Food Thread: Ah....The Food-Induced Thanksgiving Coma [CBD]

My Thanksgiving Turkey

Yeah....I am not intently focused on food right now. A week of cooking and then a few days of nonstop eating will tend to put me off my feed. And I have a confession: I had a salad on Friday night. Please don't hate me! Now, I ordered it with sliced hanger steak, but still.....

I have found that when I am cooking for things like Thanksgiving, I have very little desire to taste the food as I cook, which is a necessity if you want it to taste good. I do it, but it isn't as pleasurable as dipping a chunk of bread into a sauce on some random Tuesday night in February, or that first spoonful of stew on a cold and rainy March weekend. My guess is that my taste and smell is just overwhelmed with the sheer volume of all that is floating around. It must be an incredible challenge for chefs in serious restaurants to taste and re-taste, dish after dish, day after day.

artisanal 'ette went a different and interesting direction for Thanksgiving.....

Very simple Thanksgiving dinner this year.

I went with the lapin with mustard sauce (out of this world!) served with spaetzle egg noodles and veggies.
I used a Bordeaux Sauvignon Blanc for the basting, and (Maille) Dijon mustard, of course, for the dish.
Roasted until internal temperature was 160-165F (as close to 165 throughout without overdoing other areas).
And a fabulous red wine saved for special occasions...

A simple Plum Pavolova (the meringue was a bit too sweet to my liking; when I make this recipe again I will cut down on the sugar a lot), but the buttery plums and syrup were luxurious.

We didn't feel overstuffed. It was nice.

I have to brag a little about the pork roast up at the top....it worked out very well, and the convenient thing was that it freed up oven space for all of the other things. If I hadn't been forced at gun point to roast a stupid turkey, the timing of the meal would have been effortless.

One day I will get my way.....

If anyone has extra stuffing (I made a ton of it this year just for this reason), mix a waffle-iron portion with a whipped egg and put it in the iron until it's crispy on both sides (did I post a photo last year? Why yes...yes I did! ). It's easy, you can make several of them and stash them in a warm oven until needed, and it is a great base for turkey hash or the last pork chop from the roast you made, or just a couple of fried eggs.

I was going to post artisanal 'ette's Red Beans and Rice recipe, but I think I will save that for another day. Maybe next week?

9 Turkey mostly gone. Had turkey, cheese sauce + bacon on toast for brunch. Can't really be a hot brown without a tomato.

Horseradish cheddar loses all its bite when you cook it.
The quick bake=circulation setting on the new oven incinerates bacon. 400 and barely 10 minutes to burnt ends.

12 Your cheapskate dessert pic reminds of running joke in our house. Occasionally, when someone asks for a "little" of this or that they'll get a portion the size of a thimble. Or a "small" drink of anything it'll be served in a shot glass. Can only pull it off 2-3 times a year, but still funny.

I smoked a turkey and we had the regular side dishes. I like turkey. We only have it once a year, Thanksgiving time. We are thinking about grilling steaks for Xmas

My red beans and rice recipe is 2 andouille sausages, fried in a pan until browned and tossed into a crockpot with two cans of red beans and a can of green chilis. Serve over rice. Ridiculously easy.

Hehe, CBD, I didn't know you were going to post those picts.

Yes, I made a bunny rabbit this year. It was sublime. And, fairly effortless since I roasted it whole versus cutting it into serving pieces. The mustard sauce was simple to do after taking the roast out.

The dish is called Lapin a la Moutarde ( Rabbit with Mustard Sauce ) from the Bourgogne region of France.

Here is the recipe:

Bourgogne
Lapin a la Moutarde
Rabbit with Mustard Sauce

1 rabbit, about 3 lb ( 1.5kg )
Salt and freshly ground pepper
1 T vegetable oil
4 Tbls strong mustard
1 sprig fresh thyme
1 oz ( 25g ) butter
6 Tbls dry white wine
2/ 3 cup ( 5fl oz/150ml ) heavy ( double ) cream or creme fraiche

Preheat oven to 425F ( 215C ). Rinse the rabbit and pat dry; season with salt and pepper. Oil a shallow oval baking dish large enough to hold the rabbit. Spread the entire surface of the rabbit with 3 tablespoons mustard and place it in the dish. Strip the thyme leaves from the stalk and sprinkle over the rabbit. Dot with thin slivers of butter. Bake for 50 minutes, basting the rabbit regularly with the pan juices and wine.

