Food Thread: Bourbon, and thoughts on drinking [CBD]

Yesterday's bourbon post evolved into an informative longbow vs. crossbow discussion....but it made abundantly clear what I have thought for years: it doesn't matter what you drink, as long as you like it.

There were a fair number of comments mocking one of my favorite drinks (Laphroaig) as nothing more than bourbon with added cigarette ashes and charcoal briquettes. There were Morons in good standing who like stuff I find vile.

Worst Scotch whisky: The Laphroaig. It took two days, and I am not exaggerating, to get the taste of smoke, charred filth, and burnt tar out of my mouth. It took weeks to forget that taste as it lingered in my nightmares.

The point is that no matter what the reviewers say or the bottle proclaims, as long as you like what is inside, you are drinking the good stuff. And if that stuff is $15/1.75 liter bottle? Then you are very lucky!

This is Mark Bittman's recipe from The New York Times. It is a bit pompous (mature Stilton? What an ass), but it is a nice base for easy pasta dishes that are just subtle attempts to get rid of the strongly flavored cheese in your refrigerator.

Farfalle with Gorgonzola, Arugula and Cherry Tomatoes
Summary
Buy a creamy piece of cheese that will ultimately melt into the pasta, and a variety with strong flavor: blue d'Auvergne, Maytag blue, good Roquefort or mature Stilton are all good substitutes for Gorgonzola. Because you turn the sauce into the pasta over heat, slightly undercook the pasta at first.

Ingredients

Salt and freshly ground black pepper
1 cup half-and-half, cream or milk
1 cup crumbled Gorgonzola or other good blue cheese
1 pound farfalle or other pasta
2 cups arugula trimmed of very thick stems, washed, dried and chopped
1 cup cherry or grape tomatoes, cut in half
Freshly grated Parmesan to taste, optional

Method

1. Bring a large pot of water to a boil and salt it. In a small saucepan gently warm the half-and-half and Gorgonzola just until cheese melts a bit and mixture becomes thick; chunky is O.K.

2. When water boils, cook pasta until it is just tender but not mushy. Drain and return to pot over low heat.

3. Stir in Gorgonzola sauce along with arugula, tomatoes and a healthy dose of black pepper. Stir to combine, taste and add salt, if necessary, then serve immediately, with grated Parmesan if you like.

In the ads, though, they say that a "small percentage" is the Angel's Share, but IIRC (it's been six years since I took the Jameson tour) it's pretty significant, ~12%. But then Jameson is probably not aged as long as Jameson, so maybe it's around 4%.

Best pairing with blue cheese I've ever had - at the advice of my chef brother - was blue cheese with sauternes wine (sweet dessert wine), just take a bite of cheese and a swig o'wine. Skip the cheesecake good.

I like blue cheese on a salad w/fruit, such as strawberries or dried cranberries and pecans.

31 I used to like Laphroaig @ $28.50 per bottle; now that it is around $70 I'm not so much in love with it. Pretty much all single malts (and a lot of bourbons) have seen their prices ascend into the stratosphere, although occasionally I find Macallan 10 yr. for around $37 and that's not bad.

In the Jack vs. Jim debate, I will drink both although Jim Beam is a more traditional bourbon in terms of process and it is reflected in the taste.

Occasionally I'll pick up a Wild Turkey 101 on sale, or Knob Creek. Early Times is also OK, especially when I am looking for a "lighter" flavor, making mixed drinks, or am cooking/marinating something.

I paid $150 for a bottle one time in South Korea. My co-workers boyfriend was in the Air Force and was heading back to the US.

And the female bartenders at our bar were always incredibly nice to me and I was there a lot and Crown Royal is made around my hometown...so what the hell....

It came with a large plate of cut up fruit which was nice. They stored the bottle. Each time back, you paid $10, got a plate of fruit and your booze. I think it lasted 2 nights.

