A week of cooking and then a few days of nonstop eating will tend to put me off my feed. And I have a confession: I had a salad on Friday night. Please don't hate me! Now, I ordered it with sliced hanger steak, but still..... I have found that when I am cooking for things like Thanksgiving, I have very little desire to taste the food as I cook, which is a necessity if you want it to taste good. I do it, but it isn't as pleasurable as dipping a chunk of bread into a sauce on some random Tuesday night in February, or that first spoonful of stew on a cold and rainy March weekend. My guess is that my taste and smell is just overwhelmed with the sheer volume of all that is floating around. It must be an incredible challenge for chefs in serious restaurants to taste and re-taste, dish after dish, day after day. artisanal 'ette went a different and interesting direction for Thanksgiving..... Very simple Thanksgiving dinner this year. I went with the lapin with mustard sauce (out of this world!) served with spaetzle egg noodles and veggies. ****** I have to brag a little about the pork roast up at the top....it worked out very well, and the convenient thing was that it freed up oven space for all of the other things. If I hadn't been forced at gun point to roast a stupid turkey, the timing of the meal would have been effortless. One day I will get my way..... This is what my cheapskate relative brought for dessert: Not really.... If anyone has extra stuffing (I made a ton of it this year just for this reason), mix a waffle-iron portion with a whipped egg and put it in the iron until it's crispy on both sides (did I post a photo last year? Why yes...yes I did! ). It's easy, you can make several of them and stash them in a warm oven until needed, and it is a great base for turkey hash or the last pork chop from the roast you made, or just a couple of fried eggs. I was going to post artisanal 'ette's Red Beans and Rice recipe, but I think I will save that for another day. Maybe next week? That, my friends, is called a "teaser." Another good use for stuffing the next morning is to put into muffin pan and create room in center and drop an egg in it then bake.

Turkey mostly gone. Had turkey, cheese sauce + bacon on toast for brunch. Can't really be a hot brown without a tomato.

Your cheapskate dessert pic reminds of running joke in our house. Occasionally, when someone asks for a "little" of this or that they'll get a portion the size of a thimble. Or a "small" drink of anything it'll be served in a shot glass. Can only pull it off 2-3 times a year, but still funny.

