.

Roast squash cubes covered in olive oil and salt/pepper
Crisp the bacon, put aside to drain
Saute onion & garlic with the spices in bacon grease + olive oil
Add the kale and roasted cubes of squash, cook a few then add and simmer in broth
Stir in bacon bits, season with salt/pepper.

Very nice. Soothing recipe.

Only pain was cutting away the kale ribs off of each leaf, and of course, cutting, scooping and peeling the acorn squash (I cut in half and scoop out the seeds, then I cut directly at the ribs which makes it pretty easy to peel - this one I had was pretty deeply ribbed). Always something to consume the time when cooking though. Otherwise, it was a pretty fast recipe all in all.

I had a bowl for breakfast directly after making it this morning.

It seems busy, but I might give this a shot, simply because the chef is very, very good. One quibble: why use breakfast sausage and then add fennel seeds? Why not just use sweet Italian sausage, which has fennel seeds in it?

Sausage Stuffing With Caramelized Onions

Adapted from Tom Colicchio of Gramercy Tavern and Craft

  • 2 10-ounce packages breakfast sausage
  • 1 fennel bulb, trimmed and in 1/2-inch dice (1 cup)
  • 1 carrot in 1/4-inch dice ( 1/2 cup)
  • 1 celery stalk in 1/4-inch dice ( 1/2 cup)
  • 1 leek, white part only, washed and finely chopped ( 1/2 cup)
  • 1 small onion, minced ( 1/2 cup)
  • 2 cloves garlic, minced (2 teaspoons)
  • Salt and freshly ground black pepper
  • 2 tablespoons fennel seeds
  • 6 large eggs, lightly beaten
  • 2 to 3 cups chicken broth
  • 2 pounds crusty French bread, cubed and dried overnight
  • 1 cup golden raisins, soaked in hot water and drained
  • 1 tablespoon chopped thyme
  • 1 tablespoon chopped sage.

1. Place sausage in a large skillet over medium heat and cook until browned, turning frequently, 10 minutes. Remove pan from heat and transfer sausage to paper-towel-lined plate. Reserve fat in pan. Cool sausage, then chop. Return pan to stove. Add fennel, carrot, celery, leek, onion and garlic, sprinkle with salt and pepper. Sauté over medium heat, stirring frequently, until vegetables are lightly caramelized, about 10 minutes.

2. Heat oven to 350 degrees. Place fennel seeds in a small skillet and toast over medium heat, tossing frequently, until fragrant and lightly colored, about 10 minutes. Remove from heat and set aside.

3. In a large mixing bowl, whisk eggs and 2 cups chicken broth together. Add bread and stir until coated evenly. Add sausage, sautéed vegetables, raisins, thyme, sage and fennel seeds. If bread cubes seem dry, add additional chicken broth. Add salt and pepper to taste. Turn into a 3-quart gratin dish and cover with foil. Bake 30 minutes. Remove foil and bake until stuffing is brown, about 10 minutes more.

BTW, a few months back, I mentioned a book which OregonMuse featured in a Sunday Book thread: On Becoming American by Ted Morgan, a French aristocracy who changed his name and nationality because he liked it better over here. In one chapter, Morgan lists "Ten Matchless American Things to Eat and Drink, " with Virginia ham topping his list. (He says it is superior to jambon de Bayonne.)

Bear in mind that the dude was an aristocrat and so I suspect he wasn't eating at greasy spoons in France.

I've wanted to post the list because I would be interested in the horde's feedback, but I haven't because I don't want to pull either the Book Thread or the Food thread away from whatever the cob wants to discuss. I'll email it if you're interested.

18 Oof, I'm in a fat/carb/beer coma. And I like it!

I cubed up some leftover pork roast, pureed the pumpkin and broth from roasting the pork, added cream, parmesan, and parsley, and made a sauce served over pumpkin spice pasta. Delicious!

And now I'm having a pumpkin ale.

