Food Thread: The Existential Threat of DNA Laden Foods [CBD]

A recent survey by the Oklahoma State University Department of Agricultural Economics finds that over 80 percent of Americans support "mandatory labels on foods containing DNA," about the same number as support mandatory labeling of GMO foods "produced with genetic engineering."

WARNING: This product contains deoxyribonucleic acid (DNA). The Surgeon General has determined that DNA is linked to a variety of diseases in both animals and humans. In some configurations, it is a risk factor for cancer and heart disease. Pregnant women are at very high risk of passing on DNA to their children.

Maybe SMOD really is the only answer.

One of the advantages of having basic cooking skills (other than the obvious -- the ability to feed one's self) is that any recipe can be used as a template for what you really want.

I was poking around my recipe files for a good beef stew recipe to post today, and I realized that while stew is in semi-regular rotation in Chez Dildo's kitchen, I have only one saved recipe...and it's a crappy one from Jamie Oliver with all sorts of stuff I don't want in my stews (turnips? Bugger off!). I tried it once and was not pleased.

But why only one recipe? Because stew is just a few techniques that need to be filled in with your personal preferences. I really like heavily caramelized onions, so my stews are usually redolent with the sweetish flavor of onions that have been cooked low and slow and long. But bay leaf is cloying on my palate in large doses, so I back off a bit. And against all of my anti-establishment instincts, I have discovered that de-fatting stews and then swirling just a bit of butter in before serving will make them, paradoxically, richer tasting but less filling and heavy.

Anyone a former cooking-show junkie who has, over the past several years, just gotten sick and damned tired of the dumbing down of the cooking, and the push toward stupid game show crap? I used to love watching the Food Network's many good cooking shows, but they have either disappeared (Emeril...we hardly knew ye!) or become parodies more appropriate for SNL.
Are there any remaining that showcase serious cooking for serious cooks?

The classic Manhattan is made with red vermouth, but this twist on it is a nice change, especially if you can get the correct Amaro. They vary wildly, as I have discovered to my misfortune. And the Carpano is simply the best white vermouth on the planet.

The Perfect Manhattan

3 parts Rye Whiskey
1 part Meretti Amaro
1/2 part Carpano Bianco
3-4 dashes of Dutch's Colonial Cocktail Bitters

Add all ingredients to a Boston shaker filled with ice. Stir gently (do not shake) for 30 seconds, then strain into a lowball glass.

Garnish with a twist of lemon (twist it over the drink to get the lemon oil on the surface) or a Luxardo Maraschino cherry.

Paula Deen had some fun recipes that were not overly parsimonious with the fat and sugar. The ones I made were pretty good, including this one. It's a great dish for a big gathering, because it can be doubled or tripled easily, and is best prepared the night before.

Baked French Toast Casserole with Maple Syrup

Ingredients

1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup

Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Directions

Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.

The next day, preheat oven to 350 degrees F.

Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

Praline Topping:

Combine all ingredients in a medium bowl and blend well.

I've mentioned this in a previous Food thread, but Fine Cooking magazine regulary has articles where they take a basic item - say, pasta salad, cheesecake, beef stew, whatever - and they break it down into its elements and teach you how.where you can make substitutions/customize.

On their website they provide the same info in the form of their "Recipe Maker" section. I love this so very much because I've learned how to create recipes that include the ingredients I prefer.

It doesn't matter what anybody says, if you/your loved ones enjoy it, it's good.

One of my family's favorite recipes is dirt simple. It's just a variation on spaghetti.

Boil penne pasta.
Dice up keilbasa. (my family prefers beef keilbasa)
Cook keilbasa in pan.
Add keilbasa to spaghetti sauce that's warming in in pot.

After pasta has boiled, combine meat/sauce mixture with pasta. Top with shredded mozzarella.

I do for certain items, and people who have allergies or some other health reason do, but adding more stuff to a label won't get the majority of people who aren't already reading labels to do it.

This so reminds me of the hearing at the end of "Thank-you for Smoking" where the senaters are so very concerned about cigarettes...and blind to the risks of whatever goods and services that are manufactured in their home state. Food labels? OK, how about car labels? Marijuana labels? Etc....