My red beans and rice recipe is 2 andouille sausages, fried in a pan until browned and tossed into a crockpot with two cans of red beans and a can of green chilis. Serve over rice. Ridiculously easy. Hehe, CBD, I didn't know you were going to post those picts. Yes, I made a bunny rabbit this year. It was sublime. And, fairly effortless since I roasted it whole versus cutting it into serving pieces. The mustard sauce was simple to do after taking the roast out. The dish is called Lapin a la Moutarde ( Rabbit with Mustard Sauce ) from the Bourgogne region of France. Here is the recipe: Bourgogne Lapin a la Moutarde Rabbit with Mustard Sauce 1 rabbit, about 3 lb ( 1.5kg ) Salt and freshly ground pepper 1 T vegetable oil 4 Tbls strong mustard 1 sprig fresh thyme 1 oz ( 25g ) butter 6 Tbls dry white wine 2/ 3 cup ( 5fl oz/150ml ) heavy ( double ) cream or creme fraiche Preheat oven to 425F ( 215C ). Rinse the rabbit and pat dry; season with salt and pepper. Oil a shallow oval baking dish large enough to hold the rabbit. Spread the entire surface of the rabbit with 3 tablespoons mustard and place it in the dish. Strip the thyme leaves from the stalk and sprinkle over the rabbit. Dot with thin slivers of butter. Bake for 50 minutes, basting the rabbit regularly with the pan juices and wine. Arrange the cooked rabbit on a serving platter and keep warm. Pour the cream and the remaining mustard into the baking dish and scrape up browned bits with a wooden spoon. Pour this mixture into a saucepan and boil for 2 to 3 minutes. Coat the rabbit with the sauce and serve immediately. Serves 4 The rabbit took longer than 50 minutes, even though I took the roast out of the refrigerator to warm to room temperature or so. This Thanksgiving's Battle of the Cocktails was won by unanimous acclaim by-
The Irish Maid 2 oz Irish Whiskey .5 oz St Germaine elderflower Liqueur .75 fresh lemon juice .75 simple syrup 2 slices of cucumber Muddle cucumber in bottom of shaker, add rest of ingredients, shakey-shakey vigorously, strain into glass and enjoy. Not really. There was no way for me to taste the Chorizo/sourdough stuffing I made until it was ready to eat, but it was quite tasty. I didn't have a recipe either and had never tasted chorizo so I admit, I was *really* nervous about the taste until it was tried. I actually rarely taste things as I make them and they usually work out at least acceptably from basic principles of what goes together. It's getting cold, so earlier this week I made a batch of split pea soup ( a vegetarian version, although I added some chicken broth for meat protein ). A great recipe from the Fit for Life original cookbook. I had a bunch of fresh cabbage to use up. And midweek I made a yuge pot of spaghetti sauce because I wanted to make lasagna to use up some ricotta in the fridge. I froze half the soup (as it states in the cookbook - this one freezes really well), half the sauce, and most of the lasagna (since hubby didn't come home until the end of the week). We had a semi-family get together for Thanksgiving-
so there was duck, ham, smoked turkey, roasted turkey and various assorted accompanying dishes. The big surprise for me was my sister's roast turkey- It was absolutely, the tenderest, moistest, most flavorful turkey, I think I ever eaten. According to naturalfake Sis, the only difference was- The turkey was a- Step 5 Organic Turkey from Whole Foods I think Step 5 means that the turkey is free range and that- twice a day they spritz the turkey with Creed Spring Flower perfume and tickle it's ass with a mink glove. Y-not- I used fresh pomegranate, fresh dates, chopped , but not too fine. Soaked these two together in a Merlot for a couple hours. I then used a small amount of the orange sauce that comes with the ducks. Just kept adding wine and a small amount of the orange sauce as it reduced. I mashed some of the pomegranate seeds but not all. so it kept a little relish aspect to it. Was even better the second day.

I'm sure rabbit is very good, but after having a beautiful, sweet black rabbit as a pet-which unfortunately met an untimely end (but not because we ate it) I don't think I would chose rabbit unless there was no other meat to eat

My Thanksgiving ended up going well, despite the fact that I'd been laying aprox 1000 tiles for the few days beforehand and had zero motivation to cook.
I took the horde's advice and put the salt in with the butter rub for Mr. Turkey and then I spatchcocked him and threw him in the oven. Hubby said it was my best turkey ever. Then I threw together a quick dressing with the turkey stock I'd made with Mr Turkey's spine and neck and mashed up some potatoes and the obligatory "marshmallow casserole" as my autistic 10 year old calls it. I'd made a pumpkin cheesecake the night before (probably with some thinset added to the mix) and we called it good. Thankfully I was only cooking for my crew so I didn't have to worry about impressing the in-laws. As for what I'm thankful for? Being 99% done with the flooring on the main level of the house. My brother-in-law always fries a turkey, and I like that very much. The rest of the family must have too; the carcass was completely picked over except for the legs.

The tasting thing is interesting, I think people just have violently different senses of taste.
I tend to taste subtler (or at least different) flavors than most of my family. I taste food while I'm cooking to make sure I don't need to adjust it (or throw it away before ruining more ingredients). I don't find that tasting during cooking ruins any later experience. Held our 21st Annual Turkey Fry at my BIL's house. Had 6 fryers going and 40-50 guys fried their birds. We start at 6a and typically go until noon. 2 new finds for me at the event. Bloody Mary w/ Hot spicy pickled green beans and Jalapeno Cheesecake (not sweet-sweet, eat with cracker.)

