Not surprising based on the Obama administration track record. Obama's climate deal with China backfires. I think this comment sums it up succinctly.

China are playing Western politicians for the fools they are, quite beautifully.

* Disregard all invitations to commit to any serious cuts in carbon. This drives Western politicians crazy.
* Hold back from making any premature commitment whatsoever to ascertain precisely how stupid your opponents are (and don't interrupt them while they're making their mistakes).
* Having established you're dealing with jaw-dropping, planet-sized stupidity, request more cash than you could possibly imagine for 'climate reparations'.
* Strike a serious-looking pose and state; 'this is a serious problem created by the West'!
* Sit tight-lipped while your commercial opponents agree to hand over untold tens of $billions to pay for infrastructure you would have installed yourselves anyway.
* Nod approvingly, bow deeply and remind the West that 'while this is a start, it cannot be the finish' and that you'll be back soon for some more cash to Save The Planet From The Problem Caused By The Wicked, Selfish West.
* Go home, count the money and laugh yourselves hoarse.
* Rinse, repeat.

77 By the way, thank you all for the prayers and hilarious comments last night as I prepped for and went into the meeting with the Chinese investors.

I managed to NOT do any of the things suggested (except for briefly wearing the fake buck teeth to lighten the mood), the presentation went well, and the investors have our offer package and there is a pretty good chance they will sign tonight before they travel back to China tomorrow.

Now waiting nervously and praying they sign. If they do, my family will be set for ten generations, and Ex-Mrs. Sharkman 2 will finally stop stomping on my underballs every day about money.

I have made pork ribs in my Weber gas grill, using a smoke box(aluminum foil will work too) that I replenished a few times. I used a dry rub on the ribs, then simply cooked them at about 225 degrees until I thought they are done. I used a rib rack and turned on just the rear burner for indirect heat.

MANY years ago -- this would have been around 1979 to 1982 or so -- Frito-Lay sold their Tostitos Picante Sauce in a *can*, just like their bean dips.

It looked horrible -- no wonder it was in a can -- but it was spicy and *delicious*.

A few years ago when I saw Tostitos was selling picante sauces again, I was overjoyed and bought some. Of course, they had changed everything and it didn't taste half as good anymore.

This past year I was surprised to learn that I *could* in fact use my normal gas grill (not supposed to be good for this) as a sort of a smoker, a "low and slow" cooker, for ribs, at least.

Managed to stabilize the heat around 210-240. Left baby backs I got on sale on the grill, bones down, for 7 hours (one salt + pepper, one dry rub applied night before).

Wow. I mean, wow. These things compared (to my best recollection) with very good stuff I've had in NC, VA, GA. Unbelievably good. So now it's my go-to thing for certain guests. Also had a big bunch of cherries I wasn't going to use in time back in August. Made some BBQ sauce. OMG. Fantastic. Froze half of it.

The best salsa that I can find these days is La Victoria Salsa Ranchera. It comes in mild, medium and hot, so take your pick. Not as salty or vinegary as most of the others. For the McCormick Mexican seasoning, it almost certainly has cayenne pepper powder, cumin, paprika, onion powder, corn starch, corn flour (masa) and garlic, with a bunch of preservatives. For spicier, up the cayenne, but in general experiment with the proportions of ingredients until you find a blend that you like. To simplify things, you can remove the cayenne, cumin and paprika, and just buy chili powder, although if you like spicy foods you will need to add some cayenne anyway.

308 CQD: La Victoria is overall good stuff. The *very first* salsa I fell in love with was a product they simply called "Chili Dip" back in the mid-1970s. I was 11 years old and wondering how they could pack so much flavor into a little bottle.

Years ago I was *addicted* to their Salsa Victoria, which had Anaheim (?) peppers in it. Unfortunately, they made some changes somewhere down the line and it's now got *way* too much tomato puree in it, to the point it seems to me more like eating ketchup.

But, some of their other concoctions are good, especially if you're a salsa newbie.