I'm actually using some of a Batali recipe for dinner...
Making a new (to me) meatloaf with a one lb mix of beef, pork, veal and one pound of lamb, which I've never used.

Mirepoix is prepped, which I'll salute in bacon grease, getting ready to go grab some rosemary off the bush out back. I wish I had a block of feta to crumble into it.

Anything else I should add? Thinking about chopping up some kalamata olives to add in...

85 I have some red sauce on the stove now made with my garden tomatoes I grew and canned last year. It will take a few days.

One of my fav breakfasts when there a lot of people around is Eggs Portugal my Great Aunt used to make.

Night before-

brown oz sausage (I use Jimmy Dean Sage)

cube 8 slices bread and put in greased 9x13.

3/4 cup grated cheese (I use Velveeta slices to cover.)

Mix 4 eggs, 2 1/2 cups milk and 3/4 tsp mustard

Pour egg mixture over bread, sausage and cheese, cover and put in fridge overnight.

In morning-

Mix 1 can crème of mushroom soup and 1/2 cup white wine

Mix and pour over casserole

Bake at 350 for 1 hour.

Makes great leftovers.

And I recently bought a couple of inexpensive ceramic knives and have been trying them out. On sale + coupon for $10 each. Experimentation on the cheap.

Not an all-in-one kitchen knife like a chef's steel 8 inch*, because of the physical limitations of ceramics. Cut into a bone and they burst into flame or something. And you have to keep them away from the sink because drop-knick-crack.

Still, very nice to have -- sheathed -- in the cutlery drawer. Great for lotta chopping recipes because the lightness of the blade reduces the hand fatigue. Also good for slicing off the bone meats very thin.

92 2-3 boneless skinless chicken breasts
1 small bag (2ish cups) of frozen corn or 1 can corn
1 can black beans, drained and rinsed
1-2 green, red, orange or yellow peppers, diced
3-4 cups medium salsa

Dump everything into the slow cooker; cook on high for 3-4 hours or low 6-8 hours. About half an hour before serving, take chicken out and shred with two forks. Put the shredded chicken back into the cooker until ready to serve. Serve with chips, cheese, sour cream, avocado or use as a taco filling. Leftovers are great for tacos or enchilada filling. Tastes even better the next day.

Brisket
Pinto beans

No need for a recipe for beef stew. Salt and pepper beef chunks (I like to cut my own from a chuck roast) and brown in your stew pot. Remove. Brown onions in same pot. Add back beef chunks and whatever vegetables you like. Season with some herbs (thyme works best) and a bayleaf or two. Pour in beef stock until the meat/veg is mostly covered. Add a couple dashes of Worcestershire sauce. Bring to a boil, cover, turn down heat and simmer for a couple of hours until veg is cooked and meat is tender. Salt and pepper to taste.

Now we have a ranch nearby that puts some corn out on the field to finish their beef so we get the best of both worlds. Supposedly grassfed is still the healthier option, but I do like he corn finish, I have to say.

Makes me remember walking up the road after school smelling the fresh bread Ma did twice weekly. If you were lucky, you got there right after she took it out of the oven and scored the heel, with a ton of butter.

156 My trick with stew is to flour the chunks of meat and then brown them before putting them into the stew. In the past I have just browned them in the dutch oven and but the veggies afterwards, though the caramelized onions sound wonderful so I will try doing the onions first and then starting on the meat and other various veggies.

Yesterday I did a pork roast by browning it as usual, then slow cooking it at 370F with just enough liquid to cover the bottom of the pan and ensure that there was good conduction between the dutch oven and the meat.
Put in parsnips, onions and potatoes, and after an hour put in one thick diced sweet potato and carrots and let cook another 45 min. (it was a small roast, and it was cooked and tender all the way through - I don't like pink pork)

Delish. In the past I would put in liquid half way up the roast, but I got asked to try with less liquids. I think it turned out better. The parsnips and carrots were much sweeter.

I may do some sort of stuffed roulade next this way.

157 I like the Cooking Channel better than Food Network. They show more actual cooking shows. We love Extra Virgin and have bought their cookbook. I use it a lot. The best is when they go back to Italy. Love those shows.

I actually learned a lot when Mario had his original show about the cooking differences in the different regions of Italy.