This soup is a little fussy to make, as there are a few steps. But the good news is that it can be made two or three days ahead of time and reheated. Great for family/friends holiday dinners. An elegant, tasty soup. Pretty in the bowl, too. This is a great soup for using those large woody, out-of-season asparagus spears. You will need two stock/soup pots, though.

Asparagus Soup

Ingredients

3 pounds fresh asparagus, rinsed
8 cups chicken stock (I use College Inn's Fat Free/Lower Sodium Chicken Broth)
4 tablespoons unsalted butter
1/2 cup minced shallots
1 cup minced leeks, whites only, well rinsed
1 tablespoon crushed garlic
1/2 teaspoon salt * I added no salt as the cheese was salty enough; salt is very bad for me but use it if you need/like it
1/4 teaspoon ground white pepper
1/2 cup heavy cream (optional)
1/4 cup finely grated Parmigiano-Reggiano as a garnish
1 small Parmigiano-Reggiano cheese rind (I always save hard grating cheese rinds in the freezer)
Zest of 1 lemon

Directions

Trim the bottoms and discard, then cut the attractive top tips from the asparagus, about 1 to 1 1/2 inches in length and reserve. Cut the woody stem ends from each spear and reserve (break one to get the measurement). Cut the remaining tender stalks into 1/2-inch pieces and reserve.

In a medium pot, bring the stock to a boil. Add the tough woody stems and the Parmigiano-Reggiano cheese rind, lower the heat and simmer to infuse with asparagus flavor for 30 minutes. Remove the asparagus with a slotted spoon, squeezing out the liquid, as well as the cheese rind, and discard, reserving the stock.

Add the decorative tips to the stock and blanch 45 seconds to 1 minute. Remove with a strainer and refresh in an ice water bath. Drain on paper towels and reserve for the garnish. Reserve the stock.

In a medium stockpot, melt the butter over medium-high heat. When foamy, add the shallots and leeks and cook until tender, but do not color, about 3 to 4 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the chopped asparagus stalks, salt, and pepper, and cook, stirring, for 2 minutes. Strain and add the reserved broth and simmer until the asparagus are very tender, 20 to 25 minutes. Remove from the heat. Add the zest of 1 lemon.

With a hand-immersion blender or in batches in a food processor, puree the soup until smooth. Adjust the seasoning, to taste. If serving right away, you can return to medium heat and add the cream. Turn off heat and stir, until the soup is warmed through, about 3 minutes.

Alternatively, if serving the soup later, do not add the cream and let cool at room temperature. Cover and refrigerate. Before serving, warm the soup gently over medium heat, stirring occasionally. If adding cream, lower heat, add the cream, stir to warm through.

To serve, divide the asparagus tips evenly according to your serving bowl number. Place the tips into each bowl. Ladle the soup into the bowl and sprinkle with cheese, then dig in.

38 Son-in-law makes beer can chicken a lot, so when we were in Galena last week, we went into the little spice shop there on Main Street, and got him something in a bag labeled Beer Can Chicken Rub. I hope it's not an illegal substance. We also go him some kind of hot sauce guaranteed to light your eyeballs on fire. He likes that.


On the cooking front, I'm gonna say I half-cooked once this week. Daughter sent me home with two mason jars of homemade spaghetti sauce from her garden. So I heated it up in a pan and boiled some noodles. Rev bought a pie and a box of wine and Presto! Almost home-cooked dinner!


The other days we ate out or scrounged off my mom. One half-cooked meal a week is a good goal, I think.

41 busy day here, but here's a recipe I wanted to drop into the thread today...

it was discussed online, so the upfront/preface notes are from the person who posted the recipe.

The image in the book itself is stunning.



Apple Kuchen from 'The Vatican Cookbook'
Pope John Paul II

Served as a favorite to Pope John Paul II, this classic apple cake has a cushion of meringue-like sweetness that makes it stand out. It's also got more butter and eggs than most cakes.

