19 Two types of pressure cooker gauges:

Jigger types use a weighted piece of metal that lets off steam intermittently-makes a lot of noise but won't explode.

Manual pressure regulator types have a pressure gauge with a valve you have to WATCH and adjust as heat increase to allow correct depressurization- they are more quiet and steady in their depressurization (they don't jigger), but if left unattended with incorrect valve release setting will explode.

I've used both.
I like hearing and knowing the pressure is being released, even though the jiggering of steam passage gets annoying. Better than a blowed up kitchen.

I will only use the manually depressurized (unsafe) cookers outside and have to watch them closely, which is boring and counterproductive.
Choose your canners accordingly.

I'm sure there are other factors in choosing a canner, probably even digital pressure controls, but canning is old-school so I stick with the jigger style.

Absolutely! Chainsaw work isn't work at all. I love cutting shit down. Pro-tips: be super careful "bucking" or cutting wood when it's on the ground. keep the tip out of the dirt and rocks. Also, make sure your pre-mix is accurate.
I have a friend who was brought up in the country. She said: "It wasn't a party until the chainsaws and fireworks came out."

37 I have used both. The Wife loves home made apple sauce, and we have canned as many as 50 quarts on a single Saturday. With the kids gone, we now do 25-30.

I agree that the manual ones are boring AND scary, but since we are in the kitchen, anyway, it is not a big deal.

I really like brown rice cooked in the smaller, "jigger-style" one.

Yes. Buy a lager (ish) one, then scale down the bar and chain. Stihl or husqvarna, just don't try and spell them, are great. In the past year I've cut easily 1000 trees with my husqvarna, I got the model with 20 inch bar, but use 16 inch on it.

Don't buy cheap chainsaw, you will be frustrated. They have half the number of teeth as a good one. No idea why.

I used to live in the Santa Cruz mountains and one time a freak storm dropped two feet of snow, something that probably only happens once a century. Trees came down all over and blocked roads, knocked out power and phone, etc. You could hear the chainsaws running for weeks all through the mountains and valleys. Free firewood! Of course, that was back when the gov'ment wouldn't try to throw you in jail for burning it. So now nobody has a chainsaw or bothers to clear the deadwood.

49 Canning is a fading art, but a very good idea. You can pickle nearly anything and it often tastes better that way. Stores longer, too. Gardens + canning = food all year long that you didn't have to buy at the store and does not require refrigeration. The tough part is sterilizing the bottles, and that's time consuming but the end result is so worth it.

My mom even pickled green cherry tomatoes one year, they were great on salads or as a side dish with a sandwich.

51 Ya paints over the 'sploded pinto beans, first with two coats of old-fashioned Kilz. The oil based kind, not the useless latex version.

It'll stop the bean-oil from burning through the paint.

Then you can paint over the Kilz, with whatever type n' color of paint you might prefer. And the bean stains won't show, ever.

And if, way back in time, you might've painted over said stains without the Kilz, and now the oils are burning through the paint?

The Kils will still work, but now you get the pleasure of doing a whole new paint job.

But hey, it's the weekend, right?

You can see it in the pic. The valve is in the center of the lid and that black spot below it is the plug. Somebody kept that from blowing out before the clamps failed.

I have a Husqvarna Rancher 55 with 18" bar and three hardwood chains. I hate stopping to sharpen chains, so I just go through those three and call it a day. I get about an hour of good cutting from each sharpened chain.

I bought the Stihl extendable pole saw last year for safety reasons and to get a longer reach up into living trees.

Buy a Stihl. Get a pro-sized model if you must. Poulans are ok, and Echos are ok, but the Stihl is like a Mercedes.
Buying a "backyard" sized saw is like kneading bread with a Sunbeam mixer. Nothing good comes of it.
Also, make sure your saws all use the same oil:gas ratio, same size chain, buy chaps, get a safety class, and wear hearing protection or you will have tinnitus like me.

And buy non-ethanol gas always.

85 Looks like the lid was not fully rotated into the locked position, about 1/4 turn. If it was only partially screwed on, the pressure would force the lid back around the thread and - lift off!

I've been canning for years and never had a mishap. Use good equipment and be smart.

Yeah, here's a food thought. (Long one, sorry.)

My grandmother, to my uncle's new bride: Never can anything that you can just buy off the shelf. Gramma spoke from experience, after decades of raising and canning their garden produce.

There's a big trade-off in that idea, it's true, but oh, that Economy of Scale! That same EoS is what makes store-bought bread instead of home-made so popular and fast food instead of home-cooking so successful, right?