Arrange the cooked rabbit on a serving platter and keep warm. Pour the cream and the remaining mustard into the baking dish and scrape up browned bits with a wooden spoon. Pour this mixture into a saucepan and boil for 2 to 3 minutes.

Coat the rabbit with the sauce and serve immediately.

Serves 4

The rabbit took longer than 50 minutes, even though I took the roast out of the refrigerator to warm to room temperature or so.

The Irish Maid

2 oz Irish Whiskey

.5 oz St Germaine elderflower Liqueur

.75 fresh lemon juice

.75 simple syrup

2 slices of cucumber

Muddle cucumber in bottom of shaker, add rest of ingredients, shakey-shakey vigorously, strain into glass and enjoy. You can garnish with cucumber slice.

Light and refreshing as all get out.

The ladies especially enjoyed it.

Not really. There was no way for me to taste the Chorizo/sourdough stuffing I made until it was ready to eat, but it was quite tasty. I didn't have a recipe either and had never tasted chorizo so I admit, I was *really* nervous about the taste until it was tried. I actually rarely taste things as I make them and they usually work out at least acceptably from basic principles of what goes together.

Heh. I'm just the opposite. However, downside is when dinner is served I'm usually full. To be honest, though, it could be the alcohol and not the tasting.

It's getting cold, so earlier this week I made a batch of split pea soup ( a vegetarian version, although I added some chicken broth for meat protein ). A great recipe from the Fit for Life original cookbook. I had a bunch of fresh cabbage to use up.

And midweek I made a yuge pot of spaghetti sauce because I wanted to make lasagna to use up some ricotta in the fridge.

I froze half the soup (as it states in the cookbook - this one freezes really well), half the sauce, and most of the lasagna (since hubby didn't come home until the end of the week). We had one serving of the lasagna that I had saved in the fridge, and soup for lunches.

so there was duck, ham, smoked turkey, roasted turkey and various assorted accompanying dishes.

The big surprise for me was my sister's roast turkey-

It was absolutely, the tenderest, moistest, most flavorful turkey, I think I ever eaten.

According to naturalfake Sis, the only difference was-

I think Step 5 means that the turkey is free range and that-

twice a day they spritz the turkey with Creed Spring Flower perfume and tickle it's ass with a mink glove.

35 Y-not- I used fresh pomegranate, fresh dates, chopped , but not too fine. Soaked these two together in a Merlot for a couple hours. I then used a small amount of the orange sauce that comes with the ducks. Just kept adding wine and a small amount of the orange sauce as it reduced. I mashed some of the pomegranate seeds but not all. so it kept a little relish aspect to it. Was even better the second day.

37 My Thanksgiving ended up going well, despite the fact that I'd been laying aprox 1000 tiles for the few days beforehand and had zero motivation to cook.

I took the horde's advice and put the salt in with the butter rub for Mr. Turkey and then I spatchcocked him and threw him in the oven. Hubby said it was my best turkey ever.

Then I threw together a quick dressing with the turkey stock I'd made with Mr Turkey's spine and neck and mashed up some potatoes and the obligatory "marshmallow casserole" as my autistic 10 year old calls it.

I'd made a pumpkin cheesecake the night before (probably with some thinset added to the mix) and we called it good.

Thankfully I was only cooking for my crew so I didn't have to worry about impressing the in-laws. As for what I'm thankful for? Being 99% done with the flooring on the main level of the house.

I tend to taste subtler (or at least different) flavors than most of my family. I taste food while I'm cooking to make sure I don't need to adjust it (or throw it away before ruining more ingredients).

I don't find that tasting during cooking ruins any later experience.