It has a thousand spices to measure out, but after that it's coasting. One of the simplest recipes. I use a food processor to shred the cabbage. It's called Blue Ribbon Split Pea Soup in the cookbook. They did an amazing job on this recipe. A work of art. Found it online: This recipe is from the Fit for Life cookbook by Harvey and Marilyn Diamond. It does require quite a few different herbs and seasonings but it has a wonderful flavor and is much better (and better for you!) than the traditional split pea soup with ham. I have made it for years and split pea soup fans love it. It makes a lot and it does well with being frozen and reheated. Ingredients: 2 tablespoons butter 1 tablespoon extra virgin olive oil (arti-book says safflower oil) 1 cup carrots, coarsely chopped 1 cup celery, coarsely chopped 1 1/2 cups onion, coarsely chopped 1 large clove garlic, minced 2 cups cabbage, finely shredded 10 cups pure water 2 cups green split peas 1 teaspoon dried basil 1 teaspoon dried thyme 1 teaspoon dried marjoram 1/2 teaspoon dried oregano 1/2 teaspoon dried summer savory 1/8 teaspoon dried sage 1/8 teaspoon dried tarragon 1/4 teaspoon celery seed 1/4 teaspoon ground coriander 1/2 teaspoon sea salt (optional) (arti-I use this) 1/4 teaspoon seasoned salt or salt-free seasoning (arti-I just add extra salt if needed) Fresh ground pepper to taste 1 vegetable bouillon* (I use 2 for added flavor)(arti-I use either my own if I have some on hand, or I buy cartons, or use a good bouillon powder.) 4 tablespoon fresh parsley, minced (can use 2-3 t. of dried if necessary) (arti - I always use fresh) Directions: Heat the butter and oil together in a large soup kettle. Add the carrots, celery, onion, garlic, and cabbage and sauté, stirring frequently, for several minutes. Add the water, the split peas, the seasonings, and the bouillon. Bring to a boil. Cover and simmer over medium heat for 1 hour and 30 minutes, stirring frequently. Stir in the parsley and adjust the seasonings. One of the stores I frequent always has them on hand, and they looked particularly fresh this week. I should have bought 3 or so, and froze the others. I have two other recipes I have been dying to make. All very different. Rabbit tastes wonderful. Not gamey or strong (like some duck or lamb), very subtle and delicious. We ate out for Thanksgiving, first time ever, so no leftovers. Not exactly holiday fare but last night's supper was tasty. A baked potato, well buttered, plenty of fresh cracked black pepper and a big dollop of sour cream. This is topped by mass quantities of warmed home made sauerkraut and fried slices of kielbasa. All the flavors meld in the bowl.

I know. But, that one cookbook is amazing. She and her husband both wrote it, I think. Very magical recipes, even though there are very few versus the preaching at the beginning of the book. I love the Cauliflower Toasties (which I still make a lot), and they have a really good spaghetti squash recipe in it. Many good recipes. Soups, wraps and slaws. A great avocado salad dressing too. We had the traditional, oh-so delicious Thanksgiving fare, but decided while cleaning the dishes that Christmas eve will *not* be a big production. Will most likely be lasagna, since mom and I both suggested it at the same time. Easy and make-ahead, too. OK, we'll probably make the sauce and noodles from scratch, but still easy.

Has anyone actually read an honest article about the Colorado Springs shooting? By that I mean one that actually tells where the victims were when they were shot, and where the shooter was when he did the shooting? My understanding is that the shooting started at the Chase bank branch right next to the Planned Murderhood clinic, and that the shooter fled into that clinic after he'd shot the victims. Did a cocooning (sp?) style TG this year: both daughters came in (both in grad schools in Northeast), hadn't seen them since mid-summer.