Milady and I were practically founding subscribers to Mother Earth News life. We were all about fresh home cooking and gardening and canning and making bread and our own yogurt and...

Actually, when we started out, you could barely find good, plain yogurt or decent whole bread even at the "health food store" (with the nice white-haired old lady that smelled like B vitamins - the store, not the lady). By gramma's rule, we really couldn't find what we wanted on the shelf back then. Anyway, Milady is a master in the kitchen, and you cannot find anything equivalent to her baked goods or pizza sauce, or anything else, even today.

When we had the kids at home, to some degree, baking fresh bread was more sensible. It was even part of the Home Schooling. Now, with kids gone and just the old grumps at home, well, they deliver pizza, right?

(Thinking back, when the kids were young, we still lived in Chicago, and the EoS meant ordering in or dining out was easier. We went out for food we couldn't easily make at home. Gyros, tzatziki, baklava! But, three kids, mostly meals at home.)

Anyway, even before kids (last millennium), young couple us almost immediately experienced that EoS meant one thing: is this the best use of your time? What else would you do with the time you'd spend kneading or weeding every week? (Or canning.)

Having been infected with entrepreneurialism, what we'd really like to do is be on the other side of the equation. We've run food service now and then, but mom'n'pop style restaurant or small sprouts business is not much above home cooking on the EoS. Better to have our own brand, restaurants and store goods, with Milady's recipes! Then we'd be able to go to the store and buy it off the shelf. And she could experiment with new ideas at home, which is the best, and the successful experiments added to the menu and product line.

We haven't realized that idea, and may not, but I've thought more and more like that since we first baked bread together. So to speak. The Market for what we like is much greater today than ever, too.

Meanwhile, I'm glad that the Market means we've got fresh healthy eggs via a local chicken rancher, plenty of good "health foods" in the regular grocery stores, and of course the finest locally-grown grass-fed black angus in various delicious forms. And pizza delivered. Those ranchers and farmers and the pimply delivery kid with the battered vehicle, all save us the time and effort, and make buying more economical than doing every little thing ourselves. Which works for me, as we get older and as time gets tighter. And seems to work very well for everyone.

Until the Obamanation venezuelas our food supply....

91 I visited a gf in SF. She lived in this large, old, luxury, third floor flat with a deck in back. Because it was built on a hill, her neighbors on one side who also had a deck were about 10 feet lower. We were bbq and her 3 gay neighbors were trying to smoke a turkey. There were flames everywhere. They sprayed it with what I thought was a water bottle but it made things worse. The turkey caught on fire. They tried to remove the turkey but dropped it on the wooden deck. They tried to pick it up but by then the wooden deck had caught on fire. Finally told gf to go call fire department. Sheesh. You wd think 3 gay guys wd know how to cook or at least not burn the flat down.

So, remember, every kitchen needs a fire extinguisher.

99 Ye gods, I am a geek.

Modern pressure canners have a pressure interlock that keep you from taking the lid off under pressure. There are ways to defeat that, but it requires a level of sophistication akin to fishing for your own kidney.

That pic is an older pressure-canner, without a pressure gauge, and probably used a dial or pop-up type weight to monitor pressure... though it is normal in those to only have the jiggler weight on top of the stem.
From the lid stuck in the ceiling, that model (and this is why I am a geek) looks like a 70's Mirro.

Since the lid looks fairly ok and the pot looks fairly straight, I suspect the cook was pre-heating the water to do canning or cooking ( I am guessing cooking a stew from the stuff on the counter and lack of jars) and was using an old worn-in pot that had the seal that was a bit old, and forgot to release pressure before twisting the lid off.

Internal pressure did the rest.

Buddy has all that but forgot them last weekend so I had to take down two trees with a damn hatchet. (Not gonna lie, it was exhausting but it was fun just whacking the hell out of them and then seeing where they'd fall.)

Clearing firing lines for his tree stand.

Bonus- jumping the creek I went shin deep in mud. Which saved me from the chiggers which he picked up. Woo hop.

Get a chimney sweep in to make sure its unclogged and ready for use. Its not too expensive and definitely cheaper than a chimney fire because some bird built a nest one time.

When we were kids, we were scared of the pressure cooker. I liked when the doohickey was removed and the resulting noise and steam. I think it was the heaviness of the pot and lid which made my 5 y/o self nervous.