64 I prefer Bulleit rye over Bulleit bourbon. I know I've said this a bajillion times before but if I'm drinking bourbon straight, it's Eagle Rare. For my Manhattans, Maker's Mark and Noilly Prat vermouth.

In cooking news, not much going on. Made a batch of strawberry jam yesterday. Dinner tonight is simple, BBQ chicken.

I dislike strong cheeses like Gorgonzola. The only time I like a blue cheese is maybe sprinkled on a salad, but not a lot of it.

67 Since I can only drink small amounts of hard liquor at a sitting before my stomach rebels, I drink only for taste. That means for me: neat and sipped very slowly. This tales the pressure off the booze budget. Fortunately, my preferences usually don't go for the high priced stuff. I could afford Lagavulin single malt but at over a hundred bucks they can stick it in their Highland ear. Laphraiog is almost as good and much less costly, at least for now. I should probably look for a good blended scotch in case Laphraiog and Glenmorangie go out of sight.

In a disaster, I can muddle through with George Dickel #12 and Wild Turkey Rare Breed.

Good thing I stuffed my maw with a salad. Don't h8, but it had edamame, cubed firm tofu, sunflower seeds, field greens, and cut up teriyaki chicken, with a sesame oil and soy sauce vinaigrette. Very substantial and had a nice tooth to it.

your dentist is wrong, you should always drink a whiskey neat, at least when you first start drinking a whiskey so you are able to determine what it tastes like before you start messing with its composition. it is like adding a seasoning before you even taste a meal.

as for those that insist water or ice unlock a whiskey, well it may be true but I feel anyone making a claim like that should begin by stating "listen, I am something of a nancy boy and I really cannot handle a full strength whiskey so I weaken it so I can focus upon the flavor and not get distracted by all the coughing and choking."

Anybody who has been avoiding "Mad Max: Fury Road" from fear of Overt Propaganda Poisoning is doing themselves a disservice. Max was still the center of the film around which everything spun crazily - bald-headed bastards, metal-armed Amazons, gorgeously barren vistas, rock 'n' roll savagery, and some of the most dynamic car chases I've seen on film. It's a harsh world where a dictator is exploiting everyone under his rule -- for their muscle, their blood, and their wombs. It's your standard post-apocalyptic villainy, no PoMo crap being foisted on the viewer that I could see.

I do however wander away from drinking white rum once in a while, and I recently bought a fifth of Cachaca. (has that "c" with a tail that pixie hates because it is Portuguese and isn't pronounced Ka-sha-sah, but that is as close as I can get)

It is actually worth the $21 I spent on it.

My other guilty pleasure is Aguardiente for the anise flavor.

I've been drinking the stuff for decades ase well - I started young. It is common sense, start with it neat if you have to add something in. However, adding water, ice, whatever is gonna complicate things since you never get the same water, ice proportions. Simply giving yourself 10 minutes to nose the whiskey and breathe is better than messing with additives.

The open carry people are still protected by the 4th. You still need probable to search. I doubt the criminals will be open carrying. If you know how and where to tap into the insiders' info-stream, you can attend these events where generally the highest-end liquor flows freely and without charge to anyone clever enough to know how to attend. Often, the events are supposed to be limited to media, consultants, major buyers, and celebrities (I fit somewhere in one of those four categories), but not always; it's not uncommon to see "bloggers" or just good-time clever party-crashers conning their ways into such events. That could be you!

Seriously, some of most lavish open-bar events are hosted by the world's best liquor brands; and sometimes not only can you you drink yourself silly on outstanding product, but they hand out take-home sample bottles for later consumption as well.

If I was younger, lived closer to the action and had more gumption I could find my way to events like these every single week of the year; but alas, it doesn't always seem "worth it" simply for the hassle of transporting oneself to the location and taking time away from family...

But even so, I've been to plenty, and had some seriously outrageously top-shelf whiskey, gin and more in recent years. Brands that aren't very well-known in the US, but which blow everything else out of the water.