The original recipe called for Boskop or Belle de Boskoop apples, an old Dutch variety known for sweet-tart flavor and a tendency to plump in cooking. It's hard to find, and the authors recommend Golden Delicious as a stand-in. We suspect Gold Rush would be even better, if you can find it.

At the risk of sounding heretical, we found this recipe problematic. The result was still delicious and guest-worthy, but there was no indication of what size or type of cake pan to use. We used a 9-inch, but it would have been impossible to remove it whole, and wouldn't show off the rich layers of fruit, pudding and crust. If we did it again, a 10-inch springform (removable sided) pan would be the best, with a sheet pan underneath to catch any drips. A rectangular 11-inch by 17-inch would also work, especially glass.

The bottom crust should be rolled out a half-inch beyond the bottom of the pan, since it shrinks in the first baking. Egg whites should be whipped to soft peaks before adding the pudding.


APPLE KUCHEN
Makes 8-12 servings (cookbook says serves 6-

Dough:
3 1/ 2 cups all-purpose flour
1/ 2 cup powdered sugar
1 teaspoon baking powder
3 sticks cold butter, diced
6 egg yolks
2 Tablespoons sour cream

Filling:
10 Boskop or Golden Delicious apples, cored and thinly sliced
1/ 4 cup water
2 teaspoons cinnamon
2 tablespoons potato starch
3 tablespoons lemon juice
1 cup raw (Sugar in the Raw) cane sugar

Foam:
6 egg whites
1/ 2 cup raw cane sugar
2 tablespoons vanilla pudding mix
3 tablespoons breadcrumbs

Butter for the greasing
Powdered sugar for dusting

Make dough: Place flour, powdered sugar and baking powder into a large bowl and mix to combine. Using a pastry cutter, incorporate the diced butter until it is a coarse mix. Then, add the egg yolks and the sour cream to the dough, and mix until incorporated. Divide the dough into two parts, large and small (1/ 3 and 2/ 3 ). Cover with plastic wrap and place in the refrigerator for at least 4 hours to rest.

Pre-heat oven to 350 degrees.

Prepare apple filling: Peel and core the apples and cut them into thin slices. Place the apples and the water in a pot, and simmer, covered, for 15 minutes. Then add the cinnamon, potato starch, lemon juice and sugar. Simmer for 2 minutes. Remove the apples carefully and strain any extra liquid. Set aside to cool. (Save the strained liquid for your morning oatmeal.)

Bake bottom layer: Grease a 10-inch round springform cake pan with butter. Spread 2/ 3 of the dough on the bottom. Bake the dough for about 8 minutes, being careful not to scorch the bottom. Remove the pan and set it aside to cool.

Prepare egg foam: Beat the egg whites to a soft peak, either by hand or using mixer, slowly adding the sugar. Then sprinkle in the pudding mix and whisk until foam is stiff.

Finish: To build the kuchen: Sprinkle breadcrumbs on top of the pre-baked and cooled layer of dough. Top with the egg white foam, and then the apple mixture, spreading evenly. Top with the second piece of uncooked dough. Bake the apple cake for about 1 hour at 350 degrees until surface is nicely browned. Let cool. Dust with powdered sugar before serving.

49 Royal icing

3 tbsp. Meringue powder
1 tsp cream of tartar
14 oz confectioners sugar
3 oz warm water
1 tsp vanilla(use clear for white/light colors)

Mix all the dry ingredients in a stand mixer for a few seconds then add all the water and vanilla. Turn the mixer to med-high and mix until stiff peaks form. Divide then add colors and water to desired piping consistency.

52 I've been cheating by buying packages of cut up butternut squash at TJ so I don't have to deal with the pain in the butt that cutting up squash and scooping out the seeds entails.

Another time saver and one that I especially like, since I love beets but just hate the mess they make is the vacuum sealed baby beets always sold at TJ. I always pick up 2 or 3 boxes when I'm there.