It is so good. My mother and one of my sisters makes it all of the time too. It has a thousand spices to measure out, but after that it's coasting. One of the simplest recipes. I use a food processor to shred the cabbage.

It's called Blue Ribbon Split Pea Soup in the cookbook.

They did an amazing job on this recipe. A work of art.

Found it online:

This recipe is from the Fit for Life cookbook by Harvey and Marilyn Diamond. It does require quite a few different herbs and seasonings but it has a wonderful flavor and is much better (and better for you!) than the traditional split pea soup with ham. I have made it for years and split pea soup fans love it. It makes a lot and it does well with being frozen and reheated.

Ingredients:

2 tablespoons butter
1 tablespoon extra virgin olive oil (arti-book says safflower oil)
1 cup carrots, coarsely chopped
1 cup celery, coarsely chopped
1 1/2 cups onion, coarsely chopped
1 large clove garlic, minced
2 cups cabbage, finely shredded
10 cups pure water
2 cups green split peas
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried marjoram
1/2 teaspoon dried oregano
1/2 teaspoon dried summer savory
1/8 teaspoon dried sage
1/8 teaspoon dried tarragon
1/4 teaspoon celery seed
1/4 teaspoon ground coriander
1/2 teaspoon sea salt (optional) (arti-I use this)
1/4 teaspoon seasoned salt or salt-free seasoning (arti-I just add extra salt if needed)
Fresh ground pepper to taste
1 vegetable bouillon* (I use 2 for added flavor)(arti-I use either my own if I have some on hand, or I buy cartons, or use a good bouillon powder.)
4 tablespoon fresh parsley, minced (can use 2-3 t. of dried if necessary) (arti - I always use fresh)

Directions:

Heat the butter and oil together in a large soup kettle. Add the carrots, celery, onion, garlic, and cabbage and sauté, stirring frequently, for several minutes. Add the water, the split peas, the seasonings, and the bouillon. Bring to a boil. Cover and simmer over medium heat for 1 hour and 30 minutes, stirring frequently. Stir in the parsley and adjust the seasonings.

Serves 8

This soup freezes beautifully so freeze any left overs in an airtight container to be used for another meal.

My sister use to have a bunch as pets. She would eat one though, believe it or not.

One of the stores I frequent always has them on hand, and they looked particularly fresh this week. I should have bought 3 or so, and froze the others. I have two other recipes I have been dying to make. All very different.

Rabbit tastes wonderful. Not gamey or strong (like some duck or lamb), very subtle and delicious. And if done right, very tender.

yeah, after that one book, they went full on wacky-doodle

basically, after their next couple of cookbooks, you can't eat anything, and everyone else is evil. I know. But, that one cookbook is amazing. She and her husband both wrote it, I think. Very magical recipes, even though there are very few versus the preaching at the beginning of the book.

I love the Cauliflower Toasties (which I still make a lot), and they have a really good spaghetti squash recipe in it. Many good recipes. Soups, wraps and slaws. A great avocado salad dressing too.

Has anyone actually read an honest article about the Colorado Springs shooting? By that I mean one that actually tells where the victims were when they were shot, and where the shooter was when he did the shooting?

My understanding is that the shooting started at the Chase bank branch right next to the Planned Murderhood clinic, and that the shooter fled into that clinic after he'd shot the victims.

I saw Wolfgang Puck has his own pressure type turkey roaster. Very compact, and it supposedly takes less time. I saw him demonstrate it on Fox, I think.

Also, he showed off his newer gravy recipe, by roasting the turkey atop a bed of sweet potato chunks, then draining most of the juice from the pan (saving a handful of chunks), mashing the rest of sweet potatoes in the roasting pan, then using the juice with a handful of the sweet potatoes that were roasted, and blending them in a blender equals gravy. The turkey drippings and some of the roasted sweet potatoes.

I'll have to try this one day.

I use the pan drippings, and some of my potato water, veggie water if I simmer anything, etc. I skim off any nutrient based liquid and add it into the gravy. Along with spices and herbs.

I don't have a recipe either. Just time tested kitchen sink recipe in my head (I do scratch down a lot and type out notes so I do not forget anything - especially if I'm really busy and there are guests in the house interrupting me.)