It's funny, not in a ha-ha way, but in a 'you hafta put one foot on the floor to sleep' way, that it costs some Caribbean resorts more to put cola in your drink then rum. So it pays to be weary and watch the barkeep.

Sadly, I can't post any sorts of clues or details in a public forum. Occasionally, they will crop up online in "events listings" when someone lets the cat out of the bag. But only rarely. It's more like "who you know."

But, yeah, a good place to start is to ask your relative. He might have a toe in the door, and let you get a toe in too!

Logprof, I bought some of the GW Original Recipe about 2 years ago. They make unaged whiskey available twice a year and aged whiskey once a year. 375 ml bottles, limit 2 per person. It's unavailable the rest of the year. No samples. The day of sale at the estate and the grist mill they hand out tickets starting around 8 am and start selling bottles at 10. If you have a ticket you must purchase your bottle(s) sometime that day. Any leftover bottles are sold first come, first served the next day.

As for the taste: I bought the unaged stuff. It's clear, obviously, and went down smooth. Tasted awful. I still have some left.

Anyway, I got tired of the smoky, peaty varieties of scotch real quick, and I am a scotch drinker.

I did myself some serious damage once and would eat greek yoghurt and fruit and jam smoothies for breakfast to push bone growth and offset getting bound up by the pain pills.

The regular old yoghurt is OK but it needs more sugar to.. well cover up the yoghurt taste.

Watched a cool nutrition show recently. They explained the difference between HFCS (high fructose corn syrup) and corn. You take a coca leaf leaf, you can make a really pleasant tea out of it. You refine, combine, concentrate, and perform other magic on it you end up with a line of coke, or worse, crack cocaine.

HFCS is the crack cocaine from an ear of corn.

--Yes, coca tea is good; had it in Peru. Just pour hot water over the leaves, add some cane sugar, and voila, instant remedy for altitude sickness (which I had). A guide told us not to do so much as stick a coca leaf in a guide book when returning to the States because the drug dogs just think of them as cocaine.

That's a good price. Even the not-on-sale price is about $15/bottle better than here. Unfortunately (and not at all coincidentally) my state does not allow shipments of hard liquor from outside the state.

221 I inadvertently stumbled up on a quick way to make cheese sauce. So now this is how I make broccoli w/ cheese because I'm lazy and there's no way in hell I'm going to clean a pot I made cheese sauce in before it sets up like caulk.

Microwave the veg of choice for 2 minutes and pour off most of the water.

Remove the veg and add 1-2 tblsp of butter, grated parmesan and shredded cheddar to the bottom.

Place the butter in thin slices all around the bottom.

Put the veg back and add same amount of butter, parmesan and cheddar.

Heat it up in the microwave for 2-3 minutes, stopping 1-2x to mix everything together.

This is probably the way broccoli cheese is made around the world for all I know. All I'm saying is I'm often indolent and hungry and this is what I worked out on my own.

By a strange coincidence, I just stocked up our depleted liquor cabinet on Friday. Wow, Maker's Mark has skyrocketed lately! But the old standby Old Forester is still quite a bargain for its quality; my Dad's favorite, I hoisted a shot of it to his memory on his birthday (the reason I restocked). Plus, to my great delight, I found a long-absent friend, I. W. Harper, back in the store; that was my Mom's favorite, though, ever the lady, she drank it sparingly. It's a little pricey for our cabinet, but I'm happy it's represented there once again.

Sailor Jerry's is spiced rum. I tried a bottle and wasn't impressed. My favorite brand of rum is Flor de Cana, from Nicaragua. The seven-year aged stuff is very smooth, and the 12 is even finer. But I usually buy the 7, suits me fine. The 12, goes down fine, straight.

I've got some more expensive stuff (21 year Glenlivet... good, but not worth the cost), but my very favorite--and the stuff I broke out when it was announced that we'd bagged bin Laden--is the 14 year Oban. I can't detect half the flavors it's supposed to have (never really noticed the orange peel or sea salt), but I've been to the distillery twice and would gladly do so again given the opportunity.