62 Cascade fryer boil out from Amazon. It has real phosphorus in it. Use about a tablespoon in the soap compartment. Also, jet-dri in the rinse cycle helps with spots. Also try checking to see if there are any food filters in the bottom that need to be cleaned out periodically, I know my dishwasher has one and if I see food particles on my dishes it's time to clean it out.

67 FNG, be careful of the TSP though, as if you use too much, it can cause etching.

What I've found to be the absolute best, although pricey, are the Miele dishwasher tabs. I get them through Amazon. I cut them in half and just use the half tab each time. I have a Miele dishwasher that holds 16 place settings and it gets everything sparkling clean.

My neighbor uses them too, and they work well for him too. His dishwasher is another brand but the tabs still work great.

My Walgreens has an ad for Halloween bag candy for $1.99 today only, up to 22 oz. When I went to Walgreens, none of the candy was marked, although they had a paper up that said, among other things, "Select Hershey's up to 22 oz." No specific candies were mentioned just brands and the word "select."

So if you grab something you want and think it's going to be $1.99, think again.

Might be different at your local Walgreens, but at mine it was a total scam.

Have no idea if any of it was $1.99, sine none was marked. Once again, just brands and "select bags" with none marked select. And the staff basically said "you can't expect to get $6.99 candy for $1.99" even though that's what the coupon says.

I decided not to argue with them, since that's all I do lately.

86 I pressed and canned juice this year, and then canned it in a boiling water bath, which sets the pectin and makes it cloudy.

Per the books I need to pasteurize at around 190, but I don't have equipment to guarantee that regular temperature, so I am thinking of building a pasteurizer out of an RV water heater, or some sort of sink-sized heat-on-demand rig.

Once I got that far in my planning, I realized that I will also have a prime sous vide rig as well.

You can brine it to prevent it from drying out. I place a clean garbage bag in a 5 gal. bucket, place a 10/12lb turkey in it and add the brine. Seal the bag and place in the garage overnight.

94 We finally got some fall like weather, well fall for socal, so I made a pot of split pea soup. I usually use ham but decided to mix it up and used smoked sausage and threw in a couple of jalapenos, got a loaf of sourdough baking too. Tasting seems to say it will be a success. And yes I threw in a diced carrot, it's one of the few foods that are acceptable with it as an ingredient.

I've read this too. That the VA ham is better. This is tough as all hams really are regional and different.

We did try the famous Spanish "ham" and it's delicious. I can't compare it to anything. It is graded and goes up very much in price as the grade is raised.

The finest is called jamon iberico de bellota ( acorn ). This ham is from free-range pigs that roam oak forests ( called dehesas ) along the border between Spain and Portugal, and eat only acorns during this last period. It is also known as jamon iberico de Montanera.

The Bayonne Ham we buy is more like a prosciutto and we buy it finely sliced to wrap around pates and terrines when I make them. I don't usually buy it whole, although I do see it that way.

I don't think anything compares to a Virginia Ham. It is by itself it's own taste.

105 I won freezer roulette last night. Corn frozen in the husks who knows how long ago and fish that the freezer bag zip had partially opened and had some frost on it. Wrapped the corn in saran wrap and into the microwave still frozen. Fried the fish in a little bacon fat. Both turned out fine. Leaving the husks on really helps. Need to get the chest freezer close to cleaned out and defrost it by mid Dec. I set my dad up to shoot a buffalo cow at a ranch in Neb that sells the hunt type experience + meat package that way.

If I never left the house with the oven on, we'd never have anything to eat! I would say it's fine unless your oven is really unreliable. The only thing that MIGHT give me pause would be if it's a gas oven. Maybe someone else could tell you about that. But mine are electric and give me no trouble at all.