125 I tried to can stewed tomatoes last weekend. It did not turn out well.
I couldn't keep the pressure down to 10lbs so the tomatoes overcooked, separated out and boiled out under the lids so I wound up with about 1/3 failure and the rest looked like clotted blood and serum.

So I made tomato juice. 100% sealing. Yeah!

I also discovered this year that I have been canning peaches wrong. In the past the peaches start to slump and turn icky in the jars. Not spoiling, but looking hideous.
I was only hot water bath canning them for 10 minutes, and I am told that was not long enough to deactivate the enzymes.

I will see how this turns out.

Smelled of burnt hair, wasn't hurt. But the air on the left eyebrow burnt off ( it grew back), half my bangs were gone. And my eyelashes burned in such a way that they had little balls on the end so they looked like upside down exclamation points. Must've been the mascara

I have made it in 5 gallon buckets with weights made out of ziplock bags filled with water. I was not careful enough and got a bacterial contamination and it went all mushy.

There is a neat little feature on the DMV map that shows live wait times at every branch around me. "22 mins wait" etc.
I checked my local when I left the house, 26 mins. Up to 29 when I got here.
Walking in, I asked a lady walking out "how long is the wait today?"
Her: "Not too bad. A little over an hour."

147 A couple of years ago I made pear chutney, which was fantastic, out of the Ball Blue Book. I find it hard to judge how much red pepper to put in, so the two batches I made were very different in spiciness.

Also, this year I made my first successful batch of blackberry jam in a long time.

I bought a deep stock pot to do jam in last winter, and it has done me wonders since I don't have to nurse my boiling jam to keep it on a quick boil but not boiling over.

No, actually its that they can tell I won't need an interpreter because I speak the local language, and the stuff I need to do is easy and quick while usually they have to go through a lot of trouble and only a few people can help them. So bing, I get to cut in line and go right in without much of a wait if any.

In Oregon, you have to show two pieces of proof of residence to get a license, including proof of citizenship. I had to show a birth certificate.

153 Cooking accidents. When I was 15 I was frying a hotdog, knocked tge skillet over and got an oil burn on my thigh (luckily small).
My friend grabbed a tomato and squished it over the burn. Said that was sure to heal it.
It did cool it down. I have a scar around an inch in diameter as a reminder to this day.

165 Until it died, I had an aloe vera plant around that was useful for burns. Just cut off a segment and smoosh it onto the burn spot. Instant relief and it heals faster. Hard to find them these days though. They were really trendy a while and now nobody even cares about them.

173 In good news, we finally got some rain here in Oregon. It was just a trace, but it was nice to see. Probably more coming today based on what I can see out my window to the west. Very dark, heavy clouds.

Supposed to be a colder winter this year, I hope that translates into plenty rain and not just cold and ice.

Milady got her license renewed earlier this month. Went to the new agency location, which is closer and more convenient, and was in and out in about five minutes.

Gotta go in myself on Monday, when I'll have my own report.

But, basically, here in civilization, the DMZ and even the Post Office are as a rule staffed with friendly people who do their job efficiently and with a smile. (Some of the customers in line at the post office can be troubling, like one loon recently who had some kind of petty stamp problem, but the staff were friendly and patient to a fault even with him.) I've read it's not this way out in the wilderlands?

177 Until it died, I had an aloe vera plant around that was useful for burns. Just cut off a segment and smoosh it onto the burn spot. Instant relief and it heals faster. Hard to find them these days though. They were really trendy a while and now nobody even cares about them.


Daughter bought me one from home depot this spring. Mine is doing better than hers. A bottle of aloe jell is great for a sun burn too.

When I went in and stopped by the information desk I told the woman I needed to update the address on my license because I would be flying soon - and she never bothered to clarify if I might be travelling in the next 2 weeks (that's how long it took to get). My "go to" chainsaw, for years, has been a little old Homelite miniXL, that I got for twenty bucks at a swap meet. It never fails to start, and it gets the job done just fine.


Last time I did chainsaw work, I used a Homelite XL12, circa 1965, one of the first "small" homeowner-marketed saws. And it ran just fine, too.


I had a Stihl, which I had bought new, and which ran fine the first season I used it for slashing, but it didn't like intermittent use around home, so I gave it away.

I'll give the Homy this, it never fails to start and it's not hard to crank. It's one of those little 14" $100 jobs. But, does have a lot of plastic on hit. The chain tensioner is plastic although it's a great little design.

I see that Craftsmen uses pretty much the same design but metal.