There is a show that's called something like My French Kitchen. Kinda like a simplified Julia Child approach to classic french cooking.

I guess I'm partial to all of the Italian shows. But I want to see cooking, not competition. Except for Diners, Drive-Ins and Dives. That's my secret pleasure show.

I made stuffed shells yesterday so its leftovers tonight. Yum.

Also, depending on the recipe, sometimes you can remove the cooked meat and then reduce the liquid over a medium fire to thicken/intensify. Then return the meat and serve it up.

I will only add that I deglaze with the stout befor adding stock and simmering . also, i usually add a roasted bone into the mix while it simmers. Mostly due to the fact that I rarely have anything but chicken stock in the freezer.

I also make a quick stew using venison. Can do the whole thing in a cast iron skillet in under 35 minutes.

I used to be better at it, but laziness has caught on. The vast majority of my stew recipe called for floured meat browned on the out side (sorta a poor man's roux) veggies, broth, a bit of water, and the dumplings (the recipe off the bisquick box works great.)

But as I get busier, I find myself resorting to the crock pot, which can't brown the meat or get hot enough for dumplings, leading to thinner stew.

Worst hangover I had was after a night of revelry with some scientists in Belgium. Had way too much of everything to drink, from champagne and sherry to wines and beers. Then I had to take the train to London the next day. Accidentally wound up in the smoking car and unable to get off of it during the trip. I was completely green by the time I got to England.

Second worse was drinking Calvados. Also with scientists.

Obviously, science is bad.

kindles, from what I could learn, the Weston brand seems to be top tier. Foodsaver is the most popular brand and they offer several affordable models.

Depends on how much you'll use it and if you're willing to spend a few more dollars for something durable. Quite a few models can be had for under $100 but they do wear out.

I cannot recommend the Cuisinart Multi-cooker, there's some sort of mfg issue that makes the electronics go haywire, but there are several others of that type I've been curious about, including one by All Clad. They are "slow cookers" with the ability to sear in the same unit.

Has anyone here used the All Clad one or the Ninja?

Beer is actually quite technologically tricky make well. A friend of mine used to be a brewmaster for Anheiser - Busch, and while I'm not a big fan of Budweiser, etc., his description of how they make beer is pretty interesting and quite involved.

So here's a story I don't tell often, but only about 10 people would recognize it, and they are either too left or too civil to be here. (Mostly the former). So if I name no names, no one will be mad.

So, Grad studenting it up at a bioethics conference. By that I mean 3 of us share a room to save cash. Anyway, 2 of us come back after a midway late night (the other was Mormon so no drinking for him). We catch up with our 3rd roommate on the way back to the hotel (a few blocks form the conference center. We knew he had gone out with a former student who had a promising shot at a fellowship for him (like a psudeo-interview).

That former student: Irish, very very Irish.

My weekend roommate? Tried to keep up with the number of drinks being ordered and..well couldn't.

So as we're walking through San Diego's Gaslamp village, the bars are letting out, more drunk people are spilling into the streets. I'm 90% sober (having gotten tired and stopped drinking hours before.)
The Mormon, obviously completely sober.

The 3rd guy? Yeah, staggering, and he wants to help the poor drunk girls who are drunk and being "hit on" by frat boys. We tell him "no, stay out of it."

Then we get back. We all go to sleep. About 4 in the morning, hear something from the bathroom. I think nothing off it until I hear "tsr, I need some help" (my real name obviously).

I turn on the light and he's in the shower, covered in vomit. When the light comes on, he snaps to and goes "I should wash off." Proceeds to shower, and go back to sleep.

Wakes up the next morning with a hell of a hangover, wondering why his PJs are all wet and in the shower. He doesn't let us talk about that anymore. And in return we don't let him go out with the Irish guy again. (Although I stopped going to the conferences.)

Believe it or not, he was my roommate for 2 more conferences, and never had a problem again (probably out of embarrassment.) Once he got a job he started picking up the bar tab, so I couldn't complain to much.

240 Millionaire's bacon: Start w/ thick cut bacon. Separate the pieces and blot them until thoroughly dry. Pack both sides with brown sugar, I use dark brown sugar. Bake @ 350 until the sugar is a sticky, carmalized mess and the bacon is crispy. Pro tip: save the drippings. They will separate into bacon fat, and a smokey, bacon flavored Carmel sauce that is unearthly good warmed and poured over vanilla ice cream.