I saw him demonstrate it on Fox, I think. Also, he showed off his newer gravy recipe, by roasting the turkey atop a bed of sweet potato chunks, then draining most of the juice from the pan (saving a handful of chunks), mashing the rest of sweet potatoes in the roasting pan, then using the juice with a handful of the sweet potatoes that were roasted, and blending them in a blender equals gravy. The turkey drippings and some of the roasted sweet potatoes. I'll have to try this one day. Since We deep fry our turkey I've been taking turkey wings and thighs and roasting them with onions and celery for about 90 minutes. Then I de-glaze the pan and save that. I put the browned turkey parts in large stock pot with carrot, onion ,and celery... cook pretty much all day... Later strain and thicken adding the saved de-glaze pan drippings turns out great... "Turkey and ham" family here, but I couldn't find a ham without corn syrup (allergic) so I roasted a turkey breast (in a cooking bag). It was nice, since I didn't have to wait for the dark meat to get done.
Roasted garlic chicken (thighs) for "dark meat", Normally I don't use garlic on Thanksgiving, but this year the gravy contained garlic. Fit in the same little oven with the slow-baked yams. I like them better cooked at a lower temperature. Glad I learned about that. Neighbor made us a sweet potato pie. Mr. Bar-the-Door told me not to give any away. /Filling had butter and cream in it. I put the giblets, a carrot or two cut in chunks or whole, and an onion or half an onion tossed in, with some celery stalk with leaves, and salt and pepper, and simmer that for hours. Then I do what I said above... add the drippings from the roast add any nutrient rich liquids from potatoes, veggies herbs, and/or spices and a thickening agent (milk w/cornstarch or flour or arrowroot, or whatnot) wow, I forgot the most important part (see, that is why I write things down!) We had mulled wine for TG dinner, something I had never tried before-one quart of burgundy, with a pint of cranberry juice and one pint of orange juice, plus lemon and orange slices sliced thinly and two cinnamon sticks, nutmeg allspice and cloves in the crock pot on low for about two hours. We had the traditional, oh-so delicious Thanksgiving fare, but decided while cleaning the dishes that Christmas eve will *not* be a big production.
--- We normally do something fun and new for Christmas dinner, but this year we're likely to be at a college bowl game (or traveling to/from one), so it'll be restaurant fare for us. I see no evidence it's becoming more common, willow. There is more coverage but there are also more people, and treatment for mental illness is really spotty and irregular, it's easy to avoid diagnosis and treatment (and to be mis-diagnosed).

Set aside. Add garlic and onions and cook until soft. Deglaze pan with the wine, return rabbit to pan along with any accumulated juices, add herbs, cover and cook until rabbit is tender, about 35 minutes. Add more wine if necessary. Remove rabbit to a serving plate, add leeks to pan, cover and cook for about 5 minutes, or until tender. Add mustard and half-and-half (or milk), and bring to a boil, then reduce heat and simmer for about 5 minutes. Yes. All have/had long-running mental issues and smoked a lot of pot. Maybe it was self-medication, but smoking a lot of pot as a child (before age 1 can also increase the possibility of mental issues. So, which one is the cause, and which one is potentially the effect? Who knows how it fits into their array of troubles. Talk about weird food. My wife's family being Slovaks have a traditional Christmas eve supper. Mushroom soup w/ or w/o beans, boiled wheat, rice, spit peas, prunes, garlic cloves and some other stuff I can't remember. Some people complained, so ham is also served.