I'm big on writing down what works for me and what doesn't. My spaghetti sauce is like that. It's my own.

But I love using recipes a lot as they teach me new techniques and ingredients. Especially when cooking various cuisines from around the world. I learn something new all of the time. There really is a method to the madness, and cooking (and baking) are truly art forms. I look for harder and harder recipes to tackle.

Since We deep fry our turkey I've been taking turkey wings and thighs and roasting them with onions and celery for about 90 minutes. Then I de-glaze the pan and save that. I put the browned turkey parts in large stock pot with carrot, onion ,and celery... cook pretty much all day... Later strain and thicken adding the saved de-glaze pan drippings turns out great...

Roasted garlic chicken (thighs) for "dark meat", Normally I don't use garlic on Thanksgiving, but this year the gravy contained garlic. Fit in the same little oven with the slow-baked yams. I like them better cooked at a lower temperature. Glad I learned about that.

Neighbor made us a sweet potato pie. Mr. Bar-the-Door told me not to give any away. /Filling had butter and cream in it.

oh yea...

I start my gravy as soon as I take the giblets out of the turkey cavity.

I put the giblets, a carrot or two cut in chunks or whole, and an onion or half an onion tossed in, with some celery stalk with leaves, and salt and pepper, and simmer that for hours.

Then I do what I said above...

add the drippings from the roast
add any nutrient rich liquids from potatoes, veggies
herbs, and/or spices
and a thickening agent (milk w/cornstarch or flour or arrowroot, or whatnot)

wow, I forgot the most important part (see, that is why I write things down!)

The giblet stock is the best part of my gravy.

Reminds me of the point blank gun fight between 2 cops and 2 bad guys on the news a few years ago. No one could hit anything . I wouldn't be surprised there was friendly fire casualties

Yes it does. If you like rabbit and mustard, try this. It's a favorite of mine:


4Tbsp olive oil
1 large rabbit, cut into serving pieces
2 garlic cloves, minced
1 large onion, diced
1/2 tsp dried rosemary
1/4 tsp dried sage
1/2 tsp dried tarragon (or more...I love the stuff, and add a lot)
1/2 tsp dried oregano
1 1/2 C dry white wine
1 or 2 large leeks, white and light green part, cut into 2" lengths and julienned (or cut however else you like)
1 1/2 Tbsp Dijon mustard
1/2 C half-and-half (I use condensed milk..it doesn't break)
salt and pepper to taste

In a 12" saute pan, heat oil and brown rabbit parts, about 4 minutes per side. Set aside. Add garlic and onions and cook until soft. Deglaze pan with the wine, return rabbit to pan along with any accumulated juices, add herbs, cover and cook until rabbit is tender, about 35 minutes. Add more wine if necessary. Remove rabbit to a serving plate, add leeks to pan, cover and cook for about 5 minutes, or until tender. Add mustard and half-and-half (or milk), and bring to a boil, then reduce heat and simmer for about 5 minutes. Add salt and pepper to taste, adjust thickness of sauce to your liking, and serve over rabbit. Enjoy.

Well, to be fair, willow - Little W was the kid at school who thought school lunches were great. And he loved Army food - told his buddies it was the best food he ever had. Didn't want to come home on leave because it would be a step down, eating-wise.

Yeah, that's how bad a cook I am. School lunches and Army rations beat me out. So Borscht in Ukraine probably seemed like heaven.

Yes. All have/had long-running mental issues and smoked a lot of pot.
Maybe it was self-medication, but smoking a lot of pot as a child (before age 1 can also increase the possibility of mental issues. So, which one is the cause, and which one is potentially the effect? Who knows how it fits into their array of troubles. Just one of those things these shooters seem to all/mostly have in common that goes ignored.

Toast. I can make toast. Limpa is my favorite bread for toast. Actually, limpa is my favorite bread for everything. I used to be able to buy limpa from a neighborhood bakery but they don't make it anymore. I could go down to Chicago and buy it in Andersonville, but that neighborhood is changing from Swedish to ...... not Swedish. Too dangerous. So my only resource is to do it myself. I generally drag my hands over to the mixing bowl at Christmas to make a few loaves.