242 59 ... I grew up eating fattoush thanks to one set of grandparents, first generation American that kept the Lebanese recipes they knew. It was mostly a summer thing since they insisted on ripe tomatoes. All us grandkids loved it.

Suggestion: Instead of toasting the Syrian (pita) bread, tear it up and mix in with the rest of the salad. The pieces soak up a but of that delicious dressing. I used to raid the leftovers to get those pieces.

They're rectangular, and really are wrapped with bacon. Lots of cheese, sauce, pepperoni and bacon bits on top.

Dolin is excellent. Haven't tried the Carpano, but I have a bottle waiting for my current bottle of Dolin to run out.

275 100 anyone have any thoughts about grass fed beef? I do not like it and I am tired of having Mrs. YankeeFifth make me buy it all the time. For what it is worth, in my not insignificant experience with bovines, bovines like lots of stuff besides grass even corn.

I like it a lot, because it has lots of flavor. But there's a caveat. The lots-of-flavor, less-fat thing works for expensive steaks, and for ground beef, but the lesser cuts can be very tough. Even with the usual techniques, like long stewing, you can wind up with something that is sort of hard and stringy.

I once thought to resolve the matter by springing for a grass-fed New York Strip and a corn-fed, dry-aged New York Strip. They were pretty different, but both were full of flavor and I couldn't decide which I liked better.

The wife and I have what amounts to a "summer" and "winter" menu. The winter menu consists of heartier stuff, heavier soups and the like. Lots of dishes to be served over rice.

Oh, he was groomed for big things in the 70's, when he was made a White House Fellow as a Colonel in the Army. Only real fast risers were picked for stuff like that.

And Reagan made him head of the NSC after they canned John Poindexter, so there was a big folder on him already in the RNC people file. And then he was vaulted over a bunch of other officers to be made CONUS.

367 Well, I've just spent a day n' a half doing a full "G.I. Party" on the kitchen. Disassembled all the countertop appliances, cleaned and reassembled them. That means the toaster oven, coffee maker, can opener and toaster are all clean-as-new, inside and out.

Soap n' water clean of the granite countertops, using a nylon scrub pad, followed by wipe and air-dry with 90% isopropyl alcohol.

Pulled the range, fridge and dishwasher from their respective recesses. Field stripped and cleaned the units, and their respective locations.

Scott's Liquid Gold on the cabinets, followed by buffing with clean, dry cloth.

Cleaned the stainless sink and stove's backsplash, followed by Simichrome buffing, restoring to an "as new" finish.

Hand scour-brush the floor tile's grout, followed by alcohol cleaning of floor as final drying step.

The galley is now ready for a proper, white-glove inspection.

It's not quite Spring here, but let's call it a rare fit of optimism. I'm that desperate for this crappy weather to end!

Bourbon, tonight. I've earned it.

If Firefox goes down, are you all really going to be satisfied with lamed copies or IE which is still not in compliance with the standards or Chrome which lacks a lot of functionality and support?

It's a case of not knowing what you've got till it's gone and Firefox going the way of Netscape would not be good.

383 Feh, I'll clean like that, but once a year. And I kind of do it in a rotation. The china hutch is it's own, full day chore, and that gets done sometime in the summer.

Still, if you don't break stuff down to clean UNDER the cracks n' crevices every so often, then the grime eventually wins.

Same reason we field strip our guns. To get all the lake water and mud out of the sneaky, hidden places. Canoe accidents are damned hard on the collection, y'know?

What they are promoting isn't cooking. It's not even close. No real cook who cares about what he's serving would put a plate of sweetbreads with maraschino balsamic glaze and Swedish fish reduction with a side of pig's knuckle salad in front of another human being. And that's exactly what you're likely to get on Chopped and the rest of that dreck.

Even the shows that marginally showcase actual meal preparation are tedious. Watch one episode of Triple D and count how many times Guy Fieri says "creamy, texture, tangy, off the hook, righteous, smoke ring" or the number of times per episode he's stuffing a grease burger into his yap.