I sometimes remember if I overestimate the great taste of things I can't get anymore, simply because they're not around anymore. It's easy to romanticize the past like that.

The first taco *sauce* I remember my Mom getting for our tacos was a brand called Rosarita. Dang that stuff was good, and the perfect blend of spicy, savory and sweet. The closest thing you can get to it today is Ortega's taco sauces, which are actually pretty good... but IMHO somewhat sweeter.

Step #1. Equal parts room temperature milk, butter and flour. Add the flour slowly and whisk the entire time.

Step #2. Find cheddar cheese that you like. I like the hard, sharp cheddar. You can usually find it shredded, which is better for melting purposes. More expensive, but simpler. Add that in LAST, in EQUAL PARTS to the milk, butter and flour.

Step #3. Understand that "Easy Additives" are your friend. Store-bought queso, (nacho-cheese), is good. It also adds backbone to your "dip/soup/topping".

Step #4. If you are adding more ingredients, (red peppers, green peppers, onions, jalapenos), add a touch more flour.
-The water from the veggies will throw-off the coagulation.
-Better-Yet... pan-fry the veggies and drain the water before adding to the mix.
-If you saute' the veggies, remember to drain the extra fat and water from the pan!

...I'm a little "saute'd", myself so someone will be along to correct me shortly! ...lol.

I wonder if they still have their Salsa Cilantro. IIRC they still make it without too much tomato puree, like the Salsa Victoria used to be.

And, Jardine's used to make a Salsa Tepin, with Tepin peppers. It was the closest I could ever find to a duplicate of the original Tostitos Picante Sauce I mentioned earlier. Yummy but of course, that went away too. But I have found you can order tepin peppers online and make salsa out of 'em, which is another project for the future.

1/2 tsp cilantro
1 onion, yellow
5 tsps chipotle sauce
1/2 tsp garlic
approx 5 ozs pickled jalapenos, nacho-sliced
approx 14 ozs tomatoes, petite diced/drained
Chile tepin powder (to taste)
Lime juice (to taste)
Salt (to taste)

Put it all together and chop it all up really fine, either manually or in a food processor, and it should be ready to eat.

I don't seem to buy salsa much any more. Nor make it. Love it - but mostly consume it at Mexican places or take-outs (which is fine - it's mostly house-made and great).

Did make some achiote pork chops a few weeks ago, using the achiote paste you find at Mexican stores. Excellent. And some arroz verde (green rice), also great, which I haven't made in years.

Need to return to the glory days, when I spent most of a Saturday making mole poblano from scratch. I think I had nearly 40 ingredients; toasted/ground all the spices myself. It was amazing stuff. Used to have friends and work colleagues ask me, regularly,whether I was making it again soon, after they'd had it.

I should have said earlier, the Pace is my fave *supermarket* salsa. My fave salsa, period, is what they serve you free at Acapulco restaurants here in SoCal. It's got Serrano peppers, I finally figured out.

When I have a bit of extra money, I'll sometimes swing by Acapulco and buy a couple containers of their salsa, along with their fresh-made tortilla chips.

We asked what type of cheese they used and the answer was, "Lanolakes."Apparently, Land Of Lakes sells a "superior melting cheese" commercially, which is really American Cheese. So I roast or grill and chop poblanos, jaapenos, anaheims, onions and garlic, stir into American from the deli with splashes of milk till it's right. Freezes well, too.

However, I did get to fire off a few from a Mark 19 launcher at Quantico in the 80s. I believe that at the time I first saw the Mk 19 - a belt-fed grenade launcher - I thought something along the lines of "hmm, maybe there IS a God, and He loves us!".

Biggest pop gun I've touched off was the 20mm chain gun on a Bradley. And I almost - *this* close -got to fire the gun on an F-16. Oh yes, in flight. Would have been at the Avon Park gunnery range in FL (flying out of MacDill when it was still a training base, early 80s). Tragically, the CO of the squadron (which didn't really know the restrictions when flying civilians) popped into the briefing at the last second to say hi, saw the mission plan sketched on the white board, and "corrected" it.