Add marshmallows. Microwave at 60% until all melted (could be around 5 or 6 minutes for 10 oz of marshmallows). Stir in rice krispies. Flatten onto parchment paper in a pan/dish/whatever and stick in frig for a little bit. Awesome. Best yet, it all cleans up easily with hot water. Here's a 5 ingredient meal I just made.
Pick a pasta you like. We used farfalline because it's adorable. Cook up the pasta according to package instructions. In another pot melt some butter and then tossed in some cubed ham (great way to use up leftovers!). Season a bit with Lawry's and then dump in some cream and Italian cheese mix. Dry brined the turkey with salt and baking powder.
Spatch-cocked, flattened , skewered, roasted turkey and giblets. Poured off the drippings, let the fat separate, spooned off the fat. deglazed the pan with champagne. In another pan, made a roux with equal parts turkey fat and flour. added the reduced champagne, chopped roasted giblets, pan drippings, and a teaspoon of Kitchen Bouquet gravy additive (comes in a tiny bottle). Here's a 5 ingredient meal I just made.
Pick a pasta you like. We used farfalline because it's adorable. Cook up the pasta according to package instructions. In another pot melt some butter and then tossed in some cubed ham (great way to use up leftovers!). Season a bit with Lawry's and then dump in some cream and Italian cheese mix. A truckload of parsley and chunks of ham are the usual ingredients, but you could use turkey, pork, chicken, whatever. The recipe I use (Jacques Pepin's) uses lots of garlic, white wine, parsley, thinly sliced leeks, and I forget which herbs. Comes out great, and doesn't take long to make if you skip the step of rendering the feet for their gelatin. I meant to post this alligator fritter recipe (people were asking about it on Twitter). It's very good and is more meaty than many fritter recipes. Really closer to a crab cake in consistency than to some of the fritters I've had.
I usually wind up freezing half of the (cooked) fritters. They store well and revive readily w/ microwaving. Here it is: INGREDIENTS 1 pound alligator tail meat, finely ground 1 Florida sweet onion, chopped fine 1 green bell pepper, chopped fine 1 clove garlic, minced 1/2 cup all-purpose flour 2 teaspoons baking powder 1/8 teaspoon mace 1/2 teaspoon dry mustard 1 teaspoon salt 2 extra large eggs, beaten 2 tablespoons melted butter 1 tablespoon Worcestershire sauce Optional: 1 teaspoon Florida hot sauce Canola or peanut oil, or a combination DIRECTIONS 1. Grind the alligator or pulverize in a food processor. Add the chopped onion, pepper and minced garlic and pulverize with the alligator in the machine. 2. Sift the flour with the baking powder, mace, dry mustard and salt. 3. Beat the eggs. Add the flour mixture. Add the melted butter, Worcestershire and hot sauce, andcombine with the alligator mixture. 4. Pour canola or peanut oil or a mixture of both into a skillet 1-inch deep. Heat tothe bubbling stage. Drop the batter 1 tablespoon at a time into the hot oil, turning the fritters over with a slotted spoon as they brown. Remove when browned on all sides. I deep fried a whole alligator once! For a game dinner.