8 Chicken thighs
2 2/3 cup of Minute Rice
2 Cans Cream of Chicken soup (condensed)
2 Cans Cream of Mushroom soup (condensed)
2 Packets Lipton Onion soup

In a 13x9pan, combine rice, the 4 cans of soup and one packet of Lipton onion. Mix very well. Place the 8 boned Chicken thighs on top of the mixture and sprinkle remaining packet of onion soup over all. Seal with foil and cook 90 minutes at 350. Uncover for the last 15 minutes. Serves 4-8.

Rice Krispie treats:

4:1 ratio of marshmallow to butter (by volume)
microwave butter at 50% for a minute to melt. Add marshmallows. Microwave at 60% until all melted (could be around 5 or 6 minutes for 10 oz of marshmallows). Stir in rice krispies. Flatten onto parchment paper in a pan/dish/whatever and stick in frig for a little bit.

Awesome. Best yet, it all cleans up easily with hot water.

Drain the pasta reserving just a bit of the liquid, and combine with the sauce.

I still remember the total insanity from Boston that night ... with reports of them tossing pressure cooker bombs out of the car as they were being chased ...

man, that was "manhunt" was one of the biggest fuck-ups of all time. Not only did Massachusetts go totally nuts but the feral government brought loads of thugs in to help lock law abiding citizens in their own houses. The reports of massive firefights that 150 law enforcement and military people were having with those two losers .. who got away, anyhow. ANd, in the end, the cops and feds didn't do jack shit and didn't find joker. It was one of the citizens under house arrest who found the loser in his back yard boat. And then the cops and feds swooped in and fucked all that up, too.

But still, I can fly through self-check out at Walmart with 4 pressure cookers and nothing happens, but if I try to buy a can of spray paint I have to be checked and licensed through ...

Don't knock it, willow. This is a classic recipe in Burgundy. A little green salad, some wine...you've got a great spring/early summer dish. There are as many recipes as there are cooks in Burgundy, but this is a good representative one (not the one I use). Great way of using up chunks of leftover ham around Easter.

It is! You can substitute unflavored gelatin instead of using the feet, and you can pretty much put anything you want in it. A truckload of parsley and chunks of ham are the usual ingredients, but you could use turkey, pork, chicken, whatever. The recipe I use (Jacques Pepin's) uses lots of garlic, white wine, parsley, thinly sliced leeks, and I forget which herbs. Comes out great, and doesn't take long to make if you skip the step of rendering the feet for their gelatin.

cook spinach, drain, squeeze out juices
saute some green onions in butter a couple minutes
add the spinach and season with salt, pepper, nutmeg
layer it between two pieces of salmon
dot with butter and salt and pepper

bake at 425F until done, about 20 mins.

done - full meal

you can add lemon juice/slices and parsley for garnish

In olden times they used ribeye and if you freeze it and let it thaw a bit you can shave it paper thin. The thinner the better. Today though who knows......

A friend gave me some pheasants the other day when I was showing him how to make venison sausages. I plan to turn 2 of them into a pheasant terrine with chestnuts around Christmas. 424 I meant to post this alligator fritter recipe (people were asking about it on Twitter). It's very good and is more meaty than many fritter recipes. Really closer to a crab cake in consistency than to some of the fritters I've had.

I usually wind up freezing half of the (cooked) fritters. They store well and revive readily w/ microwaving.

Here it is:

INGREDIENTS

1 pound alligator tail meat, finely ground
1 Florida sweet onion, chopped fine
1 green bell pepper, chopped fine
1 clove garlic, minced
1/2 cup all-purpose flour
2 teaspoons baking powder
1/8 teaspoon mace
1/2 teaspoon dry mustard
1 teaspoon salt
2 extra large eggs, beaten
2 tablespoons melted butter
1 tablespoon Worcestershire sauce
Optional: 1 teaspoon Florida hot sauce
Canola or peanut oil, or a combination

DIRECTIONS

1. Grind the alligator or pulverize in a food processor. Add the chopped onion, pepper and minced garlic and pulverize with the alligator in the machine.