194 Didn't take that long for the eyebrow to grow back. The hair just got a trim and done a different way. They eyelashes seemed to have taken the longest. I didn't lose them but trimming the balls off made them quite short and uniform. A persons eye lashes are not uniform in length

Let's just say I looked peculiar and futuristic for a while. But then this was college and booze overcomes a lot of flaws

The old-school remedy for such things is white shellac. The stuff is thinned by alcohol, and oils don't penetrate it, not even strong solvents like gasoline. They used to use shellac-coated cork floats on automobile fuel gages for decades, until "ethanol-enhanced" (makes farting noise) fuel became commonplace.

263 I found this peach cobbler recipe at Old Farmers Almanac. It is really a type of clafouti. I have a similar recipe from my high school cooking class. Teacher said to remember that it didn't contain eggs, in case eggs were ever rationed again. Might as well be in California, since they are so expensive now.

Anyway, you can make it with canned peaches if you want. Don't need a pressure canner. But for true luxury, make it with fresh boysenberries and serve with homemade vanilla ice cream.

I've made kraut many times, and if I can do it, you know it's easy. I use the recipe in the Nourishing Traditions book and I used to use a big canning jar, but now I have a fermenting crock and a jar with an airlock. Nourishing Traditions calls for using a little yogurt whey to make sure the good bugs get a foothold, but I don't know that it's necessary.

This week I made kimchi in the crock, but I cheated by using Mama O kimchi paste.

268 I made sauerkraut in a food science class once. Learned that one key to success was to weigh the cabbage so you got the correct proportion of salt to encourage salt-tolerant bacteria while discouraging other bacteria.

Rarely, botulism can form while sauerkraut is being made, so it is probably best to cook it before tasting.

I was boiling flour to make paste (as one does) and when I was done pasting labels I had a good tablespoon of cooked flour paste left over.

I decided to dump it into the yeast starter (sponge) I had working on the counter.
The bread turned out with the bubbles being finer, the web being finer, and the crumb being more elastic than usual.

The recipe I use from America's Test Kitchen for bratwurst and sauerkraut recommends adding grated apple and carrot to the kraut. I've made it several times. It works for me.

That sounds like something I would try. I made a chicken soup with carrots a few weeks ago and it was very sweet--no added sugars, it was all from the carrots.

This is how I know satan is real... hear me out on this: You take a nice fatty sausage, grill it up, throw some kraut on top, a nice spicy mustard, a warm, firm bun... and you have nature's most perfect food. So perfect, you cannot eat just one, but since each is about 1500 calories, after a few years of eating these your arteries are so fully of sausage grease you die.


If it was up to God only, this perfect combination of flavors and textures would be about 350 calories, maybe half a dozen grams of fat, and would be the cure for cancer.

Called for some sugar too cuz she tried it again but with splenda and it was off. But takeaway is you can add apples to normal sauerkraut to get the effect you had in the german eatery.

318 Buffalo Chicken Pasta

2 (10.7oz) crème of chick soup
1 C buffalo wing sauce. I use Frank's.
1 onion, finely chopped
2 1/2 lbs chicken breasts, cut to bite size
Salt, pepper, garlic powder to taste
1 1/2 (16oz) pkgs uncooked penne pasta
16 oz sour cream
1/2 cup ranch dressing (I used home made)
1 C grated mozzarella cheese


Coat crock pot with cooking spray. Pour soup and wing sauce into cooker; add onion. Stir.

Dust cut up chicken with spices, and add to cooker, stirring to combine.

Cover and cook on high for 3 to 4 hours or until chicken is cooked thru. Turn off cooker.

Cook pasta and drain. Add to chicken mixture, stir, add in sour cream, dressing and mozzarella. Let set for a few minutes before serving.

I used to hate cole slaw, but started making slaw and kraut when my brother was farming and would bring cabbages to hand out at family gatherings. Thanks, bro!

Now I prefer it to a lettuce salad because it's more nutritious than lettuce and cabbage keeps much longer than salad greens. There are several ways to go with it--vinegary/sweet, mayonaisy, Asian, or weird versions like tequila/lime. The mayo version was the one I used to be scared of.

336 Good point on the sufficient cooking time to denature botulinum toxin, CBD. The spores are not dangerous for most adults to ingest, but they are much more heat-resistant, which is why you have to pressure-can low acid foods.

For denaturing the toxin (not killing the organism) I see figures of 176 degrees for 20 minutes or greater than 185 degrees for at least 5 minutes. Time varies with pH. Boiling for a few minutes is recommended. Don't taste the food first.