Pale Moon is a crippled copy of Firefox. The guy doing that has stated he won't do anything about supporting people using Win XP (which Firefox has done).

I've also been rejected at sites for having an out of date browser when I was using Pale Moon. (not recognized as a branch of Firefox)

So giggle gleefully while Firefox dies and there's less competition for the other browsers so they don't give shit about you anymore, come tell me how great it was.

I had Pale Moon for a few months and frankly wasn't all that impressed then the guy up and said he wasn't supporting Win XP anymore. Right now, I can't afford another computer and I don't see why I should have to for some very limited upgrade for what I do with it. So I don't want to hear any crap about how it's MY fault that Microsoft in a purely greedy business decision unilaterally decided to abandon the best OS they've ever produced and since have gone back to producing crap (well maybe not Win 7).

MS has always pulled this crap; a new OS every year or so. And when things were expanding it made sense but now we're in a more stable situation as far as devices and what we use our computers for. No reason for them to ditch XP except they just didn't want to bother and they wanted to force those who were happy with it to upgrade to something that wasn't very good and wasn't an exponentially increase in usability. Just the reverse in the case of Win 8

If you want to punish anyone punish the particular people who fired the guy cause ruining Firefox isn't going to affect those folks much at all. They all have other jobs.

429 Re bourbon vs rye: From what I was told years ago by the bourbon guy at Binny's, the giant Valu-Rite in Chicago, some bourbons are blended with rye whiskey. When I mentioned my faves, he said they were the ones with rye as well as corn. Old Overholt is the Jim Beam of ryes; basic, drinkable, but nothing to write home about. Whatever you do, don't confuse Jack Daniel's with bourbon; there's nothing you can do with that shit to make it palatable. As mentioned above, Bulleit and Buffalo Trace are both great. Knob Creek is the best "semi-affordable" bourbon I ever found, and I used to be, um, a frequent bourbon drinker. It was $40 for a big bottle 8 years ago. Wild Turkey 101 became my everyday bourbon (at $26 for 1.75L back then), and I do mean every day. A dash of Angostura bitters over the ice helps bring the complexity of flavors of the Turkey closer to that of Knob Creek, which doesn't need it. Of course, bitters don't hurt the Knob any, either; in any case, vermouth is a wonderful addition but don't go overboard unless you're having your Manhattan as dessert. I write this from memory, as it's been over seven years since I had a drink. When I got to the point where the handle bottle of Turkey 101 only lasted two evenings, my party was over. I do miss the taste, the burn, and the glow, but I broke my "OFF" switch long ago and I can't go there any more. If you still can, you're welcome to my share if there's any left...

He's a poltical flag officer. There have always been those kind of guys in the military. Benedict Arnold was PO'd at Washington, because he got all the credit.

There's tons of them now, pretending to be one thing or another. Powell is just annoying because we were once fooled into thinking he was something other than what he turned out to be. He helped this along by some of the stuff he said.
Now, he's really a kind of doddering old man. What is he, about 80 years old now?

OK, I see where you are coming from. Let me explain.

In ceasing to use Firefox, I had none of the motivations you were talking about:

"I'm just saying that the people that you're trying to hurt by your boycott of Firefox, won't be and the ones who will be hurt might be yourself."

I wasn't trying to hurt anyone.

My "dishonorable friend" analogy was intended to convey to you what my actual motivations were, which were something like this: I cannot in good conscience use a piece of software put out by a group that has done something so despicable. I just cannot do it.

Do you understand? I liked Firefox a lot, and if Eich gets a sufficiently abject apology, and an offer of reinstatement, I would be quite happy to start using it again, whether he accepts the offer or not. Until then, it would feel like a self-betrayal.

The whole network went Reality TV-- a lot of pitting personalities against each other, fake controversies, and certainly not anything about food or cooking.

435 I fell in love with Rachel Ray back in 2005. It was an affair unfulfilled. She was on television and I was flat on my back in bed. She cooked and I didn't eat. I had a feeding tube through my abdominal wall to my stomach and puked up most of what I syringed into it. But ooo Lawd! I wanted Rachel in more ways than one. I'm back to eating normally now, but Rachel Ray is still tops in my book, in the kitchen if not the bedroom.