2. Sift the flour with the baking powder, mace, dry mustard and salt.

3. Beat the eggs. Add the flour mixture. Add the melted butter, Worcestershire and hot sauce, andcombine with the alligator mixture.

4. Pour canola or peanut oil or a mixture of both into a skillet 1-inch deep. Heat tothe bubbling stage. Drop the batter 1 tablespoon at a time into the hot oil, turning the fritters over with a slotted spoon as they brown. Remove when browned on all sides.

I've made a lot of them too over the years.

The one I have to set aside time for, that I have really been wanting to make for a long time is Seafood Pate en Croute from The Professional Chef cookbook. I look at it, and it's a bit time consuming, so I put it off. I did buy the special curved pan though. I got that far.

They make mediocre snacks, but *insanely* good alfredo sauce - add a little extra grated parmesan (I grate my own *and* add a bit of Kraft) and black pepper. Plenty of salt built in. Some half-n-half and you're off to the races!

The brand is Galbani. I had to look at the package because there is no search term for mozarella parmesan cheese sticks that will give you *any* useful results, just a billion deep-fried recipes and all *other* brands of cheese but them.

You can get the tail meat online (iirc Fossil Farms carries it). I'm pretty sure this recipe would work just as well with crawfish tail meat -- I've seen that in the freezer case at Walmart, of all places.

The one time I made corn-dogs, they came out wonderful and I just used Alton Brown's recipe, I think. Basically, corn bread with japalepeners. But you have to use good dogs. Like Nathans or better.

I'm not in a area I can get crayfish tails easily. That is my biggest hurdle, actually.

The last couple I made were:

Veal Pate with Dried Apricots, Hazelnuts and Pistachios
and
Duck Terrine with Pistachios and Dried Cherries

both exquisite

You might check your Walmart or similar store's freezer case. I even found them in Utah. In general the stores that cater to Mexicans and other immigrants tend to have some neat items, like crawfish and tongue.

Check the series Essential Pepin online. Watch the offal episode. He makes what looks like an amazing braised tongue with lentils. Takes a while to cure and cook the tongue, but it's not hard.

Believe it or not, I actually learned to make spaghetti sauce from scratch. I found a recipe online a few years ago and printed it out. Sorry, I don't have a link.

The recipe said to use a grated carrot instead of sugar.

573 This Thanksgiving, I brought the appetizers. One of the things I brought was grilled 'n' chilled shrimp. It was a hit.

In a gallon ziplock bag, mix olive oil, tomato paste (I use Amore brand that comes in a tube) garlic-based dried veggie seasoning, Sriracha sauce, salt, pepper, and a dollop of honey. Add peeled shrimp to the bag and marinate for awhile.

Thread shrimp on skewers and grill till done. Eat some of them. The rest go in the fridge until chilled.

Milady tried baking the bacon today. Turned out great. The grease is a problem, though. Need a sheet with sides, not a flat sheet. We don't have a cookie sheet with sides (well, maybe in a box in the catacombs, but not in the kitchen).

For the next batch, we used pizza pans. Worked pretty well, but then instead of the grease running off, they're sitting in the grease.

Still, turned out great after paper towel treatment.

600 I live in Ketchup Kountry, Catsup Country. Finest soil and climate for specialty tomatoes by the long-tonne. Used to be the smell of late fall arriving, and raised the real-feel of waiting for school bus by 15, 20 degrees. I've made ketchup outside in an iron kettle a couple of times, just to show off and piss off the neighbors. It is brown. You have to food-color the hell out of it to get it anywhere near "57" color. Taste was just fine. Recipe note: know what the first ingredient is, other than tomato? Mustard. How about that.

Sugar-free and low-sugar ketchups are hardly any different in taste from the regular item. You can even fool kids. I wonder why they use all the sugar, then.