6 roasted jalapeños, i only take off stem but leave all the skin
lately ive been adding 1-2 roasted habaneros
4-5 roasted cloves of garlic
a chunk of onion
1 can of diced tomatoes
about a teaspoon of cumin (to taste)
Salt to taste
A small bunch of cilantro (dont know unit of measure)

Toss in blender for just a few seconds depending how chunky you like it

Fresh everything, plus lime juice and some superior hot peppers of indeterminate background that came up where I planted something else. Sometimes my garden skipped a year on some things that got planted. But damn, that salsa went fast, even though I put up about 12 quarts all told.

392 I planted a bunch of jalepenos, and canned a lot of them, in those little jars that you would put baby food in. They were great, but the next year I planted some odd, longish green hot peppers, which were not so good canned but were fine roasted and fresh. The following year I got something else entirely, without planting anything resembling a hot pepper, so your guess is as good as mine. I suspect I had a garden angel looking out for my salsa that year.

I don't know if yall would consider it smoking, but my wife cooks the ribs in the oven for a bit. Then I put them on the charcoal grill w/ applewood in the charcoal. Works us. Great if you have an apple tree you trim every year.

Yeah... that "party-favor" seems to fly out of the bowl. fresh salsa is absolutely the best.

I offer all of the hot chilies off to the side, except pickled jalapenos and a shake-or-three of cayenne pepper.

I want my spices to be "THERE" ...after you stop eating the particular item! While you are eating it, you should be enjoying the flavors.

When you stop for a minute...

...whoah!

Once you start eating again? The "heat" dissipates.

THAT is when I know I've hit the perfect line in my spices.

416 qdp, you must have access to *good* Mexican grocery stores and bodegas in your area. Do you have the Northgate chain? They're quite good in this area (south of you, next county down).It's funny, my wife's Japanese, and she finds some perfect thin cuts of beef for various dishes at Northgate.

Back in the early 90s, Safeway/Vons had an experimental Mexican version of their stores out in San Gabriel - Tagui's, think it was called? Anyway, it was awesome, Northgate is similar but I think Tagui's was even better (huge bins of all kinds of dried chiles in produce - heaven). Best thing about San Gabriel: all street names Spanish, architecture of commercial strips largely faux-Mission ..... most store signs .... Chinese characters!

Basic was simple for grenading--in the pit and pull pin throw with the appropriate stops after the commands.

More fun was the launcher you stuck on the end of the Garand, the blank and that level /sight fastened to the bolt area.

Hate to say it, but I think those are conflicting parameters. I'll admit I'm no expert on tablets, but the basic equation is: processor + memory + basic OS.

(BTW#2... I toyed with the idea of owning a tablet, but I don't like the limitations they come with; I want a key board, I don't see the appeal of smearing up a screen with your finger*, and the lack of internal memory is decidedly unappealing...)

DDoS is very different from doxxing. Doxxing is very different than stealing private information for gain (such as with credit card numbers).

It's doxxing if they release the information in order to destroy the targets. Can't do that on too large a scale or else you become a serious target yourself due to sheer numbers.

I've subscribed to National Geographic magazine since I was 12 years old in 1970. It's the only print magazine I still get. I hardly ever read them anymore; just throw 'em on the pile. But I can't let go. It's a habit.

Back in the 50s and 60s, they ran enthusiastic articles about cutting edge technology: supersonic jets, rockets, nuclear power, etc. They were optimistic about Western Civilization back then.

Scientific American is the same way. Some years ago I obtained a collection of 1950s issues. It's heartbreaking looking at the ads from hundreds of American companies that made machine parts, electronic components, chemicals, and so forth. They're almost all gone now.

yeah spinal tap was pretty accurate. Most musicians will have stories that parallel the shit in that movie. I sure as hell do.