I typically don't eat bananas, but when I do, I eat them when there's more black than yellow on the skin. They are far sweeter that way.
Also, candying them in a sauce pan, (just heat and cover them in sugar.) and serving over vanilla ice cream is pretty good.

here are certain Russian and East European pastries and breads I use the golden raisins in - they wouldn't be the same without them

for me it depends on the recipe.

but, then I love all raisins.

Always put them in my hot oatmeal when I have it. Oatmeal raisin cookies...

Spent a good amount getting the patent and was trying just to break even when Walmart made a large order. 181 Oh! I wanted to pass this along here too. Earlier this week I was at Marshall's with my daughter, and I saw they had a fair amount of All-Clad stainless stuff for really good (for All-Clad) prices. I finally got the 3-qt. pot I had been wanting.

It's probably the "old" stainless line that they are discontinuing in favor of the new D5 line. But the prices were better than I'd ever seen there.

I paid $60 and a similar one is on sale right now at Macy's for $185.

Trust me, it tastes better than it reads. But truthfully, the cream really is optional. The soup is so asparagus-y good that cream can overwhelm it. But, like I said, it's a bit fussy, but can be made ahead of time and, if you don't add the cream, it freezes well. Have fun making it.

Redrum Cocktail

201 I see a lot of people here have crock pots. Well, I don't. But I do have an immersion/stick blender. I cannot live without that tool. Even comes with a little container that turns it into a mini-food processor. I highly recommend an immersion blender for home use. It's really the only way to make that asparagus soup.

I also recommend a coffee grinder dedicated only to spices. Buying whole spices and grinding you own as needed is not only cheaper, but the flavor is better, too.

214 lindafell, I've never paid full price for it either, and I have a lot of pieces now. About six or seven years ago I decided I wanted to start a collection, and I've gotten it all piecemeal at places like Marshall's and TJ Maxx, oftentimes on clearance.

Funny story: my eldest daughter went to college about three hours south of us. We had been down there for something in the spring and for some reason we went into the Marshall's there. In the clearance aisle, they had a big, gorgeous All-Clad copper stock pot. It was still pretty expensive, and I decided against getting it.

But I didn't forget it. A couple weeks later my son and I went down to move her home for the semester. Before we went, on a whim I called the Marshall's to see if the pot was still there. It was, and the manager said she would hold it for me in the back room, even though it was against their rules.

As we got into town, I told my son that we needed to stop at the Marshall's because the manager was holding a pot for me in the back room, even though she wasn't supposed to do it. You should have seen the priceless look on his face. He didn't hear the "a" before the word pot.

I'm on my second immersion blender after I finally burned the last one out. Don't know how I would live without it now.

237 My son's scout troop does the bacon weave for Saturday breakfasts on camp outs quite often. Some of the leaders don't like it because it takes a long time to cook and then with other breakfast items can make cooking, eating, and cleanup take too long in the morning.

I say if a scout is enjoying what he's cooking then it makes for a better camp out.

But really, if you have the patience, waiting for it not just to get to Marshall's but also to get to their clearance aisle, can save a ton. That's where I got several of my frying pans, my cookie sheet, my roasting pan, and a bunch of other things including my illicit pot. I have gotten a few things from the regular aisle too.

There is a W-S outlet about half an hour from me and they have decent sales sometimes too.

275 when i do turkey this way, i inject the bird with juice, spices, and such a day or three ahead of time...helps make it nice and juicy, but the smoker temp and the auto basting help keep it from getting dry, as does blocking the neck with fruit (i used a pear on that particular bird.

the smoker runs at about 250*, with guava or kiawe wood chunks, from Greg.

cooking time is ~2.5-3 hours for a 12-14# bird. i just put a temp probe in the breast, run the wire out the top, and plug it into a electronic thermometer. when i get the right temp, i pull the bird, foil it up and let it rest for a bit while finishing up everything else.

the fatties can be used for snacks, or crumbled up into the dressing. you can also dice them up for an omelette, etc...