Ronster, Im ok with a somewhat sweet barbecue sauce or with i.e. honey mustard dipping sauce for chicken fingers but there has to be enough spice or heat and not just sweetness.

spaghetti sauce has some sweetness just from the 'maters and stuff, adding the extra couple teaspoons sugar per serving that Prego, Ragu etc do is just yuck.

Roll up a sheet of aluminum foil, then unroll it and put it in the pan. Fold up the sides to make a box. The grease drips into the low spots. You still need to drain it on a paper towel, though.

Aluminum foil is your friend. I got a deep dish baking pan with a rack thinking it would be perfect, but it takes longer to cook the bacon with the rack. I find that the paper towel trick after the bacon is done works just fine, and the foil pan liner makes clean a snap.

They sell everything for reloading but I only buy bullets from them. They have very nice copper-plated hollow points, among other bullet shapes, and their prices are very reasonable. I would get copper-plated HPs from them delivered to my door for only 1 cent@ more than lead bullets bought at the local reloading store.

The only thing I do after cooking that meal (or anything else in the pan) is drain off the fat and then hit it with a scrubbing pad and hot water; no soap...ever. Red wine works really well to deglaze the pan, but that is always followed by hot water and the scrubber. Back on the stove top to dry it and wipe it down with Crisco or Manteca to keep it from rusting.

But I'm always suspicious when they close a local plant close to the crop.
Could be from Peru, for all we know.

One of my bigger olfactory shocks in traveling was in Emporia, Kansas. As I approached the city, I smelled delicious cooking chicken. As I got closer to the processing plant, it got a little overpowering. Right in front of the plant gates, the smell would, what did AOP say? -- knock a maggot off the gut-wagon?

Found a nice cheap motel just far enough away, got a great steak in a diner.
Nothing against Emporia. Campbell's (now Ghey Campbell's) has a yuuuge chicken plant in Napoleon Ohio, hell of a town. Smells great from the river side. Do not drive around back on the county road. That's where "the rest" comes out.

I mentioned this the other night in an ONT, but thought it apropos for the food thread. If you are ever near there GO to WI Dairy State Cheese Comp.

My wife swears by their butter. Makes everything better inc baked goods. It actually separates like old time butter used to when heated.

The cheese is so much cheaper than anything along the interstate. 7 yo sharp cheddar is ca. 8.25, other places over twice that. Also they are in a cheese co-op so they carry over 100 varieties.

Take SR41 across the bottom of the Everglades, I think some of the indian stores sell alligator meat. Like the Miccosukee tribe, among others. I have made that trip enough I should know, but haven't been looking.

727 I guess everybody's heard the dot-Indian breakthrough that's supposed to leach half the carbs out of rice? You boil it with coconut oil in the water, then refrigerate to re-heat later. I have had good results frying that. Cheapest chain-grocery "saffron" rice gives the best color, but UncaBen's works too. I have a wok, but just hot oil in a sloped-bottom frying pan works OK. Hope this helps.

Some of the local Mexican lunch joints locally don't peel the tongue, just cook it up and dice it up. There is gristle at the root end, so it is important to get that trimmed back.
There are times when I am wondering if I really want a burrito that will taste me back, but I do love me some tongue burritos. And in a burrito I don't have to check to see if I can see the tastebuds.

Oh, and I am a tall, blue-eyed redhead and when there is a new server, I always get the "clearly not him" look as she walks past me with my "lengua a llevar"

I found it online back in 2011 and I think I've made it about four times.

735 dartist. Well THAT is single guy thinking. You make your rice in a big batch and have plain steamed rice, or buttered rice with your meat and veggies that night, put the rest of the rice in the fridge and then make the fried rice 1 to 3 days later.

Or put some milk, cream, cinnamon and sugar on your rice. Lazy mans rice pudding.

739 Well you can get quite a lot of stuff pre-chopped at the grocery these days. I guess I'd be trying to find enough short-cuts to gitRdone if I liked the recipe, either buying bagged chopped stuff or checking out Amazon to see if any slap chop or other tools sounds like it takes enough of drudge out of chopping to make it happen. But in general thats why I like to go out for Chinese, its mostly labor intensive stuff.