I found these Mozarella/Parmesan cheese sticks.
They make mediocre snacks, but *insanely* good alfredo sauce - add a little extra grated parmesan (I grate my own *and* add a bit of Kraft) and black pepper. Plenty of salt built in. Some half-n-half and you're off to the races! The brand is Galbani. I had to look at the package because there is no search term for mozarella parmesan cheese sticks that will give you *any* useful results, just a billion deep-fried recipes and all *other* brands of cheese but them. EWWWW but, I parboiled one for, I guess, couple minutes (Chinese cookery rule, lot of roundly boiling water, "make it swim three times"), slit the outer layer end-to-end EWWWW and it peeled in a clean layer. Not really so bad. Used "culinary pliers" to get a good grip on that epidermal layer, though. Great sandwich meat, due to its shape and density. They used to smoke them. This Thanksgiving, I brought the appetizers. One of the things I brought was grilled 'n' chilled shrimp. It was a hit.
In a gallon ziplock bag, mix olive oil, tomato paste (I use Amore brand that comes in a tube) garlic-based dried veggie seasoning, Sriracha sauce, salt, pepper, and a dollop of honey. Add peeled shrimp to the bag and marinate for awhile. Thread shrimp on skewers and grill till done. Eat some of them. The rest go in the fridge until chilled. Milady tried baking the bacon today. Turned out great. The grease is a problem, though. Need a sheet with sides, not a flat sheet. We don't have a cookie sheet with sides (well, maybe in a box in the catacombs, but not in the kitchen). For the next batch, we used pizza pans. I live in Ketchup Kountry, Catsup Country. Finest soil and climate for specialty tomatoes by the long-tonne. Used to be the smell of late fall arriving, and raised the real-feel of waiting for school bus by 15, 20 degrees. On the other hand, if you lived with a block or two of where tomato trucks waited in line to unload, there was tomato yuck running in the gutters, and always rats and mice around.
Up to a certain point in economic development, little family-owned tomato pruct plants survived, even if they were selling most of their concentrate to Heinz. When machine-picked tomatoes became the thing, their world started to end. My dad dispatched refinery trucks, and a couple of drivers would take orders on days when they'd be going past the little plants. You'd have to buy a case at a time, so you had to know what you liked pretty well. All gone now, except the company that makes Dei Fratelli is a mile and half as the scent wends, so we still get a waft now and again. Nobody calls them Dei Fratelli; they're known by the family name or their prior long-running trademark. I've made ketchup outside in an iron kettle a couple of times, just to show off and piss off the neighbors. It is brown. You have to food-color the hell out of it to get it anywhere near "57" color. Taste was just fine. Recipe note: know what the first ingredient is, other than tomato? Mustard. How about that. Sugar-free and low-sugar ketchups are hardly any different in taste from the regular item. You can even fool kids. I wonder why they use all the sugar, then. Ronster, Im ok with a somewhat sweet barbecue sauce or with i.e. honey mustard dipping sauce for chicken fingers but there has to be enough spice or heat and not just sweetness. spaghetti sauce has some sweetness just from the 'maters and stuff, adding the extra couple teaspoons sugar per serving that Prego, Ragu etc do is just yuck. Milady tried baking the bacon today. Turned out great. The grease is a problem, though. Need a sheet with sides, not a flat sheet. We don't have a cookie sheet with sides (well, maybe in a box in the catacombs, but not in the kitchen). For the next batch, we used pizza pans. Worked pretty well, but then instead of the grease running off, they're sitting in the grease. Still, turned out great after paper towel treatment. Mmmm. Aluminum foil is your friend. I got a deep dish baking pan with a rack thinking it would be perfect, but it takes longer to cook the bacon with the rack. The only thing I do after cooking that meal (or anything else in the pan) is drain off the fat and then hit it with a scrubbing pad and hot water; no soap...ever. Red wine works really well to deglaze the pan, but that is always followed by hot water and the scrubber. Back on the stove top to dry it and wipe it down with Crisco or Manteca to keep it from rusting. One of my bigger olfactory shocks in traveling was in Emporia, Kansas. As I approached the city, I smelled delicious cooking chicken. As I got closer to the processing plant, it got a little overpowering. Right in front of the plant gates, the smell would, what did AOP say? -- knock a maggot off the gut-wagon? Found a nice cheap motel just far enough away, got a great steak in a diner. Nothing against Emporia. Campbell's (now Ghey Campbell's) has a yuuuge chicken plant in Napoleon Ohio, hell of a town. Our Thanksgiving trip included a stop at our favorite cheese factory near my Dad in Stevens Pt. WI. It's ca. 1o miles w in Rudolph.
I mentioned this the other night in an ONT, but thought it apropos for the food thread. If you are ever near there GO to WI Dairy State Cheese Comp. My wife swears by their butter. Makes everything better inc baked goods. It actually separates like old time butter used to when heated. The cheese is so much cheaper than anything along the interstate. 7 yo sharp cheddar is ca. 8.25, other places over twice that. Also they are in a cheese co-op so they carry over 100 varieties. state where there are no alligators and I have never seen an alligator outside of a zoo or reptile farm)-there are lots of farms raising alligators in the south and you can go into your local supermarket and buy alligator meat? Take SR41 across the bottom of the Everglades, I think some of the indian stores sell alligator meat. Like the Miccosukee tribe, among others. I've been wanting to make a fried rice recipe for at least three weeks now, but I just can't get started. It's so much work and so much cleanup that it's too daunting. I've already bought and thrown out ingredients that went bad, then bought some more. But I still can't bring myself to do it.

I guess everybody's heard the dot-Indian breakthrough that's supposed to leach half the carbs out of rice? You boil it with coconut oil in the water, then refrigerate to re-heat later. I have had good results frying that. Cheapest chain-grocery "saffron" rice gives the best color, but UncaBen's works too. I have a wok, but just hot oil in a sloped-bottom frying pan works OK. Hope this helps.

The recipe I have has a ton of ingredients that all need to be diced. It is a hell of a lot of work but it is spectacularly good.

dartist. Well THAT is single guy thinking. You make your rice in a big batch and have plain steamed rice, or buttered rice with your meat and veggies that night, put the rest of the rice in the fridge and then make the fried rice 1 to 3 days later.

Well you can get quite a lot of stuff pre-chopped at the grocery these days. I guess I'd be trying to find enough short-cuts to gitRdone if I liked the recipe, either buying bagged chopped stuff or checking out Amazon to see if any slap chop or other tools sounds like it takes enough of drudge out of chopping to make it happen. But in general thats why I like to go out for Chinese, its mostly labor intensive stuff.
